Some wines are so good, you almost feel bad while uncorking the bottle. You’d much rather stockpile them in your cellar until you have a collection to rival Dionysus himself. The journey to find the most tempting and inaccessible collector’s wines can be difficult and stressful, but the end result is always worth it. If the stars align, you end up with a selection of wines so awe-inspiring, you just want to sit in your cellar and admire them. There is no occasion in the world that you can’t contribute to with a bottle of extra-rare fine wine, and you can compete with other local collectors and try to outbid them for choice bottles.

The main issue when it comes to acquiring highly collectible bottles is that they’re often hard to obtain. It makes sense, of course – the most prestigious collectibles are the least accessible bottles, ones that can sometimes necessitate a 10-year wait. Also, it should go without saying that many of the world’s finest blends cost a pretty high amount of money. However, that isn’t the case for all of them. At some point, it all comes down to developing an eye for the market and being able to recognize which wines to target before they’re declared classic masterpieces by the general populace.

This is where we come in. The 2017 Montrachet Grand Cru is slightly deeper in color. This has a gorgeous bouquet of lemon thyme, orange blossom and crushed stone, all very focused, followed by an emerging touch of mintiness. The harmonious palate is powerful, ripe and slightly vanilla-y; it just lacks a little breeding and panache. A bold and brassy yet cerebral Montrachet that will need a lot of time. This surpasses all my expectations from barrel. Tasted blind at the annual Burgfest tasting in Savigny-lès-Beaune.Vinous Media | 98 VMThis is youthfully restrained for now with exotic essence of lemon, lime and grapefruit. The intensity and purity of the aromas is really captivating. Strong, flinty minerals and stones, too. Consequently, there was probably a bit less pent up energy here and the vigor was more easily harnessed in 2017. In any case, the 2017 vintage of the Marquis de Laguiche Montrachet is flat out brilliant, offering up a stunning bouquet of pear, apple, lemon, a hint of almond paste, complex, limestone minerality, crème patissière, vanillin oak and a lovely topnote of citrus zest. On the palate the wine is deep, pure, full-bodied and rock solid at the core, with superb nascent complexity, bright, vibrant acids and impeccable balance on the very, very long, racy and utterly classical finish. On the palate, the wine is full-bodied, ample and expansive, with considerable volume and breadth at the core that’s balanced by lively acids that lend the wine energy and tension. The finish is long and pure. The super-fine but intense and tautly muscular large-scaled flavors possess a subtle minerality that carries over to the gorgeously complex, persistent and balanced finish. CIX stands for 109, because this was originally called “Parcel 109” when Aubert bought the vineyard. Planted in 2008 to Montrachet clone, the 2018 Chardonnay CIX Estate is wonderfully intense, exploding from the glass with lime cordial, apricot and mandarin peel scents of citrus, followed by suggestions of jasmine, honey toast and marzipan with a touch of coriander seed. 2018 aubert larry hyde & sons vineyard chardonnay California White

The 2018 Chardonnay Larry Hyde & Sons was of the last vineyards picked, in mid-September. This section of Hyde vineyard is located on the Napa side of Carneros and is planted to Corton-Charlemagne clone on St. George rootstock. It strides confidently out of the glass with a very serious nose of baked apples, pear tart, almond croissant and candied ginger with wafts of struck flint and sea spray. The full-bodied palate is impactful and yet achingly elegant, featuring loads of mineral sparks coming off the apple and pear flavors, delivering a long, satisfying, almond-laced finish. This is still a bit closed on the nose, but on the palate it is rippling with ripe-apricot and orange character. Dense and rich, almost to the point of being unctuous, although this is properly dry. Serious tannin structure behind the lavish exterior, which, together with the fresh acidity, keeps this on course through the very generous finish. In 2019, Bouchard emphasised the richness by picking this parcel last. The 2019 Chevalier-Montrachet Grand Cru needed a little encouragement from the glass. Eventually it reveals captivating scents of honeysuckle, petrichor and pressed yellow flowers, an underlying spiciness that comes through with aeration. The palate has a beguiling symmetry from the start: a killer line of acidity counterbalancing the intensity of this Chevalier, gentle grip towards the spicy and "flowing" finish. The 2019 vintage delivered a wine of impressive concentration and freshness with a pronounced minerality yet the density and richness to carry it to a spectacular finish. 2020 domaine rene et vincent dauvissat chablis grand cru les clos Bugundy White

I generally have a slight preference for Dauvissat’s Les Preuses, a preference I suspect Vincent Dauvissat shares, but the 2020 Chablis Grand Cru Les Clos, at least at this early stage, gets my nod as the king of the cellar—and the wine of the vintage. Wafting from the glass with aromas of citrus oil, fresh bread, oyster shell, white flowers and wet stones, it’s full-bodied, layered and textural, with huge concentration, racy acids and a long, resonant finish.Robert Parker Wine Advocate | 98 RP(Chablis “les Clos”- Domaine Vincent Dauvissat) The 2020 les Clos from Monsieur Dauvissat is every bit as brilliant as the les Preuses. The harmonious, intense, well-defined finish lingers long in the mouth, leaving a spicy, peppery residue on the aftertaste. This full-bodied, incredibly rich and mouth-filling wine from a near-legendary vineyard saturates the palate with poached pears, marzipan, vanilla bean and crème brulee flavors, while being subtly lifted by a slice of tangy citrus that keeps it well balanced. 2021 aubert chardonnay eastside California White

From a somewhat warmer site on thin, volcanic soils overlooking the Russian River, Eastside—originally a collaboration between Ulises Valdez and Mark Aubert—features a Montrachet selection planted on riparia rootstock. Despite plenty of new French oak in the élevage, there’s only a faintly fumé, crushed-stone character on the nose, which nicely sets off the wine’s white peach and lime notes. Full-bodied and generous but sturdily built, with an imposing structure, the 2021 Chardonnay Eastside is powerful and long on the finish. The crop was virtually wiped out by a spring frost in 2020, but the vines rebounded in 2021, yielding 1,400 cases.Robert Parker Wine Advocate | 95-97 RPThe 2021 Chardonnay Eastside Vineyard marries textural richness and vibrancy in grand style. Drink or hold.James Suckling | 99 JSThe 2021 Chardonnay UV-SL comes from largely Goldridge soils in parcels owned and managed by the Valdez family (UV being the initials of Ulises Valdez, Aubert’s frequent vineyard collaborator, who died in 2018). There are 2,000 cases of this elixir, which offers up classic notes of toasted hazelnuts, white peaches and citrus zest. It’s full-bodied, rich and opulent yet contained and controlled, with great silky length and energy. Aubert describes the oak thusly: "The oak is perfect. It just kisses you with a bit of vanilla and cookie dough." The wine is certainly delicious, and thinking back on it, I wonder if my rating is a bit conservative.Robert Parker Wine Advocate | 96-98 RPThe 2021 Chardonnay UV-SL Vineyard is one of the more exotic wines in the range. Initially a bit ethereal, the 2021 opens beautifully on the mid-palate and finish, where it shows tremendous breadth and notable mineral intensity.
