Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

The one-hectare parcel that constitutes the 2021 Chablis Valmur Grand Cru yielded five barrels this year. This also has a heavy reduction and is quite yeasty at the moment. The palate is well balanced with a marine-influenced entry, flecks of white chocolate complementing the citrus fruit with a longer finish than the Blanchot. The domaine owns seven ouvrées, and they augment the volume with exchanges for their premier cru grapes. Lieux-dits include Derrière la Velle and Les Levrons (domaine) and La Rue aux Vaches and Voittes (exchange). The result has a bright lemony fruit with a suggestion of ripe nectarine and hazelnut. Rewardingly ripe, with creamy apricot fruit on the nose and hints of butter and hazelnut. The texture balances a very pleasant ripeness and plump texture with refreshingly crisp acidity to create a persistent, lingering finish. The 2020 Meursault Les Narvaux has a perfumed, floral bouquet with touches of white flowers infusing the citrus peel and orange pith aromas. The palate is medium-bodied with fine tannins, a slightly waxier texture than Chavy-Chouet’s other cuvées, with fine persistence on the finish. The 2020 Chablis 1er Cru Butteaux Vieilles Vignes will be bottled later than usual, as Michel was still waiting on the delivery of glass bottles when I visited—but extra time on the fine lees certainly won’t do it any harm. Exhibiting aromas of pear, white flowers, freshly baked bread, confit citrus and iodine, it’s medium to full-bodied, satiny and layered, with terrific depth and tension. A holding of 0.53ha planted in 1955, vinified and aged with one third new wood. Pale primrose with quite a stylish bouquet, more fruit than floral, definitely encouraging a second sniff. There is an attractive lime blossom note, without the higher alcohol feel of the vintage (though still around 13.8%), sitting back with quality reserve. Long and quite impressive. The 2020 Chablis Blanchot Grand Cru is aged 75% in stainless steel and 25% in oak for nine months, followed by five months all in stainless steel. It has a relatively light bouquet, quite airy in style, gaining intensity with aeration, touches of white peach, smoke and granite. The palate is well balanced with a fine line of acidity, citrus fruit, orange rind and a touch of stem ginger towards the finish that fans out nicely. This meliorates with aeration and is worth decanting if you decide to crack open a bottle in its youth. The 2021 Chablis Les Clos Grand Cru was taken from tank rather than barrel. This was primal on the nose and difficult to read. The palate is more expressive: finely tuned with a fine bead of acidity, tensile and saline, it does not possess the complexity of Raveneau’s Les Clos tasted an hour or two before, but it has great penetration and a compelling flinty finish. More interesting are the sleek, intense and ultra-fresh middleweight plus flavors that possess excellent size, richness and power where the latter suffuses the sappy, muscular and saliva-inducing, moderately dry and compact finale. Fevre’s Montée de Tonnerre comes from all three sectors. Seguier notes that Pied d’Aloup has the highest marn content, Montée de Tonnerre adds weight and the old Chapelot vines (planted in 1936) add finesse. More closed on the nose. Weighty, concentrated, persistent. Saline notes. Will be a great gourmand wine. Some white flower notes, lots of zesty orange and grapefruit on the palate with a nice touch of white peach. For long ageing.Decanter | 94 DECA discreet dollop of wood sets off the equally cool and perhaps even slightly more elegant aromas of acacia, citrus, seashore and oyster shell. The sleek and highly sophisticated medium-bodied flavors possess a really lovely texture while delivering superb length on the bitter lemon and mineral-suffused finish. A beautiful chardonnay with cooked apple, dried mango and mineral character with a pumice undertone. It’s full-bodied with solid tension and a curated finish. Extremely polished and focused. Malolactic fermentation was blocked but a plushness exists to the texture from battonage and there is a definite sensation of spongy compression on the mid palate, generous and delicious. Droin owns 10ha of AP Chablis. Much more interest here with a deeper hue in the glass and much more interest on the nose. Some greengage on the palate, together with a hint of pear and white peach. Pretty much a benchmark example of what village Chablis should be. Concentration and a lengthy mineral character to finish.Decanter | 92 DECThis is aromatically similar to the Petit Chablis though with more citrus elements in evidence. There is again good richness to the succulent and rounded medium-weight flavors that also exude a refreshing salinity on the clean, moderately dry and sneaky long finish that is slightly firmer.Burghound | 88-91 BHThe 2021 Chablis Village has a fresh nose with Granny Smith apples and a touch of fresh pear. 2021 Jean Paul & Benoit Droin Chablis Grand Cru Valmur

The 2021 Chablis Valmur Grand Cru offers more intensity and precision than the Vaudésir, the wood giving weight but beautifully assimilated, shucked oyster shells emerging. The palate is well balanced with a slightly honeyed opening, notes of lemon curd and orange pith, building nicely in the mouth towards a suave and lightly spiced finish. The rich, powerful and broad-shouldered flavors possess a borderline creamy mid-palate texture while exhibiting outstanding length on the sappy and saline finish. Oak is a little more apparent here, with very precise acidity. Very linear at the minute, a grand cru with a nose of white flowers, and a palate of great purity. Droin’s Montmains site is on a gentle slope with richer, deeper, kimmeridgian marl soils. A colder site, making the wine richer and with great density on the palate. Distinctly more weight than the Vaillons, giving the blend plenty of gravitas. 8-10 months ageing on fine lees adds a creamy character with acidity less pronounced than with the Vaillons. Classy.Decanter | 92 DECAn even more floral-suffused nose speaks of the pretty essence of pear and apple while offering better overall typicity. The palate impression of the middleweight flavors is also plump, round and fleshy with its reasonably persistent, dry and balanced finale that also could use better depth. 2021 Henri Boillot Puligny Montrachet Premier Cru Les Pucelles

Here too there is a touch of reduction though it’s light enough such that notes of honeysuckle and lemon-lime can be discerned. The texture of the medium-bodied flavors is again wonderfully refined while keeping the same impressive punch while displaying excellent cut on the bone-dry, youthfully austere and sneaky long finale. Droin’s Fourchaume is located in the Vaupulent sector, on deep, clay-rich soils. A warmer site, this is a;ready very appealing with nice touches of baked apples and stone-fruit on the palate, with softer acidity and concentration. Although accessible early, this has the concentration to age extremely well and will deliver more saline aspects with more bottle age.Decanter | 92 DECA whiff of mineral reduction is present on the nose of pear and apple compote where there is just enough Chablis typicity to be convincing. The succulent, round and palate coating flavors possess good underlying tension while delivering solid depth and length on the delicious finish where the only nit is a hint of warmth.Burghound | 90-92 BHThe 2021 Chablis Fourchaume 1er Cru shows a little more reduction on the nose compared to other cuvées but a pleasant flintiness develops with time. The palate is well balanced with a fine bead of acidity, quite steely, lemon peel and touches of orange pith with quite a persistent finish. Fine.Vinous Media | 90-92 VMA lightly peppery, airy and cool nose freely offers up floral, white fruit and citrus nuances that exhibit just enough Chablis typicity to confirm where this is from.
