Sparkling Wines

Sparkling wines have a unique identity among the various wine categories. As their name suggests, they’re carbonated, which creates an interesting, compelling texture and combination of flavors – as well as a familiar and cheerful “pop” when a bottle of Champagne is uncorked. There are many stories about how sparkling wine came to be, but the most important thing to know is that there are two main production methods – the Champagne method and the Charmat-Martinotti method, also known as Metodo Italiano.

Sparkling wines are incredibly popular today, being a staple purchase for many different social events and special occasions. In particular, you can expect most holidays to feature at least one bottle of these playful blends, and they’re often one of the first alcoholic beverages a person tries in their life. As such, they are a potent catalyst for creating long-lasting positive memories as early as one’s teenage years, and an easy way to develop a taste in fine wine from a young age. The flavor of a great sparkling wine is so lush, refreshing, and smooth; it goes down like soda water while tasting infinitely sweeter. Champagne bottles get emptied in record time as every guest indulges in a healthy dose, unable to stop before they run out. The fizzy texture massages and arouses your tastebuds in a way not many luxurious drinks can offer, bringing to mind foamy waves of azure sea water, or intense rapids.

If you’ve ever wondered what true love tastes like, sparkling wines offer a pretty good idea of what to expect. You can pick from a variety of flavors, each offering a different blend of dryness and sweetness. We highly recommend Champagne, Cava, and Prosecco if you’re looking to dip your tongue in the finest sparklers on the market. Pair them with marinated, roasted chicken, or a similar dish and experience a heavenly pleasure.

2012 Billecart Salmon Cuvee Louis Salmon Brut Blanc de Blancs

The 2012 Brut Blancs de Blancs Louis Salmon is a gorgeous Champagne. Lemon confit, spice, baked apple tart, chamomile and dried flowers are all nicely amplified. The 2012 was done 75% in tank and 25% in oak, with most of the lots undergoing malolactic fermentation. There’s a feeling of reserve in the 2012 that is quite appealing. This edition is terrific, but it also needs time to be at its best. I would be in no rush to open this. Low yields and a year beset by frost, hail, heavy rain, mildew and sunburn at various times produced a rich Champagne. The blend of sites in Mesnil-sur-Oger, Chouilly, Cramant and Oiry works so well. Dosage is 3.9 grams per liter. Disgorged: first trimester 2023.Vinous Media | 97 VMTasted from magnum. Alongside the main release in 75cl, a limited number of magnums of 2012 Louis Salmon have been released simultaneously. Aged under cork during its second fermentation, these reframe the 2012’s already expressive aromatics in explosive charry, flinty energy and an extra degree of fluid freshness on the palate, representing an irresistible supercharging of the beautifully ripe lemon syrup, apricot and sweet spice flavours present in this fine release, nimble and transparent with a beautifully precise palate unmarked by dosage or some of the heavier, more concentrated fruit the year can bring. 60% from Le Mesnil-sur-Oger, with the remainder from Cramant, Chouilly and Oiry, with 25% barrel fermentation and 115 months on lees. Dosage 3.9g/L.Decanter | 96 DECPrecise and sensual blanc de blancs with notes of pie crust, grapefruit, white peaches, chalk and hazelnuts. Driven, mouth-watering and with fantastic structure, yet it’s so balanced and creamy. Very fine and silky bubbles. 3.9g/L dosage. Drink or hold.James Suckling | 96 JS

2012 Billecart Salmon Elisabeth Salmon Brut Rose

This has a lovely copper color with aromas of cloves, spiced apples, raspberries, gingerbread and pastries. Delicious yeasty and spicy undertones. Excellent density and focus, with fine and firm bubbles, yet it’s light on its feet and so fresh. Long, chalky and salty at the end. Chardonnay and pinot noir. 3.8g/L dosage. Drink or hold.James Suckling | 97 JSThe 2012 Brut Rosé Cuvée Elizabeth Salmon offers up hints of red berry fruit, ginger, spice, rosewater, mint and crushed flowers. There is a feeling of classic austerity that runs through the 2012. I would prefer to cellar this for at least a few years, as it is quite reticent at this stage. Chalk, mint, white pepper and bright saline accents linger on the pointed finish. Dosage is 3.8 grams per liter. Disgorged: first trimester 2023.Vinous Media | 96 VMElisabeth Salmon 2012 shows all the signs of being a true classic for Billecart-Salmon, beautifully balanced between the most alluring Pinot aromatics – black cherry juice, peach melba and fresh raspberry – and an engine of pure, persistent Chardonnay energy of bright clementine and zesty length, all lifted with subtle details of allspice, rose petal and nougat and delivered on an effortlessly silky mousse. Open for business, yet without the showiness that the wines of this vintage can sometimes display, it’s a rosé of assured refinement and quiet intensity that seems set for a long future. 55% Chardonnay from Chouilly, Avize, Cramant and Le Mesnil-sur-Oger with 45% Pinot Noir from Mareuil-sur-Aÿ and Ambonnay, with 8.3% red wine addition from Mareuil-sur-Aÿ. 2.9% fermented in barrel, and released after 115 months on lees with a dosage of 3.8g/L.Decanter | 95 DEC

2012 Laurent Perrier Champagne Brut Millesime

A vintage that marks the producer’s 200th anniversary, the Champagne is ripe with mature white fruits. It is an impressive wine that has richness alongside a tight mineral texture. Drink now. Wine Enthusiast | 95 WEThe 2012 Champagne Brut is equal parts Chardonnay and Pinot Noir and has 8 grams per liter dosage. Since the 1950s, only 30 vintages have been produced by the house. The aromatics are reminiscent of a Burgundian feel, with pleasant flinty reduction, smoke, and vibrant green fruits of pear and citrus blossoms. Offering an energetic mousse with green apple, yellow plum, lemon curd, and wet stone, this wine is well-balanced and should continue to improve over the coming 15-20 years.Jeb Dunnuck | 94 JDElegant array of lemons, slate, biscuits, oyster shells, croissants and brioche. Precise and focused on the palate, with sharp acidity and tight, fine bubbles. Pure and youthful for now. 50% chardonnay and 50% pinot noir. Dosage 8g/L. Drink or hold.James Suckling | 94 JSLight gold with very fine, persistent bubbles, the Brut Millésimé 2012 is 50% Chardonnay and 50% Pinot Noir aged ten years on lees and finished with an eight gram per liter. Redolent of white peach, Chantecler apple, toasted brioche, vanilla bean, and honey brickle, the medium to full-bodied palate is richly textured around a plush red fruit core and balanced by stimulating and bright acid freshness through a long finish with a kiss of lemon peel bitterness. The Wine Independent | 94 TWIA harmonious Champagne, with a fine and persistent mousse on the palate, this layers a rich note of marzipan with flavors of white cherry, preserved lemon, biscuit and a refreshing streak of salinity that lingers on the mouthwatering finish. Chardonnay and Pinot Noir. Drink now through 2032.Wine Spectator | 93 WS2012 is the 30th opus of this cuvée. Since 1938, and the acquisition of Laurent-Perrier by the Nonancourt family, it has been crafted to be a subtle balance between ‘the house style and the vintage style,’ according to Michel Fauconnet, Laurent-Perrier’s chef de caves. The Pinot Noir, which comprises half the blend and which Fauconnet describes as very ‘powerful’, is sourced from five villages: Bouzy, Verzy, Aÿ, Mailly, and for the first time in the history of this cuvée, Rilly-la-Montagne, which is not a grand cru village. The Chardonnay, which makes up the other half of the blend, is sourced from the villages of Le-Mesnil-sur-Oger, Oger, Cramant and Chouilly. ‘The year 2012 was characterised by successive climatic accidents. There was a major winter frost as well as a spring frost, not to mention 10 or so episodes of hail, causing significant damage. A hailstorm on the seventh of June caused extensive damage in various villages,’ said Laurent-Perrier. In spite of this, the dry and sunny summer brought about a beautiful maturity. With an energetic yet bright bouquet, the Laurent-Perrier 2012 possesses gorgeous aromas of orchard fruits, herbs, lemon and spices, with a hint of menthol. Calcareous on the palate, the structure is medium- to full-bodied, with a laser-like texture and a long and penetrating finish. It is undeniably one of the frank successes of the vintage, and while it has no need for further ageing, it may surprise us even further in the future.Decanter | 93 DECThe 2012 Laurent-Perrier Brut Millésime is composed from a fifty-fifty blend of chardonnay and pinot noir. The nose is bright and very elegant in profile, offering up scents of apple, pear, bread dough, chalky soil tones, fresh almond, dried flowers and a smoky topnote. On the palate the wine is full-bodied, complex and very well balanced, with a fine core of fruit, lovely soil inflection, a fine spine of acidity, pinpoint bubbles and a long, still quite youthful finish. I would love to give this excellent wine four or five years in the cellar to really let its secondary layers blossom. It will age long and gracefully. (Drink between 2024 - 2060)John Gilman | 93 JG

2012 louis roederer cristal rose Champagne (Rose)

Just about as good as it gets, the 2012 Cristal Rosé is a magical effort based on 56% Pinot Noir and 44% Chardonnay. It’s a powerful, medium to full-bodied, incredibly textured rosé offering a huge amount of salty, chalky minerality as well as awesome notes of white cherries, orange blossom, caramelized apples, and toasted bread. It shows the ripe, rounded richness of the 2012 vintage yet has bright, racy acidity, perfect balance, and a great, great finish. It opens up nicely with air and will ideally be given 2-4 years of bottle age, and it should evolve for 2-3 decades.Jeb Dunnuck | 99 JDThis is a great vintage for Cristal Rosé. The pinot noir finds a band of power and expressiveness. The power here is impressive, very assertive and rich, really mouth-filling and super deep. This is exceptional and has intense, chalky and fresh, white-peach and nectarine aromas, underpinning red flowers and pink fruit. The palate has a scintillating blend of flesh and mineral cut, packed with such sweet, pristine, white-strawberry flavor and texture. This has such incredible potential. So exciting. Will take another two or threw years to resolve. Look out for this! Drink from 2025.James Suckling | 99 JSThe 2012 Cristal Rosé is showing brilliantly, unwinding in the glass with a beautiful bouquet of fresh peach, bergamot, strawberries, tangerine and blanched almonds that’s still quite reserved. On the palate, the wine is full-bodied, deep and strikingly complete, its vinous attack segueing into a multidimensional core that exemplifies the ideal of power without weight, built around a racy but integrated spine of animating acidity and complemented by an exquisitely refined mousse. All the concentration of the 2012 vintage is on display, but it’s rendered with terrific finesse. Decidedly youthful and introverted—indeed, I spent several hours with a bottle to compose this note—the 2012 will really come into its own with five or six years in the cellar and displays all the attributes necessary for considerable longevity. It’s a blend of 56% Pinot Noir and 44% Chardonnay that saw no malolactic fermentation, and it was disgorged with eight grams per liter dosage.Robert Parker Wine Advocate | 98 RPThe 2012 Cristal Rosé is magnificent. When Chef de Caves Jean-Baptiste Lécaillon started to move Roederer towards organically farmed fruit, he started with Cristal Rosé, Roederer’s smallest production cuveé. Because of that, Cristal Rosé is the wine in this range that shows the current Roederer style in its fullest expression. Rich, vivid and crystalline in the glass, the 2012 Cristal Rosé is a Champagne of tremendous gravitas. Chalk, white flowers, sweet red berry fruit, mint and blood orange are all beautifully delineated. The 2012 is 55% Pinot from Ay and 45% Chardonnay from Mesnil and Avize. The Pinot fruit gets a 7-10 day cold soak an is the infused into the fermenting Chardonnay musts. Readers who can find the 2012 should not hesitate, as it is truly magical. Dosage is 8 grams per liter.Antonio Galloni | 98+ AG(Louis Roederer Cristal Brut Rosé Millésime (Reims)) The 2012 Louis Roederer Cristal Brut Rosé is a magical wine in the making. It is composed this year of a blend of fifty-six percent pinot noir and forty-four percent chardonnay, with fifteen percent of the vins clairs having been barrel-fermented in this vintage. None of the vins clairs underwent malo this year and the finishing dosage for the 2012 is eight grams per liter. The wine is superb and just a bit more accessible out of the blocks than the regular 2012 Cristal, wafting from the glass in a very refined constellation of apple, white peach, gentle smokiness, chalky soil tones, a nice touch of fresh-baked bread, caraway seed, incipient smokiness and a topnote of dried flowers. On the palate the wine is deep, full-bodied, racy and bottomless at the core, with lovely mineral drive, refined mousse, impeccable focus and grip and a very, very long, very pure and nascently complex finish. This is not quite as buttoned up behind its girdle of acidity as the regular 2012 Cristal, but it is by no means ready for primetime drinking and still needs a minimum of eight to ten years in the cellar to really unfold. Great juice. (Drink between 2027-2080).John Gilman | 98 JGNo written review provided. | 98 W&SYears in the making, this is the first fully biodynamic Cristal rosé. The very fine 2012 vintage is a good starting point for this new era. The Champagne is just right, beautifully rich and showing some maturity while also having tension and crispness from the golden-apple and spice flavors. The wine could be drunk now but its future is assured. Organic and biodynamic. Wine Enthusiast | 97 WEAn elegant rosé Champagne, starting quietly with a subtle range of white cherry, Marcona almond, pink grapefruit zest and saffron flavors that gain momentum and volume as they expand, gliding across the palate’s fine, raw silk–like texture. This is mouthwatering and minerally, the symphony concluding with accents of oyster shell and chalk that echo on the finish. Drink now through 2032.Wine Spectator | 96 WS

2012 taittinger comtes de champagne Champagne

This is a fantastic and refined Blanc de Blancs. So layered and complex, with lemon curd, chalk, hazelnuts, pastries, baked apples and almond croissants. Structured and tightly wound, with almost imperceptible bubbles. Delicious salty notes at the end. Beautiful. Drink or hold.James Suckling | 99 JSThe 2012 Comtes de Champagne is gorgeous. Warm and resonant in the glass, the 2012 Comtes shows all the allure that makes this vintage so appealing. The combination of bright citrus, mineral and floral notes typical of Comtes, enhanced by the soft contours of the vintage, makes for an inviting, open-knit Champagne that is quite showy right out of the gate. Light tropical accents on the finish add an exotic flair. Usually I recommend cellaring just-released Comtes, but that won’t be necessary here.Antonio Galloni | 96 AGThe 2012 Brut Blanc de Blancs Comtes de Champagne is showing beautifully out of the gates, offering up demonstrative aromas of sweet golden orchard fruit, buttery croissants, peach and hazelnuts. Medium to full-bodied, pillowy and enveloping, it’s a rich, textural, vinous Comtes somewhat reminiscent of the brilliant 2002. If it gains in tension and cut (as the 2002 did and as I suspect the 2012 will) with more time on cork, it will make this initial rating seem conservative.Robert Parker Wine Advocate | 95+ RPMade from equal parts Pinot Noir and Chardonnay, this still young Champagne is rich in the Taittinger style, with an elegant poise that is impressive. The wine, with its apricot and ripe apple fruit, is generously tempered by bright acidity and a crisp edge. Drink from 2021.Wine Enthusiast | 95 WERipe blackberry, pastry cream and lemon meringue notes are layered on the fine and creamy mousse in this lightly toasty, well-balanced Champagne. 2012 veuve clicquot la grande dame (yayoi kusama label) Champagne

A generous golden colour betrays the dominance of Pinot Noir in the blend; this theme thereafter maintained by aromatics of fig, wild strawberries and Mirabelle plums; behind that, jasmine, red apples and a distant whiff of woodsmoke. Engaging already, in other words. One’s impressions are confirmed and amplified on the palate, with the aspiration voiced by both chef de caves Dominique and Didier, to allow the ‘cooler’ Pinot Noir sites full rein. This is eloquently evidenced by a subtle and deftly textured structure, the primary fruit notes of nectarine and citrus peel underscored by a richer, still somewhat reticent, core, darker and more savoury of intent and oh, so subtle at the moment. I have every confidence that this characteristic will come into its own over the longer term and mark the 2012 as one of the more successful outings for this outstanding cuvée. Drinking Window 2020 - 2036.Decanter | 96 DECWith a slight preponderance of Pinot Noir in the blend, this wine is rich and impressive. It is still young, with a crisp edge that makes the fruit shine. Apple and citrus flavors are integrated into a mineral vein. Drink from 2022.Wine Enthusiast | 96 WEFine and graceful, this dances across the palate with its bright, well-defined freshness and detailed flavors of Mandarin orange, toast point, crème de cassis and minerally oyster shell. Subtle in its intensity, with all the pieces seamlessly knit into an elegant whole. Disgorged September 2019. Drink now through 2030.Wine Spectator | 95 WSAromas of lime zest, lemon and brioche follow through to a full body with a round, creamy texture, fine bubbles and a delicious finish. Direct and focused 2012. Lots of elegance and energy in this. Drink or hold.James Suckling | 94 JSThe 2012 La Grande Dame is terrific. In fact, it is one of the finest recent Grande Dames I can remember tasting. Vibrant and tense, the 2012 exudes energy. At this stage, the natural richness of the 2012 vintage is hidden behind the wine’s bright, salivating acids. Green apple, pear, mint and white pepper add a brilliant aromatic top register. I would cellar the 2012 for at least a few years, as it is nowhere near ready to drink.Antonio Galloni | 93 AG
