Pretty much a benchmark example of what village Chablis should be. Droin’s Montmains site is on a gentle slope with richer, deeper, kimmeridgian marl soils. A colder site, making the wine richer and with great density on the palate. Distinctly more weight than the Vaillons, giving the blend plenty of gravitas. 8-10 months ageing on fine lees adds a creamy character with acidity less pronounced than with the Vaillons. Droin’s Fourchaume is located in the Vaupulent sector, on deep, clay-rich soils. A warmer site, this is a;ready very appealing with nice touches of baked apples and stone-fruit on the palate, with softer acidity and concentration. Although accessible early, this has the concentration to age extremely well and will deliver more saline aspects with more bottle age.Decanter | 92 DECA whiff of mineral reduction is present on the nose of pear and apple compote where there is just enough Chablis typicity to be convincing. The succulent, round and palate coating flavors possess good underlying tension while delivering solid depth and length on the delicious finish where the only nit is a hint of warmth.Burghound | 90-92 BHThe 2021 Chablis Fourchaume 1er Cru shows a little more reduction on the nose compared to other cuvées but a pleasant flintiness develops with time. Daivissat’s Chablis parcel comes from two parcels - the smaller near Beine (0.6ha) and the much larger plot adjacent to Premier Cru Foret (2.5ha). Profound, concentrated, prominent lime/lemon zest on the palate, a touch of honey, confited citrus zest to finish. So long. A profound Chablis.Decanter | 93 DECA more floral and more citrus-infused nose speaks of cool and admirably pure aromas of iodine, ocean breeze and green apple along with a hint of the exotic. The rich and solidly concentrated medium-weight flavors also possess excellent length on the bright, clean and very dry finish. This chiseled and promising effort should amply repay 7 to 10 years of cellaring.Burghound | 90 BHThe Domaine Dauvissat 2021 Chablis AC is also an outstanding example of its respective level, delivering a vibrant and complex nose of fresh lime, apple, a lovely base of chalky minerality, just a touch of oyster shell and a topnote of straw. The 2021 Chablis Vaillon 1er Cru Cuvée Guy Moreau comprises just five used barrels this year. The fine bouquet is a little more mineral-driven than the regular cuvée with touches of wet pavement and citrus lemon. The palate is well-balanced, fresh and taut, with a fine bead of acidity, growing a little more compact towards the finish but with slightly more salinity to get the tastebuds going. The 2022 Chablis Grand Cru Les Preuses is also rather rich and textural this year, mingling notes of sweet orchard fruit and confit orange with notions of toasted nuts and buttery pastry. The very steep aspect of Côte Bouguerots is highlighted by a much greater emphasis on minerality than Fevre’s Bougros. This is a grand cru is every way - so much drive on the palate with plenty of extract, concentration, salinity and length. Certain to keep very well but this is also surprisingly approachable early on. DIdier Seguier says it’s likely to close down after 18-24 months but this is clearly a fine example with masses of potential.Decanter | 96 DECThe 2022 Chablis Bougros Côte Bouguerots Grand Cru has a clean and precise bouquet with hints of wild peach, apricot blossom, Mirabelle and crushed stone. The palate is well-balanced with a very harmonious entry, blackcurrant leaf and spice, crushed stone and what feels like plenty of extract on the finish. This has great potential, but afford it time in your cellar.Vinous Media | 93-95 VMThis is the coolest and most restrained of this group of 2022s with its elegant aromas of prominent mineral reduction, lemon-lime, spice and oyster shell. There is almost painful intensity to the intensely stony and strikingly well-detailed larger-bodied yet still beautifully refined flavors that display huge length on the impeccably well-balanced finale. 2022 Domaine William Fevre Chablis Premier Cru Vaillons, Burgundy White

This is also aromatically cool and almost as reticent with its airy aromas of white pepper, mineral reduction, essence of pear and a suggestion of wood influence. The gorgeously textured medium weight flavors possess an even more developed sense of refinement while exhibiting fine length on the quinine, stony and bitter lemon zest-suffused finale. This is lovely and a Vaillons of finesse in 2022.Burghound | 90-93 BHThe 2021 Chablis Vaillons 1er Cru had been blended the previous week, during which a majority of the lees is kept. Often one of my favorite cuvées from William Fevre, the entrancing bouquet has impressive intensity on the nose. The palate is well-balanced with lemon verbena and touches of pear, a fine sense of energy and composure, and a persistent finish. This already looks very promising.Vinous Media | 90-92 VMTypical Vaillons perfume and freshness. Precise but with good weight and precision. A classy Vaillons which will drink well when young but will also age. Fèvre owns 3.5ha, with 50% in Vaillons, and the rest spread between Chatains, Roncière and Melinots. The 2022 Chablis Grand Cru Blanchots is very promising, bursting with aromas of orange zest, citrus blossom, buttery pastry and fresh hazelnuts. Very harmonious and persistent - this is an excellent Blanchot.Vinous Media | 93 VMSubtle if easily perceptible wood can be found on the airy and floral aromas of sea water, citrus and a hint of wet stone. The rich and solidly concentrated medium-bodied flavors exude an almost palpable minerality on the impressively long finale. This is notably more refined than the Bougros though it too could use better depth but with at least a decade of upside development potential, more will almost certainly develop.Burghound | 93 BHPale colour, a full and ripe nose, the white flowers are entwined with a little honeysuckle. Fresh enough on the palate with a fine white fruit thread, sinuous yet precise, and with great length. A fine and typical rendition of Blanchots. Drink from 2027-2037. Vaulorent is the opposite in style to Fourchaume for Droin, with soils only 10cm thick. This comes through on the palate with its pronounced mineral character. Shy and introverted at the moment, this is undoubtedly a fine wine which will need quite a bit of time to come round. Very crisp apple fruit flavours and a flinty finish.Decanter | 94 DECA distinctly smoky nose features notes of apple and pear confit along with various floral and seashore hints that are trimmed in just enough wood to notice. The medium-bodied flavors are rich, even plush, with a highly seductive texture that carries over to the surprisingly powerful, well-balanced and strikingly long finale. This is also lovely and harmonious.Burghound | 92 BHThe 2022 Chablis Vaulorent 1er Cru has a sensual bouquet with yellow plum, jasmine and saffron scents that billow from the glass. The palate is very well-balanced with a fine bead of acidity, very focused and sharp, and citrus-fresh towards the finish. Almost clinical (in a good way), though that is one of Droin’s tropes.Vinous Media | 91-93 VM

Lovely fruit quality; weighty, ripe and powerful but balanced with citrus freshness. A little more approachable than Vaulorent for the moment. Blue and white clay adds extra depth.Decanter | 93 DECThe 2022 Chablis Montée de Tonnerre 1er Cru has a clean, precise bouquet that is more austere than Droin’s other Premier Crus at the moment. More to give? (Droin mentioned this had just undergone some filtration). The palate is well-balanced with a crisp entry, fresh and saline with a more malic finish. Maybe the purists/classicists’ choice? This will need considerable aging.Robert Parker Wine Advocate | 92-94 RPA more floral and slightly more elegant nose is composed of notes of cool green apple, oyster shell, iodine and hint of crushed anise with a similarly discreet application of wood. The middleweight flavors are not as rich though they are noticeably finer with a slightly more evident bead of minerality as well on the tension-filled, lingering and well-balanced finish. This stylish and classy effort could also use better depth but the Droin MdT has an excellent track record, and 2022 should prove no different.Burghound | 92 BHA clear mid lemon yellow. The bouquet is well balanced, confit de citron but not too peachy. Just a little spritz in the mouth, though this will be less evident after bottling. Attractive sunny, warm notes on the nose, with a touch of white peach. Much more acidity and flintiness evident. A very high-quality Chablis which will benefit from several years ageing. Raveneau has two plots for its AP Chablis, one in a valley by Montmains, the other opposite Forêts; 1.1ha in total.Decanter | 93 DECNotes of lemon oil, lime zest, white flowers and freshly baked bread introduce the 2022 Chablis Village, a medium to full-bodied, bright and ample wine that remains pure and racy in this warm vintage, concluding with a saline finish.Robert Parker wine Advocate | 90 RPThe 2022 Chablis-Villages is a step up from the Petit Chablis as you would expect with hints of yellow fruit, Vervane and light apple strudel scents. Lovely delineation. The palate is taut and crisp with fine tension, lightly spiced with a brisk, saline finish that lingers in the mouth. This is a lovely Chablis Village that will age over the next decade.Vinous Media | 90 VMHere there is slightly better Chablis typicity to the ripe, fresh and ever-so-vaguely exotic aromas of white peach, mandarin orange, citrus confit and quinine. The succulent and generous yet decidedly punchy medium-bodied flavors conclude in a crisp, refreshing, very dry and highly refreshing finish that offers notably better depth and persistence. And it is. A fine blend of freshness allied to sun-drenched ripeness, with a pronounced mineral finish. A great example of the distinctive terroir of Les Lys. Long, mineral, salty tail.Decanter Magazine | 93 DECThe 2022 Chablis Les Lys 1er Cru comes from north/northwest-facing vines. This complex and detailed bouquet of yellow fruit, lemon verbena and lemon thyme is quite minerally and focused. The well-balanced palate has a fine acidic spine, more sapidity than the Vaillons and a persistent and detailed finish as it fans out. Superb.Vinous Media | 91-93 VMThere is a certain coolness to the otherwise ripe aromas of apple, pear, sea breeze and quinine. The succulent and unusually rich middleweight flavors are also nicely refined while flashing a bead of minerality on the youthfully austere, balanced and lilting finale that could use better depth. This citrusy effort is really quite good and one that should benefit markedly from a few years of keeping.Burghound | 91 BHJust assembled so cloudy, as all the lees remain in suspension. The bouquet is less fine but shows nonetheless a wealth of pure white fruit which is attractive. Lots of marl with a mix of portlandian and kimmeridgian soils, the former adding the body, the latter leaving the lick of salinity. Good length. Drink from 2026-2034. The 2022 Chablis Fourchaume 1er Cru has a discrete nose that gradually reveals one of Droin’s more floral bouquets this year. The well-balanced palate has a slightly richer, nuttier opening and good depth, tensile with a subtle reduction on the persistent finish. Excellent.Vinous Media | 92-94 VMA very elegant example of Fourchaume. A fine, all round package with depth and weight of fruit. Enough acidity to balance. Would drink this earlier than some, as it has a very generous fruit character. Droin’s vines are planted in the Vaupulent climat.Decanter | 92 DECModerate wood surrounds the ripe and more floral-inflected nose of essence of pear, mineral reduction and a similar very vague hint of the exotic. The wood can also be found on the palate of the rich and opulent yet solidly punchy medium-bodied flavors that exhibit fine depth and persistence though. With that said, and as good as this certainly is, it isn’t a match for the Mont de Milieu.Burghound | 90-92 BH
