Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

A fine Chablis which manages to be both powerful and concentrated, yet still retains a lovely lift. Plenty of acidity and distinctive mineral flavours on the palate, along with some spiced, confit lemon character to finish. Medium to full-bodied, taut and racy, it’s deep and incisive, with impeccable Chablisien credentials and a long, intensely mineral finish. The bouquet wafts from the glass in a stylish blend of lemon, pear, a lovely base of limestone, just a touch of iodine and a topnote of paraffin. On the palate the wine is deep, full-bodied and vibrant, with a fine core, excellent wet stone mineral drive, bright acids and impeccable balance on the long, focused and complex finish. This has a bit more mid-palate depth than the Petit Chablis and will have a far longer shelf life. Fine juice. (Drink between 2024 - 2045)John Gilman | 91 JGThe 2020 Chablis Village has a fragrant orange blossom bouquet, delicate at first, then gaining in intensity and revealing touches of white tea. The palate is well balanced with markedly more weight than the Petit Village. A very subtle spearmint trait toward the finish lends another layer of complexity. This only just has its nose ahead of the Petit Chablis.Vinous Media | 88-90 VMA more restrained but equally fresh nose features notes of green fruit, oyster shell and lemon-lime wisps along with a very subtle dollop of menthol. There is excellent intensity to the sleek, detailed and delicious medium-weight flavors that terminate in a clean, dry and sneaky long finish. Daivissat’s Chablis parcel comes from two parcels - the smaller near Beine (0.6ha) and the much larger plot adjacent to Premier Cru Foret (2.5ha). Profound, concentrated, prominent lime/lemon zest on the palate, a touch of honey, confited citrus zest to finish. So long. A profound Chablis.Decanter | 93 DECThe 2021 Chablis Village is a clear step up from the Petit Chablis, beautifully defined with light pressed flower scents that complement the granite scents. The palate is saline on the entry with a fine bead of acidity, fine depth with quite a persistent finish. Elegant and somehow, understated.Vinous Media | 89-91 VMA more floral and more citrus-infused nose speaks of cool and admirably pure aromas of iodine, ocean breeze and green apple along with a hint of the exotic. The rich and solidly concentrated medium-weight flavors also possess excellent length on the bright, clean and very dry finish. This chiseled and promising effort should amply repay 7 to 10 years of cellaring.Burghound | 90 BHThe Domaine Dauvissat 2021 Chablis AC is also an outstanding example of its respective level, delivering a vibrant and complex nose of fresh lime, apple, a lovely base of chalky minerality, just a touch of oyster shell and a topnote of straw. On the palate the wine is bright, full-bodied, focused and well-balanced, with a lovely core, zesty acids and a fine signature of minerality on the long and classy finish. One of the Dauvissat specialities, the La Forest is a triumph in 2021. From seven small parcels, the total site is less than 1ha with average vine age more than 40 years. Intriguing, slightly smoky nose, highly distinctive and different to others in the range. Plenty of power, ripe stone fruit flavours, zesty citrus acidity with a herbaceous edge adding an extra dimension. Definitely of grand cru quality.Decanter | 95 DECThe 2021 Chablis 1er Cru La Forest is a young classic, mingling scents of sweet citrus oil and peach with notions of white flowers, struck match, bee pollen and youthful reduction in an incipiently complex bouquet. Medium to full-bodied, fleshy and textural, it’s concentrated, taut and incisive, with a long, mineral finish.Robert Parker Wine Advocate | 94 RPThere is a hint of phenolic character on the aromas of crushed leaf, mineral reduction, lemon-lime and seaweed. The denser, succulent and powerful larger-scaled flavors are supported by a firm acid spine on the stony, youthfully austere and bitter citrus rind finale. This is quite dry and I very much like the balance though I would note that at least some patience is strongly suggested as this is quite tightly wound today. In a word, terrific.Burghound | 94 BHI always think of Vincent Dauvissat’s la Forest as his baby les Clos, as with ten years or more of bottle age, the two often resemble each other a bit aromatically and flavor-wise. The 2021 version of la Forest chez Dauvissat is going to be stellar. The bouquet wafts from the glass in a complex mix of pear, fresh lime, flinty minerality, citrus blossoms, discreet vanillin oak and a topnote of beeswax. On the palate the wine is deep, pure and full, with a superb core of fruit, excellent complexity and cut, fine focus, bright acids and a long, complex and impeccably balanced finish. This is superb. (Drink between 2026 - 2060)John Gilman | 94 JGAlso a fine clear colour, though without a green tint. The Forest 2021 has a solid full fruit on the nose, perhaps less intense at the edges. The 2021 les Clos from Vincent Dauvissat is another brilliant wine in the making. The bouquet is deep, nascently complex and very precise, offering up a constellation of tart orange, apple, pear, flinty minerality, citrus zest, a gentle framing of vanillin oak and a topnote of anise. On the palate the wine is deep, full-bodied and complex, with a great core, outstanding mineral drive and grip, a lovely spine of acidity and a long, focused and perfectly balanced finish. Another simply stunning wine. (Drink between 2029 - 2075)John Gilman | 97 JGThe 2021 Chablis Les Clos Grand Cru is more open on the nose than Les Preuses, more floral with citrus peel and orange blossom aromas. The palate is well balanced with fine acidity, lightly spiced, quite cohesive but maybe the Les Preuses shows a little more sophistication towards the finish. This should evolve into a divine Les Clos but as usual, it will need time.Vinous Media | 94-96 VMGhislain Dauvissat insisted we tasted Clos before Preuses. Dauvissat’s Les Clos shows all the power and weight which one would expect of this famous climat. Stone fruit, minerality, a long saline/salty finish. Very deep, very classy, this just needs around five years in which to mature before it will truly show its best.Decanter | 95 DECA discreet application of wood suffuses the restrained and beautifully layered nose of mineral reduction, iodine, tidal pool, white orchard fruit and a vague hint of phenolic character. The super-sleek, dense and intense broad-shouldered flavors possess a palate etching mouthfeel while delivering simply remarkable length on the stony, austere and very dry finale that is akin to rolling small rocks around the mouth. The intensity really builds as it sits on the palate and overall, this beauty is superb.Burghound | 95 BHOne of the fuller yellow colours and a bouquet that is more ample if perhaps less fine than Preuses. The 2019 Chablis Grand Cru Les Clos is, if anything, more introverted than Les Preuses this year. Mingling notes of citrus oil, pear and crisp stone fruit with hints of fresh bread, vanilla pod and wet stones, it's full-bodied, layered and muscular, with huge concentration, framed by chalky extract and lively acids. This Les Clos displays ethereal poise from start to finish and is blessed with a pixelated quality that distinguishes it from any other. Brilliant. The 2019 Chablis 1er Cru La Forest is the deepest and most complete of Dauvissat's premiers crus, delivering a complex bouquet of orange oil, pear and fresh bread complemented by top notes of iodine, dried white flowers and beeswax. I generally have a slight preference for Dauvissat’s Les Preuses, a preference I suspect Vincent Dauvissat shares, but the 2020 Chablis Grand Cru Les Clos, at least at this early stage, gets my nod as the king of the cellar—and the wine of the vintage. Wafting from the glass with aromas of citrus oil, fresh bread, oyster shell, white flowers and wet stones, it’s full-bodied, layered and textural, with huge concentration, racy acids and a long, resonant finish.Robert Parker Wine Advocate | 98 RP(Chablis “les Clos”- Domaine Vincent Dauvissat) The 2020 les Clos from Monsieur Dauvissat is every bit as brilliant as the les Preuses. The nose soars from the glass in a blend of apple, pear, lime zest, a stunning base of flinty, chalky, wet stone minerality and oyster shell, vanillin oak and a topnote of fruit blossoms. On the palate the wine is pure, full-bodied and shows off a gorgeous core of fruit, but the real beauty here is in the stunningly complex base of minerality, coupled with vibrant acids, impeccable focus and grip and a very, very long, dancing and seamlessly balanced finish. A stunning wine in the making. (Drink between 2032-2085)John Gilman | 98 JGThe 2020 Chablis Les Clos Grand Cru displays a little more depth and complexity than the Les Preuses. Touches of yellow plum, orange blossom, flint and light white tea scents percolate through with aeration. The palate is very intense on the entry and a bit richer than the Les Preuses. The harmonious, intense, well-defined finish lingers long in the mouth, leaving a spicy, peppery residue on the aftertaste. Excellent.Vinous Media | 95-97 VM(Domaine Vincent Dauvissat Chablis - Les Clos Grand Cru White) While not quite as elegant, the restrained nose is even more floral and a bit spicier as well with its array of anise, smoke, tea, oyster shell and iodine-scented aromas. There is more size, weight and power if not the same refinement to the more evidently mineral-driven big-bodied flavors that coat the palate on the driving, balanced and youthfully austere finish. On the palate the wine is deep, full-bodied and bouncy, with a superb core of fruit, fine transparency and grip, good acids and fine complexity on the long, focused and vibrant finish. Fine juice. The 2019 Chablis 1er Cru Séchet opens in the glass with scents of citrus oil, white flowers, beeswax, oyster shell, wet chalk and mandarin. Medium to full-bodied, satiny and strikingly intense, it’s taut and chiseled, with tangy acids and huge reserves of concentration, concluding with a pungently chalky finish. As I’ve written before, Séchet—where Dauvissat owns a 0.8-hectare parcel—is located in the Vaillons Valley, but its windier situation and soils richer in active limestone mean it’s typically more tensile and incisive than the other climats that make up Vaillons. Technically retired but very much a continuing presence at his eponymous domaine, Vincent Dauvissat—who forsook a career as a shepherd to become one of France’s most celebrated vignerons—couldn’t disguise his satisfaction as we tasted his recently bottled 2019 portfolio. After some discussion, we settled on the 1989 vintage ("but tighter and more incisive") as a possible analogy for 2019’s hyper-concentrated, ripe, but all the while classically Chablisien style. In any case, they’re some of the wines of the vintage and are well worth seeking out. Readers will remember that farming here is organic but without certification. The harvest is by hand, and the wines ferment in tank before racking to barrel with the lees (Raveneau’s Chablis, by contrast, are racked to barrel more or less without their lees), spending a second winter in wood before bottling. A first bottling, destined for the American market. | 94 RP The 2019 Chablis Séchets 1er Cru has an elegant and more floral bouquet compared to Vincent Dauvissat’s other 2019s, beautifully defined and offering baked apple, pear and white flower scents. The palate is well balanced with a spicy opening, plus hints of stem ginger and walnut. Quite tensile and full on the finish. Good potential here.Vinous Media | 91-93 VMA markedly citrusy and noticeably cooler nose combines notes of mineral reduction with those of pear and apple confit. There is again very good volume and mid-palate density on the seductively textured medium-bodied flavors that are also quite dry on the balanced finale. This is a powerful Séchet that is even more robust and one that will need to add depth with age, but it should do just that if given a chance.Burghound | 92 BH

(Domaine Vincent Dauvissat Chablis "Montée de Tonnerre" 1er Cru White) A vague hint of the exotic is present on the wonderfully elegant lemony white orchard fruit scented nose that reflects additional notes of mineral reduction and oyster shell. The notably finer medium-bodied flavors possess excellent punch on the mineral-driven and chiseled finish that goes on and on. This is lovely and while it too will need better depth, the aging curve is sufficiently promising that I am optimistic that more complexity will develop over the next decade. In a word, terrific. (Drink starting 2027)Burghound | 94 BHThe 2019 Chablis 1er Cru Montée de Tonnerre is the sixth vintage that Dauvissat has produced of this climat, and he observes that it's one of the few parcels he exploits that isn't planted with the family's proprietary massale selections. Exhibiting notions of citrus oil, fresh bread, iodine and warm pastry, it's medium to full-bodied, ample and lively, with fine tension at the core and a long, mineral finish. It's the most approachable while young of these premiers crus.Robert Parker Wine Advocate | 93 RPThe 2019 Chablis Montée de Tonnerre 1er Cru comes from the domaine’s single 0.30-hectare parcel. It has a refined, very classic Chablis nose with wet pavement and light nutty aromas that remain discreetly in the background. The palate is slightly honeyed on the entry, spiced with touches of stem ginger, and delivers good depth, leading into an edgy, saline, powerful finish. It delivers an aromatic constellation of green apple, lemon, a beautiful base of chalky soil and oyster shell, spring flowers and a lovely topnote of beeswax. Pure, full and racy on the palate, the Séchet shows off exemplary depth at the core, excellent focus and cut and an impeccably balanced, but still quite closed personality on the long finish. This is going to be an outstanding bottle, but it will demand just a bit of patience to allow it to properly blossom. But, the potential here is enormous, as the wine offers up a fine bouquet of apple, pear, chalky minerality, white lilies, citrus peel and just a touch of vanillin oak. On the palate the wine is deep, precise and full, with a rock solid core, beautiful acidity and mineral drive, impeccable balance and a long, focused and nascently complex finish.
