Looking at the flagship estate Viognier, the 2021 Viognier Estate boasts a vibrant, medium to full-bodied, incredibly focused and mineral-driven profile that reminds me of a Condrieu from pure granite soils. Tangerine oil, honeyed flowers, brioche, and citrus notes all emerge on the nose, and it hits the palate with medium to full-bodied richness, a layered, seamless mouthfeel, and one heck of a great finish. I finished my note with "Love it." There’s textural richness and density on the palate, though this is medium-bodied and elegant overall. The 2021 Chianti Classico Gran Selezione Badia a Passignano is one of the best editions of this wine I have ever tasted. Ripe blue-toned fruit, spice, chocolate, leather and licorice fill out the layers in an ample, full-bodied Gran Selezione. Here, too, changes in vinification and aging yielded a wine that marries refinement with textural resonance. Superb.Vinous Media | 95 VMThe Badia a Passignano vineyards, close to the Tenuta Tignanello estate, lie at an altitude of between 250 and 300 metres above sea level and are surrounded by 600-metre high hills to the east and southwest, which form a protective amphitheatre. This area is described by Antinori as a ‘geographical liaison between the UGA of San Casciano and the UGA of Panzano’. It has a Mediterranean climate with mild winters and summers that remain fresh and well ventilated. This in turn encourages a longer, slower ripening season. The 2021 has some notes of green herb as well as bitter cherry, orange zest and sweet vanilla. There is a touch of forest greenness and a balsamic note, as well as spicy black pepper. On the palate the tannins are firm, upright and assertive but always refined. There is a beautiful soft, enveloping texture and weight, and the acidity gives mouthwatering freshness on the finish. It is a little oak-dominant at present, but is still young and needs time. A beautifully made wine that expresses a strong identity.Decanter | 95 DECI had previously reviewed this vintage closer to its commercial release. Tasted seven months later, the Marchesi Antinori 2021 Chianti Classico Gran Selezione Badia a Passignano has fleshed out nicely and has successfully shedded its oak signature. What you get now is a pretty mouthful of rich, ripe black fruits with background notes of green spice and smoked bacon. There is a hint of fragrant rose that emerges beautifully at one specific point a few minutes in. This expression from the San Donato in Poggio UGA delivers bright and lively fruit overall. With a storied winemaking tradition and first produced in 1988, you could say that this wine is the control sample against which the three new UGA expressions are measured.Robert Parker Wine Advocate | 94 RPA deep well of cherry, pomegranate, iron, tobacco and wild herb aromas and flavors highlights this intense red, while a dense layer of tannins provides support. The 2021 Sage Ridge Vineyard Cabernet Sauvignon has an opaque purple-black color. It comes barreling out of the glass with vivacious black raspberries, black currant jelly, and mulberries scents, leading to touches of rose oil, bay leaves, cedar chest, and graphite, with a hint of cardamom. The big, concentrated, full-on, full-bodied palate completely coats the mouth with decadent black fruit preserves layers, supported by firm yet plush tannins and seamless freshness, finishing with epic length.The Wine Independent | 97 TWIFrom a site north of Lake Hennessey, the 2021 Cabernet Sauvignon Sage Ridge Vineyard (100% Cabernet Sauvignon) has more red and black fruits as well as a kiss of bloody, iron-like nuances in its tapenade, violets, and incense-driven aromatics. Brought up all in new barrels, it has a forward, layered, mouth-filling texture, nicely integrated tannins, and terrific overall balance. It has plenty of upfront appeal even today, yet I wouldn’t be surprised to see this close down slightly within a year or three of bottle age. The 2021 Red Wine California is a new Bordeaux-based red wine that Duncan Arnot and Nathan Roberts made initially to take the place of the 2020 Cabernets that would have been released around this time but were compromised by smoke. The Red Wine was initially intended to be a fun project, but Arnot and Roberts may have stumbled into what is really a pretty serious red with real potential. The 2021 is 60% Cabernet Sauvignon (Massa, Bedrock and Gordenker), 20% Cabernet Franc (Persia) and 20% Merlot (Massa). A powerful, old-school wine, the 2021 is going to need a few years to shed some tannin. I loved it.Vinous Media | 95+ VM

Perfumed nose, full of pot pourri, scented flowers, dried raspberries and cherries. Really quite evocative, maybe in a vertical you’d pick this out from the nose but it smells wonderful and rich with cool blueberries. Round and charming, this is gorgeously soft, tannins are so inviting, caressing the mouth, not deep at all, this is delicate and primed to float across the tongue, registering the flavours but no heaviness. Almost ethereal in its performance. Really very delicious, full of flavour and character. Gorgeous styling and only got better after half an hour in the glass. Succulent, mineral, graphite, limestone touches on the finish remind you where you are.Decanter | 97 DECFull-bodied, but so elegant and fresh, with a silky, elegant tannin texture. Very deep and expansive. Lots going on already with plenty of perfume. Blueberries, cloves, lavender and some wild-berry notes. Dark cocoa, too. Some espresso character at the end. Wonderful interplay of spices and fruit. Long. It keeps going.James Suckling | 96-97 JSWith 65% Cabernet Franc, this is a structured wine. Fine perfumes show in the sandalwood and toast aromas, and this luscious wine is dense and solid with tannins for aging. It is concentrated, but with elegance and a bold freshness at the end. Drink from 2028. Wine Enthusiast | 96 WEA blend of 65% Cabernet Franc and 35% Merlot, the 2021 Ausone has a deep garnet-purple color. It storms out of the glass with an initial burst of juicy black plums, blackberries, and Bing cherries, leading to an undercurrent of fragrant soil, wet slate, lilacs, and tar, with a touch of bay leaves. The light-bodied palate has impressive intensity and tension, featuring a frame of beautifully ripe, rounded tannins to support the tightly stacked black and red berry layers, finishing long and mineral-laced. Around 16,000 bottles were made.The Wine Independent | 96 TWIThe 2021 Ausone is a gorgeous wine, but it is also quite reticent and in need of time to come around. The operative word here is balance, as all the elements are so well put together. Soft, gentle contours wrap around a core of succulent red/purplish fruit, blood orange, spice, lavender, rose petal and dried herbs. The 2021 is compelling.Vinous Media | 95 VMThe 2021 Ausone was the fruit of a challenging growing season, the estate’s second year in organic conversion coinciding with notable diseases pressure, but the resulting blend of 65% Cabernet Franc and 35% Merlot (featuring a touch more Cabernet Franc than normal) was one of the most seductive wines of the en primeur campaign, its exotic perfume and crystalline purity evoking the great Ausone vintages of yesteryear and offering an unvarnished representation of this superb limestone terroir. In bottle, the 2021 remains an excellent wine, but at least out of the gates, its élevage (in 90% new oak, predominantly from Demptos and Taransaud, with four rackings) has taken the lead, intermingling aromas of vanilla, spices and toast with discreet notes of minty dark berries, cherries, petals and pencil shavings. On the palate, it’s medium to full-bodied, layered and fleshy, with an ample and enveloping core of fruit that retains its energy and purity but which gives way to a finish marked by somewhat assertive barrel tannins. Given the inherent quality of the wine and the terroir, I’m sure time will be kind to it, but I’m not quite sure it will ever realize the magical potential it showed in April 2022.Robert Parker Wine Advocate | 94+ RPThe Grand Vin 2021 Château Ausone is Cabernet Franc-dominated, made from 65% Cabernet Franc and 35% Merlot that saw the same 20 months in 90% new French oak. It offers classic notes of redcurrants, cassis, iron, spicy wood, and graphite, with hints of tobacco and thyme in the background. Rich, medium to full-bodied, concentrated, and tight on the palate, it has beautiful mid-palate depth, ripe, balanced yet present tannins, and a gorgeous finish. It will need 7-8 years, if not a decade, to hit maturity but is a beautiful, elegant, gorgeous Ausone that will be one of the longest-lived in the vintage.Jeb Dunnuck | 94 JD

Welcome to the dark side of the pinot noir force! Deep and dangerous with enormous concentration, this full-bodied pinot noir has stacks of damson-plum and blackberry fruit, but is also extraordinarily fresh and decisively dry. Enormously long, velvety finish in which violet, smoke and stony minerality are seamlessly interwoven. Drinkable now, but best from 2025.James Suckling | 97 JSMeaning "notebook" in French, the 2021 Pinot Noir Cahiers takes on more layers of lifted spices and ripe red fruit, with orange oil, white pepper, and sage. Medium to full-bodied, with rounded fruit on the mid-palate, fine tannins, and a good finish, it’s drinking well now, although it’s leaning toward its primary fruit. It will continue to improve over the next couple of years. Drink 2024-2034.Jeb Dunnuck | 94 JDI could fill a notebook with descriptions of this wine’s aromas. The list is longer, but aromas include marionberries, blackcurrants, beeswax, the saline of a fresh-shucked oyster and warm masala chai spices. The wine’s smooth texture, modest acidity and silky tannins match up with rose petal and raspberry flavors. Wine Enthusiast | 91 WE

So harmonious, structured and elegant, layering savory, mineral notes with beautiful fruit and spices on a muscular texture. Made from the original vines that Josh Jensen planted in 1975, it has harmony and breadth that are captivating. Earthy, savory, white peppery flavors mingle with sour cherries and sweet cherries on the palate. A great wine that deserves to age for a while. Drinkable now, but best from 2030.James Suckling | 97 JSAn intense yet elegant density, loaded with aromas of strawberry, blueberry and wild mints, enlivens the nose in this bottling from a vineyard planted at 2,200 feet in 1975, now yielding less than a ton per acre. The palate is broad and juicy with wild currant flavors that are cut by star anise and singed pine needle. Drink now-2041.Wine Enthusiast | 97 WELike the Selleck Vineyard, the 2021 Pinot Noir Jensen Vineyard was aged in 30% new French oak (18 months), with the balance in neutral barrels. It’s a slightly bigger wine than the Selleck and has a beautiful array of red and black fruits as well as some underbrush, chalk, sappy flowers, and some meaty, gamey nuances. These carry to a medium to full-bodied Pinot Noir with terrific overall balance, a focused, elegant mouthfeel, plenty of concentration and density, and a great finish. It’s another wine that deserves 3-5 years of bottle age and is going to age brilliantly.Jeb Dunnuck | 96 JDThe 2021 Pinot Noir Jensen Vineyard is another wine of incredible depth and richness, reflective of the nearly 50-year-old vines on this elevated site (2,200 feet). Though it’s as brawny and aromatically closed as the other 2021s today, it displays sheer seamlessness and textural harmony on the palate. Dried cherry, cinnamon, graphite and white pepper emerge, once again shyly, but an extra measure of savory nuance and juicy freshness here is alluring. A Saint-Estèphe of stature and vertical intensity, the 2021 Calon Ségur dazzles from the very first taste. Spice, menthol, licorice, black cherry, mint and espresso are some of the many notes that build with a bit of coaxing. The 2021 clocks in at a modest 12.9% in alcohol, yet it possesses tremendous density and textural resonance. What a wine! Tasted two times.Vinous Media | 97 VMA fine Calon Ségur this year with 92% Cabernet, the highest in the blend since the 2009 vintage. This is rich and dark with a spiced nose full of black chocolate and black pepper edged by soft floral notes. Graceful and refined on the palate bursting with freshness and such integrated tannins. Smooth but on the mineral edge so you get that hint of austerity/salinity together with the acidity giving this some sharpness and high definition. It’s got concentration and depth but at the moment it’s so linear and detailed in its precision that it’s coming across very straight and taut. Tannins have some grip and this has a nice weight on the mid-palate leading into a long finish. I adore the sweet salty tang at the end. I’m looking forward to tasting this in bottle. 1% Petit Verdot completes the blend. 3.65pH. No chaptalisation. A yield of 36hl/ha. 20 months ageing, 100% new oak barrels.Decanter | 95 DECThe Grand Vin 2021 Château Calon Ségur is one heck of a winner in the vintage and is 81% Cabernet Sauvignon, 11% Cabernet Franc, and the rest Merlot and Petit Verdot. Hitting 12.9% alcohol, its deep purple hue is followed by a gorgeous bouquet of cassis, violets, ripe darker raspberries, and spring flowers. It’s elegant and has a great mid-palate, ultra-fine tannins, and a great finish. It’s unquestionably one of the gems from the Médoc and will round into form with 3-5 years of bottle age and, I suspect, be long-lived.Jeb Dunnuck | 94-97 JDRevisited in bottle, the 2021 Calon-Ségur opens in the glass with aromas of dark berries mingled with aromas of violets, pencil shavings, lilac, Indian spices, cigar wrapper and grilled meats. Medium to full-bodied, dense and suave, with powdery tannins, lively acids and a penetratingly sapid and discreetly carnal finish, it appears to have lost a touch of aromatic precision during élevage, but it remains a compelling Calon-Ségur.Robert Parker Wine Advocate | 93 RPA step ahead of the pack in this vintage, this offers a hint of polish to fleshier-than-most cassis and plum puree flavors. Solidly built, with a well-buried chalky spine, plus tangy acidity. Lilac, bay and black tea notes add range on the finish. Shows the vintage’s taut character, but this has more depth and better proportion than most of its colleagues. Cabernet Sauvignon, Cabernet Franc, Merlot and Petit Verdot. The 2021 Canon shows just how magical this site is. Vertical and explosive in feel, with tons of pure power, it impresses with its intensity, drive and super-classic profile. Bright saline notes and vibrant tannins give the 2021 a feeling of energy that only gains momentum with time in the glass. It’s not an easy Canon, like the 2015 or 2018, but it is incredibly expressive. It is the sort of wine that only truly emerges with time in bottle. I would be thrilled to own it. Canon must surely be one of the great relative values in first-class wine. Wow. Tasted two times.Vinous Media | 97 VMLots of crunchy red cherries and blue plums followed by violets, fresh sage and Christmas spices with baking spice and coconuts. Medium- to full-bodied with superb fine-grained racy tannins and beautifully refreshing acidity that gives an edge to it. Gorgeous finesse and elegance with harmony and precision. Delightful, too. Already drinkable but give this a few more years to come around. Try after 2026 and it should be beautiful for a long time.James Suckling | 97 JSDark chocolate, perfume, violets, wild flowers and bramble berries on the nose, so much going on aromatically. Lovely succulence straight away, the bright acidity giving a mouthwatering effect and really delivering in terms of vibrant and lively fruit forwardness but with these lovely edges of graphite, slate, bitter chocolate, cream and salinity. So elegant and so refined as well as super stylish. I also love the cooling menthol Cabernet aspects you get all the way through and on the long finish. This has real class, but also an effortless quality to it that is so remarkable. One of the most memorable wines of the vintage! 3.37pH. Both Canon, Rauzan-Segla and Berliquet are excellent achievements this year.Decanter | 96 DECRed and black fruits mingle with the firm structure of this dense wine. The tannins are solid while the ripe berry flavors show well against the wine’s richness.Wine Enthusiast | 96 WEThe 2021 Canon opens in the glass with a pure bouquet of raspberries, cherries and plums mingled with pretty top notes of iris, licorice, mint and sweet spices. Medium to full-bodied, deep and layered, it’s fleshy and sensual, with a deep and seamless core of fruit framed by ultra-refined tannins, a bright spine of acidity and a long, mineral finish. With an impressively low finished pH of 3.37, it was taken out of barrel a month earlier than usual and saw no fining—as has been the case since 2010.Robert Parker Wine Advocate | 95 RPFrom a château you can’t go wrong with, the 2021 Château Canon is another head-turning, elegant, seamless wine that comes from unquestionably one of the greatest terroirs on the upper plateau of Saint-Emilion. Based on 71% Merlot and 29% Cabernet Franc that hit 13.55% alcohol, it will spend 18 months in 50% new barrels. It shows the vintage’s fresher, elegant style beautifully, with lots of perfumed red fruits, spice, flowers, and chalky notes. These carry to a medium-bodied, seamless, elegant Saint-Emilion that has supple tannins, a notable sense of freshness (although I suspect the pH is solid), and a great finish.Jeb Dunnuck | 93-95 JDFresh and open in feel, with loganberry and blackberry notes laced with mulling spice, black tea and savory hints. Concludes with a potpourri echo. Merlot and Cabernet Franc. Drink now through 2035.Wine Spectator | 91 WSThe 2021 Canon is a blend of 71% Merlot and 29% Cabernet Franc with yields of 40 hl/ha and aging for 16-18 months in French oak, 50% of it new. Deep garnet-purple colored, it is slightly closed to begin, revealing subdued notes of juicy black plums and boysenberries, plus hints of Morello cherries, cinnamon stick, clove oil, and Sichuan pepper. Medium-bodied, the palate has a solid backbone of fine-grained tannins and bold freshness (pH 3.37) supporting the vibrant black and red fruits, finishing long and minerally.The Wine Independent | 90-92 TWI

Intensely floral aromas of iris and violet mingle with baking spice and forest floor on the stunning 2021 Montefico from Giacosa. Juicy and delicious, the palate offers raspberry compote, ripe cherry, cinnamon and ground clove alongside taut, fine-grained tannins. Fresh acidity keeps it well balanced and vibrant. Drink 2027–2036. Abv: 14.5% Kerin O’Keefe | 95 KOStunning intensity of lifted fruit with notes of violets, strawberries, raspberries and cherries. Refined tannins, dusty and firm but ripe, with a chalky finish reminiscent of cherry pits. Long and elegant aftertaste. Balanced. Hold for four to five years before drinking.James Suckling | 93 JSA rich ruby color, the 2021 Barbaresco Montefico is ripe and forward on the nose with notes of red plums, baking spices, and sweet herbs. The palate is fresher and has more energy than the nose suggests, offering ripe, grippy tannins and zesty acidity, with more citrus drive. While the structure is present, the nose is showing some evolution, so it would be best drunk over the next 4-5 years.Jeb Dunnuck | 90 JD

One of the bigger, richer wines in the lineup, the 2021 Syrah Armada Vineyard comes from a high-density vineyard located just beside the cellar and was brought up all in demi-muids. This deeper ruby/plum-hued Syrah boasts a big, masculine bouquet of smoked red and black fruits, sauteed mushrooms, cured meats, iron, and cold fireplace nuances (it almost has a Graves-like character) that flows to a medium to full-bodied, rich, concentrated Syrah with terrific overall balance, ripe tannins, and a great finish. As with the other 2021s here, it needs lots of air to show at its best and will ideally be given 4-5 years in the cellar. It’s going to hit its 20th birthday in fine form.Jeb Dunnuck | 97+ JDDisplaying a lighter color with a medium ruby hue, the 2021 Syrah Armada Vineyard has a spicy, complex, broad and structured nose, with fresh aromas of black cherries, blackberry skin, violets and rose blossoms. The palate, firm and food friendly, features a distinctive tannic edge that’s meant for red meats. Unmistakably Syrah from Walla Walla Valley, this is a gorgeous beauty, and I’m going back to finish the glass. The wine spent 21 months aging in a combination of new and used French oak. 7,632 bottles were produced.Robert Parker Wine Advocate | 96 RPVery structured and firmly tannic, this muscular wine comes from tightly spaced vines that give a low yield and lots of concentration. The 2021 Beau-Séjour Bécot is powerful, dense and quite savory, with the Franc very much in evidence. Dark red cherry, blood orange, spice, mint, rose petal, incense and scorched earth give this deep, layered Saint-Émilion tons of flavor complexity. This is such a distinctive and compelling wine.Vinous Media | 96 VMThe 2021 Beau-Séjour Bécot has realized all the potential it showed from barrel, unfurling in the glass with aromas of wild berries and plums mingled with notions of violets, lilac, forest floor and spices. Medium to full-bodied, deep and pure, with a fleshy core of fruit that’s framed by supple, polished tannins and bright acids, it’s seamless and sensual, concluding with a long, mouthwatering finish. As readers may remember, it was cropped at 35 hectoliters per hectare, delivering a blend based on Merlot with some 13% Cabernet Franc and 2% Cabernet Sauvignon in a supporting role.Robert Parker Wine Advocate | 95 RPRose-edged raspberries on the nose with blackcurrant leaf, soft herbal and earthy tones too. Gently floral and perfumed – so welcoming. Direct and streamlined on the palate with gently chalky/creamy tannins that are so integrated they just glide across the tongue settling around the mouth giving a salty tang to the juicy red and black fruit. Such a lovely freshness; this is delicate in terms of texture and overall frame but well positioned and expressive, benefitting from racy acidity and fruit density. This is quite the Chardonnay from Brianne Day and the renowned Eola Springs Vineyard in the best Chardonnay appellation in America. Winemaker Brianne Day chose three different blocks and three different clones: Hyde Wente, Mount Eden and Chardonnay 96 (a Dijon clone). She picked the Hyde Wente and Mount Eden early for structure and acid, and the Dijon 96 was picked later to flesh out the palate with riper fruits. Captivating lemon curd aromas and rich, honeyed apricots are followed by almond pastry cream.—dollops of rich lemon cream, ripe peach fuzz, and rich apricot flesh.Decanter | 96 DECDistinctly savory, the 2021 Chardonnay Eola Springs Vineyard bursts from the glass with an array of crushed rocks and flint giving way to dried apricots and nectarine. It offers up a beautifully complex bouquet of pear, nectarine, a touch of almond, a lovely base of soil tones, gently musky floral tones and a discreet framing of vanillin oak. On the palate the wine is vibrant, focused and full-bodied, with a beautiful core of ripe fruit, lovely soil undertow and grip, zesty acids and a long, poised, seamlessly-balanced and complex finish. This is really lovely juice, coming in at thirteen percent octane and offering a lovely synthesis of perfectly ripe fruit and structural tension on the backend. It should age beautifully. The vino de villa village red 2021 Corullón is extremely floral and elegant, clean, precise, fresh and very complete and harmonious, with a super elegant mouthfeel and a very long finish. 19,716 bottles and some smaller and larger formats produced. Having finished pruning just eight days before the brutal trio of April frost days and having put out a ’shameful’ number of candles, Weber was rewarded (it’s all relative in this miserly vintage) with almost 20 hl/ha. And, it is a divine Montrachet with spiced pears, herbal tea, gingerbread and cream. It is all lace and flourishes. The bustling acidity drives the flavors into a seemingly eternal finish with a lightly crispy edge. Bravo! (2023)Tim Atkin | 97 TATOP QUALITY This is a wine of impressive concentration, with complex layers of fruit on the nose that range from citrus to green apple, apricot, quince and passion fruit. There are elements of cream, butter, flinty mineral and fresh flowers. The texture is dense and long, but there is no lack of freshness, and the balance seems nearly perfect. It is produced from 0.89ha of mature vines on the Puligny side, just south of the Ramonet parcel. Profound and ageworthy, it will doubtless also show well young.Decanter Magazine | 96 DECThe 2021 Montrachet Grand Cru is half the normal volume, pruned just before the frost with a massive number of candles, therefore it managed to produce 20hL/ha despite everything. This is unequivocally a step up from the Chevalier-Montrachet with greater definition and poise, more energy. The palate is well balanced with fine detail, light wild peach and citrus notes, fine mineralité with satisfying tension on the finish. A fine mid lemon yellow, this begins discreetly but there is a wonderful concentrated intensity through the middle, a racy quality perhaps not quite there in the Chevalier. This time there is clearly a beginning, a middle and an end. Really enormously persistent and leaving a special taste in the mouth. In 2021, the domaine protected this site above all from frost but still lost half their crop, despite being surrounded by the also well-protected vines of Domaine Leflaive. Accessible almost even now, the aromas of green apple and passionfruit, coconut, butter, and baking spice are almost opening even now. There is a lovely freshness and silky texture, yet this is a powerful wine with impressive length and density at the end. This should open in five years and continue to improve for at least twenty-five more.Decanter | 96 DECA gorgeously fresh, airy and cool nose combines notes of green apple, a panoply of white flowers nuances, wet stone and a pretty array of exotic spice elements, especially jasmine. There is a notably more refined mouthfeel to the tautly muscular and overtly mineral-driven medium weight plus flavors that exhibit focused power on the impressively long, balanced, youthfully austere and very classy finale. One of the Dauvissat specialities, the La Forest is a triumph in 2021. From seven small parcels, the total site is less than 1ha with average vine age more than 40 years. Intriguing, slightly smoky nose, highly distinctive and different to others in the range. Plenty of power, ripe stone fruit flavours, zesty citrus acidity with a herbaceous edge adding an extra dimension. The 2021 version of la Forest chez Dauvissat is going to be stellar. The bouquet wafts from the glass in a complex mix of pear, fresh lime, flinty minerality, citrus blossoms, discreet vanillin oak and a topnote of beeswax. On the palate the wine is deep, pure and full, with a superb core of fruit, excellent complexity and cut, fine focus, bright acids and a long, complex and impeccably balanced finish. This is superb. UNDER THE RADAR A very elegant Bougros which matches the ripeness of this full sun site with great acidity and purity of flavour. There is lots of depth here with some zesty citrus characters and a stony, mineral thread in the background. Cleansing acidity on the finish.
