This month, we’ve produced another fantastic pairing for you featuring one of our favorite Sarris products, the Salted Caramels alongside the 2008 Dominus Napanook from Napa Valley. From the legendary winemaker of the acclaimed Chateau Petrus in France, Christian Moueix, comes the Dominus Napanook.
The Dominus Estate in Napa Valley provides you with the ability to taste old world winemaking styles from a new world location. This wine is a classic Bordeaux blend with Cabernet Sauvignon making up the majority of the blend with Petit Verdot and Cabernet Franc making up the rest. This wine is a stylish classic and can either be consumed young or cellared for later drinking in a decade or two.
Making this pairing was actually a little more difficult than we had anticipated. We had to find a wine that would enhance the flavors of the milk and dark chocolate as well as the caramel centers, but at the same time it had to work well with the pink and black sea salt, which adds a whole different layer of flavors. This is when we decided to go with a robust blend from Napa Valley. A wine we felt would not only have the power and balance to complement the multitude of flavors from the Salted Caramels, but more importantly, enhance the flavors of each. This Napa Valley powerhouse wine offers hints of dark fruits, Kirsch, hints of dark earth and tobacco. The last element that we found in the Napanook was the hints of spice, which was for us the winning factor in this pairing. The wine had enough muscle and balance to harmoniously intermingle with the sweet chocolate and caramel, but it was the wine’s element of dark earth and spice that not only enriched the salt infusion from the caramels but made the flavors linger on the palate for the ultimate enjoyment. We are confident that this wine and chocolate pairing will leave you smiling!
