Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

2019 domaine rene et vincent dauvissat chablis premier cru sechet Burgundy White

The 2019 Chablis 1er Cru Séchet opens in the glass with scents of citrus oil, white flowers, beeswax, oyster shell, wet chalk and mandarin. Medium to full-bodied, satiny and strikingly intense, it’s taut and chiseled, with tangy acids and huge reserves of concentration, concluding with a pungently chalky finish. As I’ve written before, Séchet—where Dauvissat owns a 0.8-hectare parcel—is located in the Vaillons Valley, but its windier situation and soils richer in active limestone mean it’s typically more tensile and incisive than the other climats that make up Vaillons. Technically retired but very much a continuing presence at his eponymous domaine, Vincent Dauvissat—who forsook a career as a shepherd to become one of France’s most celebrated vignerons—couldn’t disguise his satisfaction as we tasted his recently bottled 2019 portfolio. After some discussion, we settled on the 1989 vintage ("but tighter and more incisive") as a possible analogy for 2019’s hyper-concentrated, ripe, but all the while classically Chablisien style. In any case, they’re some of the wines of the vintage and are well worth seeking out. Readers will remember that farming here is organic but without certification. The harvest is by hand, and the wines ferment in tank before racking to barrel with the lees (Raveneau’s Chablis, by contrast, are racked to barrel more or less without their lees), spending a second winter in wood before bottling. A first bottling, destined for the American market. | 94 RP The 2019 Chablis Séchets 1er Cru has an elegant and more floral bouquet compared to Vincent Dauvissat’s other 2019s, beautifully defined and offering baked apple, pear and white flower scents. The palate is well balanced with a spicy opening, plus hints of stem ginger and walnut. Quite tensile and full on the finish. Good potential here.Vinous Media | 91-93 VMA markedly citrusy and noticeably cooler nose combines notes of mineral reduction with those of pear and apple confit. There is again very good volume and mid-palate density on the seductively textured medium-bodied flavors that are also quite dry on the balanced finale. This is a powerful Séchet that is even more robust and one that will need to add depth with age, but it should do just that if given a chance.Burghound | 92 BH

The 2019 Saint-Aubin Les Murgers des Dents de Chien 1er Cru has more delineation and mineralité compared to the Les Perrières, more terroir expression in situ. The palate is very well balanced with a fine bead of acidity, tropical tones such as passion fruit and mango, counterbalanced by a spicy/ginger tinged finish. It does not quite kick on as I might have hoped, yet there is still a lot of potential here. The 2019 Chablis 1er Cru Butteaux Vieilles Vignes is excellent, mingling aromas of pear, citrus oil and warm bread with hints of iodine. Bottled later than the younger-vine cuvée of Butteaux, it’s medium to full-bodied, layered and concentrated, with racy acids and chalky grip.Robert Parker Wine Advocate | 93+ RPLike the regular cuvée, this too flirts with volatile acidity though it is admittedly extremely subtle on the nose of essence of pear, quinine and lemon-lime scents. The texture of the slightly denser flavors is equally attractive while offering more evident power on the minerally finish that is impressively persistent, dry and youthfully austere. The 2017 Chablis Mont de Milieu 1er Cru has more mineralité on the nose compared directly to the Sécher, attractive orange blossom and canned apricot scents emerging with time. The palate is well balanced with a tang of ginger on the entry, showing impressive weight and a taut, linear, quite persistent finish. This is excellent, fulfilling the potential it showed back in June.Vinous Media | 92 VMBeautiful aromas of wet stones and limes, as well as grapefruit. The palate has a very succulent and attractive feel with lithe and linear acidity as a feature. Once again there is plenty of citrus influence to the bigger and richer medium-bodied flavors that possess good muscle and punch, all wrapped in an impressively powerful, long and serious finale. This youthfully austere effort is clearly built-to-age and is going to need at least some forbearance. (Drink starting 2025)Burghound | 91 BH(Chablis “Mont de Milieu”- Domaine Drouhin Vaudon) Mont de Milieu is on the Right Bank in Chablis and this sector was far more severely hit by the late April frosts than was the case across the Yonne, so yields here are decidedly lower than was the case with the estate’s Sécher, Montmains or Vaillons. The wine is more forward out of the blocks in 2017 than the Sécher, offering up a precise and inviting bouquet of lemon, green apple, limestone soil tones, spring flowers and a topnote of beeswax. On the palate the wine is pure, full-bodied and very elegant in profile, with a bright, but easy-going structural chassis, fine mid-palate depth and a long, bouncy and complex finish. This is already very tasty, but seems to have the balance to age quite well, despite not being particularly steely in terms of acidity. (Drink between 2018-2040)John Gilman | 91 JGA lift of citrus on the nose of this wine immediately sets a bright, fresh accent. The palate comes in with ripe, fresh Mirabelle abundance that enjoys the definition and texture reminiscent of white citrus pith. This wine focuses on fruit but manages to stay toned and defined. A rich style, this white features lemon, peach and spice flavors, all backed by bright acidity. Balanced, leaving a chalky, even tannic impression on the long finish. Quite a tannic white Burgundy, but with richness that has a very positive impact on the wine. Plenty of citrus, plus some hazelnut and chalky character. Drinking Window 2020 - 2024.Decanter | 92 DEC(Domaine du Pavillon (Pommard) - Domaines Albert Bichot Beaune "Clos des Mouches" 1er Cru White) An overtly floral nose offers up notes of pearl, apple and citrus where the latter can also be found on the round, delicious and once again generously proportioned medium-bodied flavors that deliver perfectly good if not truly distinguished depth though I do like the length. The Clos des Mouches made by Joseph Drouhin may be more famous, but Bichot’s parcel of 0.7ha, situated in the highest part of the Premier Cru, is pretty impressive in its own right. Bright, focused and chiselled, it’s the sort of white that wouldn’t look out of place in Puligny-Montrachet, combining citrus, wet stone and aniseed flavours.Drinking Window 2021 - 2028Decanter | 94 DECA creamy-textured white with sliced apples, pears, cream and some lemon and lime rind. Hints of morning yogurt and smoke. Medium-bodied, ready and delicious. Drink now or hold.James Suckling | 92 JSCream and roasted hazelnut notes create an inviting, rounded nose on this wine. The palate has that same hazelnut richness and creamy flow, buttressed by freshness that recalls lemon and yellow pear. A lovely balance and a juicy, fresh finish do justice to the warm 2018 vintage. The 2019 Beaune Clos des Mouches 1er Cru Blanc has a vibrant, energetic bouquet, the citrus fruit, mango and white chocolate scents bursting from the glass. The palate is well balanced with a smooth, viscous opening. Good concentration here, and very long and sustained. This represents one of the best whites from Bichot this vintage. Vinous Media | 90-92 VMFrom a 0.75ha plot at the top of the slope, in the Clos des Mouches, where Bichot owns some vines that give a wine of winning concentration. There is pleasantly ripe apricot and pear fruit, with a broad feel on the palate. Regal in stature, perhaps lacking a bit of acidity, although many will enjoy its rich character. Drinking Window 2024 - 2039.Decanter | 92 DECBetter known for its red wines, this premier cru vineyard also has a plot of Chardonnay. (Domaine Vincent Dauvissat Chablis "Montée de Tonnerre" 1er Cru White) A vague hint of the exotic is present on the wonderfully elegant lemony white orchard fruit scented nose that reflects additional notes of mineral reduction and oyster shell. The notably finer medium-bodied flavors possess excellent punch on the mineral-driven and chiseled finish that goes on and on. This is lovely and while it too will need better depth, the aging curve is sufficiently promising that I am optimistic that more complexity will develop over the next decade. In a word, terrific. (Drink starting 2027)Burghound | 94 BHThe 2019 Chablis 1er Cru Montée de Tonnerre is the sixth vintage that Dauvissat has produced of this climat, and he observes that it's one of the few parcels he exploits that isn't planted with the family's proprietary massale selections. Exhibiting notions of citrus oil, fresh bread, iodine and warm pastry, it's medium to full-bodied, ample and lively, with fine tension at the core and a long, mineral finish. Patrick’s 2020 Butteaux is utterly classic in personality and superb in potential quality. The nose jumps from the glass in a refined blend of apple, pear, a complex base of chalky soil tones, paraffin, fruit blossoms and vanillin oak. On the palate the wine is deep, full-bodied and shows of gorgeous fruit at the core, with excellent soil undertow, bright, zesty acids, fine focus and grip and a long, perfectly balanced and complex finish. Great juice. 2025-2060.John Gilman, A View from the Cellar | 94 JGThe 2020 Chablis Les Butteaux 1er Cru had received a bit of SO2 a couple of days before my visit. For that reason, it is a little muted on the nose, opening gradually to reveal yellow flower scents. The well-balanced palate offers grapefruit and melon notes, a fine bead of acidity and good weight on the finish. (Drink starting 2028)Burghound | 90-93 BHThe 2020 Chablis Vaulorent 1er Cru was showing a bit of reduction on the nose when I tasted it directly from barrel. Moving straight on to the palate, there is crisp citrus fruit, lemon curd, touches of frangipane and plenty of spice toward the back end. A tang of stem ginger lingers on the aftertaste. This is a fine Vaulorent but it will need time in bottle.Vinous Media | 90-92 VMThis supple white is highlighted by apple, melon and green plum flavors, with accents of mineral and vanilla adding detail. On the palate the wine is deep, full-bodied and complex, with fine purity of fruit at the core, lovely soil definition and grip, bright, bouncy acids and lovely focus on the long, well-balanced and complex finish. A lifted but guarded sense of lemon zest plays on this wine’s nose, forthright at one moment, restrained the next. The palate channels concentrated but creamy lemon peel, mouthwatering in its frankness but buffered by lovely chalkiness. Lemony limestone freshness rings long after the last sip.Wine Enthusiast | 94 WEThe 2019 Chablis Vau de Vey 1er Cru has an intriguing, melted candle wax and white flower nose, showing touches of apple peel and chalk dust. This seems to grow in complexity in the glass. The palate is well balanced and spicy, with a fine bead of acidity. Orange peel and touches of bitter lemon give way to a slightly oily-textured finish. 2020 Domaine Rene et Vincent Dauvissat Chablis Premier Cru La Forest

A striking young wine, Dauvissat’s brilliant 2020 Chablis 1er Cru La Forest unfurls in the glass with aromas of crisp orchard fruit, orange oil, pear, oyster shell, freshly baked bread and smoke, framed by a deft touch of reduction. Medium to full-bodied, deep and multidimensional, it’s taut and concentrated, with racy acids, chalky structuring and a long, searingly mineral finish. Recent years have delivered so many brilliant renditions of La Forest that it’s hard to pick a favorite between the likes of 2008, 2014, 2017 and 2019, but the 2020 is certainly a worthy entrant into the competition, and it’s worth a special effort to seek out.Robert Parker Wine Advocate | 95+ RP(Domaine Vincent Dauvissat Chablis "La Forest" 1er Cru White) A highly complex nose combines notes of citrus rind, sea breeze, petrol and shellfish. There is excellent size, weight and intensity to the more robust and muscular if less refined flavors that brim with dry extract before terminating in a mineral-driven and bone-dry but not really austere finale. I very much like the balance, and this should also age gracefully yet it’s not so structured that it couldn’t be approached after 5-ish years if desired. (Drink starting 2030)Burghound | 92-94 BH(Chablis “la Forest”- Domaine Vincent Dauvissat) The 2020 la Forest from Vincent Dauvissat is truly outstanding this year and reminds me very much of the great potential I saw when I first tasted vintages like 1985 and 1990 here, which also were so classically-cut out of the blocks. The superb aromatic constellation delivers scents of apple, pear, lemon, a beautiful base of chalky minerality, paraffin, vanillin oak and a lovely floral topnote that shares a mix of white lilies and lime blossoms. On the palate the wine is pure, precise and full-bodied, with impeccable focus and grip, a lovely core of fruit, outstanding soil undertow and a long, zesty and finish that closes with snappy acids and a complex, seamless finish. A classic in the making. (Drink between 2026-2065)John Gilman | 94+ JGThe 2020 Chablis Fôrets 1er Cru is backward on the nose, the most stubborn and recalcitrant of Dauvissat’s Premier Crus despite rigorous coaxing. The powerful palate is linear, like the Montée de Tonnerre, but displays a little more puissance toward the finish. But, maybe, the Montée has more charm. We will see.Vinous Media | 91-93 VM

A seductive white that draws you in with heady aromas of stone, butter, hazelnut and lemon. The intensity continues on the palate, where the mineral element and vivid acidity elevate the white peach, apple and baking spice notes. The texture borders on creamy, but maintains a mineral edge and cascades on the long aftertaste. Best from 2021 through 2030. 5 cases imported.Wine Spectator | 96 WSThe best of Pierre-Yves Colin Morey’s Meursaults comes from the lower part of Perrières, very close to the limit with Puligny-Montrachet. The humidity in the soil was a boon in 2017, helping the vineyard to produce a premier cru that’s racy, refined and very pure, with laser-like focus and intensity and a kiss of oak. (Drink between 2022-2030)Decanter | 95 DEC(Colin’s vines are located just across the road from his Charmes and a bit closer to the village of Meursault): Bright, pale yellow-green. Wonderfully delicate aromas of underripe pineapple, white peach, flowers, spices and crushed rock. Denser than Colin’s other Meursault premier crus but its uncanny thickness is fully buffered by dusty, palate-staining minerality. The 2019 Meursault Les Porusots 1er Cru has one of the feistier aromatics from Dominique Lafon, featuring vibrant yellow plum, marmalade and orange pith aromas, very well defined and wonderfully assimilated with the oak. The palate is balanced with a crisp bead of acidity that offsets the richness; elegant and refined, leading to a silky-smooth hazelnut and spice-infused finish. This represents a superb followup to the impressive 2018 but might not surpass it. We will find out. Vinous Media | 93-95 VMThe gently-pressed bunches from Porusots are fermented and aged in cask, with a good proportion of new wood, yet this does nothing to obscure the purity of the lemony fruit on the nose, while the texture on the elegant palate is well balanced, with fresh acidity. The Porusots is a stand-out bottling from this domaine, it being a wine of lovely intensity and structure. (Drink between 2024-2039)Decanter | 95 DECCool and decidedly restrained aromas only grudgingly reveal the notes of green fruit, essence of spiced pear and plenty of citrus elements. The powerful yet quite sleek larger-scaled flavors are tautly muscular before culminating in a strikingly persistence finish that also has a slightly chewy quality to it. Note that this is very firmly structured and a wine that is clearly built to repay long-term keeping. In a word, excellent. The 2019 Puligny-Montrachet Les Pucelles 1er Cru is more timid on the nose following on from the Les Combettes and this needed more encouragement from the glass. Cold stone, granite and flint aromas are the order of the day, very well defined and precise. The palate is very concentrated with a lot of grip, the volume of this Les Pucelles towards the finish, energetic and very persistent in the mouth. This is another electrifying Puligny ‘19 from Leflaive. Closure: Diam 30Vinous Media | 95+ VMThrilling wine. Leflaive owns three parcels in Les Pucelles at the northern tip of Bâtard-Montrachet and Bienvenues-Bâtard-Montrachet at the center of the vineyard. The mature vines deliver a perfumed, almost exotic fruit character with notes of spice and hazelnut. Still, there is also a bright lemony freshness to the wine and a lovely salty mineral finish that lift it to another plane and will allow it to continue improving for decades. The most compelling of the premiers crus from Leflaive. (Drink between 2021-2040)Decanter | 95 DECFiner boned and less concentrated than the extraordinary Combettes, the 2019 Puligny-Montrachet 1er Cru Les Pucelles offers up aromas of peach, orange zest, white flowers, freshly baked bread and hazelnuts. The primacy of the citrus and green apple fruit is dramatic, but there is depth and nuance here as well, not to mention fresh acidity and enough extract to make the finish linger enticingly on the palate. Boillot’s Clos de la Mouchère is a monopole of nearly 4ha in the lieu-dit Les Perrières. The vines are more than 80 years of age, and each section is vinified and matured separately in cask (70% new). The 2019 Chablis Mont de Milieu 1er Cru has an attractive nose, more extrovert than others from this climat, displaying scents of yellow plum, pressed white flower, crushed rock and subtle Granny Smith apple. The palate is clean and fresh, a dab of bitter lemon on the entry combining neatly with the silver bead of acidity. Quite tensile toward the finish, which lingers in the mouth.
