Introducing the 2019 Chablis are aromas of beeswax, dried white flowers and oyster shell dominating youthfully discreet notions of citrus oil and fresh bread in an already complex bouquet. (Domaine Vincent Dauvissat Chablis "Montée de Tonnerre" 1er Cru White) A vague hint of the exotic is present on the wonderfully elegant lemony white orchard fruit scented nose that reflects additional notes of mineral reduction and oyster shell. The notably finer medium-bodied flavors possess excellent punch on the mineral-driven and chiseled finish that goes on and on. This is lovely and while it too will need better depth, the aging curve is sufficiently promising that I am optimistic that more complexity will develop over the next decade. In a word, terrific. Exhibiting notions of citrus oil, fresh bread, iodine and warm pastry, it’s medium to full-bodied, ample and lively, with fine tension at the core and a long, mineral finish. The 2019 Chablis Vaudésir Grand Cru has a very pretty bouquet of yellow flowers, honeysuckle and light white truffle scents, plus a touch of flint in the background. The palate is well balanced with a fine bead of acidity. This is certainly one of the more elegant Grand Crus in 2019, displaying admirable poise and a touch of spice toward the lingering finish. A highlight this year is the 2019 Chablis Grand Cru Valmur, a full-bodied, deep and layered wine evocative of citrus oil, clear honey, blanched almonds, beeswax and iodine. Satiny-textured and concentrated, with racy acids and a long, electric finish, it’s another immensely promising wine from Fèvre that should be forgotten in the cellar.Robert Parker Wine Advocate | 95 RPA classic Chablis nose features notes of pear, green apple, iodine and sea breeze. The dense, serious and overtly powerful big-bodied flavors flash a sleek muscularity on the textured, sappy and youthfully austere finish that exhibits outstandingly length. This bad boy of a Valmur won’t win any awards for refinement but it is beautifully constructed and clearly built-to-age for a very long time.Burghound | 92-95 BHThey have the plot along the road that divides the steep slope from the crest, which plateaus out and gets E/SE/SW exposure. Pale lemon colour, rich sunny nose, chalky undertones. This has the backbone, it has the shoulders, and finishes on classical Chablis, with just an additional touch of all-spice. The 2020 Chablis Blanchot Grand Cru is aged 75% in stainless steel and 25% in oak for nine months, followed by five months all in stainless steel. It has a relatively light bouquet, quite airy in style, gaining intensity with aeration, touches of white peach, smoke and granite. The palate is well balanced with a fine line of acidity, citrus fruit, orange rind and a touch of stem ginger towards the finish that fans out nicely. This meliorates with aeration and is worth decanting if you decide to crack open a bottle in its youth. Offers a rich and supple texture, making this almost seamless from start to the finish, where a stony element emerges. The succulent, round and plump flavors exude a refreshing salinity on the very dry and sneaky long finish. The 2020 Chablis Les Preuses Grand Cru delivers the intensity one seeks in this cru, offering scent of chalk dust, lemon thyme and light loamy aromas. It builds nicely in the glass. The palate is well-balanced with a fine thread of acidity, compact on the entry yet it fans out nicely whilst retaining admirable tension from start to finish. I would have just liked a little more residual spiciness, but this will do nicely. Well-delineated and balanced, with honey, spice and mineral accents on the finish. The mouthfeel of the medium weight plus flavors is nothing short of gorgeous as it’s at once caressing but punchy on the sappy and strikingly long finish. The 2020 Chablis Les Clos Grand Cru has a crisp bouquet with crushed rock mixed with touches of dried flowers and a light sea spray note - classic Chablis really. The palate is fresh and vibrant on the entry. Touches of dried honey and chamomile, but underneath it all is a fine mineral spine and a decent, quite Les Preuses-like finish. Fine. Plenty of acidity and distinctive mineral flavours on the palate, along with some spiced, confit lemon character to finish. On the palate the wine is deep, full-bodied and vibrant, with a fine core, excellent wet stone mineral drive, bright acids and impeccable balance on the long, focused and complex finish. This has a bit more mid-palate depth than the Petit Chablis and will have a far longer shelf life. Fine juice. There is excellent intensity to the sleek, detailed and delicious medium-weight flavors that terminate in a clean, dry and sneaky long finish. The palate is well balanced with markedly more weight than the Petit Village. A very subtle spearmint trait toward the finish lends another layer of complexity. The 2020 Chablis Blanchot Grand Cru is quite backward on the nose, unfolding to display touches of cold wet limestone and shucked oysters, yet always discreet; this a Grand Cru that does not want to brag. The palate is well balanced with a tangy, quite concentrated entry, fine weight, and good density toward the finish, even if I am not convinced that it will become Droin’s most complex 2020 in the end. We’ll see.Vinous Media | 92-94 VMAn overtly floral nose is comprised by vaguely exotic aromas of lychee, citrus blossom, iodine and ocean breeze. There is outstanding intensity to the beautifully well-detailed larger-scaled flavors that brim with both minerality and dry extract that buffers the moderately firm acid spine shaping the slightly more complex and impressively persistent finish. Very sold quality here.Burghound | 92-94 BHA little more of a lemon tint to the colour. Concentrated white flowers on the nose but too sunny to be edelweiss, and the fruit rapidly takes over. With close to 6.5 acres in this grand cru, Arnaud Lavantureux treats most of this wine to barrel fermentation, then aging in used oak barrels; a small portion rests in new oak. The barrel time has amped up the wine’s power, its viscosity and smoky scents. But it never goes dark, sustaining a stark contrast of white on white. Complex, feather-light in the end, it keeps coming after you with detail, the way wildflower honey might, only this is completely dry.Wine & Spirits Magazine | 94 W&S

The one-hectare parcel that constitutes the 2021 Chablis Valmur Grand Cru yielded five barrels this year. This also has a heavy reduction and is quite yeasty at the moment. The palate is well balanced with a marine-influenced entry, flecks of white chocolate complementing the citrus fruit with a longer finish than the Blanchot. It has a slightly peachier bouquet than the regular Les Clos, well-defined with yellow flowers and light tertiary scents. The palate is well-balanced with a fine spine of acidity, taut and fresh with a saline finish urging you back for another sip. Daivissat’s Chablis parcel comes from two parcels - the smaller near Beine (0.6ha) and the much larger plot adjacent to Premier Cru Foret (2.5ha). Profound, concentrated, prominent lime/lemon zest on the palate, a touch of honey, confited citrus zest to finish. So long. A profound Chablis.Decanter | 93 DECA more floral and more citrus-infused nose speaks of cool and admirably pure aromas of iodine, ocean breeze and green apple along with a hint of the exotic. On the palate the wine is bright, full-bodied, focused and well-balanced, with a lovely core, zesty acids and a fine signature of minerality on the long and classy finish. There is a nice touch of salinity to the mineral expression here from the vintage’s short yields. One of the Dauvissat specialities, the La Forest is a triumph in 2021. From seven small parcels, the total site is less than 1ha with average vine age more than 40 years. Intriguing, slightly smoky nose, highly distinctive and different to others in the range. Plenty of power, ripe stone fruit flavours, zesty citrus acidity with a herbaceous edge adding an extra dimension. Definitely of grand cru quality.Decanter | 95 DECThe 2021 Chablis 1er Cru La Forest is a young classic, mingling scents of sweet citrus oil and peach with notions of white flowers, struck match, bee pollen and youthful reduction in an incipiently complex bouquet. Medium to full-bodied, fleshy and textural, it’s concentrated, taut and incisive, with a long, mineral finish.Robert Parker Wine Advocate | 94 RPThere is a hint of phenolic character on the aromas of crushed leaf, mineral reduction, lemon-lime and seaweed. The denser, succulent and powerful larger-scaled flavors are supported by a firm acid spine on the stony, youthfully austere and bitter citrus rind finale. This is quite dry and I very much like the balance though I would note that at least some patience is strongly suggested as this is quite tightly wound today. In a word, terrific.Burghound | 94 BHI always think of Vincent Dauvissat’s la Forest as his baby les Clos, as with ten years or more of bottle age, the two often resemble each other a bit aromatically and flavor-wise. The 2021 version of la Forest chez Dauvissat is going to be stellar. The bouquet wafts from the glass in a complex mix of pear, fresh lime, flinty minerality, citrus blossoms, discreet vanillin oak and a topnote of beeswax. On the palate the wine is deep, pure and full, with a superb core of fruit, excellent complexity and cut, fine focus, bright acids and a long, complex and impeccably balanced finish. This is superb. (Drink between 2026 - 2060)John Gilman | 94 JGAlso a fine clear colour, though without a green tint. The Forest 2021 has a solid full fruit on the nose, perhaps less intense at the edges. UNDER THE RADAR A very elegant Bougros which matches the ripeness of this full sun site with great acidity and purity of flavour. There is lots of depth here with some zesty citrus characters and a stony, mineral thread in the background. Cleansing acidity on the finish. A grand cru which definitely shows its class, while managing to be both drinkable now yet have a long future ahead.Decanter | 95 DEC

TOP QUALITY PRODUCER Weighty, profound and rich, this is a stunning Les Clos which has an extra level of depth and richness that would please many a Côte-d’Or fan. White flowers on the nose, spice and stone fruit on the palate with 40% oak and a lingering, freshening mineral undertow. A grand cru with gravitas that will drink for 15-20 years. Droin has 1.4ha with vine age averaging 40 years. Its plots are located in various sectors of the cru with some lower down in the western sector, and part on the blue clay soils on the mid-slope.Decanter | 96 DECThe 2021 Chablis Les Clos Grand Cru has a clean and precise bouquet, flint and chalk filtering through the citrus fruit, gaining intensity as it opens in the glass, though I feel the Grenouilles has more sophistication. The succulent yet powerful and delineated flavors brim with both minerality and dry extract, all wrapped in a driving bitter lemon-inflected and youthfully austere finale. Droin’s Vaudésir comes from just over 1ha with vines planted on both north- and south-facing slopes. A little subdued on the nose and palate, this is a subtle grand cru with plenty of definition, and will blossom with two to three years additional bottle age. The palate is well balanced with a saline note, fine depth, lemon and a little more lime. The 2021 Chablis Bougros Grand Cru, 80% aged in oak, has a delightful bouquet with orchard fruit, lemon verbena and orange pith scents that burst from the glass. The palate is well balanced with a fine bead of acidity, quite precise with a welcome touch of bitter lemon that keeps the finish on edge. Not a long-term Bougros perhaps, but finely crafted. The 2022 Chablis Les Clos Grand Cru has a beautifully defined bouquet with yellow plum, wet stone, hints of baked bread and pressed white flowers. Very good intensity. The palate is well-balanced with fine delineation, very good salinity and tension with superb precision towards the finish. This Les Clos doesn’t want the Valmur to get all the acclaim.Vinous Media | 94-96 VMModerate wood is present on the overtly floral-suffused nose of mostly white fleshed fruit, especially pear and apple, along with notes of citrus confit, acacia and oyster shell whiffs. There is excellent richness and concentration to the markedly powerful larger-scaled flavors that coat the palate on the overtly stony, dry and compact finale.
