The Cabernet Franc really stands out, and the wine has a complex, forest floor, herbal, bouquet garni-like character as well notes of woodsmoke, iron, and blue fruits. I was blown away by the 2019 Cabernet Sauvignon DVO, a blend of 85% Cabernet Sauvignon and 15% Cabernet Franc made as a collaboration between the team at Dalla Valle and Ornellaia. Remarkable notes of red and black currants, spring flowers, lead pencil, loamy earth, and classy oak all emerge from this young yet amazingly balanced, seamless Cabernet. The aromas are restrained but compelling, influenced perhaps by the herb gardens that grow alongside the vineyard. There is chamomile and verbena together with just a hint of the apricot and mango of ripe California Chardonnay. The palate is equally restrained, refreshingly steely, with a sinewy backbone of acidity supporting ripe yellow tree fruit. Malolactic fermentation was blocked but a plushness exists to the texture from battonage and there is a definite sensation of spongy compression on the mid palate, generous and delicious. The finish is pure-fruited and long. This is a lovely, refreshing wine to drink right now, light on its feet but sinewy as a dancer.Decanter | 94 DECA beautiful chardonnay with cooked apple, dried mango and mineral character with a pumice undertone. Fragrant and so scented on the nose, inviting and cool. The classic blend of 60% Cabernet Sauvignon and 40% Cabernet Franc is smooth and supple on the palate, crisp and crunchy yet smooth and silky and also slightly chewy and bouncy. A lovey combination of power and focus, this has drive and sculpt, nuance and detail. Excellent presentation, really fills the palate with juice, energy brightness. One of the legendary Dominus, the 2021 Cabernet Sauvignon is unquestionably in the same league as the 2018, 2016, 2015, 2013, 2010, and 1991, and to my mind, wine simply doesn’t get any better. Sporting a dense purple hue as well as an incredible perfume of blackcurrants, crushed stone, cedar pencil, smoke tobacco, and baking spices, it s rich, full-bodied, and voluptuously textured, with ripe yet building tannins. It reminds me slightly of the 2010 (maybe the 2013), and I suspect it will have a similar evolution. Hide bottles for 7-8 years, and it will evolve gracefully for 30+ years.
