I’ve always had a soft spot for the 1981 vintage as well as these two châteaux. This was the first vintage of Bordeaux that I bought, back in 1984, with some knowledge of the region (or so I thought at the time) and Cos because the first serious vertical that I ever attended was of their wines from 1982 back to 1952. Pavie? Well, to be honest, it was the label that drew me in at first, being all old-timey Bordeaux and all. The first Pavie that I bought was a 1979 from a wine shop in Boston and from the get-go I was hooked on the blend of power and finesse that a St.-Emilion from a great terroir can exhibit. Being able to visit both of these estates in late June of 1989, on the same broiling hot day, sealed the deal.Ninteen eight-one is what some would derisively call a ‘classic’ or ‘restaurant’ vintage. In the old days some would say ‘a useful vintage’ for the fact that the wines are mostly to be drunk while waiting for “great” vintages to mature or to keep ones’ hands off of already mature ‘great’ vintages resting in the cellar. That belittles wines such as these two, I think, because more times than not I crave a graceful, finely delineated and less dramatic wine than one from a blockbuster vintage. Both of these bottles deliver the goods.Purchased by a good friend on release here in New York, both the Cos and the Pavie are decidedly at peak but based on these bottles there’s no need to fear the reaper. The Cos is a textbook rendition of the old style at the châteaux, with intense cigar box, dried cherry, licorice and pipe tobacco character and smooth, harmonious tannins that have all but faded away. As might be expected, the Pavie is more dramatic in character, but still showing the restraint that’s been typical of the ‘81s since release, offering a haunting, floral- and spice-dominated bouquet and plush, seamless plum and cherry flavors. Like the Cos, it’s fully mature but there’s no sign of undue fatigue, either. In both cases, pretty remarkable for 34 year-old wines from a vintage that’s now been mostly forgotten, but not by me.Vinous Media | 91 VM

Gorgeous aromas of ceps and dark fruits with lots of forest fruit too. Love the nose of forest fruits. Incredibly deep. Full-bodied, with super chewy tannins. Powerful and rich with hints of wood. This is a powerful yet classic wine. I love the complexity to this - the balance. The density and compacted character to this is superb. Try after 2018.James Suckling | 99 JSBottled the week of January 16 (a week before I tasted it), the 2009 Pavie Decesse (from a tiny 9-acre vineyard on the limestone slopes above Pavie) is an uncommonly fat, succulent, rich, 1,000-case cuvee with 14.3% alcohol. It boasts an inky/blue/purple hue along with notes of incense, spring flowers, roasted espresso, chocolate, licorice, blackberries and blueberries. Even though it is aged in 100% oak, the wood is virtually non-existent. An inky blend of 90% Merlot and 10% Cabernet Franc, the wine exhibits a flawless integration of acidity, alcohol and tannin. This opulent, viscous, thick, juicy St.-Emilion will be accessible in 5-7 years and last for three decades.Robert Parker | 98 RPTerrifically rich yet beautifully rendered, with precise linzer torte, currant paste, fig sauce and pain d’épices aromas and flavors that cascade through the voluptuous finish. Beautifully polished, with a huge core of pure fruit in reserve that should blossom with extended cellaring. Best from 2016 through 2031. 0500 cases made.Wine Spectator | 96 WSSaturated ruby. Red and black fruit aromas complicated by graham cracker, violet and pungent minerality. Plush, broad and seamless but at the same time energetic and light on its feet, thanks to the lift from calcaire. Despite carrying rich flavors of chocolate, mocha and almost liqueur-like dark berries, this wine shows no mid-palate heaviness. Wonderfully deep, rich, chewy Saint-Emilion with outstanding stony persistence. Like the Pavie, this has a long life ahead of it.Vinous Media | 94+ VM

The 2011 Pavie is composed of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon (14.3% alcohol). It possesses a certain approachability, which is somewhat disarming for the big, robust, super-concentrated and ageworthy style Pavie has favored since 1998. The opaque purple-hued, full-bodied 2011 offers a sweet kiss of kirsch, blackberry, cassis and licorice, but no evidence of toasty oak despite the fact it is bottled about six months after most other premier grand cru classes in St.-Emilion. One of the most complete wines of the vintage, this superstar possesses gorgeous texture and opulence, and can be drunk in 3-4 years, or cellared for two decades.Robert Parker | 95+ RPVery solidly built, with dark plum, boysenberry and red currant paste flavors forming the core, all harnessed by ample grip. This shows classic Bordeaux cut, with grippy yet ripe tannins. Delivers serious graphite and tobacco elements on the back end that should evolve with more time. This has less sizzle than some of the other vintages but just as much steak.--Non-blind Pavie vertical (March 2017). Full body, firm and silky tannins and a silky finish. Just starting to come around now.James Suckling | 95 JSThe 2011 Pavie has a distinctly earthy bouquet, well-defined with some expressive Cabernet Franc. A little savory, with dried blood developing in the glass. The palate is medium-bodied with heavily-extracted tannins, tightening up on the mid-palate, good structure, grippy with a graphite-tinged, Cabernet-driven finish. Here is a ripe and juicy wine that pushes forward with delicious blackberry fruits. There is a tense edge of acidity that then brings out denser tannins, but juiciness characterizes this wine.
