(Chablis “Bougros”- Domaine William Fèvre) Bougros is often a bit generous and blousy in style for my tastes (or at least for my perceptions of how a proper young grand cru Chablis should present itself!),but the 2017 from William Fèvre has all of the cut, sizzle and reserve I could ever hope for! The bouquet is pure, complex and very classy, offering up scents of pear, lime blossoms, a complex base of chalky minerality and a nice touch of youthful smokiness in the upper register. On the palate the wine is deep, full-bodied, precise and very, very mineral in profile, with a superb core of fruit, great focus and balance, snappy acids and a long, laser-like and nascently complex finish. A truly great example of Bougros. (Drink between 2023-2060)John Gilman | 95 JGThe 2017 Chablis Bougros Grand Cru is a dense, phenolic and powerful wine that captures the tiny yields of the vintage. Lemon confit, pear, white flowers, mint and lightly honeyed notes explode from the glass in a Chablis endowed with tremendous character as well as persistence. This is an especially ample, full-bodied edition of this wine.Antonio Galloni | 94 AGAromas of crushed stones and oyster shell here with a fresh, lemon and yellow-grapefruit edge. The palate has a very taut and composed feel with really assertive acidity, combined with such juicy and fleshy fruit. The result is long and delicious! Drink or hold.James Suckling | 94 JSA cool and ripe nose features notes of pear and apple that possess background nuances of iodine and seashell. There is excellent mid-palate concentration to the big, very rich and concentrated flavors that display a very round and suave mouth feel, all wrapped in a powerful, dry and slightly rustic finale. This muscular and robust effort delivers sneaky good length and while it needs to develop more depth, it has the potential aging curve to do so.Burghound | 93 BHI was unduly conservative with my assessment of Fèvre's 2017 Chablis Grand Cru Bougros, as this bottle was showing very well indeed, unfurling in the glass with aromas of white flowers, fresh peach, Meyer lemon and crushed chalk. It's full-bodied, deep and fleshy, with excellent concentration, racy acids and chalky structuring extract, concluding with a precise finish. One of three producers in Chablis to bottle wine under this label (or a slight variation of its spelling), this comes from what is generally considered the best bit of Bougros, on a slope close to the River Serein. Picked early in 2018, this is fresher and more refined than it can be in warmer vintages, showing beeswax and citrus perfume, refined oak and lingering freshness. Drinking Window 2020 - 2028.Decanter | 96 DEC(Chablis “Bougros- Côte de Bouguerots”- Domaine William Fèvre) The 2018 Côte de Bouguerots is also superb in this vintage, and is very, very elegant in profile out of the blocks. The bouquet wafts from the glass in a blend of fresh lime, pear, apple, chalky soil tones, apple blossoms and a topnote of beeswax. On the palate the wine is pure, full-bodied and impeccably balanced, with a rock solid core of fruit, laser-like focus and outstanding mineral drive on the long, snappy and complex finish. Stunning juice. (Drink between 2025-2065).John Gilman | 95 JGHazelnut-like smokiness folds itself around lemon notes on this wine's creamy nose. The palate comes in with rounded pear, portraying the juicy ripeness of 2018 but grounding it in layered, yeasty, chalky and smoky depth. The racy, intense and equally refined middle weight flavors are super-saline while exhibiting superb length on the balanced, youthfully austere and very dry finale. This will need to add depth over the next few years, but the underlying material appears to be up to the task. This is very classy juice of refinement and understatement. This is generally the richest, most fruit-driven grand cru bottling chez Fèvre, but the 2020 Chablis Grand Cru Bougros is a wine of particular distinction. Exhibiting aromas of peach, citrus blossom, bee pollen and oyster shell, it’s a medium to full-bodied, satiny and layered wine that’s ample but elegant, with racy acids and a long, saline finish.Robert Parker Wine Advocate | 94 RPThe 2020 Chablis Bougros Grand Cru comes from six hectares of vines, southwest- and south-facing, forming the two different cuvées. The bouquet unfolds to offer lovely yellow fruit and oyster leaf aromas, well defined and quite generous. The palate is taut and crisp with fine acidity and moderate depth, but very pretty and composed toward the saline finish. There is plenty of substance already in situ and I foresee this aging with class.Vinous Media | 92-94 VMThis is restrained to the point of being all but aromatically mute though aggressive swirling eventually coaxes notes of green fruit, citrus peel and oyster shell nuances to reveal themselves. This is very much a work in progress, and I would advise allowing this at least 5 years of cellaring and it should easily reward a decade or more.Burghound | 92-94 BHThe 2020 Chablis “Bougros” from Domaine William Fèvre is a beautiful wine, and as is often the case in the lineup here, this is the most forward of the grand crus and the one I would reach to first if I had a desire to drink a delicious, younger grand cru. The bouquet is just loaded with beautifully pure fruit tones, with scents of pear, lime and green apple blending with notes of chalky soil tones, dried flowers and citrus peel. On the palate the wine is deep, full-bodied, complex and long, with a gorgeous core of fruit, fine chalky undertow, bright, zesty acids and great focus and grip on the long, complex finish. This still deserves some bottle age, but it will not be a crime to let your curiosity get the best of you and open a bottle of this lovely wine four or five years down the road! (Drink between 2026 - 2065)John Gilman | 94 JGFrom 4ha of vineyards, this is an easy introduction to the Bougros Grand Cru. Acidity is well in check and the wine is generous, with 25% older wood used for maturation. Very nice weight and purity, minerality and an extra layer of richness compared to the premier cru. Higher yields here than Fèvre’s other grands crus, except Les Clos.Decanter | 93 DECA ripe, round style, featuring peach, apple and citrus flavors accented by grassy meadow and finger lime, with a stony note seeping in on the lingering finish. 2020 Domaine William Fevre Chablis Grand Cru Les Clos

Fèvre’s largest grand cru, with 4ha located higher up in Les Clos, meaning this is cooler climate and with much more chalk than Kimmeridgian. 50% of the vines were planted by William Fèvre’s father in the 1940s. Perfect balance between precision, concentration, acidity and ripe fruits, with oak that’s not at all apparent. A fresh, glorious wine.Decanter | 97 DECChoosing a favorite among the last three grand crus in the Domaine Fèvre lineup is simply impossible in 2020. The les Clos is yet another stunning young wine, offering up a refined and complex bouquet of pear, tart orange, fresh lime, flinty, chalky minerality, citrus peel, dried flowers and a nice touch of smokiness. On the palate the wine is deep, full-bodied, focused and seamlessly balanced, with a beautiful harness of acidity, a great core of fruit and a very long, very minerally and oh, so complex young finish. A great wine by any measure! (Drink between 2032 - 2080)John Gilman | 97 JGThe 2020 Chablis Grand Cru Les Clos is another brilliant effort from Fèvre’s immensely able winemaker, Didier Seguier, and his team. Unwinding in the glass with aromas of confit citrus, fresh bread, oyster shell, orange zest and crisp orchard fruit, it’s full-bodied, satiny and muscular, with a concentrated, tensile profile and a long, intensely saline finish. It’s the broadest and most powerful wine in the range, while remaining quintessentially Chablisien.Robert Parker Wine Advocate | 96 RPA cool, restrained and airy nose grudgingly divulges its combination of lemon rind, green apple, quinine and acacia blossom scents that are also trimmed in discreet wood. There is again excellent volume and concentration to the powerful and muscular flavors that also coat the palate with dry extract on the impressively complex and hugely long finish. This is classic Les Clos in that it manages to be at once big and overtly powerful while remaining refined and classy. It has a well-defined, crisp and (for the vintage) quite austere nose due to the location higher up the slope. The fresh palate is nicely detailed with lime and lemon thyme and good salinity. Quite strict on the mineral-driven finish. Good potential, but it will need time.Vinous Media | 91-93 VMThis lemon- and green apple–infused white stays lean, racy and long, combining power and intensity. The holding is on the crest with lots of kimmeridgian powdered marl. A more intense green and pale gold colour. The primroses are out. So too are the spices. Like Vaudésir, the yields are relatively low here in 2020 at 35 hl/ha. Very powerful but the teeth are coated in Chablisian mineral freshness.Jasper Morris | 93-96 JMUnwinding in the glass with aromas of peach, lemon oil, freshly baked bread, oyster shell and struck match, Fèvre’s 2020 Chablis Grand Cru Valmur is full-bodied, concentrated and incisive, with a racy, electric profile and a searingly saline, intensely penetrating finish of striking persistence. This is a terrific Valmur that will merit at least a decade’s patience to reveal all its considerable potential.Robert Parker Wine Advocate | 95+ RPThe 2020 Valmur from Domaine Fèvre is also an absolute classic in the making. The wine delivers a superb bouquet of apple, pear, beeswax, a complex base of limestone minerality, white lilies, fruit blossoms and a topnote of paraffin. On the palate the wine is pure, precise and full-bodied, with a properly reserved personality out of the blocks, great depth at the core, magical soil signature and a long, vibrant and snappy finish of excellent balance and grip. This is even a bit more structured than the Vaudésir and will need plenty of bottle age, but it will be stellar when it is truly ready to drink. (Drink between 2032 - 2080)John Gilman | 95 JGThe 2020 Chablis Valmur Grand Cru comes from 1.1 hectares of vines at the top of the hill on a marl spur. The bouquet is a little reduced, making it difficult to read. The vibrant palate is full of energy, taut and strict, with a fine bead of acidity and a penetrating, sour-lemon-tinged finish that lingers in the mouth. Good potential, but one for those who like their Chablis mean.Vinous Media | 92-94 VMMuch like the Vaulorent, the nose instantly confirms with conviction that this could be from nowhere else but Chablis with its airy array of citrus rind, sea breeze, quinine and smoky green fruit aromas. There is excellent size, weight and richness to the broad-shouldered yet sleek flavors if not nearly the same refinement on the powerful and driving finish. This even more firmly structured effort is impressive as well, though with an entirely different texture.Burghound | 94 BH

(Chablis “les Preuses”- Domaine William Fèvre) The 2020 les Preuses from Domaine Fèvre was one of the finest white wines I tasted from the entire vintage during my trip in November and December. The perfect ripeness of the vintage, coupled to such great acidity are the hallmarks of the best wines of 2020 and these attributes are on full display in this stunning young wine. The nose soars from the glass in a mineral bath of les Preuses Kimmeridgian limestone terroir, carrying notes of apple, pear, fresh lime, straw, oyster shell, white flowers and a topnote of beeswax. On the palate the wine is pure, precise, snappy and very, very complex, with great depth at the core, stunning mineral definition, laser-like focus and stunning length and grip on the simply beautiful young finish. All this great wine needs is time in the cellar to blossom. (Drink between 2031 - 2080)John Gilman | 97 JGThe 2020 Chablis Grand Cru Les Preuses is, if anything, even more electric than the formidable Valmur, wafting from the glass with notions of citrus oil, freshly baked bread, oyster jus and wet stones. Full-bodied, satiny and chiseled, it’s racy and intense, with a bright spine of acidity and a long, intensely saline finish.Robert Parker Wine Advocate | 95 RPFrom 1.5ha on soils that are high in clay content above Bougros, together with 1ha just above Bouguerots. Distinct precision here, not a blockbuster but intense and focused. Lovely crystalline fruit and will age beautifully.Decanter | 95 DECAromas of quinine, essence of wet stone and seashore add breadth to the nose of pear, apple and anise. Once again there is fine density and intensity to the mouthcoating medium-weight flavors that flash outstanding length on the bracingly saline-suffused finale. This has already developed very good depth and more will almost surely follow. This is potentially outstanding.Burghound | 95 BHThe 2020 Chablis Les Preuses Grand Cru comes from 2.5 hectares of vines in two locations, one east-facing and one southwest-facing. It has quite a deep, intense nose featuring lemon zest, crushed stone, linden and touches of citrus peel. The cohesive palate is smooth and harmonious with fine salinity, if maybe not quite building on its initial promise, as the finish pulls up just a little short compared to the Bougros. 2020 Domaine William Fevre Chablis Premier Cru Beauroy

An elegant, pure and beautifully layered nose is comprised by notes of white orchard fruit, ocean breeze, quinine and a whiff of the exotic. There is really lovely intensity to the caressing but well-detailed middle weight flavors that conclude in a refreshing and inviting finish that evidences plenty of salinity. Beauroy is rarely this good so color me impressed.Burghound | 90-93 BHThe 2020 Chablis 1er Cru Beauroy is a charming, pretty wine, bursting with aromas of sweet white flowers, honeycomb, oyster shells and crisp stone fruit. Medium to full-bodied, ample and precise, with a satiny attack and a saline finish, it’s a particular success this year.Robert Parker Wine Advocate | 92 RPThere’s quite a bit of spice here although the palate is restrained and with good concentration. Less showy, a wine built for the long haul, this is classy and will age very well. From three parcels in Beauroy. This is a warmer microclimate and Didier noted that they picked this very early, “to keep the freshness in the wine.” The team has succeeded nicely in this, as the wine jumps from the glass in a lovely blend of lemon, pear, chalky soil tones, white flowers and a touch of upper register paraffin. On the palate the wine is bright, full-bodied and nicely balanced, with a good core, lovely transparency and grip and a long, zesty and complex finish. Good juice. A wine from a selection of sites over 3.9ha in Butteaux, Forêts and Montmains. Butteaux is very cold and mineral, while Forêts is elegant and floral. Great precision and focus here, allied with crystalline citrus fruits on the palate. Shows density, but is also very fresh, with lovely mineral characters on the finish. A highly successful Montmains.Decanter | 93 DECHere too the nose is elegant, pure and layered but with more floral and spice nuances adding breadth to the cooler and more restrained aromas. There is both excellent intensity and density to the mineral-driven flavors that terminate in a bone-dry, sneaky long and balanced finale. This too is really very good.Burghound | 91-93 BHConsisting of roughly equal parts Montmains, Butteaux and Forêts (the three sous-climats of Montmains), the 2020 Chablis 1er Cru Montmains offers up aromas of crisp green apple, white flowers, bee pollen and oyster shell. On the palate the wine is pure, full-bodied and racy in personality, with fine focus and grip, a lovely core and a long, minerally and beautifully balanced finish. A lovely example. The 2021 Chablis Bougros Grand Cru comes from southwest facing parcels (Fèvre almost half the holdings in this Grand Cru) has a very marine-influenced bouquet with touches of granite and a light smoky note. The palate is well balanced with a fine bead of acidity, nicely focused with a touch of quince complementing the citrus fruit, though I am just seeking a little more mineralité to come through on the final third.Vinous Media | 91-93 VMFevre’s Bougros covers around 50% of the whole Bougros climat. With it’s westerly location in the grand cru, Bougros is often a warmer site and once can taste the sweetness to the fruit here, beautifully balanced by 2021’s acidity. Although not the weightiest, showiest or most concentrated grand cru, there is lots to like, with notes of grapefruit, a touch of citrus zest and excellent acidity. The 2021 Chablis Les Clos Grand Cru comes from 4.1 hectares mainly located on the upper sector of the Grand Cru, the vines planted in the postwar period by Maurice Fèvre, the father of William Fèvre. It has a powerful bouquet with hints of white flower permeating the citrus fruit and apple blossom aromas. The palate has wonderful salinity on the entry, a fine bead of acidity, citrus-fresh with clementine, hints of peach and a twist of bitter lemon that keeps the finish on its tippy-toes. 2021 Domaine William Fevre Chablis Grand Cru Les Preuses

The 2021 Chablis Les Preuses Grand Cru comes from 2.5-hectares split over two parcels. This has one of my favourite aromatics from Fèvre this year with superb delineation and mineralité. The palate is harmonious and poised, very focused and tensile, plenty of energy with a touch of lime and clementine towards the persistent finish. This is an outstanding Chablis that should age supremely well in bottle.Vinous Media | 94-96 VMOne of the domaine’s standout wines, this immediately strikes you with its precision and clarity. Fevre’s vines are from two different sites, with varying expositions - one lower down and facing south-east, the other high on the plateau. Great elegance with plenty of weight and concentration on the palate, full and fleshy. Grapefruit notes to the fore but plenty of mineral/saline notes on the long, persistent finish. Fevre’s Montée de Tonnerre comes from all three sectors. Seguier notes that Pied d’Aloup has the highest marn content, Montée de Tonnerre adds weight and the old Chapelot vines (planted in 1936) add finesse. More closed on the nose. Weighty, concentrated, persistent. Saline notes. Will be a great gourmand wine. Some white flower notes, lots of zesty orange and grapefruit on the palate with a nice touch of white peach. For long ageing.Decanter | 94 DECA discreet dollop of wood sets off the equally cool and perhaps even slightly more elegant aromas of acacia, citrus, seashore and oyster shell. The sleek and highly sophisticated medium-bodied flavors possess a really lovely texture while delivering superb length on the bitter lemon and mineral-suffused finish. This beautifully balanced effort is crystalline in its purity and a wine that should repay a decade plus of keeping.Burghound | 92-94 BHThe 2021 Chablis Montée de Tonnerre 1er Cru comes from 2.2-hectares split over three climats with different orientations including the domaine’s oldest vines planted back in 1936. This has quite an aromatic bouquet with limestone, oyster shell and yellow plum aromas that blossom in the glass. The palate is well balanced with fine acidity, harmonious with commendable weight matched with a countervailing saline element. The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. Fevre’s Vaulorent is just a little more precise on the nose. Seguier says it is always elegant, always fresh. Fevre’s take on this renowned premier cru has an understated nose yet you can feel the power within. Lovely ripeness of fruit, but all in a very compact package at the moment. Although this is disarmingly approachable now, this will be a wine to cellar carefully, allowing all the perfectly formed components to blossom.Decanter | 95 DECA much less expressive nose, indeed it is all but mute, requires aggressive swirling to eventually coax aromas of white orchard fruit, citrus blossom and seawater. The richer and slightly more powerful flavors also possess a sophisticated mouthfeel along with excellent depth and persistence on the balanced finale where a touch of youthful austerity slowly emerges. In a word, terrific.Burghound | 92-94 BHThe 2021 Chablis Vaulorent 1er Cru comes from 3.60-hectares, of course, the only Premier Cru on the same incline as the Grand Crus. The soils here are very marn. It has an energetic petrichor, slightly fumé bouquet that is very well focused. The palate is well balanced, taut and fresh with fine acidity, lemon verbena and citrus peel emerging towards the finish. Delightful, though the Montée de Tonnerre has just a little more harmony.Vinous Media | 90-92 VM

2022 Domaine William Fevre Chablis Grand Cru Bougros Cote Bouguerots

The very steep aspect of Côte Bouguerots is highlighted by a much greater emphasis on minerality than Fevre’s Bougros. This is a grand cru is every way - so much drive on the palate with plenty of extract, concentration, salinity and length. Certain to keep very well but this is also surprisingly approachable early on. DIdier Seguier says it’s likely to close down after 18-24 months but this is clearly a fine example with masses of potential.Decanter | 96 DECThe 2022 Chablis Bougros Côte Bouguerots Grand Cru has a clean and precise bouquet with hints of wild peach, apricot blossom, Mirabelle and crushed stone. The palate is well-balanced with a very harmonious entry, blackcurrant leaf and spice, crushed stone and what feels like plenty of extract on the finish. This has great potential, but afford it time in your cellar.Vinous Media | 93-95 VMThis is the coolest and most restrained of this group of 2022s with its elegant aromas of prominent mineral reduction, lemon-lime, spice and oyster shell. There is almost painful intensity to the intensely stony and strikingly well-detailed larger-bodied yet still beautifully refined flavors that display huge length on the impeccably well-balanced finale. Like the Preuses, this is very classy and built to repay extended keeping.Burghound | 93-95 BH

2022 Domaine William Fevre Chablis Grand Cru Les Clos

Small yield, very concentrated, with masses of density on the palate. Plenty of drive and energy but has finesse to balance out the power. White peach fruit characters, vibrant acidity and a pronounced mineral, salty finish. Very long future ahead. Fèvre owns 4.1ha of the 25ha total within Les Clos. Its plots situated on the top of the hill, with 50% of the vines planted by William Fèvre’s father in the 1940s and 1950s.Decanter | 95 DECThis is aromatically quite similar to the Côte Bouguerots but with more floral influence. The rich, big-bodied and tautly muscular flavors are also seemingly chiseled from Kimmeridgian, all wrapped in a wonderfully persistent, very dry, balanced and stony finale. This is also extremely impressive and equally built to repay extended cellaring.Burghound | 93-95 BHThe 2022 Chablis Les Clos Grand Cru has a surprisingly primal bouquet with gooseberry, melon, fruits de mer and citrus peel, with more oyster shell scents developing as it opens, though never quite achieving the flair of the Valmur. The palate is well-balanced, steely and strict, with fine intensity and a saline finish. But it doesn’t quite have the precision of Fevre’s best cuvées at the moment.Vinous Media | 91-93 VM

2022 Domaine William Fevre Chablis Premier Cru Vaillons

This is also aromatically cool and almost as reticent with its airy aromas of white pepper, mineral reduction, essence of pear and a suggestion of wood influence. The gorgeously textured medium weight flavors possess an even more developed sense of refinement while exhibiting fine length on the quinine, stony and bitter lemon zest-suffused finale. This is lovely and a Vaillons of finesse in 2022.Burghound | 90-93 BHThe 2021 Chablis Vaillons 1er Cru had been blended the previous week, during which a majority of the lees is kept. Often one of my favorite cuvées from William Fevre, the entrancing bouquet has impressive intensity on the nose. The palate is well-balanced with lemon verbena and touches of pear, a fine sense of energy and composure, and a persistent finish. This already looks very promising.Vinous Media | 90-92 VMTypical Vaillons perfume and freshness. Precise but with good weight and precision. A classy Vaillons which will drink well when young but will also age. Fèvre owns 3.5ha, with 50% in Vaillons, and the rest spread between Chatains, Roncière and Melinots.
