The palate has a keenly articulated array of vibrant tannins that hold long, fresh and pure. It invokes a sense of wonderment at the finish. So long and so pure. This blend of 77 per cent cabernet sauvignon, 11 per cent merlot, seven per cent petit verdot and five percent cabernet franc, is just at the start of a wonderful journey. Paul Draper made the first vintage of Monte Bello in 1969, a blend based on cabernet sauvignon to which he added other Bordeaux varieties depending on the season. Aside from Draper’s winegrowing, in which he insisted on maximum observation to minimize intervention, what sets Monte Bello apart from other great cabernets of California’s north coast is the decomposing limestone bedrock the vine roots use to sustain their foothold in these hills. Between the altitude and the limestone, this is cabernet with plenty of natural acidity; Baugher’s 2015, a concentrated vintage with low yields due to cold, stormy weather at flowering, feels particularly cool and brisk. This is savory cabernet, with what Tastings editor Karen Moneymaker described as the skinny beauty of a supermodel. The dark currant flavors, scents of tobacco and deep umami undertones all register in a clean, seriously structured wine. American wood instils notes of candied orange rind and coconut flakes into an otherwise gravel-driven nose. The palate has a graceful, buoyant quality that gently floats across the palate. The finish is very dry and wound up like a spring, which will continue to be the case for the next several years. This is a wine to slowly let unfurl, both when ageing and consuming; open several hours in advance. Those elements meet with dense and dry blackberry and black plum on the sip, where dried herbs, black-pepper and soy flavors also arise. The elegant structure is such that this wine just doesn’t die, even after more than a week of sitting open. A “wow” wine with a few years of bottle aging already into it, the 2018 Cabernet Sauvignon is made from 85% Cabernet Sauvignon, 10% Merlot, 3% Cabernet Franc, and 1% Petit Verdot. A cool harvest season kept things slow, steady, and unrushed, which shows in the gracefulness of the wine, beautiful in high-acidity and freshness, dusty tannins, and enduring structure. The redcurrant fruit is seasoned in graphite, dried herb, and black peppercorn, complex and intriguing throughout, with a medium-bodied weight that feels light and finessed.
