Known for its traditional flavor, full-bodied Cabernet Sauvignon wine is the most famous dry wine to be served with food. As a world’s most dominant red wine-grape variety, it is cultivated all around the world, although many might predominantly associate it with the red wines of Bordeaux, where it is combined with Merlot to create many crucial and influential blends. Besides Bordeaux, this grape varietal is mostly present in Tuscany, Napa Valley, Australia, and Chile.

It doesn’t take a veteran wine-lover to enjoy Cabernet Sauvignon wines on the surface, as their flavor is unique and compelling. It does, however, take an expert to pick up on all the subtleties and fully appreciate the complexity, craftsmanship, and dedication that radiate from a wine of this quality. Cabernet Sauvignon wines have an alcohol content that hovers around 13.5%, and a signature deep, dark color – the very blood of the grapes, bottled and preserved for our enjoyment and dissection. The thickness and richness of the texture only add to this comparison, making the crimson nectar feel alive in the glass. The level of tannin present in the wine will sap the moisture from your mouth, and what better way to fix that issue than with another glass? 2007 Kapcsandy Cabernet Sauvignon Grand Vin State Lane Vyd

Very deep purple in color, the 2007 Cabernet Sauvignon Grand Vin State Lane Vineyard is still a baby on the nose, sporting extravagant crème de cassis, blueberry pie and spice box notes with hints of dried lavender, aged meat, tilled soil and Sichuan pepper notes with a touch of tobacco. Medium-bodied and firm with fine-grained tannins and wonderful freshness, it gives layer upon layer of black fruit and earth notions, finishing very long. Give it another 4-5 years in bottle and drink it over the next 20+.Robert Parker Wine Advocate | 100 RPSaturated dark ruby. Less expressive and more medicinal and brooding on the nose than the Roberta’s, offering extremely primary scents of cassis, licorice, bitter chocolate and violet. Then fat, full and strong on the palate, showing the sweetness of the Roberta’s but not that wine’s plushness of texture. Currently dominated by intense black fruits, spices and violet. Finishes with a savory dryness and slightly tough, chewy tannins that still need time to resolve. This wine strikes me as being in a rather clenched phase of its evolution, but it has the mid-palate extract to support its serious tannic load. 2007 Quilceda Creek Cabernet Sauvignon, Washington Red

A monumental wine in the making, the 2007 Cabernet Sauvignon is one of those wines that presents such an over the top array of aromas and flavors that it’s hard to figure out what you think about it with just a quick glance. It’s only with the second or third sip that you really start to see how special this effort truly is. Offering up perfumed, intense aromas of plum, violets, ink, licorice and black currants, it flows onto the palate with a massive, incredibly full-bodied texture that builds through the mid-palate and carries layers of polished tannins, awesome purity of fruit and blockbuster length. Most likely not for everyone given the sheer size, it is an incredible wine in my opinion. Still tasting like a barrel sample, it will have 30+ total years of longevity. Intensely perfumed Asian spices, black and blue fruits, plus a whiff of cocoa powder and lavender. Lovely vibrancy to the aromas of blackcurrant, plum, licorice and cocoa powder, with a strong impression of minerality. Like liquid silk on the palate and yet powerful at the same time, with strong minerality contributing to the impression of lift and inner-mouth perfume. The dark berry, violet and cocoa powder flavors offer compelling early sweetness, and this wine's wonderfully lush tannins will not get in the way of early enjoyment. A great example of the new generation of Quilceda Creek cabernet. 2010 Shafer Cabernet Sauvignon Hillside Select, California Red

A remarkable wine, the 2010 Shafer Cabernet Sauvignon Hillside Select has gone from strength to strength since it was in cask. It is stunningly rich, with classic, fragrant notes of blackcurrants, blackberries, vanilla, graphite and spring flowers. It exhibits an opaque purple color, with a full-bodied, massive mouthfeel, but no heaviness, and again, a flawless integration of acidity, tannin, alcohol and wood. It’s classic California Cabernet, but beautifully put together, showing impeccable craftsmanship and fabulous potential. This is obviously a very young, infantile style of Cabernet that won’t hit its prime for at least another decade and last close to half a century, based on how older vintages that were less well-endowed have matured from Shafer.Robert Parker | 100 RPThe Shafer family has made compelling reds for decades and this one is a knock-out. Fabulous character of currants, mint, spice and wet earth. Juicy and fruity, with an intense chewy finish. Needs time to age.James Suckling | 98 JSBright, dark ruby to the rim. This Napa Valley masterpiece is developing at a snail’s pace. The finish goes on and on, with substantial fine-grained, toothcoating tannins in perfect balance with the wine’s fruit. Wonderfully sweet and voluminous but not excessively so, as there’s so much else going on here. This wine was only a tad more developed than a spectacular sample I tasted as part of a vertical tasting I did at the estate in 2016. This is a burly, distinctive and sizable wine, ripe yet refined, having been given three years in barrel and another in bottle before release. Chocolaty tobacco combines with pencil shavings and dense blackberry before finishing in an explosion of black pepper. The perfect 2012 Cabernet Sauvignon Grand Vin State Lane Vineyard is 99% Cabernet Sauvignon and 1% Merlot aged 20 months in 100% new French oak. I think this is the third perfect score I’ve given to this wine, which is the essence of their vineyard, representing about 13% of the total production, or a mere 320 cases. The wine has a gorgeously opaque purple color and a beautiful nose of camphor, charcoal, blackberry and cr?me de cassis with licorice and truffle. It has unbelievable richness, great texture, tremendous finesse, precision and delineation. Very intense, full-bodied and super-pure, the length of the wine must be at least 50+ seconds. This is a gorgeous wine and one of the great superstars of this fabulous vintage. Drink it over the next 25-30 years.Robert Parker | 100 RPSaturated dark red with ruby highlights. Wonderfully complex perfume combines black raspberry, blueberry, subtle torrefaction notes and a hint of black olive. The finish goes on for close to a minute. The vineyard truly offers a unique expression of Napa Valley, with beautiful fruit layers, great elegance and the most profound fragrance being signatures of the vintages I have tasted. Deep garnet-purple in color, the 2015 Cabernet Sauvignon Tychson Hill Vineyard jumps out of the glass with all the vibrancy of this vintage, singing notes of cassis, crushed red cherries and mulberries with touches of chocolate, espresso, baking spices, cloves and black soil plus wafts of lavender and dried roses. Reminding me of the 2015 Château Margaux with its off the charts class and purity, it’s full-bodied, thrillingly textured, and has a finish that just won't quit. 2016 Colgin Cabernet Sauviginon Tychson Hill Vyd

This is a monumental lineup from what is undeniably one of the greatest producers in the world today, and there are three perfect wines from this estate. Looking first at the 2016 Cabernet Sauvignon Tychson Hill, which comes from a tiny, cooler, north facing vineyard in St. Helena that was originally planted in 1881 by Josephine Tychson, it’s 95% Cabernet Sauvignon with the balance Cabernet Franc and Petit Verdot, bottled in May of this year. Its saturated purple color is followed by a sensational perfume of crème de cassis, tobacco leaf, graphite, and hints of licorice. This gives way to a full-bodied, concentrated, powerful wine that has beautiful mid-palate depth and concentration, an utter seamlessness, elegance, and balance that’s hard to describe, awesome purity of fruit, and a finish that won’t quit. This is Napa Valley Cabernet at its finest and one of the great Cabernet Sauvignons of the past century. Hide bottles for 4-5 years, a decade if you can, and it will keep for 30-40 years.Jeb Dunnuck | 100 JDThis is the first vintage with fruit from Josephine’s Hill included. The full-bodied palate is rich, concentrated, expressive and velvety, offering seamless freshness to lift and entice the mid-palate, finishing very, very long with some savory notions starting to unfurl. Scheduled to be released in March of this year, the deep ruby-colored 2016 Cabernet Sauvignon would give the 2015 Château Margaux (that’s what leaped into my head as I tasted this) a run for its money and is an utterly perfect bottle of wine that does everything right. Made from 100% Cabernet Sauvignon from very old, dry farmed vines in what was previously known as the J.J. Cohn Vineyard, its deep purple color is followed by a heavenly perfume of blueberries, spring flowers, lead pencil, exotic spices, and graphite. Slightly more focused and poised than the M. Etain release, with full body, ultra-fine tannins, and no hard edges, it’s a wine of incredible elegance paired with remarkable intensity, and it’s rare to find a wine that marries both so effortlessly. As with the vast majority of truly great Cabernet Sauvignons, it’s great today and will be great in 30 years.Jeb Dunnuck | 100 JDScarecrow is 100% Cabernet Sauvignon from two acres of old vines planted in 1945 by John Daniel and dry farmed. The palate is full-bodied and super concentrated yet possesses great energy with vibrant red and black fruits and loads of mineral accents, framed by very ripe, super fine-grained tannins and fantastic freshness, finishing very long with the most incredible perfume. The vineyard was founded in 1945 by Joseph J. Cohn who was born in Harlem, New York, in 1895, to Russian immigrants. Cohn, penniless as a child, rose to become the head of Hollywood’s famous studio MGM. Among the classic movies Cohn produced was The Wizard of Oz. Years later Cohn’s grandson Bret Lopez named the wine Scarecrow after the movie’s beloved character. Made by Celia Welch, it’s a stunning wine with dazzling flavours that flash open like a peacock’s tail. The texture is nothing short of sublime.Drinking Window 2019 - 2045Decanter | 98 DECThe 2016 Cabernet Sauvignon Scarecrow is another positively riveting wine from this benchmark estate and longtime winemaker Celia Welch. Powerful and explosive on the palate, with tremendous energy, the 2016 has so much to offer.
