Known for its traditional flavor, full-bodied Cabernet Sauvignon wine is the most famous dry wine to be served with food. As a world’s most dominant red wine-grape variety, it is cultivated all around the world, although many might predominantly associate it with the red wines of Bordeaux, where it is combined with Merlot to create many crucial and influential blends. Besides Bordeaux, this grape varietal is mostly present in Tuscany, Napa Valley, Australia, and Chile.

It doesn’t take a veteran wine-lover to enjoy Cabernet Sauvignon wines on the surface, as their flavor is unique and compelling. It does, however, take an expert to pick up on all the subtleties and fully appreciate the complexity, craftsmanship, and dedication that radiate from a wine of this quality. Cabernet Sauvignon wines have an alcohol content that hovers around 13.5%, and a signature deep, dark color – the very blood of the grapes, bottled and preserved for our enjoyment and dissection. The thickness and richness of the texture only add to this comparison, making the crimson nectar feel alive in the glass. The level of tannin present in the wine will sap the moisture from your mouth, and what better way to fix that issue than with another glass? 1990 Spottswoode Cabernet Sauvignon, California Red

1990 was the first vintage (4,756 cases produced) and one of the most abundant before the replanting became essential because of phylloxera, and was again made at Robert Pepi. However, the percentage of Cabernet Franc jumped to 10% in the final blend. Mia Klein, who worked with Tony Soter, was part of the winemaking team. This wine performed beautifully, and had that Château Margaux-like finesse, elegance and richness. Beautiful blackcurrant notes, graphite, rose petal and licorice, were all present in this deep ruby/plum-colored wine that came across like a Napa version of a first-growth Médoc. It is medium to full-bodied, with beautiful, integrated tannin, acidity and wood. I believe the 1995 is the finest produced under the Araujo regime. It is close to perfection. The wine combines extraordinary power and richness with remarkable complexity and finesse. The saturated purple/black color is followed by aromas of sweet vanillin intermixed with riveting scents of black currants, minerals, exotic spices, coffee, and toast. The first release from the 20-acre Thorevilos Vineyard (co-owned by David Abreu and Ric Forman) is the 2000 Cabernet Sauvignon Thorevilos, a blend of 88% Cabernet Sauvignon, 10% Cabernet Franc, and 2% Petit Verdot. It is a dense, sweet, black currant-flavored effort with hints of scorched earth, cedar, and flowers in the background. 2001 quilceda creek cabernet sauvignon Washington Red

Funky and woody on the nose, the 2001 Cabernet Sauvignon still has elements of dried red cherry and black raspberry reduction with cinnamon-covered currants on the nose. I am sensing some bottle variance, but the full-bodied wine goes on to show a delightful structure that should hold together for a few more years in the bottle. Ultimately, the wine ends with a tannic edge over the long conclusion, ending with mature flavors of stewed fruit compote with an element of old oak and pine bark.Robert Parker Wine Advocate | 96 RP(includes 3% cabernet franc) Bright medium ruby. Explosive, pungent aromas of dark raspberry, baking spices and cocoa powder. Then fat, lush and deep, with powerful flavors of raspberry, minerals and baking chocolate. 2001 shafer cabernet sauvignon hillside select California Red

The 2001 Shafer Cabernet Sauvignon Hillside Select is the first of these back-to-back perfect wines from Shafer that, at age 13, is still a baby, but, wow, what an amazing wine. A fabulous growing season produced a wine with inky/purple black color, stunning crème de cassis notes, with additional hints of lead pencil shavings, spring flowers, cedar wood and forest floor. It is full-bodied, sensationally concentrated, with a seamless integration of acidity, tannin, wood and alcohol. This is a great, monumental Napa Cabernet Sauvignon that is still an infant, at age 13, going on 14. This has got at least three decades of life left in it, and probably won’t hit its peak for another 5-7 years.Robert Parker | 100 RPNo Cabernet smells better. This is an enormously attractive, well-oaked wine constituted from the best possible fruit. In the mouth, it immediately seduces. Structurally, the wine has the best tannin-acid structure Napa is capable of. The wine is neither overtly fruity nor in any way super-ripe. The power seems to come right out of the ground. Amazing density; the aromas billow up from the glass and weave together sinuously, taking you on a magic carpet ride before the wine even hits your mouth. This wine has the power of a monster California Cab while retaining the subtlety of a first-growth Bordeaux. It is just a massive blast of dark fruit, incredible viscosity, silky textures and soft herbs, pepper and spice. For a generous wine, it’s starting to wind down and only has a few years left. 2002 Spottswoode Cabernet Sauvignon

I was also able to taste a barrel sample of the 2022 Cabernet Sauvignon, and it’s clearly one of the deeper hued 2022s I was able to taste for this report. Darker currants, hints of cassis, scorched earth, and tobacco all emerge on the nose, and it’s medium to full-bodied, has a classic, elegant Spottswood texture, building tannins, and outstanding length.Jeb Dunnuck | 94-96 JDThe 2022 Cabernet Sauvignon, tasted as a barrel sample, is deep purple-black in color. Intense scents of plum preserves, blueberry pie, and creme de cassis give way to wafts of dried roses, star anise, and powdered cinnamon. 2005 Araujo Eisele Cabernet Sauvignon, California Red

From their 40+ acres of vineyard in the very northeasterly sector of Napa, just south of the quaint town of Calistoga, anywhere from 1,600 to 2,200 cases of Cabernet Sauvignon Eisele Vineyard are produced. The 2005 Cabernet Sauvignon Eisele (a blend of 91% Cabernet Sauvignon and the rest Cabernet Franc, Petit Verdot, and Merlot) shows wonderfully sweet black currant notes intermixed with some licorice, incense, crushed rock, and floral characteristics. It is deep, medium to full-bodied, with beautiful purity, virtually perfect integration of tannins, and extraordinary length which lasts over 60 seconds. This is an exceptional, seamless Cabernet Sauvignon that is the vinous equivalent of haute couture. This sensationally pure wine (actually the first vintage of the estate Cabernet to have a little Merlot in it, but only 2%) borders on perfection. This is a gorgeously proportioned wine with beautiful floral and black fruit notes intermixed with some mineral and gentle background oak.One of California’s and the world’s great wine estates, Araujo continues to exhibit remarkable consistency and impeccably high quality. Little seems to change other than some minor tweaking with respect to viticulture and winemaking. The team of Bart and Daphne Araujo, their talented longtime winemaker, Francoise Peschon, and the globe-trotting oenologist, Michel Rolland, are to be commended on the extraordinary elegance of these wines.Robert Parker | 98+ RPStunning. 2005 quilceda creek cabernet sauvignon galitzine Washington Red

The 2005 Cabernet Sauvignon Galitzine Vineyard comes from the fifth leaf of this estate vineyard and in this vintage contains 4.5% Merlot. The wine was aged for 22 months in 100% new French oak. Opaque purple-colored, its distinctive aromatics leap from the glass. Toasty oak, scorched earth, a hint of truffle, black cherry, black raspberry, and blackberry liqueur aromas are quite mesmerizing. On the palate, this sizable effort is firm, full-bodied, and structured, demanding 6-8 years of cellaring. It falls a bit short of the flagship Cabernet Sauvignon in terms of complexity but bear in mind that this is still a very young vineyard. It should be hitting its stride by 2015 and remain at that level through 2035.Robert Parker Wine Advocate | 97 RP(includes 4.5% merlot) Bright, deep red-ruby. Slightly higher-toned on the nose than the estate cabernet, with aromas of dark cherry, minerals, smoky oak and sweet butter, complicated by a musky meaty quality. Not quite as dense as the flagship cabernet (this represents a selection of the best barrels from vines planted in 2001 and 2002), but conveys a more immediate sense of energy and back-end lift, with firm blueberry and mineral flavors. 2006 Paul Hobbs Cabernet Sauvignon Dr Crane Vyd

From another outstanding vineyard, the 2006 Cabernet Sauvignon Beckstoffer Dr. Crane Vineyard’s scorched earth/burning ember, blueberry, graphite, and black currant characteristics are reminiscent of a top Bordeaux such as La Mission Haut-Brion. Dense, full-bodied and chewy with fabulous concentration, sweet tannins, and remarkable length, this profound Cabernet Sauvignon should last for 25-30 years.Paul Hobbs is one of the most brilliant consultants working in California, and he is well-placed in Argentina with a number of projects there as well. His empire is in the Russian River, and it continues to expand, with a bevy of artisinal hand-made Chardonnays, Pinot Noirs, Cabernet Sauvignons, and more recently, Syrahs. These are full-throttle wines that merit serious attention. He clearly fared very well with his 2006 Chardonnay and Pinot Noir programs, and seems to have hit veritable home runs with the brilliance of these wines as well as his Cabernets and Syrahs in 2007. Paul Hobbs’ 2007 Chardonnays are crisp, full-bodied, intensely flavorful wines with higher than usual levels of vibrancy and freshness because of the acid profiles and cool growing season. In addition to the great success he enjoys with Chardonnay, Pinot Noir, and Syrah, Hobbs also hits all the high notes with his Cabernet Sauvignons. There are five offerings, starting with his Napa bottling, one of the better generic efforts in the marketplace. Another fabulous vintage for Paul Hobbs, the 2007 Cabernet Sauvignons may ultimately come close to resembling the great successes he has had, including his brilliant 2001s and 2002s.Robert Parker | 95 RPInky ruby. Red- and blackcurrant aromas, with an array of floral and herbal qualities adding complexity. Rich cherry and blackberry flavors are a touch brooding but gain sweetness and spiciness with air. 2006 quilceda creek cabernet sauvignon galitzine Washington Red

The 2006 Cabernet Sauvignon Galitzine Vineyard, located in the Red Mountain AVA, is 100% varietal. Dark ruby/purple in color, it delivers an enticing nose of pain grille, pencil lead, earth notes, spice box, violets, and assorted black fruits. On the palate it is dense, ripe, full-bodied, and structured. Still a bit tightly wound, it will reveal its full potential with another 5-7 years of cellaring. Sweet blackberry, cassis, licorice pastille and violet on the nose, plus a whiff of mocha. 2006 Quilceda Creek Cabernet Sauvignon Palengat Vineyard

This is the first vintage of the 2006 Cabernet Sauvignon Palengat Vineyard, located in the Horse Heaven Hills AVA. The wine also contains 15% Cabernet Franc and 5% Petit Verdot. Purple-colored, it offers up a splendid perfume of wood smoke, spice box, pencil lead, espresso, violets, black currant, and blackberry. Full-bodied, plush, and concentrated, it is already revealing considerable complexity despite the youth of the vines. In spite of its size, the wine manages to retain a sense of elegance, a trademark of all of Quilceda Creek’s wines.
