Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

2021 Domaine William Fevre Chablis Grand Cru Les Preuses

The 2021 Chablis Les Preuses Grand Cru comes from 2.5-hectares split over two parcels. This has one of my favourite aromatics from Fèvre this year with superb delineation and mineralité. The palate is harmonious and poised, very focused and tensile, plenty of energy with a touch of lime and clementine towards the persistent finish. This is an outstanding Chablis that should age supremely well in bottle.Vinous Media | 94-96 VMOne of the domaine’s standout wines, this immediately strikes you with its precision and clarity. Fevre’s vines are from two different sites, with varying expositions - one lower down and facing south-east, the other high on the plateau. Great elegance with plenty of weight and concentration on the palate, full and fleshy. Grapefruit notes to the fore but plenty of mineral/saline notes on the long, persistent finish. 2020 Domaine William Fevre Chablis Grand Cru Les Clos

Fèvre’s largest grand cru, with 4ha located higher up in Les Clos, meaning this is cooler climate and with much more chalk than Kimmeridgian. 50% of the vines were planted by William Fèvre’s father in the 1940s. Perfect balance between precision, concentration, acidity and ripe fruits, with oak that’s not at all apparent. A fresh, glorious wine.Decanter | 97 DECChoosing a favorite among the last three grand crus in the Domaine Fèvre lineup is simply impossible in 2020. The les Clos is yet another stunning young wine, offering up a refined and complex bouquet of pear, tart orange, fresh lime, flinty, chalky minerality, citrus peel, dried flowers and a nice touch of smokiness. On the palate the wine is deep, full-bodied, focused and seamlessly balanced, with a beautiful harness of acidity, a great core of fruit and a very long, very minerally and oh, so complex young finish. Unwinding in the glass with aromas of confit citrus, fresh bread, oyster shell, orange zest and crisp orchard fruit, it’s full-bodied, satiny and muscular, with a concentrated, tensile profile and a long, intensely saline finish. It’s the broadest and most powerful wine in the range, while remaining quintessentially Chablisien.Robert Parker Wine Advocate | 96 RPA cool, restrained and airy nose grudgingly divulges its combination of lemon rind, green apple, quinine and acacia blossom scents that are also trimmed in discreet wood. There is again excellent volume and concentration to the powerful and muscular flavors that also coat the palate with dry extract on the impressively complex and hugely long finish. This is classic Les Clos in that it manages to be at once big and overtly powerful while remaining refined and classy. This is, in a word, stunning.Burghound | 96 BHThe 2020 Chablis Les Clos Grand Cru comes from 10 parcels scattered mainly over the top of the hill. It has a well-defined, crisp and (for the vintage) quite austere nose due to the location higher up the slope. The fresh palate is nicely detailed with lime and lemon thyme and good salinity. Quite strict on the mineral-driven finish. 2020 Domaine Rene et Vincent Dauvissat Chablis Premier Cru La Forest

A striking young wine, Dauvissat’s brilliant 2020 Chablis 1er Cru La Forest unfurls in the glass with aromas of crisp orchard fruit, orange oil, pear, oyster shell, freshly baked bread and smoke, framed by a deft touch of reduction. Medium to full-bodied, deep and multidimensional, it’s taut and concentrated, with racy acids, chalky structuring and a long, searingly mineral finish. Recent years have delivered so many brilliant renditions of La Forest that it’s hard to pick a favorite between the likes of 2008, 2014, 2017 and 2019, but the 2020 is certainly a worthy entrant into the competition, and it’s worth a special effort to seek out.Robert Parker Wine Advocate | 95+ RP(Domaine Vincent Dauvissat Chablis "La Forest" 1er Cru White) A highly complex nose combines notes of citrus rind, sea breeze, petrol and shellfish. There is excellent size, weight and intensity to the more robust and muscular if less refined flavors that brim with dry extract before terminating in a mineral-driven and bone-dry but not really austere finale. I very much like the balance, and this should also age gracefully yet it’s not so structured that it couldn’t be approached after 5-ish years if desired. (Drink starting 2030)Burghound | 92-94 BH(Chablis “la Forest”- Domaine Vincent Dauvissat) The 2020 la Forest from Vincent Dauvissat is truly outstanding this year and reminds me very much of the great potential I saw when I first tasted vintages like 1985 and 1990 here, which also were so classically-cut out of the blocks. The superb aromatic constellation delivers scents of apple, pear, lemon, a beautiful base of chalky minerality, paraffin, vanillin oak and a lovely floral topnote that shares a mix of white lilies and lime blossoms. On the palate the wine is pure, precise and full-bodied, with impeccable focus and grip, a lovely core of fruit, outstanding soil undertow and a long, zesty and finish that closes with snappy acids and a complex, seamless finish. A classic in the making. (Drink between 2026-2065)John Gilman | 94+ JGThe 2020 Chablis Fôrets 1er Cru is backward on the nose, the most stubborn and recalcitrant of Dauvissat’s Premier Crus despite rigorous coaxing. The powerful palate is linear, like the Montée de Tonnerre, but displays a little more puissance toward the finish. But, maybe, the Montée has more charm. We will see.Vinous Media | 91-93 VM

This is still a bit closed on the nose, but on the palate it is rippling with ripe-apricot and orange character. Dense and rich, almost to the point of being unctuous, although this is properly dry. Serious tannin structure behind the lavish exterior, which, together with the fresh acidity, keeps this on course through the very generous finish. Drink or hold.James Suckling | 98 JSBouchard’s holding here is superb: 0.90ha on the edge of the Puligny side at midslope between Ramonet and Domaine de la Romanée-Conti. In 2019, Bouchard emphasised the richness by picking this parcel last. Ripe apples, white flowers and even a touch of honey make their appearance on the nose, while the texture on the palate is unctuous and deep without being heavy. There is still enough freshness to keep this lively through the intensely long finish. (Drink between 2024-2039)Decanter | 97 DECAromas of white flowers, fresh peach, toasted bread, mandarin oil and pastry cream introduce Bouchard’s 2019 Montrachet Grand Cru, a full-bodied, layered and multidimensional wine that’s deep and concentrated, with racy acids, terrific mid-palate amplitude and a long, saline finish. Broad shouldered and powerful without being at all overbearing, it’s an exemplary rendition of this celebrated site.Robert Parker Wine Advocate | 95-97 RPThe 2019 Montrachet Grand Cru has a complex bouquet of crushed chalk, mirabelle, apricot and light vanilla pod aromas, plus just a touch of white chocolate in the background. The palate is well balanced with a fine bead of acidity, quite powerful and very well defined. Orange zest, mandarin and lemon thyme notes feature on a very long finish that fans out extremely well. Superb. Vinous Media | 94-96 VMSpicy and notably ripe yet fresh aromas of petrol, white peach and plenty of floral elements give way to slightly finer though less concentrated flavors that possess focused power and evident minerality on the compact, youthfully austere and more structured finale that flashes huge length. 2018 Rene & Vincent Dauvissat Chablis Grand Cru Les Clos

The Dauvissat holdings have been reduced to three parcels now - two above the road and one below it - but there has been no corresponding drop in the quality of this superb wine. Still showing quite a bit of oak at this young age, it has salty, savoury, iodine-scented intensity, impressive concentration and the energy and balance to age superbly in bottle. Always one of the best wines in the appellation. (Drink between 2022-2033)Decanter | 96 DECBright medium yellow. At once penetrating and refined on the nose, with high-pitched aromas of lemon, orange zest and oyster shell accented by cinnamon and ginger spice notes. Wonderfully juicy and vibrant in the middle palate, conveying an impression of outstanding tactile density without weight. Flavors of pineapple, white pepper and salty minerality are at once generous and chewy. This beautifully balanced, fresh grand cru boasts outstanding inner-mouth energy and finishes with steadily rising length and an impression of solidity. This wine, incidentally, was spectacular from the outset. (picked on September 29 with between 12.5% and 13% potential alcohol, according to Dauvissat; 4.5 g/l acidity)Vinous Media | 96 VMThe 2018 les Clos from Domaine Dauvissat is another absolutely superb wine in the making. It offers up a deep, pure and complex bouquet of pear, apple, minerality that is both flinty and chalky in personality, citrus blossoms and a bit of lemon peel in the upper register. On the palate the wine is deep, full-bodied and rock solid at the core, with a bit more early reserve than the les Preuses is showing right now. The finish is very, very long, mineral-driven and snappy, with excellent focus and grip and impeccable balance. First class les Clos in the making. (Drink between 2026-2075)John Gilman | 95+ JGAromas of pear, green apple and citrus oil mingling with hints of fresh bread and oyster shell introduce Dauvissat's 2018 Chablis Grand Cru Les Clos, a full-bodied, layered wine that's ample and elegantly muscular, girdled by bright acids and revealing more overt structure than Les Preuses at this stage. Concluding with a long, chalky finish, even in the demonstrative 2018 vintage, this will merit a bit of patience.Robert Parker Wine Advocate | 95+ RPThis is so much more closed than many other Les Clos 2018s I have tasted. (Drink between 2024 - 2045)John Gilman | 91 JGThe 2020 Chablis Village has a fragrant orange blossom bouquet, delicate at first, then gaining in intensity and revealing touches of white tea. The palate is well balanced with markedly more weight than the Petit Village. A very subtle spearmint trait toward the finish lends another layer of complexity. This only just has its nose ahead of the Petit Chablis.Vinous Media | 88-90 VMA more restrained but equally fresh nose features notes of green fruit, oyster shell and lemon-lime wisps along with a very subtle dollop of menthol. There is excellent intensity to the sleek, detailed and delicious medium-weight flavors that terminate in a clean, dry and sneaky long finish. Profound, concentrated, prominent lime/lemon zest on the palate, a touch of honey, confited citrus zest to finish. So long. A profound Chablis.Decanter | 93 DECThe 2021 Chablis Village is a clear step up from the Petit Chablis, beautifully defined with light pressed flower scents that complement the granite scents. The palate is saline on the entry with a fine bead of acidity, fine depth with quite a persistent finish. Elegant and somehow, understated.Vinous Media | 89-91 VMA more floral and more citrus-infused nose speaks of cool and admirably pure aromas of iodine, ocean breeze and green apple along with a hint of the exotic. The rich and solidly concentrated medium-weight flavors also possess excellent length on the bright, clean and very dry finish. This chiseled and promising effort should amply repay 7 to 10 years of cellaring.Burghound | 90 BHThe Domaine Dauvissat 2021 Chablis AC is also an outstanding example of its respective level, delivering a vibrant and complex nose of fresh lime, apple, a lovely base of chalky minerality, just a touch of oyster shell and a topnote of straw. One of the Dauvissat specialities, the La Forest is a triumph in 2021. From seven small parcels, the total site is less than 1ha with average vine age more than 40 years. Intriguing, slightly smoky nose, highly distinctive and different to others in the range. Plenty of power, ripe stone fruit flavours, zesty citrus acidity with a herbaceous edge adding an extra dimension. Definitely of grand cru quality.Decanter | 95 DECThe 2021 Chablis 1er Cru La Forest is a young classic, mingling scents of sweet citrus oil and peach with notions of white flowers, struck match, bee pollen and youthful reduction in an incipiently complex bouquet. Medium to full-bodied, fleshy and textural, it’s concentrated, taut and incisive, with a long, mineral finish.Robert Parker Wine Advocate | 94 RPThere is a hint of phenolic character on the aromas of crushed leaf, mineral reduction, lemon-lime and seaweed. The denser, succulent and powerful larger-scaled flavors are supported by a firm acid spine on the stony, youthfully austere and bitter citrus rind finale. This is quite dry and I very much like the balance though I would note that at least some patience is strongly suggested as this is quite tightly wound today. In a word, terrific.Burghound | 94 BHI always think of Vincent Dauvissat’s la Forest as his baby les Clos, as with ten years or more of bottle age, the two often resemble each other a bit aromatically and flavor-wise. The 2021 version of la Forest chez Dauvissat is going to be stellar. The bouquet wafts from the glass in a complex mix of pear, fresh lime, flinty minerality, citrus blossoms, discreet vanillin oak and a topnote of beeswax. On the palate the wine is deep, pure and full, with a superb core of fruit, excellent complexity and cut, fine focus, bright acids and a long, complex and impeccably balanced finish. This is superb. (Drink between 2026 - 2060)John Gilman | 94 JGAlso a fine clear colour, though without a green tint. The Forest 2021 has a solid full fruit on the nose, perhaps less intense at the edges. The 2021 les Clos from Vincent Dauvissat is another brilliant wine in the making. This should evolve into a divine Les Clos but as usual, it will need time.Vinous Media | 94-96 VMGhislain Dauvissat insisted we tasted Clos before Preuses. Dauvissat’s Les Clos shows all the power and weight which one would expect of this famous climat. Stone fruit, minerality, a long saline/salty finish. Very deep, very classy, this just needs around five years in which to mature before it will truly show its best.Decanter | 95 DECA discreet application of wood suffuses the restrained and beautifully layered nose of mineral reduction, iodine, tidal pool, white orchard fruit and a vague hint of phenolic character. The super-sleek, dense and intense broad-shouldered flavors possess a palate etching mouthfeel while delivering simply remarkable length on the stony, austere and very dry finale that is akin to rolling small rocks around the mouth. The intensity really builds as it sits on the palate and overall, this beauty is superb.Burghound | 95 BHOne of the fuller yellow colours and a bouquet that is more ample if perhaps less fine than Preuses. 2022 Domaine William Fevre Chablis Grand Cru Bougros Cote Bouguerots

The very steep aspect of Côte Bouguerots is highlighted by a much greater emphasis on minerality than Fevre’s Bougros. This is a grand cru is every way - so much drive on the palate with plenty of extract, concentration, salinity and length. Certain to keep very well but this is also surprisingly approachable early on. DIdier Seguier says it’s likely to close down after 18-24 months but this is clearly a fine example with masses of potential.Decanter | 96 DECThe 2022 Chablis Bougros Côte Bouguerots Grand Cru has a clean and precise bouquet with hints of wild peach, apricot blossom, Mirabelle and crushed stone. The palate is well-balanced with a very harmonious entry, blackcurrant leaf and spice, crushed stone and what feels like plenty of extract on the finish. This has great potential, but afford it time in your cellar.Vinous Media | 93-95 VMThis is the coolest and most restrained of this group of 2022s with its elegant aromas of prominent mineral reduction, lemon-lime, spice and oyster shell. There is almost painful intensity to the intensely stony and strikingly well-detailed larger-bodied yet still beautifully refined flavors that display huge length on the impeccably well-balanced finale. Small yield, very concentrated, with masses of density on the palate. Plenty of drive and energy but has finesse to balance out the power. White peach fruit characters, vibrant acidity and a pronounced mineral, salty finish. Very long future ahead. Fèvre owns 4.1ha of the 25ha total within Les Clos. Its plots situated on the top of the hill, with 50% of the vines planted by William Fèvre’s father in the 1940s and 1950s.Decanter | 95 DECThis is aromatically quite similar to the Côte Bouguerots but with more floral influence. The rich, big-bodied and tautly muscular flavors are also seemingly chiseled from Kimmeridgian, all wrapped in a wonderfully persistent, very dry, balanced and stony finale. This is also extremely impressive and equally built to repay extended cellaring.Burghound | 93-95 BHThe 2022 Chablis Les Clos Grand Cru has a surprisingly primal bouquet with gooseberry, melon, fruits de mer and citrus peel, with more oyster shell scents developing as it opens, though never quite achieving the flair of the Valmur. The palate is well-balanced, steely and strict, with fine intensity and a saline finish. But it doesn’t quite have the precision of Fevre’s best cuvées at the moment.Vinous Media | 91-93 VM

2022 Domaine William Fevre Chablis Premier Cru Vaillons

This is also aromatically cool and almost as reticent with its airy aromas of white pepper, mineral reduction, essence of pear and a suggestion of wood influence. The gorgeously textured medium weight flavors possess an even more developed sense of refinement while exhibiting fine length on the quinine, stony and bitter lemon zest-suffused finale. This is lovely and a Vaillons of finesse in 2022.Burghound | 90-93 BHThe 2021 Chablis Vaillons 1er Cru had been blended the previous week, during which a majority of the lees is kept. Often one of my favorite cuvées from William Fevre, the entrancing bouquet has impressive intensity on the nose. The palate is well-balanced with lemon verbena and touches of pear, a fine sense of energy and composure, and a persistent finish. This already looks very promising.Vinous Media | 90-92 VMTypical Vaillons perfume and freshness. Precise but with good weight and precision. A classy Vaillons which will drink well when young but will also age. Fèvre owns 3.5ha, with 50% in Vaillons, and the rest spread between Chatains, Roncière and Melinots. Light reduction blurs the detail of the aromas of citrus zest and matchstick. The dense, vibrant and beautifully precise medium-bodied flavors possess slightly better volume as well as a gorgeous mouthfeel while delivering impressively powerful and long palate staining finale. This chalky and impeccably well-balanced effort is excellent and it should also age accordingly.Burghound | 92-95 BHSix barrels made, from small millerand grapes every year. A lime touch to the mid lemon colour. There is class and elegance here, stylish with some dancing minerals. A little touch of wood behind with some cinnamon, but not interfering. The fruit refines further with some fresh granny smith apple notes, and stretches out to an excellent finish. Distinguished and lively, balanced all the way through. Drink from 2027-2033. Offering up aromas of pear, citrus oil, crisp green apple, toasted nuts and white flowers, it’s medium to full-bodied, satiny and layered, with fine depth at the core, racy acids and a taut, electric profile, concluding with a saline finish of impressive persistence.Robert Parker Wine Advocate | 91-93 RPThe 2021 Puligny-Montrachet Champ Canet 1er Cru, just six barrels from one hectare, conveys a sense of strictness on the nose. Some reduction wades through at the moment, disguising the terroir expression that I suspect will manifest in bottle. The palate is well balanced with just the right amount of bitterness on the entry, a little weightier than other cuvées and a tad more rondeur.Vinous Media | 91-93 VMThe 2021 Champ Canet from Domaine Sauzet is also outstanding. Sharing the same purity and precision as the Perrières, the wine offers up a refined bouquet of sweet grapefruit, lemon, apple, a fine base of chalky soil, citrus blossoms and a deft framing of vanillin oak. On the palate the wine is deep, full-bodied and beautifully balanced, with an excellent core of fruit, lovely transparency and cut, snappy acids and a long, complex and very precise finish. A beautifully layered nose freely reveals its aromas of wet stone, apple, pear and full-on floral scents. There is even better mid-palate density to the seductively textured medium weight flavors that possess more evident minerality on the bone-dry and distinctly linear finale that is shaped by overtly citrus-tinged acidity. Pretty and lively colour with a fine floral bouquet, a touch of spring flowers. Punchy in a good way, lemon and lime flavours but with adequate ripeness, leaves an attractive tingle on the tongue and medium plus length. Drink from 2026-2030. The wine offers up a very stylish aromatic constellation of pink grapefruit, lemon, limestone minerality, citrus blossoms and vanillin oak. On the palate the wine is deep, full-bodied and vibrant, with a lovely core of fruit, excellent mineral drive and grip, a fine girdle of acidity and a long, properly reserved finish. This is going to be an excellent bottle, but it will need a bit of bottle age before it starts to blossom. 2021 Etienne Sauzet Puligny Montrachet Premier Cru Les Combettes

The 2021 Puligny-Montrachet Les Combettes 1er Cru has a clean, precise bouquet with apple blossom, white peach, crushed stone and wet pavement scents, beautifully proportioned and focused. The palate is well balanced, certainly one of the more powerful Premier Crus with outstanding length on the finish thanks to its spicy, stem ginger touch. Outstanding.Vinous Media | 93-95 VMFirm reduction completely overshadows the fruit. Otherwise, there is excellent volume to the seductively textured medium weight flavors that exude plenty of minerality that adds lift to the succulent, balanced and gorgeously persistent bitter lemon-tinged finish that goes on and on. This isn’t quite as concentrated as the Folatières but it’s finer and stunningly long. This may not be the best Sauzet Combettes ever but in time, it should be in the conversation, it’s that good.Burghound | 93-95 BHHappily, there is much more 2021 Combettes chez Sauzet than the En Richard, and the wine is every bit as beautiful. The bouquet jumps from the glass in a crystal clear blend of fresh lemon, apple, lime, a complex base of minerality, white flowers, citrus zest, vanillin oak and a lovely topnote of candied lemon. On the palate the wine is bright, full-bodied, deep and pure, with great mineral undertow, snappy acids and laser-like focus on the long, complex and electric finish. Stunning juice.
