I’ve always had a soft spot for the 1981 vintage as well as these two châteaux. This was the first vintage of Bordeaux that I bought, back in 1984, with some knowledge of the region (or so I thought at the time) and Cos because the first serious vertical that I ever attended was of their wines from 1982 back to 1952. Pavie? Well, to be honest, it was the label that drew me in at first, being all old-timey Bordeaux and all. The first Pavie that I bought was a 1979 from a wine shop in Boston and from the get-go I was hooked on the blend of power and finesse that a St.-Emilion from a great terroir can exhibit. Being able to visit both of these estates in late June of 1989, on the same broiling hot day, sealed the deal.Ninteen eight-one is what some would derisively call a ‘classic’ or ‘restaurant’ vintage. In the old days some would say ‘a useful vintage’ for the fact that the wines are mostly to be drunk while waiting for “great” vintages to mature or to keep ones’ hands off of already mature ‘great’ vintages resting in the cellar. That belittles wines such as these two, I think, because more times than not I crave a graceful, finely delineated and less dramatic wine than one from a blockbuster vintage. Both of these bottles deliver the goods.Purchased by a good friend on release here in New York, both the Cos and the Pavie are decidedly at peak but based on these bottles there’s no need to fear the reaper. The Cos is a textbook rendition of the old style at the châteaux, with intense cigar box, dried cherry, licorice and pipe tobacco character and smooth, harmonious tannins that have all but faded away. As might be expected, the Pavie is more dramatic in character, but still showing the restraint that’s been typical of the ‘81s since release, offering a haunting, floral- and spice-dominated bouquet and plush, seamless plum and cherry flavors. Like the Cos, it’s fully mature but there’s no sign of undue fatigue, either. In both cases, pretty remarkable for 34 year-old wines from a vintage that’s now been mostly forgotten, but not by me.Vinous Media | 91 VM

This wine shows fabulous aromas of stones and flowers with dried fruits and spices. It’s subtle yet full with ultra-fine tannins and a gorgeous, long finish. Drink now.James Suckling | 97 JSA consistently spectacular 1982, this wine provided sumptuous drinking the first 5-6 years after bottling. Since the late eighties the wine has become more structured without losing any of its power, fat, or concentration. It is capable of lasting at least another decade, although I will not quibble with any readers who can no longer defer their gratification. The dense color reveals no amber. Young, primary aromas of black fruits, toasty oak, crushed stones, and flowers dominate the wine’s moderately intense nose. Thick, rich, full-bodied, and multi-dimensional, this is unquestionably the most concentrated Canon I have ever tasted. This large-scaled, super-rich, sweet wine is one of the rare Canons that possesses more depth of fruit than tannin. Drink it over the next 10-15 years. Anticipated maturity: Now-2018. Last tasted, 12/02Robert Parker | 94 RP(Château Canon) The 1982 vintage of Château Canon continues to drink beautifully and is really one of the more flamboyant vintages I have ever tasted from the property. The superb bouquet jumps from the glass in a blaze of black cherries, menthol, a hint of nutskin, a beautifully complex base of limestone soil tones, woodsmoke and a touch of toasty oak. On the palate the wine is deep, full-bodied, complex and very sappy at the core, with excellent focus and grip, melting tannins and a very long, voluptuous and classy finish. A complete, very complex and utterly marvelous Canon. (Drink between 2018-2050).John Gilman | 94 JGShows mint, black tea, [i]sous-bois[n] and sandalwood notes that are distinctive and alluring. Long and refined on the finish, with supple black cherry and boysenberry fruit gliding throughout. Wins mostly on aroma, but there’s still sneaky depth and length here. Lovely.—Non-blind Canon vertical (December 2016). Drink now through 2022.Wine Spectator | 93 WSUnfortunately, the magnum of 1982 Canon poured at dinner was not showing well, though another bottle tasted in Bordeaux attests a decent Saint-Émilion in a period when the estate was long overdue investment. Fully-mature, the nose does not possess the vigour of say, the 1982 Figeac, though there are pleasant hung gamey notes and a scent of a Tuscan delicatessen. The palate has a nice mouthfeel, quite fleshy with tobacco and leather-tinged red fruit; the finish is still quite rustic but with charm in spades. A fine Canon, though not top-flight, and bottles should be drunk soon.Vinous Media | 90 VM

(Château Ausone) The 1985 vintage of Château Ausone was not particularly touted when it was released, but this is a great wine that should ultimately prove to be one of the greatest Ausones of the decade of the 1980s. The bouquet is deep, pure and youthfully exotic, as it soars from the glass in a very vibrant blend of baked cherries, blood orange, menthol, woodsmoke, glorious soil tones, a touch of dill and a potpourri of other more classic fresh herb tones. On the palate the wine is deep, full-bodied, complex and very intensely flavored, with a sappy core of fruit, great soil inflection, ripe, well-integrated tannins and superb length and grip on the tangy finish. A classic Ausone in the making, I would not touch the ’85 for another decade, despite the fact that it is already quite accessible. There are just too many layers of complexity still to unfold here to be opening bottles right now! (Château Ausone) The 1990 vintage of Château Ausone is a stunning wine. There is a purity and soil signature front and center here that is not always evident in wines from this torrid vintage on the Gironde, and Ausone’s signature elegance is now very much this wine’s calling card. The beautiful bouquet wafts from the glass in a blend of red and black cherries, nutskin, cigar wrapper, chalky soil tones, a touch of blood orange and a lovely, floral topnote. On the palate the wine is pure, full-bodied and deep at the core, with superb transparency and grip, modest tannins and a very long, complex and vibrant finish. At age twenty-nine, the 1990 Ausone is just starting to blossom and drink with generosity and refinement, but the more exotic topnotes here have not yet fully emerged and there is even more magic to come for those who can defer gratification for another ten years! Best after 2005. 2,150 cases made. —Wine Spectator | 92 WSAfter revealing some amber at the edge as well as copious aromas of fruitcake, crushed rocks, incense, and a weedy character, the 1990 Ausone offers up sweet, jammy fruit notes as well as a firm finish with the tell-tale crushed rock minerality that this estate often achieves. The aromatics suggest a fully mature wine, but in the mouth, the firm structure and density indicate this effort needs more time. This wine gives off mixed signals, and I suspect it will last much longer than it appears, but only time will tell. There is a lot to like here, but the 1990 is not one of the most profound Ausones, such as those made since 1998. Owners should try a bottle and make up their own minds, but I think it has another 10- to 15-year window of maximum pleasure.Robert Parker | 91 RPThe 1990 Ausone is a vintage that I have tasted half a dozen times, waxing lyrical when I first tasted it way back in 2000, but then my sentiments cooling off with each encounter. It has an exotic bouquet that articulates the growing season more than the terroir – camphor and eucalyptus, quite heady and showy (some might say vulgar but that would be too pejorative.) There is a smear of chocolate on the entry, moderate acidity, fleshy and ripe but missing the complexity of its peers, espresso and dried blood tincturing the fruit on the finish. It is a pleasurable Saint-Émilion rather than a great Ausone. Tasted at the Ausone vertical in London.Vinous Media | 90 VM

An absolutely spectacular Tertre Roteboeuf, probably the only other vintage that will reach this level of quality is the 2000. The 1990 has a deep plum/ruby color with some lightening at the edge and an extraordinarily flamboyant nose of jammy black cherry and berry fruit infused with smoke, caramel, and coffee notes that soar from the glass. This is a very viscous, full-bodied, silky textured wine has a to-die-for finish and enough glycerin and body to get lost. It is just entering its plateau of full maturity. A wow-wow wine! Anticipated maturity: Now-2015. Last tasted, 12/02.Robert Parker | 98 RPDeep red-ruby. Fabulous nose of toffee, coffee, smoke, cinnamon, minerals and a faint animal quality. Extraordinarily thick entry; great density and sweetness but with plenty of underlying acidity and backbone. As with the voluptuous ‘89, there’s lovely delineation of flavor beneath all the glycerine. Finishes with a wave of melting tannins. Kept revealing additional nuances as it opened in the glass. Along with the ’90 L’Angelus, a great example of what can be done with controlled yields, 100% new oak, and - minimal filtration. This wine is now putting most of Bordeaux’s bigger names to shame.Vinous Media | 94 VM

Good medium color, less saturated than the ’95. Pungent, vibrant aromas of sappy berries and resiny oak, with an intriguing floral nuance. At once thick and polished on the palate, with an herbal, peppery complexity. Very long, subtle aftertaste, with some vanillin oak and a slight tannic edge. Not quite as ripe or seamless as the ’95, but a very classy, intensely flavored wine that should put on weight in bottle.Vinous Media | 92 VM

Flower and berry character, with hints of clove and black pepper. Full-bodied and very rich, with decadent flavors. Oozes with ripe fruit. Goes on and on. Fabulous.--’95/’96 Bordeaux retrospective. Best after 2008.Wine Spectator | 96 WSAusone’s extraordinary minerality is present in the 1995, yet there are more aromatics, a richer, more multidimensional palate impression, and a fuller texture - all with the terroir brilliantly expressed. The wine boasts a dense ruby/purple color and an emerging but tightly-knit nose of spring flowers, minerals, earth, and black fruits. Rich, with an opulent texture and surprising sexiness for a young vintage of Ausone, the medium-bodied 1995 displays exquisite balance between its acid, tannin, alcohol, and fruit. Although it is not yet seamless, all the elements are present for an extraordinary evolution in the bottle. This wine will age at a glacial pace for 30-40 years. Anticipated maturity: 2010-2045. Last tasted, 3/01.Robert Parker | 93 RPDeep violet-tinged ruby. Lively cassis, black cherry, tobacco and smoky oak aromas. Lush and dense, though a bit shocked by the bottling. Combines the penetrating, juicy quality and class of previous vintages of this wine with the more opulent texture and suaver tannins craved by so many of today Bordeaux lovers. May well eventually merit a higher score, but will it surpass the ’96?Vinous Media | 92+ VM

I have never tasted such an impressive Clos Fourtet. I had it on three different occasions, and it was consistently brilliant. The stunning black/purple color is accompanied by aromas of sweet blueberry/blackcurrant fruit interwoven with wet steel/mineral-like scents, and subtle oak. Hugely concentrated, yet only medium-bodied, this dense, thick, gorgeously pure, well-balanced wine is the finest Clos Fourtet made in the last 3-4 decades. Although there is plenty of tannin, it is sweet as well as beautifully integrated, so I suspect this wine will evolve more rapidly than many wines of this vintage. A fine wine, this dark purple-colored effort reveals black raspberry, blackberry, mineral, and floral aromas in its complex, multidimensional bouquet. In the mouth, it is medium-bodied, with sweet, ripe fruit, firm tannin, good acidity, and a long, well-endowed, moderately tannic finish. Moreover, it will be a long-lived wine. Tightly wrapped and firmly minerally in the mouth, with a note of shoe polish. Extremely primary for the vintage. Plenty of richness here. Good deep ruby. Complex, sauvage aromas of black raspberry, smoked meat and leather. Soft, sweet and expressive; shows a considerably stronger animal aspect than either Canon La Gaffeliere or Mondotte, Stephan von Neipperg other St. Emilion wines. Quite suave and fresh for the year. Finishes long and ripely tannic. Half of this wine was fermented in wood cuves, which von Neipperg feels has resulted in a more successful integration of the tannins.Vinous Media | 89-90 VM

One of the wines of the tasting, this has standout quality and is certainly impressive in terms of (relative) value, holding its own next to Figeac and Cheval Blanc. The 17 days over 38°C in August meant the limestone soils were key, as in 1989. It’s a beautiful wine, luscious, juicy and rich in black fruits, and still young. The Lurtons owned Clos Fourtet until 1998, when it went to the Cuveliers, so this was Pierre Lurton’s last vintage as director - and this means he had a hand in two wines in this line up, which must be pretty unusual! Harvest took place from 28 September to 4 October. Aged in 90% new oak.Decanter | 97 DECGorgeous violet, mineral, tobacco and berry character. Full-bodied, with extremely well-integrated tannins, a very silky mouthfeel and a long finish. Best after 2007. 5,250 cases made.Wine Spectator | 92 WSA strong effort from Clos Fourtet, the dark ruby/purple-colored 1998 offers pure blackberry and cherry aromas with subtle wood and licorice in the background. Medium-bodied, exceptionally pure, with low acidity as well as silky tannin, this sexy offering is ideal for drinking now and over the next 14-15 years.Robert Parker | 90 RP

Unbelievable nose of black truffle, meat and blackberry. Breathtaking. Full-bodied and very tight, with superpolished tannins and a finish that goes on for minutes. Really is exceptional. Still a baby; give it years. I am blown away. Keeps coming with truffles. Every time I taste it, it gets better.Wine Spectator | 98 WSAn amazing tour de force in winemaking, this massive, opaque black/purple-colored offering boasts an extraordinarily pure nose of black fruits intermixed with cedar, vanillin, fudge, and espresso. It is unctuously-textured, with exhilarating levels of blackberry/cassis fruit and extract, as well as multiple dimensions that unfold on the palate. The 50-second finish reveals moderately high tannin. Despite its similarity to dry vintage port, it is not a wine to drink early. It is a colossal wine! Anticipated maturity: 2008-2035. The ultimate garage wine, La Mondotte is ultra-concentrated, frightfully expensive, yet worth every cent.Robert Parker | 96 RPFull medium ruby. A very powerful, muscular style of St. Emilion, with a stronger impression of acidity than the ’99. Beautiful aromas of chocolate, berries and vanilla, with hints of raspberry. Full-bodied, with lovely, sweet fruit and layers of velvety tannins. Goes on and on. Best after 2012. 830 cases made.Wine Spectator | 95 WSAnother quasi-garage wine made from 10.6 acres of vines planted with 85% Merlot, 10% Cabernet Sauvignon, and 5% Cabernet Franc, this wine enjoys malolactic fermentation in barrel, aging on its lees, and while unfined, does receive a light filtration.A superb effort, the dark ruby/purple-colored 1998 offers gorgeous aromas of flowers, blackberries, cherries, smoke, licorice, and spice box. It is deep, succulent, medium to full-bodied, with decent acidity, superb purity, and a creamy texture. Tannin is present, but it is well-integrated and balanced by the wine’s depth. Very silky and plummy, with excellent depth of flavor but very good rather than outstanding complexity. Suggestions of surmaturite give this a slight heaviness. An earthy red with dried meat and ripe fruit. Full body and smoky character with mushroom and smoked-tea undertones. Chewy finish still. Drink now.James Suckling | 93 JSThis wine has a very youthful color and seems to be close to full maturity, without the density of the 1998, or its successor, the perfect 2000. It has abundant foresty notes, plenty of spice box, blackcurrant and black cherry fruit, some background toasty oak, medium to full body and sweet tannin. A very delicious wine, it offers a complex and fragrant style. It should be drunk over the next 12-15 yearsRobert Parker | 92 RPThe 1999 Pavie shows very similarly to another ex-château bottle encountered a few months earlier. It has an attractive bouquet that has mellowed in recent years, notes of bacon fat and mint infusing the red and black fruit. The palate is medium-bodied with grainy tannin, red fruit, a touch of hung game and a tarry finish that does not convey the same level of freshness and delineation as the 1998 and 2000 do nowadays. A seductive Pavie, though less turbocharged than subsequent vintages. Tasted from an ex-château bottle at the estate.Vinous Media | 92 VMA relatively forgotten year sandwiched between the great ’98 (for the Right Bank) and ’00, this is gentle, with mulled plum and red currant fruit supported with light cedar and alder notes. Mature, with dried tobacco and a flash of earth through the finish. Not in the league of the other wines in this flight, but, notably, it doesn’t feel as if this wine was overdone; rather, it’s an accurate expression of the vintage.--Non-blind Pavie vertical (March 2017). This opaque, purple-colored 1999 boasts a gorgeous nose of blueberry liqueur intermixed with cedar, spice box, coffee, and cassis. It is extremely supple-textured, spicy, with an expansive, savory, full-bodied palate, no hard edges, and a finish that lasts for nearly 35 seconds. This is an amazing wine for the vintage. It will be at its finest between 2003-2018. A brilliant effort!Robert Parker | 94 RPFull ruby-red. Bright, fruit-driven aromas of raspberry, plum and cassis, with a floral nuance. Concentrated, primary and strong in extract; shows impressive texture and depth for the year. A full-bodied red with soft and silky tannins that gives the wine definition and brightness. Savory and fresh. Beautiful now.James Suckling | 93 JSA revelation, this stunning wine (also reasonably priced) has turned out to be even better than I thought. Opaque purple-colored, with gorgeous ripeness and richness, a big, sweet mid-palate, and a seamless finish revealing loads of fruit, chocolate, glycerin, and ripe tannin, this opulently-styled 2000 will have few detractors. It is hard not to be totally seduced by this effort. Kudos to proprietor Bernard Magrez and his omnipresent oenologist, Michel Rolland. Bravo! Anticipated maturity: Now-2015.Robert Parker | 91 RP

This is a big upgrade for this spectacular micro-cuvee, a true garage wine from a 4.4-acre vineyard. A blend of 90% Merlot and 10% Cabernet Franc, I always find Gracia to be reminiscent of Ausone. The dense, rich 2000 reveals notes of a spring flower garden intermixed with smoky barbecue meat, blackberries, black currants, and crushed rocks. The extraordinary perfume is followed by a wine of great depth and richness, full-bodied power, and not a hard edge to be found. This velvety blockbuster is just beginning to strut all its stuff, and should age easily for another 15+ years.Robert Parker | 96 RPBright medium ruby. Superripe, slightly medicinal kirsch aroma, complicated by licorice, earth and exotic oak tones. Plump and smooth, with impressively concentrated flavors of liqueur-like black raspberry and black cherry. Finishes with big, dusty, late-arriving tannins and a note of roast coffee. Considerably less primary than the 2001 and 2002 vintages, but undeniably sweet and fat.Vinous Media | 91 VM

Although still youthful, I do not think the 2000 Monbousquet will develop much more complexity. It is a seductive, rich, generously endowed effort revealing plenty of spice box, herb, black currant, kirsch, espresso, and toasty oak characteristics in a decidedly modern, but opulent, fleshy style. Enjoy this endearing, long, velvety-textured St.-Emilion over the next decade.Robert Parker | 93 RPBright ruby-red. Roasted currant and black cherry scents complicated by sexy oak. At once chewy and silky in the mouth, with complex, fresh flavors of plum, redcurrant, vanilla, coffee, smoky oak and woodsy underbrush. Finishes sweet and long, with thoroughly ripe tannins.
