Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

The 2019 Chablis Mont de Milieu 1er Cru has an attractive nose, more extrovert than others from this climat, displaying scents of yellow plum, pressed white flower, crushed rock and subtle Granny Smith apple. The palate is clean and fresh, a dab of bitter lemon on the entry combining neatly with the silver bead of acidity. Quite tensile toward the finish, which lingers in the mouth. (Domaine Vincent Dauvissat Chablis "Montée de Tonnerre" 1er Cru White) A vague hint of the exotic is present on the wonderfully elegant lemony white orchard fruit scented nose that reflects additional notes of mineral reduction and oyster shell. The notably finer medium-bodied flavors possess excellent punch on the mineral-driven and chiseled finish that goes on and on. This is lovely and while it too will need better depth, the aging curve is sufficiently promising that I am optimistic that more complexity will develop over the next decade. In a word, terrific. Given all of the fireworks in this tasting from the Montée de Tonnerre upwards, I was wondering if the 2021 les Clos could somehow acquit itself impeccably, given how stunning the lineup had been up until this point. It does not disappoint! The aromatic constellation here is complex and precise, offering up scents of green apple, lime, grapefruit, flinty minerality, citrus peel, dried flowers and gentle smokiness in the upper register. On the palate the wine is beautifully complex, well balanced and poised, with a full-bodied format, great depth at the core, brisk acids and laser-like focus on the long and stunning finish. (Drink between 2028-2065). John Gilman | 96 JGThe 2021 Chablis Les Clos Grand Cru comes from 4.1 hectares mainly located on the upper sector of the Grand Cru, the vines planted in the postwar period by Maurice Fèvre, the father of William Fèvre. The palate has wonderful salinity on the entry, a fine bead of acidity, citrus-fresh with clementine, hints of peach and a twist of bitter lemon that keeps the finish on its tippy-toes. (Chablis Montmains 1er Cru, Domaine William Fèvre, White) From all three sections of the vineyard as usual. Racy lemon colour. Pure crystalline nose, very little reduction, very classical left bank Chablis, very intense but neither heavy nor exotic. The kimmeridgian is speaking underneath a graceful layer of flesh. Fruit and stones both keep coming back at the finish.Jasper Morris | 92-95A wine from a selection of sites over 3.9ha in Butteaux, Forêts and Montmains. Butteaux is very cold and mineral, while Forêts is elegant and floral. Great precision and focus here, allied with crystalline citrus fruits on the palate. Shows density, but is also very fresh, with lovely mineral characters on the finish. A highly successful Montmains.Decanter | 93 DECHere too the nose is elegant, pure and layered but with more floral and spice nuances adding breadth to the cooler and more restrained aromas. There is both excellent intensity and density to the mineral-driven flavors that terminate in a bone-dry, sneaky long and balanced finale. The 2021 Chablis Les Clos Grand Cru was taken from tank rather than barrel. This was primal on the nose and difficult to read. The palate is more expressive: finely tuned with a fine bead of acidity, tensile and saline, it does not possess the complexity of Raveneau’s Les Clos tasted an hour or two before, but it has great penetration and a compelling flinty finish. Excellent.Vinous Media | 93-95 VMHere too the nose is presently dominated by reduction and wood toast. More interesting are the sleek, intense and ultra-fresh middleweight plus flavors that possess excellent size, richness and power where the latter suffuses the sappy, muscular and saliva-inducing, moderately dry and compact finale. The one-hectare parcel that constitutes the 2021 Chablis Valmur Grand Cru yielded five barrels this year. This also has a heavy reduction and is quite yeasty at the moment. The palate is well balanced with a marine-influenced entry, flecks of white chocolate complementing the citrus fruit with a longer finish than the Blanchot. I wonder if this might be going through a dumb phase? The palate is harmonious on the entry with orange peel and light peachy nose, slightly honeyed in texture, and it captures the spiciness that I seek from Les Preuses. Maybe not quite the length that you would obtain from a top vintage, but a finely made Chablis.Vinous Media | 91-93 VMThis is also quite aromatically elegant with its array of green fruit, cool citrus, wet stone and spice. The medium-weight flavors are at once seductive yet powerful with solid volume while coating the palate on the clean, dry and lingering finish that is borderline simple. The 2020 Chablis Hommage a Louis Grand Cru has an already irresistible bouquet of beautifully defined yellow fruit, limestone, red apple and white peachy aromas. With close to 6.5 acres in this grand cru, Arnaud Lavantureux treats most of this wine to barrel fermentation, then aging in used oak barrels; a small portion rests in new oak. The barrel time has amped up the wine’s power, its viscosity and smoky scents. But it never goes dark, sustaining a stark contrast of white on white. The 2020 Chablis Blanchot Grand Cru is aged 75% in stainless steel and 25% in oak for nine months, followed by five months all in stainless steel. It has a relatively light bouquet, quite airy in style, gaining intensity with aeration, touches of white peach, smoke and granite. The palate is well balanced with a fine line of acidity, citrus fruit, orange rind and a touch of stem ginger towards the finish that fans out nicely. This meliorates with aeration and is worth decanting if you decide to crack open a bottle in its youth. Offers a rich and supple texture, making this almost seamless from start to the finish, where a stony element emerges.
