Some wines are so good, you almost feel bad while uncorking the bottle. You’d much rather stockpile them in your cellar until you have a collection to rival Dionysus himself. The journey to find the most tempting and inaccessible collector’s wines can be difficult and stressful, but the end result is always worth it. If the stars align, you end up with a selection of wines so awe-inspiring, you just want to sit in your cellar and admire them. There is no occasion in the world that you can’t contribute to with a bottle of extra-rare fine wine, and you can compete with other local collectors and try to outbid them for choice bottles.

The main issue when it comes to acquiring highly collectible bottles is that they’re often hard to obtain. It makes sense, of course – the most prestigious collectibles are the least accessible bottles, ones that can sometimes necessitate a 10-year wait. Also, it should go without saying that many of the world’s finest blends cost a pretty high amount of money. However, that isn’t the case for all of them. At some point, it all comes down to developing an eye for the market and being able to recognize which wines to target before they’re declared classic masterpieces by the general populace.

Pas de Cheval is a collaboration between Maayan Koschitzky (of Atelier Melka) and Master of Wine Vanessa Conlin. They focus on appellation Cabernets and have some top-notch sourcing. Starting with the 2019 Cabernet Sauvignon Oakville, it offers a gorgeous nose of pure cassis, blueberries, wildflowers, incense, and spicy oak. Pure Napa Valley Cabernet magic on the palate, it’s full-bodied, has a layered, multi-dimensional texture, ripe, building and substantial tannins, and one heck of a great finish. 2019 Paul Hobbs Cabernet Sauvignon Beckstoffer Las Piedras Vineyard

Coming from a rockier site no more than a stone’s throw from Dr. Crane Vineyard, the 2019 Cabernet Sauvignon Beckstoffer Las Piedras Vineyard is more meaty and savory, with lots of red and black fruits as well as loads of rocky, earthy minerality, spring flower, tobacco, and lead pencil-like nuances. Just beautifully balanced on the palate, it’s full-bodied and elegant, with silky tannins, no hard edges, and one incredible finish. It’s more red-fruited than the Dr. Crane, yet it has a similar ethereal, weightless style that makes it such a joy to drink, even today. Given its balance, purity, and freshness, I have no doubt it will evolve for 25+ years, and I’m probably underrating it by a point.Jeb Dunnuck | 99 JDSuperb aromas of blackberries, currants, crushed stones, conifer and wet earth. A bigger, richer, more structured wine, the 2019 Cabernet Sauvignon Mt. Veeder Estate Vineyard has brilliant black fruits, tobacco, iron, and subtle smoke-like nuances in a full-bodied, concentrated, layered package. This is pure Mountain Cabernet genius, and while it’s far from unapproachable today, it will benefit from 3-5 years of bottle age. 2019 seven apart cabernet sauvignon expedition California Red

This is the second vintage from Seven Apart—a blend coming from Stag’s Ridge vineyard, located up on Atlas Peak, and Base Camp vineyard, located seven miles down the mountain (hence the name). The winemaker here is Andy Erickson, formerly at Screaming Eagle and Harlan Estate and currently also consulting winemaker at Dalla Valle (among others). The upper vineyard (Stag’s Ridge) is planted to mostly Cabernet Sauvignon, with small amounts of Cabernet Franc and Petit Verdot. Seven miles down the road, where Soda Canyon Road meets the Silverado Trail, is the four-acre Base Camp vineyard, planted in the mid-1990s to Cabernet Sauvignon with some Merlot and Cabernet Franc. Base Camp was planted in 1994 and 1998.Robert Parker Wine Advocate | 98+ RPToasted oak on the nose, with nutmeg, white spice, gingerbread and fresh linseed nuttiness. 2019 zuccardi finca piedra infinita gravascal Argentina Red

What a nose! Complex and brooding, yet subtle and layered. The array of aromas range from scented violets and blueberries to dried herbs and minerals. Full-bodied with racy dark cherries and blueberries on the palate. Incredibly zingy and fresh, coated by a plethora of fine, polished tannins that dissipate into the fruit. That said, this is quite assertive. Chalky finish. Long and intellectual. A little more expressive than the powerful Supercal. Drinkable now, but it will reward patience over the next decade.James Suckling | 99 JSThe 2019 Finca Piedra Infinita Gravascal is an earthier wine with notes of graphite. It was selected from a plot within their Piedra Infinita vineyard around the beautiful winery in Paraje Altamira, where there are some 40 centimeters of soil and then the limestone-covered white and round alluvial rocks. It feels drier (despite all of them being dry) than the Piedra Infinita, which is a blend of soils, and little less refined than the Supercal that really shines in 2019. All these bottlings have achieved very high precision and purity, but somehow there is something that makes it less clean and precise than its siblings. 1,250 bottles were filled in June 2020.Robert Parker Wine Advocate | 97 RPThe 2019 Malbec Finca Piedra Infinita Gravascal from Paraje Altamira, Uco Valley was aged in concrete and made with grapes from a specially selected segment of gravel and a seam of calcium carbonate. It’s purple in the glass. The 2019 has an outgoing nose of violet, cherry and plum with hints of mint and herbs before late developing lavender aromas appear. In the mouth, it’s vigorous with a chalky texture that’s expansive initially before tightening up in a two-stage palate: at first one gets the sweetness and taut texture of the variety before the compact, finely grained tannins, provided by the soils of Altamira, take over. 2019 zuccardi finca piedra infinita supercal Argentina Red

I’m splitting hairs here, because the level is so high in the Malbecs from the Piedra Infinita vineyard that it’s difficult to say, but the coup de coeur is the 2019 Finca Piedra Infinita Supercal, the single-plot bottling from the shallower soils with lots of rocks covered in calcium carbonate (hence the name: "superlime"). In a cooler year like 2019, this wine achieved a level of precision, austerity, elegance and balance that is amazing. The wine floats in the mouth, with an ethereal quality but with the clout and power from the place. The wine is juicy and fresh with a saline twist in the finish. This is approachable now because of its gobsmacking balance and elegance, but it has all the components and the balance between them to age for a long time in bottle. Bravo! 1,400 bottles were filled in June 2020. They told me that it’s always a challenge to decide the picking date for this plot, and they feel they hit the bull’s eye in 2019. And rightly so.Robert Parker | 100 RPThe 2019 Malbec Finca Piedra Infinita Supercal from Paraje Altamira, Uco Valley was aged in concrete and made with grapes from a parcel of soils rich in calcium carbonate. It’s purple in hue. The 2019 has an austere aromatic profile in which clear fresh plum notes are accompanied by violets, lavender and bay leaf. It’s compact yet juicy in the mouth with a pure, chalky texture. The structure is linear for a Malbec, almost skeletal in fact, ensuring that the flavors at the back of the throat reverberate with a mixture of delicate aromas over the taut palate. This wine is a successfully executed statement about winemaking and the house style.Vinous Media | 98 VMDeep but scented nose of black cherries, blueberries, dried violets, graphite, ink and chalk. Very primary, and certainly all about the intrinsic side of the fruit. White pepper and fleshy, deep black cherries on the palate. The tannin is immaculate, but so powerful, with fine austerity, which is evenly distributed, but in an electric way, seeping into the naturally concentrated and succulent fruit. Violets and spices in the finish. Probably the most powerful of the three Piedra Infinita range of reds tasted. An intellectual, austere but resolved malbec. Look elsewhere if you are after oak plushness. Intrinsic and beautiful. Around 1,000 bottles made. Unique. Better after 2025.James Suckling | 98 JS

2020 bibi graetz colore Super Tuscan/IGT

Bright and lively on the palate, such beautifully expressed raspberry and red cherry fruit flavours alongside high-shining acidity that is so clean and precise. A supremely joyful expression with hints of caramelised strawberries and fresh mint. So sharp but so well defined with a clarity to the palate that is gorgeous. Really delivers a sophisticated, charming, characterful wine that is balanced, easy to enjoy with plenty of life. A more structured and perhaps harder to understand wine than Testamatta this year, but both have their own lovely personalities. This is so complete and abundant, muscular but controlled and full of complexity and detail - there’s weight and density without heaviness. A sensational wine. Ageing 12 months in 500l French oak barrels.Decanter | 98 DECThe subtlety and perfumed nature of this wine is enchanting, offering flowers, orange peel and cherries. Wonderful ripe strawberries, too. Full-bodied, but not over the top, with tannins that are polished and run the length of the wine. It’s tight, but gives you every indication of a terrific wine. You want to drink it now, and you probably should do, because it’s so alluring. Yet it will age beautifully as well. Drink or hold.James Suckling | 98 JSThe Bibi Graetz 2020 Colore is a pure expression of Sangiovese all sourced from old vines that are carefully selected in various parts of Tuscany. Much of the fruit comes from a high elevation and cool site in Lamole, or from 70-year-old vines in Bagno a Ripoli or Vincigliata near Fiesole. A small percentage of old vines in Olmo is also used. Bibi has a preference for old vines, and you can taste the lovely depth and complexity that comes through in the Colore. Compared to his other wine Testamatta, this wine has seen fewer stylistic changes over the years, and the goal has always been elegance and finesse. Colore boasts a pretty luminous quality with dark fruit aromas and wild berry. There are hints of licorice and mint as well. Mineral flavors and bright acidity are what set Colore apart.Robert Parker Wine Advocate | 96 RPThe 2020 Bibi Graetz Colore has beautiful, appetising aromas of savory wild herbs, wild-flowers and Mediterranean shrub with a light peppery note and on standing there is an aroma of strawberries warmed in the sun. What I love is that the flavours are clearly delineated and remind me of Sangiovese and the Tuscan landscape with bitter cherry, light sea salt, iron tonic and wild herb notes. The flavors are quite fragile but persistent, the texture is fine and silky and there is a lot of savory, mineral tension in this wine.The Wine Independent | 96 TWIThe 2020 Colore is spiced and pure, with vibrant ripe cherry, cinnamon, and cedar. There is elegance and ripeness within its medium frame, revealing notes of wild raspberry, dried herbs, and orange zest. This finishes on a note of elegance with fine-grained tannins without slowing its momentum as spice notes slowly fade. The Colore is all old-vine (70 years or older) Sangiovese from vineyards Lamole, Vincigliata, Olmo and Siena.Vinous Media | 94 VMCherries, strawberries, raspberries, seaweed and soy sauce mingle with the scent of freshly paved road, gun flint and pencil on the nose of this wine. 2020 chateau dyquem Dessert Wine

A masterclass in purity and delicacy for this 2020 vintage which manages to convey the beauty and allure of Yquem in a toned down, subtle and beguiling way. Aromas of white blossom and honeysuckle, gently caramelised Mirabelle plums and fresh apricots with flecks of clementine and grapefruit pith abound on the nose - richly scented in their individual aspects but delivered quietly, almost sultry and shy. Immediately mouthfilling and unctuous, streamlined and fresh with a sugary hit hitting first before mouthwatering acidity follows giving sumptuous succulence and vibrancy. Apricot, peach, fleshy mango and sharp pineapple give the exotic fruit zing balanced by a salty, flintiness that adds faint angles to the expression. Juicy, bright, clean and complete with hints of cinnamon spice and just-toasted bread providing the frame and structure reminding you that this is built to last. It’s not as opulent as some vintages, much more understated and relaxed - and coincidentally one of the lowest in residual sugar at 135g/l - but this is a wonderful expression with control and confidence on show. A striking young wine, Dauvissat’s brilliant 2020 Chablis 1er Cru La Forest unfurls in the glass with aromas of crisp orchard fruit, orange oil, pear, oyster shell, freshly baked bread and smoke, framed by a deft touch of reduction. Medium to full-bodied, deep and multidimensional, it’s taut and concentrated, with racy acids, chalky structuring and a long, searingly mineral finish. On the palate the wine is pure, precise and full-bodied, with impeccable focus and grip, a lovely core of fruit, outstanding soil undertow and a long, zesty and finish that closes with snappy acids and a complex, seamless finish. Based on 77% Cabernet Sauvignon, 17% Merlot, and 6% Cabernet Franc, it’s an incredible wine that’s going to flirt with perfection and is unquestionably one of the finest, if not the finest, Left Banks in the vintage. I very much like the wine’s persistence. Readers will have to be patient with the 2020. The exuberance of some recent vintages is not present today. The blend is 77% Cabernet Sauvignon, 17% Merlot and 6% Cabernet Franc, which means a touch more Cabernet Sauvignon than in recent years, and quite a bit more than in the past. Harvest ran from September 7 to October 1, which is about ten days earlier than normal. In the cellar, Estate Manager Nicolas Glumineau opted for light extractions, with minimal pumpovers of just one volume of wine per day, at no more than 25 degrees Celsius. Time on the skins was 21 days, pretty much the norm these days. Tasted two times. 2020 sassicaia Super Tuscan/IGT

The 2020 Sassicaia is a bold, rapturous wine. Dark, fleshy and expansive on the palate, the 2020 offers up scents of blackberry jam, gravel, spice, new leather, licorice and crème de cassis. Potent tannins are nearly buried by the sheer intensity of the fruit. Sassicaia is never a huge wine, the 2020 does seem to have an extra dimension of textural intensity. It’s an intensity that is hugely appealing.Vinous Media | 97 VMFrosts damaged the the earlier-developing Cabernet Franc in late March, leading to reduced production but superb quality fruit. Spring was mild and summer was generally warm, but a rapid acceleration of maturation in late summer forced the team to begin picking in the first week of September to avoid any overripeness. A traditional 85% Cabernet Sauvignon and 15% Cabernet Franc blend, its blackcurranty, dusty, leafy and cedary character is brought into focus by an intense and balsamic palate. It’s poised and light on its feet with super-fresh acidity and a fine-grained, almost imperceptible tannic structure. Ripe and tangy raspberry and blueberry fruits linger on the mid-palate, leading to a long, fresh finish with some cream and chocolate notes. This will reward cellaring into the 2050s, yet you’ll get plenty of pleasure from it in its youth. ’We advise to keep it at least 10 months in the bottle before opening,’ states third-generation Priscilla Incisa della Rocchetta.Decanter | 97 DECA very perfumed Sassicaia on the nose with forest floor, citrus and deep dark fruits. Blackcurrants. Cedar and black tea. Some balsamic. Pine needles. Full and very succulent. Really long, structured and complete. Tangy and energetic with a linear line of fresh tannins and acidity. Very Sassicaia throughout. 85% cabernet sauvignon and the rest is cabernet franc. Very attractive now in a youthful and vibrant way, but this will be better in three to four years. Try after 2027.James Suckling | 97 JSThe Tenuta San Guido 2020 Bolgheri Sassicaia speaks to those who seek a more voluptuous, opulent and, ultimately, more accessible wine. This vintage is a precise reflection of Coastal Tuscany, as opposed to a more generic "Tuscan" wine from elsewhere in this large central Italian region. You taste the ripeness and soft fruit weight that comes from a coastal appellation with especially bright luminosity and warm Mediterranean offshore breezes. Sassicaia from the cool vintages is a famously reticent or withholding wine in its earliest years, requiring a long lead time before it eases into an ideal drinking window. That’s definitely not the case here. This wine is beautiful and compelling straight out of the gate, showing a lovely mix of dark fruit, oak spice, balanced freshness, textural richness, soft tannins and an expertly contained 14% alcohol content. The wine’s immediate character is what distinguishes this vintage, and I wouldn’t get too fussed by exaggerated cellar-aging ambitions. Already approachable now but this has impeccable balance, allowing it to age effortlessly. The wine is not oaky at all; it’s quite fruit-driven, and as usually happens with this wine, it’s quite austere, a little closed and backward. And despite its concentration and power, it doesn’t seem to weigh heavy. Persistent. The terrific 2021 Proprietary Red Sugarloaf Mountain is a 60-40 blend of Cabernet Franc and Merlot from this vineyard in southern Napa. Vaguely floral and leafy, loaded with purple raspberries and cherries, this is really complex, with lovely fruit. 2021 ducru beaucaillou Bordeaux Red

The 2021 Ducru-Beaucaillou captures all the potential it showed from barrel. A delicate, understated wine, the 2021 impresses above all else with its finesse. All the elements are impeccably balanced throughout. Time in the glass brings out the wine’s inner sweetness and gorgeous perfume. The balance with oak, at times a challenge here, is also flawless. With lower alcohol and therefore also less extraction from oak than recent vintages, the 2021 is shaping up to be a modern-day classic. The blend is 98% Cabernet Sauvignon and 2% Merlot, the highest amount of Cabernet Sauvignon ever here. What a wine.Vinous Media | 98 VMI was also able to retaste a barrel sample of the 2021 Château Ducru-Beaucaillou, and it showed in line with my tastings last year.
