A cool and airy nose is less exotic than it usually is though there is a trace of it on the ripe white and yellow fruit suffused aromas. Once again there is both good density and power to the medium weight flavors that also possess an abundance of sappy dry extract along with plenty of salinity on the moderately structured, complex and sneaky lengthy finish.Burghound | 92 BH

(Chablis Montmains 1er Cru, Domaine William Fèvre, White) From all three sections of the vineyard as usual. Racy lemon colour. Pure crystalline nose, very little reduction, very classical left bank Chablis, very intense but neither heavy nor exotic. The kimmeridgian is speaking underneath a graceful layer of flesh. Fruit and stones both keep coming back at the finish.Jasper Morris | 92-95A wine from a selection of sites over 3.9ha in Butteaux, Forêts and Montmains. Butteaux is very cold and mineral, while Forêts is elegant and floral. Great precision and focus here, allied with crystalline citrus fruits on the palate. Shows density, but is also very fresh, with lovely mineral characters on the finish. A highly successful Montmains.Decanter | 93 DECHere too the nose is elegant, pure and layered but with more floral and spice nuances adding breadth to the cooler and more restrained aromas. There is both excellent intensity and density to the mineral-driven flavors that terminate in a bone-dry, sneaky long and balanced finale. This too is really very good.Burghound | 91-93 BHConsisting of roughly equal parts Montmains, Butteaux and Forêts (the three sous-climats of Montmains), the 2020 Chablis 1er Cru Montmains offers up aromas of crisp green apple, white flowers, bee pollen and oyster shell. Medium to full-bodied, satiny and concentrated, it’s taut and precise, concluding with a saline finish.Robert Parker Wine Advocate | 92 RP(Chablis “Montmains”- Domaine William Fèvre) The 2020 Montmains here is also lovely, with perhaps just a bit more definition and complexity than in the Beauroy. The nose is pure and bright, offering up scents of apple, tart orange, wet stone minerality, citrus peel, dried flowers and a nice shading of oyster shell. On the palate the wine is pure, full-bodied and racy in personality, with fine focus and grip, a lovely core and a long, minerally and beautifully balanced finish. A lovely example. (Drink between 2026 - 2055)John Gilman | 92+ JGThe 2020 Chablis Montmains 1er Cru comes from 3.8 hectares of vines over 12 parcels and offers pressed white flower scents and a touch of crushed rock. The 2020 Chablis Mont de Milieu 1er Cru has a more powerful bouquet than its peers with scents of orange blossom, Nashi pear and an underlying gunflint note trying to surface. The palate is well balanced with orange rind and a touch of peach skin on the entry. Very poised and harmonious with impressive volume, I admire its tension and persistence on the saline finish. This will not require much bottle maturation, yet it has the substance to last 15-20 years. Excellent. Tasted blind at the BIVB tasting in Chablis.Vinous Media | 93 VM

The 2019 Chablis Vaillons 1er Cru has a less flamboyant bouquet than its peers. This feels more reserved and flinty, though very nicely defined and focused. The palate is well balanced, with the weight and density I look for in a Vaillon, and a little spicier than the Vosgros. A touch of lemongrass and a hint of green olive appear toward the finish. The 2020 Chablis Vaillons 1er Cru has a flinty, focused, energetic nose that feels more harmonious than the preceding Côte de Léchet. The palate is taut, fresh and saline in the mouth, showing great depth and concentration toward the finish. This will be worth looking out for.Vinous Media | 90-92 VMHere there is less citrus and more floral influence on the white pepper and mineral reduction-inflected nose. The sleek, intense and attractively textured medium-weight flavors possess a bracing salinity on the agreeably dry, chiseled and well-focused finale that is just a bit firmer. The 2019 Chablis 1er Cru Séchet opens in the glass with scents of citrus oil, white flowers, beeswax, oyster shell, wet chalk and mandarin. Medium to full-bodied, satiny and strikingly intense, it’s taut and chiseled, with tangy acids and huge reserves of concentration, concluding with a pungently chalky finish. As I’ve written before, Séchet—where Dauvissat owns a 0.8-hectare parcel—is located in the Vaillons Valley, but its windier situation and soils richer in active limestone mean it’s typically more tensile and incisive than the other climats that make up Vaillons. Technically retired but very much a continuing presence at his eponymous domaine, Vincent Dauvissat—who forsook a career as a shepherd to become one of France’s most celebrated vignerons—couldn’t disguise his satisfaction as we tasted his recently bottled 2019 portfolio. After some discussion, we settled on the 1989 vintage ("but tighter and more incisive") as a possible analogy for 2019’s hyper-concentrated, ripe, but all the while classically Chablisien style. In any case, they’re some of the wines of the vintage and are well worth seeking out. Readers will remember that farming here is organic but without certification. The harvest is by hand, and the wines ferment in tank before racking to barrel with the lees (Raveneau’s Chablis, by contrast, are racked to barrel more or less without their lees), spending a second winter in wood before bottling. A first bottling, destined for the American market. | 94 RP The 2019 Chablis Séchets 1er Cru has an elegant and more floral bouquet compared to Vincent Dauvissat’s other 2019s, beautifully defined and offering baked apple, pear and white flower scents. The palate is well balanced with a spicy opening, plus hints of stem ginger and walnut. Quite tensile and full on the finish. Good potential here.Vinous Media | 91-93 VMA markedly citrusy and noticeably cooler nose combines notes of mineral reduction with those of pear and apple confit. There is again very good volume and mid-palate density on the seductively textured medium-bodied flavors that are also quite dry on the balanced finale. This is a powerful Séchet that is even more robust and one that will need to add depth with age, but it should do just that if given a chance.Burghound | 92 BH

The 2019 Chablis 1er Cru Butteaux Vieilles Vignes is excellent, mingling aromas of pear, citrus oil and warm bread with hints of iodine. Bottled later than the younger-vine cuvée of Butteaux, it’s medium to full-bodied, layered and concentrated, with racy acids and chalky grip.Robert Parker Wine Advocate | 93+ RPLike the regular cuvée, this too flirts with volatile acidity though it is admittedly extremely subtle on the nose of essence of pear, quinine and lemon-lime scents. The texture of the slightly denser flavors is equally attractive while offering more evident power on the minerally finish that is impressively persistent, dry and youthfully austere. The 2017 Chablis Mont de Milieu 1er Cru has more mineralité on the nose compared directly to the Sécher, attractive orange blossom and canned apricot scents emerging with time. The palate is well balanced with a tang of ginger on the entry, showing impressive weight and a taut, linear, quite persistent finish. This is excellent, fulfilling the potential it showed back in June.Vinous Media | 92 VMBeautiful aromas of wet stones and limes, as well as grapefruit. The palate has a very succulent and attractive feel with lithe and linear acidity as a feature. Drink or hold.James Suckling | 92 JSAs usual, the 2017 Chablis 1er Cru Mont de Milieu is the most blocky and broad-shouldered of the domaine’s premiers crus, revealing notes of smoky citrus oil, white flowers and oyster shell, followed by a medium to full-bodied, powerful palate that’s still youthfully firm, balanced by tangy acids and concluding with a distinctly saline finish.Robert Parker Wine Advocate | 91+ RP(Maison Joseph Drouhin Chablis "Mont de Milieu" 1er Cru White) A distinct whiff of the exotic can be found on the layered and riper nose that combines notes of apricot, white peach, lychee and hint of tidal pool. Once again there is plenty of citrus influence to the bigger and richer medium-bodied flavors that possess good muscle and punch, all wrapped in an impressively powerful, long and serious finale. This youthfully austere effort is clearly built-to-age and is going to need at least some forbearance. (Drink starting 2025)Burghound | 91 BH(Chablis “Mont de Milieu”- Domaine Drouhin Vaudon) Mont de Milieu is on the Right Bank in Chablis and this sector was far more severely hit by the late April frosts than was the case across the Yonne, so yields here are decidedly lower than was the case with the estate’s Sécher, Montmains or Vaillons. The wine is more forward out of the blocks in 2017 than the Sécher, offering up a precise and inviting bouquet of lemon, green apple, limestone soil tones, spring flowers and a topnote of beeswax. On the palate the wine is pure, full-bodied and very elegant in profile, with a bright, but easy-going structural chassis, fine mid-palate depth and a long, bouncy and complex finish. This is already very tasty, but seems to have the balance to age quite well, despite not being particularly steely in terms of acidity. (Drink between 2018-2040)John Gilman | 91 JGA lift of citrus on the nose of this wine immediately sets a bright, fresh accent. The palate comes in with ripe, fresh Mirabelle abundance that enjoys the definition and texture reminiscent of white citrus pith. This wine focuses on fruit but manages to stay toned and defined. (Domaine Vincent Dauvissat Chablis "Montée de Tonnerre" 1er Cru White) A vague hint of the exotic is present on the wonderfully elegant lemony white orchard fruit scented nose that reflects additional notes of mineral reduction and oyster shell. The notably finer medium-bodied flavors possess excellent punch on the mineral-driven and chiseled finish that goes on and on. This is lovely and while it too will need better depth, the aging curve is sufficiently promising that I am optimistic that more complexity will develop over the next decade. In a word, terrific. (Drink starting 2027)Burghound | 94 BHThe 2019 Chablis 1er Cru Montée de Tonnerre is the sixth vintage that Dauvissat has produced of this climat, and he observes that it's one of the few parcels he exploits that isn't planted with the family's proprietary massale selections. Exhibiting notions of citrus oil, fresh bread, iodine and warm pastry, it's medium to full-bodied, ample and lively, with fine tension at the core and a long, mineral finish. It's the most approachable while young of these premiers crus.Robert Parker Wine Advocate | 93 RPThe 2019 Chablis Montée de Tonnerre 1er Cru comes from the domaine’s single 0.30-hectare parcel. It has a refined, very classic Chablis nose with wet pavement and light nutty aromas that remain discreetly in the background. The palate is slightly honeyed on the entry, spiced with touches of stem ginger, and delivers good depth, leading into an edgy, saline, powerful finish. Patrick’s 2020 Butteaux is utterly classic in personality and superb in potential quality. The nose jumps from the glass in a refined blend of apple, pear, a complex base of chalky soil tones, paraffin, fruit blossoms and vanillin oak. On the palate the wine is deep, full-bodied and shows of gorgeous fruit at the core, with excellent soil undertow, bright, zesty acids, fine focus and grip and a long, perfectly balanced and complex finish. Great juice. 2025-2060.John Gilman, A View from the Cellar | 94 JGThe 2020 Chablis Les Butteaux 1er Cru had received a bit of SO2 a couple of days before my visit. For that reason, it is a little muted on the nose, opening gradually to reveal yellow flower scents. The well-balanced palate offers grapefruit and melon notes, a fine bead of acidity and good weight on the finish. It does need to cohere in the glass, but this has good potential.Vinous Media | 91-93 VM(Maison Patrick Piuze Chablis "Butteaux" 1er Cru White) A very Chablis-like nose features notes of mineral reduction, pear, apple, shellfish and a plethora of citrus elements. The succulent and round yet decidedly powerful medium-bodied flavors exhibit borderline painful intensity before culminating in a very dry, firm and austere finale. Patience strongly suggested. One of the highlights of the range is the 2020 Chablis 1er Cru Vaulorent, a medium to full-bodied, taut and concentrated wine evocative of pear, citrus oil, smoke, oyster shell and freshly baked bread. Chiseled and incisive, it concludes with a long, penetrating finish.Robert Parker Wine Advocate | 94 RP(Chablis “Vaulorent”- Domaine Patrick Piuze) The 2020 Vaulorent from Patrick Piuze is outstanding. The bouquet is pure, precise and complex, wafting from the glass in a suave mix of apple, pear, chalky minerality, a touch of raw almond, white lilies, beeswax and vanillin oak. On the palate the wine is pure, precise and nicely reserved in personality, with a full-bodied format, a lovely core of fruit, excellent soil signature and a long, nascently complex and vibrant finish. This wine has beautiful grip and purity and all it needs is some time in the cellar to properly blossom. (Drink between 2028-2070)John Gilman | 94 JG(Maison Patrick Piuze Chablis "Vaulorent" 1er Cru White) An expressive nose combines aromas of white flowers, anise, tea, oyster shell and whiffs of ocean breeze. There is better volume if not quite the same degree of refinement on the punchy, saline and sneaky long finale. This firm effort is lovely with a Zen-like sense of poise. (Drink starting 2028)Burghound | 90-93 BHThe 2020 Chablis Vaulorent 1er Cru was showing a bit of reduction on the nose when I tasted it directly from barrel. Moving straight on to the palate, there is crisp citrus fruit, lemon curd, touches of frangipane and plenty of spice toward the back end. A tang of stem ginger lingers on the aftertaste. This is a fine Vaulorent but it will need time in bottle.Vinous Media | 90-92 VMThis supple white is highlighted by apple, melon and green plum flavors, with accents of mineral and vanilla adding detail. A lifted but guarded sense of lemon zest plays on this wine’s nose, forthright at one moment, restrained the next. The palate channels concentrated but creamy lemon peel, mouthwatering in its frankness but buffered by lovely chalkiness. Lemony limestone freshness rings long after the last sip.Wine Enthusiast | 94 WEThe 2019 Chablis Vau de Vey 1er Cru has an intriguing, melted candle wax and white flower nose, showing touches of apple peel and chalk dust. This seems to grow in complexity in the glass. The palate is well balanced and spicy, with a fine bead of acidity. Orange peel and touches of bitter lemon give way to a slightly oily-textured finish. This is a very engaging Vau de Vey that will be fascinating to see mature in bottle.Vinous Media | 92 VMHere the expressive nose is blessed with more evident Chablis character in the form of iodine, oyster shell and citrus along with ripe pear and apple whiffs. There is fine underlying tension to the impressive dense and stony medium weight flavors that are not especially complex, but the citrus-tined finish is refreshing plus there is enough underlying material to suggest that more depth should develop in time.Burghound | 90 BH

A striking young wine, Dauvissat’s brilliant 2020 Chablis 1er Cru La Forest unfurls in the glass with aromas of crisp orchard fruit, orange oil, pear, oyster shell, freshly baked bread and smoke, framed by a deft touch of reduction. Medium to full-bodied, deep and multidimensional, it’s taut and concentrated, with racy acids, chalky structuring and a long, searingly mineral finish. Recent years have delivered so many brilliant renditions of La Forest that it’s hard to pick a favorite between the likes of 2008, 2014, 2017 and 2019, but the 2020 is certainly a worthy entrant into the competition, and it’s worth a special effort to seek out.Robert Parker Wine Advocate | 95+ RP(Domaine Vincent Dauvissat Chablis "La Forest" 1er Cru White) A highly complex nose combines notes of citrus rind, sea breeze, petrol and shellfish. There is excellent size, weight and intensity to the more robust and muscular if less refined flavors that brim with dry extract before terminating in a mineral-driven and bone-dry but not really austere finale. I very much like the balance, and this should also age gracefully yet it’s not so structured that it couldn’t be approached after 5-ish years if desired. (Drink starting 2030)Burghound | 92-94 BH(Chablis “la Forest”- Domaine Vincent Dauvissat) The 2020 la Forest from Vincent Dauvissat is truly outstanding this year and reminds me very much of the great potential I saw when I first tasted vintages like 1985 and 1990 here, which also were so classically-cut out of the blocks. The superb aromatic constellation delivers scents of apple, pear, lemon, a beautiful base of chalky minerality, paraffin, vanillin oak and a lovely floral topnote that shares a mix of white lilies and lime blossoms. On the palate the wine is pure, precise and full-bodied, with impeccable focus and grip, a lovely core of fruit, outstanding soil undertow and a long, zesty and finish that closes with snappy acids and a complex, seamless finish. A classic in the making. (Drink between 2026-2065)John Gilman | 94+ JGThe 2020 Chablis Fôrets 1er Cru is backward on the nose, the most stubborn and recalcitrant of Dauvissat’s Premier Crus despite rigorous coaxing. The powerful palate is linear, like the Montée de Tonnerre, but displays a little more puissance toward the finish. But, maybe, the Montée has more charm. We will see.Vinous Media | 91-93 VM

This wine is both taut and generously fruity. The steely edge promises plenty of aging while more tropical flavors of mango and white peach give richness. The wine will age well. Don’t drink before 2023.Wine Enthusiast | 93 WEThe 2019 Chablis Les Fourchaume Vieilles Vignes 1er Cru, a selection that is raised in two demi-muids, has a glorious, vigorous bouquet of black currant leaf, white peach, Japanese yuzu and crushed rock. The taut, fresh palate is very well balanced with a fine bead of acidity and a saline finish. It needs a bit more persistence, but otherwise this has a lot of potential. Give it 2–3 years in the cellar.Vinous Media | 92 VMThe 2019 Chablis 1er Cru Les Fourchaumes Vieilles Vignes wafts from the glass with aromas of crisp orchard fruit, orange oil, pastry cream, vanilla pod and light reduction. A stunning example, with finesse allied to power. Real tension and energy here. Will be approachable quite young, but really should be aged for over five years for the best result. Fèvre has 2.24ha within Montée de Tonnerre. Plots are located in Pied d’Aloup (facing east) with profound Kimmeridgian soils bringing freshness, Chapelot facing south on deep soil adding richness, and Côte de Brechain facing west on top of the hill with the oldest plots dating back to 1936.Decanter | 95 DECFrom multiple plots: east facing kimmeridgian marl in Pied d’Aloue (0.50ha), one hectare in Chapelot, (more soil here, fatter wine), then the rest in Bréchain, where vines dating back to 1936, give tension. What a beautiful bouquet. This has the sensual aspect of a delightful sunny summer, yet with an entrancing freshness behind. This is quintessential right bank, yet with balance Drink from 2027-2037. Tasted: June 2023.Jasper Morris | 93-95 JMAn elegant, pure and wonderfully airy nose more freely reflects its aromas of white flowers, prominent mineral reduction and plenty of seashore elements. There is at once more volume but, somewhat surprisingly, even better refinement to the medium weight plus flavors that retain excellent detail while also flashing an almost pungent stoniness on the driving, firm and impeccably well-balanced finale. One to look for as this is very impressive.Burghound | 92-94 BHThe 2022 Chablis Montée de Tonnerre 1er Cru is more reticent on the nose and perhaps doesn’t quite engage as the 2021 did last year. A bit bashful at the moment. The palate is well-balanced with a saline entry, though it feels strict and contained, without the flair demonstrated by the Les Lys at the moment. Has this got something up its sleeve? It’s a bit too austere and reticent for my liking.Vinous Media | 89-91 VM

Fèvre has 3.65ha of Vaulorent. Situated on the grand cru hill rather than the Fourchaume slope, the soils here are characterised by lots of Kimmeridgian marl. Tight and tense, lots of energy here, powerful and precise and compensates with concentration and density more akin to Chablis Grand Cru. GIve this five years and it will be stunning.Decanter | 96 DECSome of the Vaulorent may be taken out to make a separate Fourchaumes bottling, that decision has not yet been made. More lime than lemon in colour, the nose is so stylish yet with obvious concentration beneath. I love the texture of this wine, which has taken on a little bit of the cashmere qualities of this sector, while nonetheless retaining its mineral core. Very stylish once again. Drink from 2027-2037. Tasted: June 2023.Jasper Morris | 92-95 JMThe 2022 Chablis Vaulorent 1er Cru has another tightly wound nose like the Montée de Tonnerre, a subtle marine element emerging with time, a touch of wild fennel. The palate has much more body and depth than the aforementioned Premier Cru, with good density, a crisp line of acidity and a welcome touch of spice enhancing the finish. Excellent.Vinous Media | 92-94 VMSlightly more evident wood influence can be found on the less elegant but beautifully layered nose of citrus confit, acacia blossom and wet stone scents. The rich, very generous and solidly powerful larger-bodied flavors are not quite as mineral-driven though they are even more concentrated, all wrapped in a beautifully balanced, long and complex finale. This is also impressive even though I have a slight preference for the MdT at this early stage.Burghound | 91-94 BH

The 2021 Chablis Vaillon 1er Cru Cuvée Guy Moreau comprises just five used barrels this year. The fine bouquet is a little more mineral-driven than the regular cuvée with touches of wet pavement and citrus lemon. The palate is well-balanced, fresh and taut, with a fine bead of acidity, growing a little more compact towards the finish but with slightly more salinity to get the tastebuds going. Very fine.Vinous Media | 92 VMHere too there is a vaguely exotic note to the pretty and very floral aromas of spice, pear, apple and quinine that are trimmed in subtle wood. The old vines are very much in evidence on the concentrated, palate coating and rich bigger-bodied flavors that possess focused power on the saline and intensely bitter zest-suffused finish. This should be excellent in time.Burghound | 92 BHThis white packs a mix of peach, melon, lime and pastry flavors, which pick up light smoke and mineral accents as this builds to the finish. Firm, crisp and long. Drink now through 2026. 20 cases imported.Wine Spectator | 90 WSThis and the Grands Crus were made entirely in wood so as to keep the existing stock of barrels full of wine. Pale yellow, with a little butteriness from the wood. This slightly dominates the palate with a note of acidity to finish. Will sort itself out in due course. Drink from 2025-2028. The 2022 Chablis Vaillon 1er Cru Cuvée Guy Moreau, matured half and half in vat and barrels, has a cohesive nose with shucked oyster shells infusing the citrus fruit. Quite classic in style. The palate is well-balanced with impressive depth and elegance. Sapid towards the finish with gentle grip, this Cuvée Guy Moreau is extremely promising.Vinous Media | 92-94 VMA slightly cooler nose reflects notes of white pepper and a touch of the exotic while the wood treatment, while subtle, is a bit more noticeable. The old vines are in evidence as the mouthfeel of the medium-bodied flavors is markedly denser as the sappy extract coats the palate while buffering the moderately firm acid spine shaping the very dry, more complex and slightly long finale.
