This green-skinned wonder-varietal is one of the most represented white wine grapes in Bordeaux, and that fact alone gives it all the credibility you could ask for. Sauvignon Blanc is used for dessert wines and makes an excellent standalone varietal bottle. It’s known as one of only a few wines in the whole world that can perfectly complement a plate of sushi. Outside of France, you can expect to encounter this varietal in Chile, Romania, New Zealand, Australia, Canada, Washington, California, and many other locations.

The flavor and texture tend to vary based on the region that produces a given bottle. In cooler climates, the wines tend to be on the acidic side, and the green Sauvignon Blanc grape is followed by a variety of other “green” flavors, such as green bell peppers or grass, with a pinch or two of various tropical flavors like passionfruit. Otherwise, the wines tend to feature an even stronger tropical representation, making them a perfect choice for relaxing and staying refreshed on the beach, losing yourself in the lush, fizzy ocean waves.

Because it grows in so many regions, your vintage choices are pretty broad. Every major region has a compelling representative, and tasting as many of them as you can is the best way to experience the magic of Sauvignon Blanc as a whole.

2023 Quintessa Sauvignon Blanc Illumination, California White

An extraordinary white, with details of beeswax, honeysuckle and lanolin giving way to succulent white peach, nectarine and lemon curd flavors on a plush, juicy frame. Shows details of marmalade and candied ginger, with hints of litsea oil and lemon balm that linger on the long, expressive finish. Drink now through 2035. 5,000 cases made.Wine Spectator | 95 WSThe core grapes for Quintessa’s Illumination white are sourced from the winery’s estate in Rutherford, along with fruit from another site in South Napa and a vineyard in Sonoma’s Bennett Valley. In 2023, the blend included 58% Sauvignon Blanc, 32% Sauvignon Blanc Musqué, and 10% Sémillon. The grapes were whole-cluster pressed before fermentation, initiated by native yeasts in a mix of French oak barrels, acacia barrels, egg-shaped concrete fermenters, and stainless steel barrels. The wine is then aged in a variety of vessels, including concrete eggs, ceramic amphorae, French oak barrels, French acacia barrels, and stainless steel, along with neutral oak cigar barrels. There is some bâtonnage until blending and bottling, which occurs in March following the previous harvest. The wine is not fined but is filtered. Delicate aromatics of orchard fruits and tropical fruit, like white peach and white flowers, mingle with slivered almonds and a hint of sea spray minerality.
