Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

2019 domaine rene et vincent dauvissat chablis premier cru sechet Burgundy White

The 2019 Chablis 1er Cru Séchet opens in the glass with scents of citrus oil, white flowers, beeswax, oyster shell, wet chalk and mandarin. Medium to full-bodied, satiny and strikingly intense, it’s taut and chiseled, with tangy acids and huge reserves of concentration, concluding with a pungently chalky finish. As I’ve written before, Séchet—where Dauvissat owns a 0.8-hectare parcel—is located in the Vaillons Valley, but its windier situation and soils richer in active limestone mean it’s typically more tensile and incisive than the other climats that make up Vaillons. Technically retired but very much a continuing presence at his eponymous domaine, Vincent Dauvissat—who forsook a career as a shepherd to become one of France’s most celebrated vignerons—couldn’t disguise his satisfaction as we tasted his recently bottled 2019 portfolio. After some discussion, we settled on the 1989 vintage ("but tighter and more incisive") as a possible analogy for 2019’s hyper-concentrated, ripe, but all the while classically Chablisien style. In any case, they’re some of the wines of the vintage and are well worth seeking out. Readers will remember that farming here is organic but without certification. The harvest is by hand, and the wines ferment in tank before racking to barrel with the lees (Raveneau’s Chablis, by contrast, are racked to barrel more or less without their lees), spending a second winter in wood before bottling. A first bottling, destined for the American market. | 94 RP The 2019 Chablis Séchets 1er Cru has an elegant and more floral bouquet compared to Vincent Dauvissat’s other 2019s, beautifully defined and offering baked apple, pear and white flower scents. The palate is well balanced with a spicy opening, plus hints of stem ginger and walnut. Quite tensile and full on the finish. Good potential here.Vinous Media | 91-93 VMA markedly citrusy and noticeably cooler nose combines notes of mineral reduction with those of pear and apple confit. There is again very good volume and mid-palate density on the seductively textured medium-bodied flavors that are also quite dry on the balanced finale. This is a powerful Séchet that is even more robust and one that will need to add depth with age, but it should do just that if given a chance.Burghound | 92 BH

The 2019 Chablis 1er Cru Butteaux Vieilles Vignes is excellent, mingling aromas of pear, citrus oil and warm bread with hints of iodine. Bottled later than the younger-vine cuvée of Butteaux, it’s medium to full-bodied, layered and concentrated, with racy acids and chalky grip.Robert Parker Wine Advocate | 93+ RPLike the regular cuvée, this too flirts with volatile acidity though it is admittedly extremely subtle on the nose of essence of pear, quinine and lemon-lime scents. The texture of the slightly denser flavors is equally attractive while offering more evident power on the minerally finish that is impressively persistent, dry and youthfully austere. The 2017 Chablis Mont de Milieu 1er Cru has more mineralité on the nose compared directly to the Sécher, attractive orange blossom and canned apricot scents emerging with time. The palate is well balanced with a tang of ginger on the entry, showing impressive weight and a taut, linear, quite persistent finish. This is excellent, fulfilling the potential it showed back in June.Vinous Media | 92 VMBeautiful aromas of wet stones and limes, as well as grapefruit. The palate has a very succulent and attractive feel with lithe and linear acidity as a feature. Once again there is plenty of citrus influence to the bigger and richer medium-bodied flavors that possess good muscle and punch, all wrapped in an impressively powerful, long and serious finale. This youthfully austere effort is clearly built-to-age and is going to need at least some forbearance. (Drink starting 2025)Burghound | 91 BH(Chablis “Mont de Milieu”- Domaine Drouhin Vaudon) Mont de Milieu is on the Right Bank in Chablis and this sector was far more severely hit by the late April frosts than was the case across the Yonne, so yields here are decidedly lower than was the case with the estate’s Sécher, Montmains or Vaillons. The wine is more forward out of the blocks in 2017 than the Sécher, offering up a precise and inviting bouquet of lemon, green apple, limestone soil tones, spring flowers and a topnote of beeswax. On the palate the wine is pure, full-bodied and very elegant in profile, with a bright, but easy-going structural chassis, fine mid-palate depth and a long, bouncy and complex finish. This is already very tasty, but seems to have the balance to age quite well, despite not being particularly steely in terms of acidity. (Drink between 2018-2040)John Gilman | 91 JGA lift of citrus on the nose of this wine immediately sets a bright, fresh accent. The palate comes in with ripe, fresh Mirabelle abundance that enjoys the definition and texture reminiscent of white citrus pith. This wine focuses on fruit but manages to stay toned and defined. Fresh pale green tint. Didier describes this as the entry level grand cru. The average age of the vines is at or above 60 years. There is admirable tension here, an electric start, more middleweight through the middle, then quite a powerful middle with decent dry extract, and good length. Keeps coming back. Drink from 2030-2040. Tasted: June 2023.Jasper Morris | 92-95 JMThe 2022 Chablis Bougros Grand Cru, matured around one-third in used barrel, sports a subtle reduction on the nose that works to its favor: white flowers commingle with Mirabelle and crushed stone. The palate is well-balanced and precise, harmonious with orange pith and nectarine, just a touch of praline. It builds nicely in the glass and then slams its foot on the accelerator right on the finish as if to say: That’s all for now. One for the patient amongst you.Vinous Media | 92-94 VMOnce again there is plenty of mineral reduction character suffusing the aromas of ripe pear, soft wood and tidal pool. The rich, full-bodied and overtly powerful broad-shouldered flavors are robust but not rustic on the bitter lemon, dry and balanced finale. This also needs more depth but that is virtually always the case with young Bougros.Burghound | 91-93 BHBougros, according to Didier Séguier, is the place for those who like lots of ripeness and not too much minerality. 2022 Domaine William Fevre Chablis Grand Cru Les Preuses

Beautiful mix of richness, grace and drive. As always with Fèvre’s Les Preuses, this is elegant, long-living and fine. Ultra-stylish and very mineral. From two sections of vines. One situated low down on Les Preuses next to Vincent Dauvissat’s plot, on the flatter part facing south, the other on deeper soils, with both adding richness and totalling 2.5ha.Decanter | 96 DECA toasty nose features notes of smoky grilled shellfish, pear and algae. The dense and equally serious larger-scaled flavors don’t have quite the same power yet they are clearly more refined on the markedly bitter citrus zest finish that displays outstanding length. This is exceptionally classy and while it too could use more depth, that is all but assured if given a chance.Burghound | 92-95 BHSuch a fresh lime infused colour. The bouquet shows the soft creamy riches that you can find here in Les Preuses. There is plenty of bulk but the hectare plot which drops down into Vaudésir gives the mineral tension. A little lime and lemon coats the tongue at the finish. Drink from 2030-2040. Tasted: June 2023.Jasper Morris | 93-95 JMThe 2022 Chablis Les Preuses Grand Cru is not unlike the Valmur on the nose: backward and a little sultry in style, with faint touches of crustacea coming through. The palate is more generous with orchard fruit, hints of apricot and wild peach, and fine acidity. It is very harmonious but without quite the same complexity as the Valmur on the finish. A stunning example, with finesse allied to power. Real tension and energy here. Will be approachable quite young, but really should be aged for over five years for the best result. Fèvre has 2.24ha within Montée de Tonnerre. Plots are located in Pied d’Aloup (facing east) with profound Kimmeridgian soils bringing freshness, Chapelot facing south on deep soil adding richness, and Côte de Brechain facing west on top of the hill with the oldest plots dating back to 1936.Decanter | 95 DECFrom multiple plots: east facing kimmeridgian marl in Pied d’Aloue (0.50ha), one hectare in Chapelot, (more soil here, fatter wine), then the rest in Bréchain, where vines dating back to 1936, give tension. What a beautiful bouquet. This has the sensual aspect of a delightful sunny summer, yet with an entrancing freshness behind. This is quintessential right bank, yet with balance Drink from 2027-2037. Tasted: June 2023.Jasper Morris | 93-95 JMAn elegant, pure and wonderfully airy nose more freely reflects its aromas of white flowers, prominent mineral reduction and plenty of seashore elements. There is at once more volume but, somewhat surprisingly, even better refinement to the medium weight plus flavors that retain excellent detail while also flashing an almost pungent stoniness on the driving, firm and impeccably well-balanced finale. One to look for as this is very impressive.Burghound | 92-94 BHThe 2022 Chablis Montée de Tonnerre 1er Cru is more reticent on the nose and perhaps doesn’t quite engage as the 2021 did last year. A bit bashful at the moment. The palate is well-balanced with a saline entry, though it feels strict and contained, without the flair demonstrated by the Les Lys at the moment. 2022 Domaine William Fevre Chablis Premier Cru Vaulorent

Fèvre has 3.65ha of Vaulorent. Situated on the grand cru hill rather than the Fourchaume slope, the soils here are characterised by lots of Kimmeridgian marl. Tight and tense, lots of energy here, powerful and precise and compensates with concentration and density more akin to Chablis Grand Cru. GIve this five years and it will be stunning.Decanter | 96 DECSome of the Vaulorent may be taken out to make a separate Fourchaumes bottling, that decision has not yet been made. More lime than lemon in colour, the nose is so stylish yet with obvious concentration beneath. I love the texture of this wine, which has taken on a little bit of the cashmere qualities of this sector, while nonetheless retaining its mineral core. Very stylish once again. Drink from 2027-2037. Tasted: June 2023.Jasper Morris | 92-95 JMThe 2022 Chablis Vaulorent 1er Cru has another tightly wound nose like the Montée de Tonnerre, a subtle marine element emerging with time, a touch of wild fennel. The palate has much more body and depth than the aforementioned Premier Cru, with good density, a crisp line of acidity and a welcome touch of spice enhancing the finish. Excellent.Vinous Media | 92-94 VMSlightly more evident wood influence can be found on the less elegant but beautifully layered nose of citrus confit, acacia blossom and wet stone scents. The rich, very generous and solidly powerful larger-bodied flavors are not quite as mineral-driven though they are even more concentrated, all wrapped in a beautifully balanced, long and complex finale. 2020 Domaine Rene et Vincent Dauvissat Chablis Premier Cru La Forest

A striking young wine, Dauvissat’s brilliant 2020 Chablis 1er Cru La Forest unfurls in the glass with aromas of crisp orchard fruit, orange oil, pear, oyster shell, freshly baked bread and smoke, framed by a deft touch of reduction. Medium to full-bodied, deep and multidimensional, it’s taut and concentrated, with racy acids, chalky structuring and a long, searingly mineral finish. Recent years have delivered so many brilliant renditions of La Forest that it’s hard to pick a favorite between the likes of 2008, 2014, 2017 and 2019, but the 2020 is certainly a worthy entrant into the competition, and it’s worth a special effort to seek out.Robert Parker Wine Advocate | 95+ RP(Domaine Vincent Dauvissat Chablis "La Forest" 1er Cru White) A highly complex nose combines notes of citrus rind, sea breeze, petrol and shellfish. I very much like the balance, and this should also age gracefully yet it’s not so structured that it couldn’t be approached after 5-ish years if desired. (Drink starting 2030)Burghound | 92-94 BH(Chablis “la Forest”- Domaine Vincent Dauvissat) The 2020 la Forest from Vincent Dauvissat is truly outstanding this year and reminds me very much of the great potential I saw when I first tasted vintages like 1985 and 1990 here, which also were so classically-cut out of the blocks. The superb aromatic constellation delivers scents of apple, pear, lemon, a beautiful base of chalky minerality, paraffin, vanillin oak and a lovely floral topnote that shares a mix of white lilies and lime blossoms. On the palate the wine is pure, precise and full-bodied, with impeccable focus and grip, a lovely core of fruit, outstanding soil undertow and a long, zesty and finish that closes with snappy acids and a complex, seamless finish. A classic in the making. (Drink between 2026-2065)John Gilman | 94+ JGThe 2020 Chablis Fôrets 1er Cru is backward on the nose, the most stubborn and recalcitrant of Dauvissat’s Premier Crus despite rigorous coaxing. 2018 Rene & Vincent Dauvissat Chablis Grand Cru Les Clos

The Dauvissat holdings have been reduced to three parcels now - two above the road and one below it - but there has been no corresponding drop in the quality of this superb wine. Still showing quite a bit of oak at this young age, it has salty, savoury, iodine-scented intensity, impressive concentration and the energy and balance to age superbly in bottle. Always one of the best wines in the appellation. (Drink between 2022-2033)Decanter | 96 DECBright medium yellow. At once penetrating and refined on the nose, with high-pitched aromas of lemon, orange zest and oyster shell accented by cinnamon and ginger spice notes. Wonderfully juicy and vibrant in the middle palate, conveying an impression of outstanding tactile density without weight. Flavors of pineapple, white pepper and salty minerality are at once generous and chewy. This beautifully balanced, fresh grand cru boasts outstanding inner-mouth energy and finishes with steadily rising length and an impression of solidity. This wine, incidentally, was spectacular from the outset. (picked on September 29 with between 12.5% and 13% potential alcohol, according to Dauvissat; 4.5 g/l acidity)Vinous Media | 96 VMThe 2018 les Clos from Domaine Dauvissat is another absolutely superb wine in the making. It offers up a deep, pure and complex bouquet of pear, apple, minerality that is both flinty and chalky in personality, citrus blossoms and a bit of lemon peel in the upper register. On the palate the wine is deep, full-bodied and rock solid at the core, with a bit more early reserve than the les Preuses is showing right now. The finish is very, very long, mineral-driven and snappy, with excellent focus and grip and impeccable balance. First class les Clos in the making. (Drink between 2026-2075)John Gilman | 95+ JGAromas of pear, green apple and citrus oil mingling with hints of fresh bread and oyster shell introduce Dauvissat's 2018 Chablis Grand Cru Les Clos, a full-bodied, layered wine that's ample and elegantly muscular, girdled by bright acids and revealing more overt structure than Les Preuses at this stage. Concluding with a long, chalky finish, even in the demonstrative 2018 vintage, this will merit a bit of patience.Robert Parker Wine Advocate | 95+ RPThis is so much more closed than many other Les Clos 2018s I have tasted. It has super flinty white peaches and yellow grapefruit, almond pastry and also some weight to the core. A sweeping, smooth palate that carries such intensity and such an assertively rich and layered feel. The rich DNA of this parcel is delivered with such precision and carefully stacked fruit that drives deep into the finish. Once again, the mouthfeel of the larger-scaled flavors is quite sleek with outstanding intensity along with abundant minerality while exhibiting excellent power on the dense and serious and bone-dry finish that also displays huge length. The 2019 Chablis Grand Cru Les Clos is, if anything, more introverted than Les Preuses this year. Mingling notes of citrus oil, pear and crisp stone fruit with hints of fresh bread, vanilla pod and wet stones, it's full-bodied, layered and muscular, with huge concentration, framed by chalky extract and lively acids. Concluding with a long, saline finish, it will require considerable patience.Robert Parker Wine Advocate | 97+ RP(Domaine Vincent Dauvissat Chablis - Les Clos Grand Cru White) A perfumed and slightly minty nose offers up notes of green apple, lemon zest, algae and oyster shell. This brilliant youthfully austere effort is also going to require extended patience before arriving at its apogee. In sum, this is a knockout. This Les Clos displays ethereal poise from start to finish and is blessed with a pixelated quality that distinguishes it from any other. Brilliant. (Domaine Vincent Dauvissat Chablis "Montée de Tonnerre" 1er Cru White) A vague hint of the exotic is present on the wonderfully elegant lemony white orchard fruit scented nose that reflects additional notes of mineral reduction and oyster shell. The notably finer medium-bodied flavors possess excellent punch on the mineral-driven and chiseled finish that goes on and on. This is lovely and while it too will need better depth, the aging curve is sufficiently promising that I am optimistic that more complexity will develop over the next decade. In a word, terrific. (Drink starting 2027)Burghound | 94 BHThe 2019 Chablis 1er Cru Montée de Tonnerre is the sixth vintage that Dauvissat has produced of this climat, and he observes that it's one of the few parcels he exploits that isn't planted with the family's proprietary massale selections. Exhibiting notions of citrus oil, fresh bread, iodine and warm pastry, it's medium to full-bodied, ample and lively, with fine tension at the core and a long, mineral finish. Given all of the fireworks in this tasting from the Montée de Tonnerre upwards, I was wondering if the 2021 les Clos could somehow acquit itself impeccably, given how stunning the lineup had been up until this point. It does not disappoint! The aromatic constellation here is complex and precise, offering up scents of green apple, lime, grapefruit, flinty minerality, citrus peel, dried flowers and gentle smokiness in the upper register. On the palate the wine is beautifully complex, well balanced and poised, with a full-bodied format, great depth at the core, brisk acids and laser-like focus on the long and stunning finish. (Drink between 2028-2065). John Gilman | 96 JGThe 2021 Chablis Les Clos Grand Cru comes from 4.1 hectares mainly located on the upper sector of the Grand Cru, the vines planted in the postwar period by Maurice Fèvre, the father of William Fèvre. It has a powerful bouquet with hints of white flower permeating the citrus fruit and apple blossom aromas. The palate has wonderful salinity on the entry, a fine bead of acidity, citrus-fresh with clementine, hints of peach and a twist of bitter lemon that keeps the finish on its tippy-toes. The 2021 Chablis Les Clos Grand Cru was taken from tank rather than barrel. This was primal on the nose and difficult to read. The palate is more expressive: finely tuned with a fine bead of acidity, tensile and saline, it does not possess the complexity of Raveneau’s Les Clos tasted an hour or two before, but it has great penetration and a compelling flinty finish. Excellent.Vinous Media | 93-95 VMHere too the nose is presently dominated by reduction and wood toast. More interesting are the sleek, intense and ultra-fresh middleweight plus flavors that possess excellent size, richness and power where the latter suffuses the sappy, muscular and saliva-inducing, moderately dry and compact finale. The one-hectare parcel that constitutes the 2021 Chablis Valmur Grand Cru yielded five barrels this year. This also has a heavy reduction and is quite yeasty at the moment. The palate is well balanced with a marine-influenced entry, flecks of white chocolate complementing the citrus fruit with a longer finish than the Blanchot.
