1982 rauzan segla Bordeaux Red

(Château Rausan-Ségla) Popular claret culture, in the wake of Robert Parker’s pronouncement many years back that the 1986 vintage of Château Rausan-Ségla was the first top flight vintage here in a generation, tends to ignore the wines made here in the first half of the decade of the 1980s. However, I have been very impressed previously with both the 1983 and 1985 versions, and had higher expectations than any of my guests for the 1982 Château Rausan-Ségla in our lineup. Happily, my expectations were born out with a superb bottle and this has to be one of the finest wines made in the commune in 1982. The bouquet is beautifully complex and quite exuberant, jumping from the glass in the property’s signature blend of black raspberry, black cherry, cigar smoke, dark soil tones, a beautiful spread of spice elements, just a hint of nutskin and a discreet framing of cedary oak. On the palate the wine is deep, full-bodied, complex and really has an excellent core of fruit (particularly for a 1982 Margaux, as this commune is not as universally successful as most others in this vintage), with excellent focus and balance and still a bit of suave tannin adding backend grip to the long, complex and utterly satisfying finish. This is a bit more sappy at the core than the classical 1983, and has a bit less silky elegance of the 1985, but these three vintages at least prove that the reports of Château Rausan-Ségla not starting its renaissance until the 1986 vintage were a bit tardy! 1985 ducru beaucaillou Bordeaux Red

A wine of extraordinary charm and elegance, the dark garnet-colored 1985 Ducru-Beaucaillou has a floral, cedary nose intermixed with red and black currants as well as flowers. The wine is fully mature and soft, with beautiful concentration and purity. It is not a blockbuster, and certainly not nearly as powerful and massive as the 1986, but it is certainly much more seductive. 1986 grand puy lacoste Bordeaux Red

This wine is the finest Grand-Puy-Lacoste produced after 1982 and before 1995. The 1986 still possesses an impressive deep ruby/purple color, as well as a classic nose of cedar, blackcurrants, smoke, and vanillin. Full-bodied, powerful, authoritatively rich, and loaded with fruit, this wine’s solid lashing of tannin is not likely to melt away for 3-4 more years. 1988 trotanoy Bordeaux Red

Aromas of coffee bean, dried flowers and blackberry follow through to a full body, with very sweet and ripe fruit. Long and flavorful, with dark chocolate, tobacco and plum. Complex and fascinating. Drink now. — JSWine Spectator | 93 WS(Château Trotanoy) The 1988 Château Trotanoy is a really lovely example of the vintage, with decidedly “cooler” fruit tones that are on the black fruity side of the ledger, as well as the notes of fresh herbs and gravel of less ripe vintages at this estate. The super bouquet is a blend of dark berries, black cherries, cigar ash, gravel, coffee, tobacco leaf, fresh herbs and a deft framing of nutty new oak. On the palate the wine is deep, full-bodied and still a bit on the young side, with a superb core of fruit, moderate tannins, good acids and excellent focus and complexity on the long and black fruity finish. 1989 ducru beaucaillou Bordeaux Red

Harvest took place this year from 11th to 24th September. The wine was aged for around 12 months in two-thirds new oak. Pale to medium brick colored, the 1989 Ducru-Beaucaillou sashays out of the glass with pretty notes of dried flowers, fallen leaves and dusty soil over a core of warm figs, dried cherries, prunes and spice cake plus wafts of unsmoked cigars and powdered cinnamon. Medium to full-bodied, the palate is still seductively rich with a lively line of soft, silt-like tannins, finishing long and wonderfully savory.Readers should note that this vintage fell within a notoriously patchy period at Ducru, where the cellar is likely to have fallen victim to TCA or a TCA-like taint, and it appears some bottles were impacted from 1986 to 1994. By 1995, the chateau had a completely new vat room/cellar and the problem ceased. Therefore, there could be some bottle variation to be had with this vintage. This bottle, however, was pristine, tasted at the chateau.Robert Parker Wine Advocate | 92 RPDelivers lots of tanned leather and spices, with very ripe fruit, from dried strawberry to raisin, turning to jam. This has an attractive bouquet with lovely tobacco-infused black fruit and touches of black truffle and morels. There is something very gentle here but also intense. The palate is medium-bodied with supple tannin and a fine bead of acidity, a little meaty and bloody in style with maybe just a hint of brettanomyces toward the finish. 1989 leoville barton Bordeaux Red

A lovely, classic example of a fully mature St-Julien, replete with ripe berry fruits and tannins that whisper rather than shout. You’re pulling up a chair right by the fireside here, where the embers are still warm. Coffee, cedar and sandalwood take the lead over brambly black fruits. This is lovely, but unquestionably fully evolved and open. Drinking Window 2018 - 2028Decanter | 92 DECA delicious, well-structured Bordeaux, with plenty of ripe fruit, beautiful berry, green tobacco and cherry character. Full-bodied, adding velvety tannins and a long, caressing finish.--1989 Bordeaux horizontal. Best after 2002.Wine Spectator | 92 WSThe bottle of 1989 Léoville-Barton is probably the best I have encountered over the years; indeed, it is better than a bottle opened by Lilian Barton-Sartorius when I visited the property a few weeks earlier. It has a comely old-school claret bouquet of red fruit infused with cedar and loamy scents, and maybe some dustiness, but I have come to expect that in older vintages of this Saint-Julien. The palate is medium-bodied, pure and elegant, with svelte tannin and moderate acidity and a surprisingly sweet, almost precocious finish thanks to that year’s hot summer. It has softened in recent years and yet there is still good backbone and grip to this wine. Just enjoy. Tasted at the 1989 Bordeaux dinner at Hatched in London.Vinous Media | 91 VM It has been a little while since I tasted the Château Léoville-Barton 1989. Now at 25 years of age, it has an open bouquet with vestiges of brambly red fruit, scorched earth and chestnut, touches of fireside hearth developing with time. There is something almost comforting about Anthony Barton’s wine, its familiarity putting you at ease. The palate is medium-bodied with tannins that have softened in recent years and it gently builds to a saline, rather austere finish. 1990 gruaud larose Bordeaux Red

This wine continues to get better and better and is certainly one of the great successes in what is a profound vintage for Bordeaux. While the wine still tastes young, it is already complex, with so much sweet tannin and lavish fruit that it is impossible to resist, even though it probably will not hit its plateau of maturity for another 5-6 years. A stunning nose of licorice, earth, cedar, Provencal herbs, black currants, asphalt, and cherries soars from the glass. Full-bodied, opulent, with fabulous concentration, a seamless texture, and remarkable stuffing and power, this low-acid, thick, almost viscous wine can be drunk now or cellared for at least another two decades. For trivia buffs, this was the wine President Chirac served former President Clinton when he hosted Clinton in Paris at the famous Parisian bistro L’Ami Louis in June, 1999. I know, because several days later President Chirac gave me the Legion of Honor. In his speech, he acknowledged the fact that President Clinton only wanted to “drink a wine rated highly by Robert Parker.” Anticipated maturity: Now-2020. Last tasted, 9/02.Robert Parker | 96 RPAn estate known for its long ageing, and here it has softened at 31 years old, but still offering silky tannins and autumnal fruits with cedar smoked oak, marzipan, dried leather and gentle truffled spice. A thoroughly enjoyable Gruaud Larose showcasing old-school St-Julien balance. Clear crushed mint leaf on the finish, utterly moreish. 3% Petit Verdot completes the blend; 33% new oak. (Drink between 2021-2035)Decanter | 94 DECBright medium red with a reddish-amber rim. Pungent notes of cinnamon, quinine and rosemary complicate red cherry on the enticing, aromatic nose. Juicy and fresh on the palate, showing good density to the red fruit, peppery plum and herb flavors. Offers very good texture and chewy but noble tannins, with precise mineral-tinged fruit flavors lingering nicely on the peppery, flinty finish. A real step up in concentration from the 1989, and unlike that vintage this will still improve with further bottle age, though it’s drinking well now. Very well done.Vinous Media | 92 VM

A complex nose of subtle menthol intermixed with black currants, cherries, spice box, cedar, and herbs emerges from this fully mature 1990. It is a fleshy, round, generously endowed Margaux with silky tannins, low acidity, and beautiful purity. Drink it with great pleasure now, or cellar it for another decade. Release price: ($300.00/case)Robert Parker | 94 RPThe 1990 Rauzan-Ségla is another vintage that I have not tasted for some time. It was picked from September 17 to October 7. Now at 28-years of age it shows some maturation on the tawny rim, the core a little lighter in colour than the 1998 for example. The bouquet has certainly matured in recent years: blackberry, strawberry pastilles, touches of garrigues, clove and fennel, and freshly tilled soil. It is very...1990! There is little oak presence here (the new oak was in fact just 40%, so unsurprising.) The palate is medium-bodied with grainy, slightly rustic tannin. I love the flavor profile here: dark chocolate, leather, clove, oregano and a touch of soy that is, for me, quite Saint-Julien in style. One can tell that this 1990 will not improve with continued bottle age however, it has great depth and you come away with the sense that it wears its heart on its sleeve. Tasted at the Rauzan-Ségla vertical at the château.Vinous Media | 93 VMVery concentrated. Dark garnet color. Pretty licorice, plum and currant aromas. 1995 montrose Bordeaux Red

An explosively rich, exotic, fruity Montrose, the 1995 displays even more fat and extract than the 1996. There is less Cabernet Sauvignon in the 1995 blend, resulting in a fuller-bodied, more accessible and friendlier style. The wine exhibits an opaque black/ruby/purple color, as well as a ripe nose of black fruits, vanillin, and licorice. Powerful yet surprisingly accessible (the tannin is velvety and the acidity low), this terrific example of Montrose should be drinkable at a young age. Anticipated maturity: 2003-2028.Robert Parker | 93 RPHere we start to see the slightly austere side of Montrose, and how this helps it to age so gracefully. Exceptionally young at 22 years old, still tightly-structured and richly-scented. Cassis, truffles, cedar, burnished oak, and tobacco are set by lovely placement of tannins that are still fairly bullish and young. Classical and effortless. 63% Cabernet Sauvignon, 31% Merlot, 5% Cabernet Franc, 1% Petit Verdot. Drinking Window 2017 - 2035Decanter | 93 DECExcellent red-ruby color. Plum, currant, animal fur, smoked game, roasted nuts and graphite on the nose, plus a note of toffee. Lush and smooth in the mouth, with notes of minerals, leather and game. Still rather tightly wrapped following the mise, but very nicely balanced from the outset. Firm acidity gives the wine superb delineation and grip. Tannins are dusty and firm-and more obvious today than in the ’97, despite the fact that the later year featured higher polyphenol levels.Vinous Media | 91+ VM

1995 pichon baron Bordeaux Red

This is surprisingly delicate and fine now with currant and spice character and hints nuts. It is full body with refined texture and a beautiful finish.James Suckling | 93 JSThe 1995 Pichon-Baron is a wine that tasted extremely well several years ago, but I wonder how well it is continuing to evolve. The bouquet feels a little smudged, scents of iodine and cassis merging with blackberry and pencil lead; it is a little meandering and missing a sense of focus. The palate is medium-bodied with supple tannin, crisp acidity and good density, but it doesn’t possess the clarity and detail of more recent vintages. Solid, but lacks flair. Tasted at the Pichon-Baron vertical at the château.Vinous Media | 91 VMA stylish, elegant, more restrained style of Pichon Baron, with less obvious new oak than usual, this deep ruby/purple-colored wine offers a pure black currant-scented nose with subtle aromas of coffee and smoky toasty oak. In the mouth, the wine displays less weight and muscle than the 1996, but it offers suave, elegant, rich fruit presented in a medium to full-bodied, surprisingly lush style. 1996 calon segur Bordeaux Red

Saturated ruby-red. Pure, highly perfumed aromas of black cherry, currant, plum, minerals, tobacco, leather and fresh herbs. Very ripe, suave and spicy; at once subtle and gripping. Lovely cabernet character dominating today. Very firm, long finish is youthful but not hard-edged. Showing extremely well.Vinous Media | 93+ VM(Château Calon-Ségur) Along with the 2001, the 1996 vintage at Calon-Ségur is one of my favorite from the merlot-centric era at the estate, probably because the vintage favored cabernet sauvignon so clearly in the Médoc and a bit more of this grape was included in the blend at Calon in this vintage. The bouquet is deep, vibrant and youthfully precise, wafting from the glass in a mix of cassis, dark berries, cigar ash, dark soil tones, a touch of curry and a gentle framing of cedary wood. On the palate the wine is deep, full-bodied and impressively tangy, with a fine core of fruit, currently a quite tightly-knit personality, well-integrated tannins and very, very good length and grip on the focused and still quite youthful finish. This is going to be a lovely wine in another eight to ten years’ time and should prove to be quite long-lived. I love to imagine what the current team at Calon would have done with a vintage such as 1996 today! (Drink between 2020-2050)John Gilman | 92 JGThe 1996 may not be as profound as I had predicted from cask, but it is an exceptional wine. Dark ruby-colored, with a complex nose of dried herbs, Asian spices, and black cherry jam intermixed with cassis, it possesses outstanding purity, and considerable tannin in the finish. This classic, medium to full-bodied, traditionally made wine improves dramatically with airing, suggesting it will have a very long life. Anticipated maturity: 2009-2028.Robert Parker | 92 RPFully mature and drinking wonderfully well, the 1996 Château Calon Ségur has a classic nose of green tobacco, cedarwood, currants, and sous bois. Playing in the medium-bodied end of the spectrum, it has a wonderful sense of purity, polished tannins, solid mid-palate depth, and outstanding length. This is classic, focused, old school yet pure, balanced Bordeaux goodness. It has another two decades of prime drinking ahead of it. 1996 leglise clinet Bordeaux Red

Château Eglise Clinet Pomerol 1996: It's agreed among most Bordeaux wine lovers that Right Bank, more specifically Pomerol, made good quality but not great reds in 1996. The 1995 was much better for Merlot and Cabernet Franc. So this 1996 Eglise Clinet came as a big surprise when I tasted it. The red shows wonderful complexity and beauty now. It's full body yet refined with black olive and berry character. It's so balanced and fine now. Very pretty. Drink now.James Suckling | 94 JSOne of the few profound Pomerols in 1996, l'Eglise-Clinet turned out an uncommonly rich, concentrated wine that is performing well from bottle, even though it is displaying a more tightly-knit structure than it did from cask. The dark ruby/purple color is followed by notes of charcoal, jammy cassis, raspberries, and a touch of sur-maturite. Spicy oak emerges as the wine sits in the glass. It is fat, concentrated, and medium to full-bodied, with a layered, multidimensional, highly nuanced personality. This muscular Pomerol will require 3-5 years of bottle age. Anticipated maturity: 2004-2020.Robert Parker | 93 RPThe 1996 l’Eglise-Clinet has always had an open and Burgundy-like bouquet, pure but like many Pomerol crus in this vintage, not particularly complex. The palate is well balanced with slightly grainy tannin. This is a more masculine and introverted wine compared to the 1995, a little too serious perhaps and needing more flesh toward the linear finish. Not bad at all although it just lacks the fireworks. Amazing aromas of crushed berries and fresh flowers. Full-bodied, with wonderfully velvety tannins and a long, long finish. This wine has wonderful texture and length. 1996 pape clement Bordeaux Red

A great wine that has put on considerable weight and continues to show more and more depth and complexity, the dark plum/ruby colored 1996 Pape Clement has a gorgeous nose of barbecue spices intermixed with black currant, plum, coffee, and a hint of white chocolate. The wine is exceptionally rich, fill-bodied, and a fabulous success, particularly in the Pessac-Leognan sector. The tannin is sweet and the wine full-bodied, with tremendous richness and length. Anticipated maturity: 2005-2020. Last tasted, 4/02.Robert Parker | 94 RP(Château Pape Clément) In 1996, Pape Clément was still very much a classically styled claret and the wine shows very good potential to eventually blossom from behind the substantial tannins of the vintage and turn into a lovely wine. The nose is a youthfully complex blend of black cherries, dark berries, tobacco leaf, earth, smoke, dark chocolate and just a touch of spicy new wood. On the palate the wine is deep, fullish and still quite primary, with lovely focus, very good mid-palate depth, firm, but well-integrated tannins and lovely length and grip on the chocolaty finish. This should prove to be a lovely example of the vintage and it will be interesting to see if it always retains a bit of a firm edge from ‘96s massive tannins, or if this eventually blossoms into a classic example of Pape Clément . (Drink between 2018-2050)John Gilman | 91+ JGFull ruby-red. Superripe aromas of roasted plum, black raspberry, woodsmoke and humus. 1998 calon segur Bordeaux Red

The 1998 Calon-Ségur, blended of 55% Cabernet Sauvignon, 35% Merlot, 8% Cabernet Franc and 2% Petit Verdot, is deep garnet-purple in color with just a touch of brick and a very earthy/meaty nose with notions of new leather, smoked game, truffles, dusty soil, iron ore and mossy bark over a core of crème de cassis, preserved plums, spice cake and unsmoked cigars plus a waft of incense. 2000 abreu cabernet sauvignon thorevilos California Red

The first release from the 20-acre Thorevilos Vineyard (co-owned by David Abreu and Ric Forman) is the 2000 Cabernet Sauvignon Thorevilos, a blend of 88% Cabernet Sauvignon, 10% Cabernet Franc, and 2% Petit Verdot. It is a dense, sweet, black currant-flavored effort with hints of scorched earth, cedar, and flowers in the background. 2000 calon segur Bordeaux Red

A dense, traditionally crafted wine for those with patience, the 2000 Calon-Segur rivals the estate’s finest wines of the last two decades, the 1995, 1988, and 1982. But be forewarned, this wine has already closed down, something totally in character with all top vintages from this estate. This blend of 60% Cabernet Sauvignon, 30% Merlot, and 10% Cabernet Franc exhibits a plum/purple color along with gorgeous aromas of creosote intermixed with spring flowers, black cherries, cassis, licorice, and stony, liquid minerals. A powerful, tannic, full-bodied and opulent wine, it possesses considerable structure that is reasonably well-concealed by considerable glycerin and intensity. The blend here included forty-two percent merlot in 2000 and the wine offers up a very deep-pitched and adolescent bouquet of black fruit, inky tones, damp, dark soil, dried eucalyptus, coffee grounds and cigar smoke. On the palate the wine is deep, full-bodied, closed down and quite dense at the core, with a gritty edge to its firm and chewy tannins, little generosity at the present time, but also with impressive grip on the closed, but very, very long finish. The length on the backend here really gives me some hope for the future of this wine, but it is really in a very difficult place for current assessment and I do not have a strong sense of whether or not this wine will always be a bit charmless, or if this is simply a passing phase and it will blossom to deliver some of Calons’ inherent breed with sufficient bottle age. Huge, deep purple-black color, and aromas of rich, spicy fruit give a sense of great power to this superbly intense wine. Liquorice and rich tannins suggest complexity, while subtle acidity adds refinement.Wine Enthusiast | 94 WEThe 2000 Domaine de Chevalier has long been one of my favourite wines and now at 16 years of age, it continues to live up to expectations. It has a beautiful nose, so lively and vivacious, with black plum and blackberry, cedar and damp undergrowth scents, an undercurrent of tobacco. The palate is medium-bodied with impressive definition, a fine thread of acidity, though still backward and intimating that there is "much more in the tank." The structure is wonderful here, though it does not quite deliver the length you might expect, which compelled me to dock a couple of points. Finishes impressively broad and horizontal, with smooth, ripe tannins and lingering spicy perfume. This is a big upgrade for this spectacular micro-cuvee, a true garage wine from a 4.4-acre vineyard. A blend of 90% Merlot and 10% Cabernet Franc, I always find Gracia to be reminiscent of Ausone. The dense, rich 2000 reveals notes of a spring flower garden intermixed with smoky barbecue meat, blackberries, black currants, and crushed rocks. The extraordinary perfume is followed by a wine of great depth and richness, full-bodied power, and not a hard edge to be found. This velvety blockbuster is just beginning to strut all its stuff, and should age easily for another 15+ years.Robert Parker | 96 RPBright medium ruby. Superripe, slightly medicinal kirsch aroma, complicated by licorice, earth and exotic oak tones. 2000 lagrange Bordeaux Red

(Château Lagrange) The 2000 vintage of Lagrange is one of the most powerfully built that I have tasted from the Suntory era, and it will take many years for this deep and classy wine to reach its apogee. I very much like the cool fruit tones of the 2000 on both the nose and palate. The bouquet is a fine, reserved blend of cassis, bell pepper, espresso, black cherries, a bit of youthful horsiness, an impressive base of soil tones, tobacco leaf and a very vague impression of new oak buried somewhere in the aromatic depths of the wine. On the palate the wine is full-bodied, deep and very young, with a rock solid structure, ripe tannins, good acids and excellent focus and grip on the very long, palate-staining and chewy finish. While the 2005’s great tangy acids will carry the wine far into the future, the 2000 vintage gets my vote for the potentially longest-lived wine that this property has yet produced since the changeover in 1983. Most promising. (Drink between 2022-2080)John Gilman | 94 JGAn impressive performance by Lagrange, the 2000 possesses a saturated ruby/purple color with obvious notes of melted licorice, creme de cassis, and toasty new oak. 2001 cos destournel Bordeaux Red

Gorgeous, a clear step up from the 2000 vintage as it approaches its second decade. This is not quite ready to drink, although a few hours in a decanter could open it up sufficiently. It’s full of intense, tight and spirited black fruits, replete with this château’s signature richness of structure, which seems to ooze naturally through the tannins. There’s a real sense of energy and zest, with liquorice, slate, spice, cassis and black cherry. The second half of August was hotter in 2001 than 2000 in St-Estèphe, and the grapes were left to reach a long, slow maturity. Harvesting did not begin until 1 October when the nights were getting cooler –this will have helped the wine keep its remarkable freshness. Matured in 80% new oak. Drinking Window 2018 - 2040Decanter | 95 DECThe 2001 Cos d’Estournel is blended of 55% Cabernet Sauvignon and 45% Merlot—a very high percentage of Merlot in this vintage and a very late harvest, which started on October 1st. Deep garnet in color, the nose is singing with savory notes of smoked meats, tapenade, bay leaves and beef drippings with a core of plum preserves, redcurrant jelly, dried cherries and baked blackcurrants with wafts of peppermint tea and dried roses. Medium-bodied, the palate practically tingles with vibrant dried herbs, red fruit preserves and minty notes, structured with firm, finely grained tannins and fantastic freshness, finishing very long and minerally.Robert Parker Wine Advocate | 94 RPThe 2001 Cos d’Estournel has a fresher nose than the 2000, showing more focus and vigor and delivering black cherries mixed with fig, blood orange and light cigar box aromas. This is still quite tight at 20 years old and would certainly benefit from decanting. Blood orange and a light sprinkling of white pepper appear toward the finish. Today it is in an in-between stage where the fruit is no longer primary but the tertiary notes aren’t fully developed either. The 2001 is a powerful Serpico with impressive tannic clout that will require further cellaring to soften. With time, hints of wild cherries, herbs, chocolate and leather emerge but only with great reluctance. Anticipated maturity: 2013-2023.Feudi di San Gregorio is one the leading estates in Campania and Italy. Enzo Ercolino spared no expenses in snapping up vineyards and building a state of the art facility that cranks out more than 4 million bottles per year. Along the way Feudi garnered considerable accolades from the press, perhaps too much attention for a winery that was just getting started. Today Feudi is owned and run by the Capaldo family. The estate makes a wide range of whites and reds, but the most consistently outstanding wines are the two Aglianicos; Serpico and the Taurasi Piano di Montevergine. From the outset Serpico was conceived as a more approachable interpretation of Aglianico than Taurasi. The softness of some early vintages suggests other grapes may have been used to help smooth the trademark Aglianico rusticity. The Taurasi di Montevergine was initially made from a number of different parcels although today it is a true single-vineyard wine made from a late-ripening plot that sits at 700 meters above sea level. Over the years, this site has proven to be exceptional in yielding structured Taurasis that at their best capture the full breadth of Aglianico. Consulting oenologist Luigi Moio, who had just returned from a stint in France, made the wines from 1995 through 1998, although he did not see all the wines through to their bottling as he left Feudi in 1999. Moio is one of the key figures in the development of the wines of the south. His consulting projects include Caggiano and Cantina del Notaio, in addition to the superb wines he is making at his own estate, Quintodecimo. At Feudi Moio favored lengthy fermentations often reaching more than 25 days (Moio has since adopted a shorter approach to fermentations with his own wines at Quintodecimo). Malolactic fermentation was done in steel. Moio used 100% new oak for Serpico and 60% new oak for the Piano di Montevergine. Oenologist Riccardo Cotarella made the wines between 1999 and 2006. Cotarella is another seminal figure in Campania, as he pioneered Montevetrano and Terra di Lavoro - two wines that were groundbreaking when they were conceived and that continue to set a high bar for the region - as well as Feudi’s 100% luxury Merlot cuvee, Patrimo. Cotarella preferred shortish macerations. After the alcoholic fermentation was completed, the wines were racked into oak until spring, when they were moved into steel for the malolactic fermentations. The wines were then moved back into oak, where they completed their aging. Cotarella favored 100% new oak for both Serpico and Piano di Montevergine.
