It’s a barrel selection with such great stony lemon minerality. Aged sur lie for 11 months—only 15% new oak. Jackson does more leaf removal for Chardonnay than he did; he finds more texture in the skins, which makes a linear and lithe Chardonnay with wildflower aromas, crushed stone and apricot skin. As a result, the juice is fermented separately from each site in stainless steel and later aged in neutral barrels for 9-10 months. Smith picks the grapes relatively lean but not lacking in flavor, producing a wine that’s light on its feet. The fruit is whole-cluster pressed, cold settled, and fermented and aged in Burgundy-style French oak barrels for roughly 16 months, with 45% new French oak and extended ageing sur lie. No malolactic fermentation is carried out. The wine is wonderfully expressive and focused, driven by a saline acid tension and a mineral profile of white pepper and white ash. Loads of citrus fruit and zest unfurl alongside lemon curd, with subtle tropical notes of underripe pineapple and white peach, framed by delicate white-floral tones. The 2023 Pinot Noir Holstein Estate was fermented with 20% whole clusters and matured for 11 months in 20% new French oak. The nose is bursting with strawberry, pomegranate, blood orange, damp earth and tea leaves. Medium-bodied, it floods the mouth with layer after layer of perfumed, crunchy fruit.
