The 2014 Chablis 1er Cru les Fourchaumes Vieilles Vignes has an impressive, mineral-driven bouquet that grows in stature in the glass. There is great precision here, scents of cold wet limestone and dew-speckled Granny Smith apples. The palate is well balanced with crisp acidity, spicy in the mouth with a strong saline component. It finishes in a sappy style that gets the taste buds going, completing what is an excellent Chablis from Laroche.

Domaine Laroche owns 7.6 acres in Fourchaumes, on a southwest-facing slope protected from the north winds. The 65-year-old vines produced a sunny 2014, with tight precision to its narrow, limestone-focused line of flavor. It gains some creaminess from a portion of the lot that was fermented and aged in oak casks (20 percent). The buxom texture and tense, stony structure give it a classic profile, accessible now if you decant it, to serve with wood-roasted oysters or lobster bisque.
