Introducing the 2019 Chablis are aromas of beeswax, dried white flowers and oyster shell dominating youthfully discreet notions of citrus oil and fresh bread in an already complex bouquet. A medium to full-bodied, satiny and enveloping wine, this is fleshier and more textural than its Petit Chablis counterpart—though it’s just as chiseled—concluding with a long, saline finish.Robert Parker Wine Advocate | 92 RPThe 2019 Chablis Village has an intriguing nutty and slightly smoky bouquet. The palate is lively on the entry, with a superb line of acidity, and quite saline in the mouth, leading to a brisk, energetic finish. Excellent.Vinous Media | 90-92 VM(Domaine Vincent Dauvissat Chablis Villages White) Here too there is very fine typicity with its ripe but cool nose of white peach, pear, iodine and pretty floral nuances that also include a whiff of citrus confit. There is equally fine volume to the rich yet well-detailed flavors that flash a lovely mineral streak on the refreshingly dry finale. The 2019 Chablis 1er Cru Séchet opens in the glass with scents of citrus oil, white flowers, beeswax, oyster shell, wet chalk and mandarin. Medium to full-bodied, satiny and strikingly intense, it’s taut and chiseled, with tangy acids and huge reserves of concentration, concluding with a pungently chalky finish. As I’ve written before, Séchet—where Dauvissat owns a 0.8-hectare parcel—is located in the Vaillons Valley, but its windier situation and soils richer in active limestone mean it’s typically more tensile and incisive than the other climats that make up Vaillons. Technically retired but very much a continuing presence at his eponymous domaine, Vincent Dauvissat—who forsook a career as a shepherd to become one of France’s most celebrated vignerons—couldn’t disguise his satisfaction as we tasted his recently bottled 2019 portfolio. After some discussion, we settled on the 1989 vintage ("but tighter and more incisive") as a possible analogy for 2019’s hyper-concentrated, ripe, but all the while classically Chablisien style. In any case, they’re some of the wines of the vintage and are well worth seeking out. Readers will remember that farming here is organic but without certification. The harvest is by hand, and the wines ferment in tank before racking to barrel with the lees (Raveneau’s Chablis, by contrast, are racked to barrel more or less without their lees), spending a second winter in wood before bottling. A first bottling, destined for the American market. | 94 RP The 2019 Chablis Séchets 1er Cru has an elegant and more floral bouquet compared to Vincent Dauvissat’s other 2019s, beautifully defined and offering baked apple, pear and white flower scents. The palate is well balanced with a spicy opening, plus hints of stem ginger and walnut. Quite tensile and full on the finish. Good potential here.Vinous Media | 91-93 VMA markedly citrusy and noticeably cooler nose combines notes of mineral reduction with those of pear and apple confit. There is again very good volume and mid-palate density on the seductively textured medium-bodied flavors that are also quite dry on the balanced finale. This is a powerful Séchet that is even more robust and one that will need to add depth with age, but it should do just that if given a chance.Burghound | 92 BH

The 2019 Chablis Vaillons 1er Cru has a less flamboyant bouquet than its peers. This feels more reserved and flinty, though very nicely defined and focused. The palate is well balanced, with the weight and density I look for in a Vaillon, and a little spicier than the Vosgros. A touch of lemongrass and a hint of green olive appear toward the finish. Another typical lemon and lime colour. Pleasing and perfumed nose with some steel behind, plus something of the grassy character of this vineyard. A lemon infusion to bring up the finish. Tasted: July 2021.Jasper Morris | 89-92 JMAn intense, focused white, with crushed stone and chalk dust framing green apple, lemon and greengage flavors. Balanced and long, with a steely finish. Drink now through 2028. 1,750 cases made, 175 cases imported.Wine Spectator | 91 WSNice density and concentration on the palate, with green apple acidity underneath. A fine Chablis which manages to be both powerful and concentrated, yet still retains a lovely lift. Plenty of acidity and distinctive mineral flavours on the palate, along with some spiced, confit lemon character to finish. Will age well.Decanter | 93 DECDauvissat’s 2020 Chablis bursts with aromas of crisp green apple, white flowers, wet stones, oyster shell and struck match. Medium to full-bodied, taut and racy, it’s deep and incisive, with impeccable Chablisien credentials and a long, intensely mineral finish. As usual, it’s the reference point for the appellation.Robert Parker Wine Advocate | 92 RPThe Dauvissat family’s 2020 Chablis AC is also excellent, showing of the purity of the vintage on both the nose and palate. The bouquet wafts from the glass in a stylish blend of lemon, pear, a lovely base of limestone, just a touch of iodine and a topnote of paraffin. On the palate the wine is deep, full-bodied and vibrant, with a fine core, excellent wet stone mineral drive, bright acids and impeccable balance on the long, focused and complex finish. This has a bit more mid-palate depth than the Petit Chablis and will have a far longer shelf life. Fine juice. (Drink between 2024 - 2045)John Gilman | 91 JGThe 2020 Chablis Village has a fragrant orange blossom bouquet, delicate at first, then gaining in intensity and revealing touches of white tea. The palate is well balanced with markedly more weight than the Petit Village. A very subtle spearmint trait toward the finish lends another layer of complexity. This only just has its nose ahead of the Petit Chablis.Vinous Media | 88-90 VMA more restrained but equally fresh nose features notes of green fruit, oyster shell and lemon-lime wisps along with a very subtle dollop of menthol. There is excellent intensity to the sleek, detailed and delicious medium-weight flavors that terminate in a clean, dry and sneaky long finish. Excellent quality here for its level.Burghound | 90 BHThis feels like quite a big step up. More density, pure white fruit, super balance here, and admirable persistence. Above all a sense of harmony. Medium to full-bodied, ample and satiny, it’s racy and tensile, with tangy acids and a long, searingly mineral finish.Robert Parker Wine Advocate | 94 RPPure, poised and dry with delightful nuance. This is a classic Séchet with a superb aftertaste, so much fruit to cover the dry bones typical of this vineyard – and indeed implied by its name. The 2020 is immaculately balanced pure and subtly nuanced. It may easily close down for a few years after bottling, so do not be afraid to keep it back. Drink from 2028-2035. Tasted: June 2022.Jasper Morris | 94 JMThe 2020 Chablis Les Séchets 1er Cru is very pure on the nose, though not quite as mineral-driven as the 2019, that I tasted last year (also from barrel). But the aromatics are very elegant. Ditto the palate, which delivers fine acidity, impressive concentration, white peach and dried mango flavors and plenty of spice toward the finish. Excellent.Vinous Media | 91-93 VMThe 2020 Chablis “Séchet” from Vincent Dauvissat is very refined this year, showing the classical proportions of the vintage to very fine effect. It delivers an aromatic constellation of green apple, lemon, a beautiful base of chalky soil and oyster shell, spring flowers and a lovely topnote of beeswax. Pure, full and racy on the palate, the Séchet shows off exemplary depth at the core, excellent focus and cut and an impeccably balanced, but still quite closed personality on the long finish. This is going to be an outstanding bottle, but it will demand just a bit of patience to allow it to properly blossom. (Drink between 2026 - 2060)John Gilman | 93 JGMore elegant and airier aromas include those of citrus blossom, algae, iodine and a touch of green apple. The detailed and very intense medium-bodied flavors flash both good minerality and salinity on the balanced bitter lemon-inflected finale. This promising if decidedly firm effort is firm enough to reward up to a decade of cellaring.Burghound | 92 BH

(Chablis Montmains 1er Cru, Domaine William Fèvre, White) From all three sections of the vineyard as usual. Racy lemon colour. Pure crystalline nose, very little reduction, very classical left bank Chablis, very intense but neither heavy nor exotic. The kimmeridgian is speaking underneath a graceful layer of flesh. Fruit and stones both keep coming back at the finish.Jasper Morris | 92-95A wine from a selection of sites over 3.9ha in Butteaux, Forêts and Montmains. Butteaux is very cold and mineral, while Forêts is elegant and floral. Great precision and focus here, allied with crystalline citrus fruits on the palate. Shows density, but is also very fresh, with lovely mineral characters on the finish. A highly successful Montmains.Decanter | 93 DECHere too the nose is elegant, pure and layered but with more floral and spice nuances adding breadth to the cooler and more restrained aromas. There is both excellent intensity and density to the mineral-driven flavors that terminate in a bone-dry, sneaky long and balanced finale. This too is really very good.Burghound | 91-93 BHConsisting of roughly equal parts Montmains, Butteaux and Forêts (the three sous-climats of Montmains), the 2020 Chablis 1er Cru Montmains offers up aromas of crisp green apple, white flowers, bee pollen and oyster shell. Medium to full-bodied, satiny and concentrated, it’s taut and precise, concluding with a saline finish.Robert Parker Wine Advocate | 92 RP(Chablis “Montmains”- Domaine William Fèvre) The 2020 Montmains here is also lovely, with perhaps just a bit more definition and complexity than in the Beauroy. The nose is pure and bright, offering up scents of apple, tart orange, wet stone minerality, citrus peel, dried flowers and a nice shading of oyster shell. On the palate the wine is pure, full-bodied and racy in personality, with fine focus and grip, a lovely core and a long, minerally and beautifully balanced finish. A lovely example. (Drink between 2026 - 2055)John Gilman | 92+ JGThe 2020 Chablis Montmains 1er Cru comes from 3.8 hectares of vines over 12 parcels and offers pressed white flower scents and a touch of crushed rock. The well-defined palate features red apple mixed with subtle spicy notes that dovetail into a generous, leesy finish. Fine.Vinous Media | 89-91 VM

The 2020 Chablis Vaillons 1er Cru has a flinty, focused, energetic nose that feels more harmonious than the preceding Côte de Léchet. The palate is taut, fresh and saline in the mouth, showing great depth and concentration toward the finish. This will be worth looking out for.Vinous Media | 90-92 VMHere there is less citrus and more floral influence on the white pepper and mineral reduction-inflected nose. The sleek, intense and attractively textured medium-weight flavors possess a bracing salinity on the agreeably dry, chiseled and well-focused finale that is just a bit firmer. Here too moderate wood sets off the overtly spicy and ripe aromas of white and yellow peach, iodine and hints of seashore. The sleek, delicious and intense flavors are just a bit more refined, indeed they are almost delicate, while still delivering excellent length on the citrus-tinged finish where a bit of wood slowly emerges.Burghound | 91-94 BHThe 2021 Chablis Vaudésir Grand Cru has a taut and fresh bouquet, wonderful mineralité with a hint of smoke and flint coming through. The palate is well balanced with a saline note, fine depth, lemon and a little more lime. Builds nicely in the mouth, a lovely Vaudésir.Vinous Media | 91-93 VMDroin’s Vaudésir comes from just over 1ha with vines planted on both north- and south-facing slopes. A little subdued on the nose and palate, this is a subtle grand cru with plenty of definition, and will blossom with two to three years additional bottle age. No oak.Decanter | 92 DEC

The 2021 Chablis Vosgros 1er Cru has quite a lot of reduction on the nose compared to the Village Cru. The palate is much more expressive, very harmonious and citrus-fresh, lime and orange rind, fine weight with a very smooth and satisfying finish. Don’t miss out on this delightful Vosgros - fresh and rich, as Benoît Droin mentions.Vinous Media | 91-93 VMVosgros is sometimes described as a ’left-bank’ premier cru with ’right-bank’ exposure. It is a valley which is very cold but has a sunny westerly exposition. Closed and precise at the moment, this spend 8-10 months on lees giving the wine a creamy yet elegant texture. A very classy premier cru, this will need several years to fully blossom.Decanter | 92 DECLike the Petit Chablis, moderate amounts of classic Chablis typicity are present on the lemon rind, white orchard fruit and petrol-scented nose. There is very good volume and punch to the delicious medium-bodied flavors that possess good muscle on the clean, dry and slightly austere finale that is supported by citrus-tinged acidity.Burghound | 90-92 BH

This is also aromatically cool and almost as reticent with its airy aromas of white pepper, mineral reduction, essence of pear and a suggestion of wood influence. The gorgeously textured medium weight flavors possess an even more developed sense of refinement while exhibiting fine length on the quinine, stony and bitter lemon zest-suffused finale. This is lovely and a Vaillons of finesse in 2022.Burghound | 90-93 BHThe 2021 Chablis Vaillons 1er Cru had been blended the previous week, during which a majority of the lees is kept. Often one of my favorite cuvées from William Fevre, the entrancing bouquet has impressive intensity on the nose. The palate is well-balanced with lemon verbena and touches of pear, a fine sense of energy and composure, and a persistent finish. This already looks very promising.Vinous Media | 90-92 VMTypical Vaillons perfume and freshness. Precise but with good weight and precision. A classy Vaillons which will drink well when young but will also age. Fèvre owns 3.5ha, with 50% in Vaillons, and the rest spread between Chatains, Roncière and Melinots.
