The 2019 Chablis Boucheron, which had been in barrel since March, has a pretty nose of expressive yellow flowers mixed with honeysuckle and light jasmine scents. The palate is lightly spiced on the entry, edgy and tensile, with a vibrant peppery finish. Good potential – lots of energy locked up in this Chablis.Vinous Media | 90-92 VM

Pale lemon colour, racy and fruity together, quite exuberant, a little warmth but the fruit is in the lead and it finishes cleanly on the minerals, with very good length. Long slow fermentation through to the next harvest. This works very well. Tasted: June 2021.Jasper Morris | 91-93 JM

The 2019 Chablis Vaillons 1er Cru has a less flamboyant bouquet than its peers. This feels more reserved and flinty, though very nicely defined and focused. The palate is well balanced, with the weight and density I look for in a Vaillon, and a little spicier than the Vosgros. A touch of lemongrass and a hint of green olive appear toward the finish. Another typical lemon and lime colour. Pleasing and perfumed nose with some steel behind, plus something of the grassy character of this vineyard. A lemon infusion to bring up the finish. Tasted: July 2021.Jasper Morris | 89-92 JMAn intense, focused white, with crushed stone and chalk dust framing green apple, lemon and greengage flavors. Balanced and long, with a steely finish. Drink now through 2028. 1,750 cases made, 175 cases imported.Wine Spectator | 91 WSNice density and concentration on the palate, with green apple acidity underneath. (Chablis Montmains 1er Cru, Domaine William Fèvre, White) From all three sections of the vineyard as usual. Racy lemon colour. Pure crystalline nose, very little reduction, very classical left bank Chablis, very intense but neither heavy nor exotic. The kimmeridgian is speaking underneath a graceful layer of flesh. Fruit and stones both keep coming back at the finish.Jasper Morris | 92-95A wine from a selection of sites over 3.9ha in Butteaux, Forêts and Montmains. Butteaux is very cold and mineral, while Forêts is elegant and floral. Great precision and focus here, allied with crystalline citrus fruits on the palate. Shows density, but is also very fresh, with lovely mineral characters on the finish. A highly successful Montmains.Decanter | 93 DECHere too the nose is elegant, pure and layered but with more floral and spice nuances adding breadth to the cooler and more restrained aromas. There is both excellent intensity and density to the mineral-driven flavors that terminate in a bone-dry, sneaky long and balanced finale. This too is really very good.Burghound | 91-93 BHConsisting of roughly equal parts Montmains, Butteaux and Forêts (the three sous-climats of Montmains), the 2020 Chablis 1er Cru Montmains offers up aromas of crisp green apple, white flowers, bee pollen and oyster shell. Medium to full-bodied, satiny and concentrated, it’s taut and precise, concluding with a saline finish.Robert Parker Wine Advocate | 92 RP(Chablis “Montmains”- Domaine William Fèvre) The 2020 Montmains here is also lovely, with perhaps just a bit more definition and complexity than in the Beauroy. The nose is pure and bright, offering up scents of apple, tart orange, wet stone minerality, citrus peel, dried flowers and a nice shading of oyster shell. On the palate the wine is pure, full-bodied and racy in personality, with fine focus and grip, a lovely core and a long, minerally and beautifully balanced finish. A lovely example. (Drink between 2026 - 2055)John Gilman | 92+ JGThe 2020 Chablis Montmains 1er Cru comes from 3.8 hectares of vines over 12 parcels and offers pressed white flower scents and a touch of crushed rock. The 2020 Chablis Vaillons 1er Cru has a flinty, focused, energetic nose that feels more harmonious than the preceding Côte de Léchet. The palate is taut, fresh and saline in the mouth, showing great depth and concentration toward the finish. This will be worth looking out for.Vinous Media | 90-92 VMHere there is less citrus and more floral influence on the white pepper and mineral reduction-inflected nose. The sleek, intense and attractively textured medium-weight flavors possess a bracing salinity on the agreeably dry, chiseled and well-focused finale that is just a bit firmer. The 2021 Chablis Vosgros 1er Cru has quite a lot of reduction on the nose compared to the Village Cru. The palate is much more expressive, very harmonious and citrus-fresh, lime and orange rind, fine weight with a very smooth and satisfying finish. Don’t miss out on this delightful Vosgros - fresh and rich, as Benoît Droin mentions.Vinous Media | 91-93 VMVosgros is sometimes described as a ’left-bank’ premier cru with ’right-bank’ exposure. It is a valley which is very cold but has a sunny westerly exposition. Closed and precise at the moment, this spend 8-10 months on lees giving the wine a creamy yet elegant texture. A very classy premier cru, this will need several years to fully blossom.Decanter | 92 DECLike the Petit Chablis, moderate amounts of classic Chablis typicity are present on the lemon rind, white orchard fruit and petrol-scented nose. There is very good volume and punch to the delicious medium-bodied flavors that possess good muscle on the clean, dry and slightly austere finale that is supported by citrus-tinged acidity.Burghound | 90-92 BH

This is also aromatically cool and almost as reticent with its airy aromas of white pepper, mineral reduction, essence of pear and a suggestion of wood influence. The gorgeously textured medium weight flavors possess an even more developed sense of refinement while exhibiting fine length on the quinine, stony and bitter lemon zest-suffused finale. This is lovely and a Vaillons of finesse in 2022.Burghound | 90-93 BHThe 2021 Chablis Vaillons 1er Cru had been blended the previous week, during which a majority of the lees is kept. Often one of my favorite cuvées from William Fevre, the entrancing bouquet has impressive intensity on the nose. The palate is well-balanced with lemon verbena and touches of pear, a fine sense of energy and composure, and a persistent finish. This already looks very promising.Vinous Media | 90-92 VMTypical Vaillons perfume and freshness. Precise but with good weight and precision. A classy Vaillons which will drink well when young but will also age. Fèvre owns 3.5ha, with 50% in Vaillons, and the rest spread between Chatains, Roncière and Melinots.
