Sparkling wines have a unique identity among the various wine categories. As their name suggests, they’re carbonated, which creates an interesting, compelling texture and combination of flavors – as well as a familiar and cheerful “pop” when a bottle of Champagne is uncorked. There are many stories about how sparkling wine came to be, but the most important thing to know is that there are two main production methods – the Champagne method and the Charmat-Martinotti method, also known as Metodo Italiano.

Sparkling wines are incredibly popular today, being a staple purchase for many different social events and special occasions. In particular, you can expect most holidays to feature at least one bottle of these playful blends, and they’re often one of the first alcoholic beverages a person tries in their life. As such, they are a potent catalyst for creating long-lasting positive memories as early as one’s teenage years, and an easy way to develop a taste in fine wine from a young age. 2000 Pol Roger Cuvee Sir Winston Churchill

Dedicated to the memory of the British wartime Prime Minister, who regularly drank Pol Roger, this is always a superlative Champagne. This 2000, at 14 years old, has developed a pale gold color and toastiness. That intensifies the mature flavors and rich texture, while allowing the tight mousse and acidity to keep a sense of structure. It will age much further, although it is perfectly ready to drink now. Wine Enthusiast | 96 WEThe 2000 Pol Roger “Cuvée Winston Churchill” is going to be an outstanding vintage for this fine bottling. The cépages this year is roughly eighty-five percent pinot noir and fifteen percent chardonnay (my host did not have the exact breakdown with him), the dosage was eight grams per liter and the wine is just now entering the market after eleven years on its lees. The wine offers up a fine, youthful nose of apple, tart orange, a very complex base of minerality, brioche, smoke and a fine dollop of citrus zest in the upper register. On the palate the wine is deep, full-bodied and nascently complex, with a rock solid core of fruit, excellent focus and grip, elegant mousse, brisk acids and outstanding length and grip on the racy and intensely flavored finish. A fine, fine example of Winston Churchill, I would give the 2000 vintage a good four or five years in the cellar to start to blossom before opening it with conviction. It should age very well indeed. Hints of pasty, spice, apricots and succulent ripe pears blossom on the expansive, broad-shouldered finish.Vinous Media | 94 VM2000 may not be the most highly rated vintage in its old age, but today some are surprising with their flamboyance and fun – perhaps this is a little more straightforward than some, but it’s immediate, deep and heady with dark honey, bramble and strawberries and cream, heading to tropical ripeness with mango and candied fruits. With a bittersweet twist on the smoky, chewy and buttery finish, this is carrying plenty of appealing fruit weight and impact. Tasted in magnum.Decanter Magazine | 94 DECA discreet, almost shy nose reflects notes of green apple, yeast and Meyer lemon nuances along with plenty of floral influence. By contrast there is plenty of body and punch to the powerful but not especially dense middle weight flavors that are supported by a full-on but not aggressive mousse as well as excellent depth on the lingering finale. This is very clearly still on the way up and even waiting another 5 to 7 years may not see this at its full apogee. What is clearly evident though is that this is going to be a very long distance runner in magnum format.Burghound | 94 BHSmoky, with firm structure and a minerally base note, this offers a fine, creamy texture and hints of dried apricot, lemon curd, cassis, biscuit and blanched almond. Initially the nose seems unduly fruity and lacking in nuance but with just a few minutes of air it delivers one of the more remarkable transformations I have ever witnessed in that it takes on superb breadth and depth and this knockout complexity is entirely in keeping with the cool, pure, intense and utterly delicious flavors. There is excellent verve and a very fine bead to the gorgeously long and balanced finish where the stunning depth reinforces that found on the nose and mid-palate. To be sure, this is a very understated wine of finesse and not at all fashioned like some of the bigger and bolder luxury marque rosés. In terms of drinkability, it’s a tough call as this is already dazzlingly good but if one wanted to cellar this, it would certainly reward medium-term, and perhaps even long-term keeping. In sum, this is genuinely exquisite and its only fault is that there is so little of it available - if you can find it, don’t hesitate.Burghound | 96 BHA small plot of old Pinot Noir produces this superb wine. It has all the richness of wines from Aÿ, with its red fruits and hint of sweetness. But it is the structure, the complexity that sets it apart, the grapes ripe and concentrated from a great year. From ungrafted vines and one of the truly exceptional wines from Tarlant, the 2006 Champagne Blanc de Blancs La Vigne d’Antan Brut Nature is expressive in its bouquet of honeysuckle, toasted brioche, lemon curd, and white peach. Full-bodied, it fills the palate with wonderful depth and purity, offering ripe fruit and fantastic freshness. Expressive and very beautiful, this is a great vintage of the 2009 Champagne Blanc de Meuniers Le Vigne d’Or Brut Nature, and it shines. Medium to full-bodied, it’s so delicious and giving right now but should have no problem improving and aging over the coming 20 years. Ripe red fruits, strawberries, peaches, salty earth, and mineral texture all come through, with a rounded, creamy mousse. It’s open and not at all austere. Beautiful orange-cherry color, exuding aromas of dried flowers, cherry stones, wild strawberries, cloves and cinnamon pastries. It’s medium-bodied with excellent weight and balance. Soft bubbles. Layers of soft, supple berry fruit. Pastries and walnuts come through on a seamless finish. Drink or hold.James Suckling | 96 JSThe 2011 Taittinger “Comtes de Champagne” Rosé is made from a blend of sixty percent pinot noir and forty percent chardonnay in this vintage, with twelve percent of the pinot noir being still red wine. It was given more than ten years aging sur latte in the cellars and finished with a dosage of nine grams per liter. The wine is a fairly deep salmon color and delivers a refined and very complex aromatic constellation of blood orange, strawberries, rhubarb, a beautiful base of chalky soil, rye bread, a hint of clove, gentle smokiness and a topnote of rose petals. On the palate the wine is precise, full-bodied and elegant, with a superb core of fruit, lovely soil inflection, refined mousse and a very long, complex and impeccably balanced finish. This is a stunning wine by any measure, but given how challenging the 2011 vintage was in Champagne, it is an absolute revelation! Wine Enthusiast | 96 WEDisgorged in October 2022, the 2011 Brut Comtes de Champagne Rosé is a blend of 40% Chardonnay and 60% Pinot Noir, including fully 14% of red wine that lends it notable depth of color this year. Evoking aromas of cherries, buttery pastry, raspberries and tangerine, with an attractive minty top note, the bouquet is complex and incipiently spicy. Medium to full-bodied, layered and vinous, with chalky structuring extract, it concludes with a long, sapid finish. The limitations of the vintage mean that this is a giving, rather open-knit Comtes Rosé, but it is nevertheless a great effort in a challenging year and exhibits none of the herbaceous qualities that mar some of the wines produced in this year. 2011 Tarlant Champagne L'Enclume, Champagne

Very zesty, racy and slightly eccentric, this shows aromas of preserved lemons, grapefruit, peaches and biscuits, as well as some Sichuan peppercorns. It’s lively and electric on the palate, bone-dry and sharp, with lots of biscuit character from long autolysis as well as peppery, smoky and salty hints at the end. Very long. From chardonnay vines grown on silex subsoils, uncommon in Champagne. Disgorged December 2024 after more than 12 years on the lees. Drink or hold.James Suckling | 96 JSThe 2011 Champagne L’Enclume Brut Nature is the current release and saw ten years aging on the lees. Entirely made from Chardonnay, it pours a bright yellow/golden color and reveals a bold personality in its aromas of honey, preserved lemon, flinty wet stones, toasted bread, and golden apples. The palate is full-bodied but concentrated and compact, with driving and intense acidity, a pillowing mousse, and a strong persistence through the finish. It is not for the faint of heart, as its potent and compact acidity dominate on the palate. I love the nose, which is complex and pure, although the palate is a bit overpowering and austere for my taste. It certainly has the structure to age slowly over the next 10 or more years. 2012 Ployez-Jacquemart Extra Brut Blanc de Blancs, Champagne

A bright beam of buoyant acidity supports flavors of ripe pineapple, nectarine, toasted hazelnut, lilac, lemon curd and oyster shell in this rich and harmonious blanc de blanc. Raw silk–like in texture and long on the palate, with an underlying vein of chalky minerality emerging to echo on the finish. Disgorged March 2023. Drink now through 2042. 516 cases made, 42 cases imported.Wine Spectator | 95 WSI have drunk so many bottles of the stunning 2010 vintage of Laurence Ployez’s vintage Blanc de Blancs in the last couple of years that I was not sure how I was going to react to the 2012 version, given my fondness for its predecessor. Happily, it is every bit as fine as the 2010 and probably will ultimately eclipse its older sibling, but for the moment, it is a notably younger and more structured wine and the 2010 is the vintage to be pulling out for current drinking. That said, 2012 is inherently the superior vintage and this wine shows enormous potential, offering up a precise and youthfully complex nose of apple, pear, fresh almond, brioche, a refined base of limestone minerality, spring flowers and just a whisper of oak. On the palate the wine is deep, crisp and complex, with a full-bodied and tightly-knit palate presence, a rock solid core of fruit, a fine girdle of acidity, elegant mousse and a very long, mineral-driven and impeccably balanced finish. This is going to be a stunning wine, but I would try to keep my hands off of bottles for at least another three or four years, as the wine is very clearly still in climbing mode and will be even better if given a bit of time to properly blossom! 2012 Rare Champagne Millesime Brut

Golden yellow-hued, the 2012 Champagne Millésime has notes of pineapple, brûléed citrus, honeyed ginger, and lemon curd. Round and full, it offers a pillowy mousse with a long finish. It has more ripeness than the 2013 but has fantastic underlying tension and acidity. It’s deceiving, as it is quite approachable now but also has the bones to age over the coming decades.Jeb Dunnuck | 96 JDA Champagne of great intensity and concentration, pure citrus oil, candied lemon and toasty exotic fruit. It’s exceptionally soft and satin-like, creamy and comforting, then a stony, saline intensity draws out the finish. For the first time in the history of Rare Champagne, the house has released a vintage that is older than its previous release. This 2012 comes after the 2013 was released in 2023. 2015 Bollinger La Grande Annee, Champagne

Bollinger’s 2015 Brut Grand Année is an intriguing wine in that is clearly reflects the decision to pick on the later side in order to avoid vegetal notes derived from the mismatch of alcoholic and phenolic ripeness. "Balance was hard to achieve in 2015," Chef de Cave Denis Bunner notes. "At 10% in sugar, the fruit was simply not ripe. We had to wait to reach the optimal window of ripeness." Bunner also opted to increase the Chardonnay, so the blend is 60% Pinot Noir and 40% Chardonnay, as opposed to the more typical 70/30 blend, with more Verzenay than Aÿ in the Pinots. Dried citrus peel, sage, menthol, sage, tangerine peel and spice build with some coaxing. Light tropical overtones develop with aeration. There’s real density and textural richness here. This will be a fascinating vintage to follow. Stylistically, it is the complete opposite from the much more linear 2014 that precedes it. Dosage is 8 grams per liter. Disgorged: May 2023.Antonio Galloni, Vinous Media | 96 VMEnticing, fragrant aromas of toast, lemon zest and an earthy-smoky nuance lead to a palate of subtle Bosc-pear, mango, papaya, even pineapple flavors. Lifted by fresh acidity on the medium-bodied palate, the wine keeps unfolding in toasted walnuts, honey and a dash of bitter marmalade. It’s mouth-filling, alive with acidity and full of finesse. Drink or hold.James Suckling | 96 JSVelvety burnished gold in color with near imperceptible fine bubbles, the Grand Année 2015 is a 60% Pinot Noir, 40% Chardonnay blend of 11 crus, 79% Grands Cru and 21% Premiers Crus, that is 100% barrel fermented, aged 7 years on lees and finished with an 8 grams per liter dosage. It opens toasty and rich with red forest fruit aromas accented by bruised apple, warm spice, Acacia honey, and a refreshing whiff of chalk. Plush and generous, the medium-bodied palate fills out with a seamless depth of orchard fruit concentration lifted by buoyant, finely spun acid energy and a satiny, pinpoint mousse. This 2015 lingers long on the palate and has an attractive kiss of bitterness. Disgorged October 2023.The Wine Independent | 96+ TWIA forward vintage for La Grande Année, with warmth evident in its roasted orange, Comice pear and Mirabelle plum, all polished with a sense of savoury maturity that is very Bollinger at heart. There’s a little more oxygen influence seemingly at play than in the 2014, with brine, nuts and a little dried leaf character already taking this far beyond fruit. The food-friendly chewiness of 2015 is there, but the mousse is supple and the Chardonnay brings the wine to a close with a fine, cooked lemon snap. This will start to show its best integration from 2025 onwards, although it is open for business now. 60% Pinot Noir and 40% Chardonnay from the Montagne de Reims, Grande Vallée de la Marne and Côte des Blancs, all fermented in small oak barrels and disgorged in May 2023 after seven years on lees.Decanter | 94 DEC

2015 Dom Perignon, Champagne

A super-complex Champagne with chewy tension. Aromas of coffee beans, lemon peel, burnt sugar, chalky minerality, barley candy and tarte tatin. Fine pinprick bubbles with flavors of lemon leaves, aspirin and Mirabelle plums, plus a touch of grapefruit bitterness keeping the tension. Citrus peel, white flowers, mint, white pepper and slate all race across the palate. There’s gorgeous tension and backbone here, with bright saline notes that extend the mid-palate and finish. This is a fine showing in a vintage that has proven to be tricky. I am intrigued to see how the 2015 develops in the coming years.Vinous Media | 96 VMDisgorged in January 2023, the 2015 Dom Pérignon shows a singular, ethereal profile with aromas of white pepper, iodine, ripe orchard fruits, toast, smoke, herbs and spices. Medium to full-bodied, layered, and structured, it’s enveloping and round with a delicate phenolic mid-palate that underlines chalky dry extracts, concluding with a sapid, penetrating finish with gastronomic bitterness. This iteration of Dom Pérignon, though replete with the customary charm and vinous generosity that typify the label, distinguishes itself by its structural delicate austerity and a notably phenolic profile, giving rise to a remarkably linear and well-defined style that diverges markedly from the more familiar expressions of Dom Pérignon. This is a blend of 51% Pinot Noir and 49% Chardonnay with a dosage of 4.5 grams per liter; it will age wonderfully and can be enjoyed now or over the next 20 years.Robert Parker Wine Advocate | 95 RPBurnished gold color with a fine, effervescent bead, the Grand Vintage 2015 shows abundant ripeness on the nose with notes of white peach, quince, butter pastry, elderflower and nougat. 2015 Laurent Perrier Champagne Brut Millesime, Champagne

This is in a new bottle, like the stout ones used for the rosé and blanc de blancs. This is very structured with a density and richness with hints of strawberry to the apple character. Bubbles turn fine textured at the end. Delicious flavors of biscuits and dried apple in the finish. Special character to this because of the very ripe vintage. Disgorged in November 2021. This is half chardonnay and half pinot noir. This can age well due to the phenolics. Drinkers accustomed to Laurent-Perrier’s usual delicacy and brightness will still find it in this 50:50 split of Chardonnay and Pinot Noir, but the year’s up-front firmness plays clearly through bittersweet citrus, yellow apple and pithy, peppery grip, the fruit headed towards golden and tropical nuances rather than classical citrus and gentle red fruits. The body remains fairly compact rather than heavy or viscous, though, as most 2015s do. 2018 Francis Boulard Extra Brut Rose de Saignee

The 2018 Extra Brut Rosé de Saignée, 100% Meunier, is tremendous. A deep core of red-toned fruit, blood orange, cinnamon and dried rose petal sweeps across the palate. Still very young, the 2018 is impressive in every way. There is just a touch of reduction that needs time to blow off. There’s a lot of wine here. Dosage is 3 grams per liter.Vinous Media | 95 VMThe 2018 vintage of Delphine Boulard’s Rosé de Saignée is an excellent wine. It is made entirely of pinot meunier, with the juice given a half day of skin contact to provide the wine with its lovely, deep salmon color. The vins clairs are barrel-fermented and aged in cask until the June following the harvest and then bottled up for secondary fermentation and aged sur latte for just under five years prior to its disgorgement in March of 2024. Finishing dosage this year was three grams per liter. The wine is beautifully expressive on the nose, offering up scents of rhubarb, cherries, rye bread, chalky soil tones, dried roses, a touch of clove and a smoky topnote. On the palate the wine is bright, full-bodied, zesty and complex, with a lovely core of fruit, fine soil signature, elegant mousse and a long, beautifully balanced and gently vinous finish. N/V Egly-Ouriet Blanc de Noirs Vieille Vigne Grand Cru Les Crayeres (Disgorgement 2025)

Year after year, Egly’s NV Blanc de Noirs Grand Cru Les Crayères remains one of the most compelling and reliable wines from the Montagne de Reims. Sourced from a south-facing lieu-dit in Ambonnay that was planted between 1946 and 1947 on shallow chalk soils with just 30 centimeters of topsoil, it was disgorged in October 2024 with a dosage of one gram per liter. This release blends the richer 2017 vintage with the taut, incisive character of 2016. Notably, prior to 2000, Francis Egly produced this cuvée as a single-vintage expression, only later opting for a two-vintage blend to buffer against the variability of any given season. The wine ascends from the glass with a bouquet of remarkable complexity—aromas of acacia, ripe pear, orange zest, toasted nuts and patisserie elements unfurl. Full-bodied, concentrated and layered, with ample chalky structuring extract and mouthwatering acidity, it concludes with a long, saline finish. While I often vacillate between Les Crayères and the Millésime as to which I favor, this year, Les Crayères stands as the most captivating wine in the cellar. It offers immense youthful appeal yet promises to evolve beautifully with age. Disgorged in January 2024 with a dosage of 4.5 grams per liter, it opens with aromas of pear, golden apple, lemon curd and early white blossoms interlaced with a distant hint of nutmeg. As experienced Krug aficionados will recognize, the inclusion of reserve wines—which may have undergone malolactic fermentation—renders the Grande Cuvée more immediately approachable than the house’s vintage-dated Champagnes, offering a more generous drinking experience on release.Robert Parker Wine Advocate | 94 RPKrug’s Grande Cuvée 173ème Édition is crafted around one of Champagne’s most traumatic harvests of the past 20 years in 2017, where rampant rot and lack of maturity forced extreme sorting at harvest time. It’s exactly the sort of year that plays to the house’s strengths in its reserve wine library and pixelated, parcel-by-parcel vinification, though. Together with 31% reserve wines dating back to the 2001 harvest, it’s a relatively forward Grande Cuvée, but not overly marked by the challenges of the year. There’s a juicy apricot fruitiness evident up front, enlivened by some brightness of ground pepper and charred grapefruit peel, with aromatic details of green coffee and a food-friendly dried mushroom savour following in the glass. The softened, cushioned mousse is already feeling nicely settled, complementing the sense of roundness and ease. There’s plenty of cooked lime Chardonnay focus pulling the palate into some length and intensity, even if the quantity of Chardonnay in the blend is not perhaps as high as might have been expected considering its relatively strong performance in the year; the reserves, too, bring a delicious length and intensity to the otherwise up-front palate. The May 2017 disgorgement of Fallon’s NV Brut Blanc de Blancs Grand Cru Ozanne is showing brilliantly, wafting from the glass with aromas of citrus oil, crisp yellow orchard fruit, freshly baked bread, toasted nuts, candied peel and honeycomb. Full-bodied, vinous and concentrated, it’s layered and textural, with a bright spine of acidity, a pearly enlivening mousse and a long, intensely sapid finish. Its combination of power and tension makes this the finest wine I’ve tasted from Fallon to date. Of course, finding any of the thousand or so bottles released every year is next to impossible, but readers able to track one or two down are in for a treat.Robert Parker Wine Advocate | 95 RPThe NV Blanc de Blancs Grand Cru Ozanne is laced with gorgeous scents of pastry, brioche, citrus, white flowers and yellow orchard fruit.
