Medium garnet-purple colored, the 2015 Cabernet Sauvignon Estate has a very classic nose of cassis, warm plums and crushed blackberries with notions of cigar box, garrigue, damp soil and truffles plus wafts of menthol and underbrush. The palate is medium to full-bodied with a firm frame of grainy tannins and wonderful freshness, finishing long and minerally.

A focused, tannic style, featuring tobacco and sage notes intermixed liberally with steeped currant and blackberry fruit flavors, with cast iron and graphite hints flowing underneath. This has loads of character and range, showing vigorous, savory-edged cut. Youthfully rugged, with bramble-edged grip to burn. Cellaring will let all the elements meld. The 2015 Cabernet Sauvignon Estate is silky, nuanced and remarkably open-knit for a young Togni Cabernet Sauvignon. Soft contours add to the wine's juicy personality. Even though yields were down a whopping 50%, Togni's 2015 is not a huge or massive Cabernet, rather it is a wine that speaks to finesse above all else.

(Cabernet Sauvignon- Philip Togni Vineyard (Spring Mountain)) The 2015 estate bottling of cabernet sauvignon from the Togni family is an outstanding wine that will be very long-lived and utterly brilliant at its apogee, but patience will be required. The bouquet is deep, precise and utterly classical in personality, offering up an aromatic constellation of cassis, sweet dark berries, cigar wrapper, a marvelous base of soil tones, gentle smokiness and a discreet foundation of cedary oak. On the palate the wine is very pure on the attack, full-bodied and rock solid at the core, with a fine chassis of seamless, buried tannin, excellent focus and grip and a long, classy and nascently complex finish. This is so beautifully balanced that it gives the false impression that it will come around in the middle term, but though the tannins are sweet and covered flawlessly, this has the chassis of a long-distance runner and will need fully fifteen years in the cellar to really start to properly stir. Once it gets rolling, it is going to be absolutely stunning and for many decades! (Drink between 2033-2100)
