The 2007 Cabernet Sauvignon Deep Time has a medium garnet color and sings of Indian spices, baked plums and crème de cassis with forest floor, black truffles and iron ore accents plus a waft of potpourri. The full-bodied palate delivers a firm yet plushly textured foundation to support the generous black and blue fruit preserves flavors with bags of earthy nuances and a very long finish. The personality of the vintage is very well suited to the extended time in barrel (40-50 months) Woodbridge gives this wine. All the elements are in the right place. Rich, dark and sumptuous, the 2007 is totally seamless on the palate, yet at the same time, there is more than enough support from the tannins. Aged 48 months in new barrels, never racked, the 2018 Cabernet Sauvignon Deep Time is another singular beauty that tops out my scale. Showing a touch more classy oak as well as complex cassis, crème brûlée, new leather, and sweet tobacco, it hits the palate with full-bodied richness, a round, seamless, sexy mouthfeel, ultra-fine tannins, and a great finish. Despite its four years in barrel, it hasn’t lost any sense of freshness and has vibrancy, purity, and structure. This year, the wine aged in wood for 48 months. Marked by typical cigar box aromas, it also delivers plenty of cherries, vanilla and a hint of cassis. It’s full-bodied, rich and undeniably woody, yet still retains ample freshness and length. It reminds me a bit of some Riojas, for its wood presence and elegance, but with more power and fruit weight, like some of Chris RIngland’s long-aged releases of Barossa Shiraz. Starting off an incredible lineup of 2018s, the 2018 Cabernet Sauvignon Kayli Morgan Vineyard has a purple/blue hue as well as a powerful bouquet of ripe blackcurrants, blueberries, smoked tobacco, and new leather, with a kiss of background graphite. Full-bodied, utterly seamless, and flawlessly balanced, it’s impossible to resist today yet will cruise for 20-25 years in cold cellars.Jeb Dunnuck | 99 JDSituated toward the base of Howell Mountain, too low to be included in that AVA, the 2018 Cabernet Sauvignon Kayli Morgan Vineyard boasts ample complexity in its scents of pine needles, blueberries and cassis, all framed by vanilla and cedar. Did I mention lots of vanilla? It’s a full-bodied wine, silky-plush and almost too easy to drink, with a long, menthol-tinged finish. This 100% Cabernet Sauvignon from Jayson Woodbridge is dynamic, complex, and downright pleasure-packed and one of the stars of the show from his lineup of 2021 wines I tasted in September of 2024. It bursts out of the glass with pure ruby fruit, white truffle, white pepper, black cherry liqueur, and spiced plums layered with delicate cedarwood notes. Full-bodied with the purest of raspberry and blackberry fruit, the wine is framed by a foundation of ultrafine-grained tannins and profound depth on the mid-palate. Nuances of cigar box, saddle leather, and vanilla weave a lattice work around the fruit character, complemented by umami-rich saline minerals. Incredibly precise and pure, it’s further enhanced by blood orange acidity and a zesty, smoky quality, finishing with a hint of salted pink Himalayan sea salt. Just 4.8 hectares of Cabernet Sauvignon vines are planted on this 18.21-hectare property, located on the steep southeast-facing slopes of Glass Mountain in St. Helena.
