The wine delivers a fine aromatic combination of lemon, apple, limestone soil tones, spring flowers, paraffin and a touch of oak. On the palate the wine is deep, full-bodied and complex, with fine purity of fruit at the core, lovely soil definition and grip, bright, bouncy acids and lovely focus on the long, well-balanced and complex finish. A lifted but guarded sense of lemon zest plays on this wine’s nose, forthright at one moment, restrained the next. The palate channels concentrated but creamy lemon peel, mouthwatering in its frankness but buffered by lovely chalkiness. Lemony limestone freshness rings long after the last sip.Wine Enthusiast | 94 WEThe 2019 Chablis Vau de Vey 1er Cru has an intriguing, melted candle wax and white flower nose, showing touches of apple peel and chalk dust. This seems to grow in complexity in the glass. The palate is well balanced and spicy, with a fine bead of acidity. Orange peel and touches of bitter lemon give way to a slightly oily-textured finish. This is a very engaging Vau de Vey that will be fascinating to see mature in bottle.Vinous Media | 92 VMHere the expressive nose is blessed with more evident Chablis character in the form of iodine, oyster shell and citrus along with ripe pear and apple whiffs. There is fine underlying tension to the impressive dense and stony medium weight flavors that are not especially complex, but the citrus-tined finish is refreshing plus there is enough underlying material to suggest that more depth should develop in time.Burghound | 90 BH

This wine is both taut and generously fruity. The steely edge promises plenty of aging while more tropical flavors of mango and white peach give richness. The wine will age well. Don’t drink before 2023.Wine Enthusiast | 93 WEThe 2019 Chablis Les Fourchaume Vieilles Vignes 1er Cru, a selection that is raised in two demi-muids, has a glorious, vigorous bouquet of black currant leaf, white peach, Japanese yuzu and crushed rock. The taut, fresh palate is very well balanced with a fine bead of acidity and a saline finish. It needs a bit more persistence, but otherwise this has a lot of potential. Another typical lemon and lime colour. Pleasing and perfumed nose with some steel behind, plus something of the grassy character of this vineyard. A lemon infusion to bring up the finish. The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. Very precise and nice mineral undertow. A really fine example, mostly from the Vaillon sector within the wider Vaillon Premier Cru. Drinking Window: 2023 - 2028Decanter | 93 DEC

Subtly smoky and thrilling in minerality, this pure-fruited, lemon-scented Chablis highlights white peach and lime flavors etched by limestone and chalk. Despite a hot vintage, it’s a classic, cooling expression of Mont de Milieu vinified entirely in stainless steel. It’s at peak from 2023 to 2035 but the wine should hold longer still.Wine Enthusiast | 95 WEThe 2019 Chablis Mont de Milieu 1er Cru has a clean, Alpine-scented bouquet that displays fine mineralité and tension. In the mouth, it’s fresh, vibrant and quite spicy on the midpalate, leading into an engaging, intense finish. This is a superb Mont de Milieu that should age with style. A Chablis with pedigree.Vinous Media | 93 VMMore depth and resolve on the nose here, with a deeper hue in the glass and some intriguing spice and woody notes on the palate. Good concentration with some refreshing citric acidity to finish. This shows the combination of ripeness and stony minerality which makes Mont de Milieu one of the leading Premier Crus. The 2021 Chablis Les Clos Grand Cru comes from 2.5-hectares from parcels located from the bottom to the top of the slope, 20% fermented in new oak and aged entirely in wood. It has quite a powerful bouquet; although, I think it would have been a little more sharp with some proportion raised in stainless steel. The palate is well balanced with good weight, a subtle nuttiness on the entry, notes of orange rind and citrus peel; the 2021 is quite linear on the finish and lingers nicely in the mouth. I think this will gain complexity by the time it is bottled next year.Vinous Media | 91-93 VM

A cool and airy nose is less exotic than it usually is though there is a trace of it on the ripe white and yellow fruit suffused aromas. Once again there is both good density and power to the medium weight flavors that also possess an abundance of sappy dry extract along with plenty of salinity on the moderately structured, complex and sneaky lengthy finish.Burghound | 92 BH

(Chablis Montmains 1er Cru, Domaine William Fèvre, White) From all three sections of the vineyard as usual. Racy lemon colour. Pure crystalline nose, very little reduction, very classical left bank Chablis, very intense but neither heavy nor exotic. The kimmeridgian is speaking underneath a graceful layer of flesh. Fruit and stones both keep coming back at the finish.Jasper Morris | 92-95A wine from a selection of sites over 3.9ha in Butteaux, Forêts and Montmains. Butteaux is very cold and mineral, while Forêts is elegant and floral. Great precision and focus here, allied with crystalline citrus fruits on the palate. Shows density, but is also very fresh, with lovely mineral characters on the finish. A highly successful Montmains.Decanter | 93 DECHere too the nose is elegant, pure and layered but with more floral and spice nuances adding breadth to the cooler and more restrained aromas. There is both excellent intensity and density to the mineral-driven flavors that terminate in a bone-dry, sneaky long and balanced finale. This too is really very good.Burghound | 91-93 BHConsisting of roughly equal parts Montmains, Butteaux and Forêts (the three sous-climats of Montmains), the 2020 Chablis 1er Cru Montmains offers up aromas of crisp green apple, white flowers, bee pollen and oyster shell. The nose is pure and bright, offering up scents of apple, tart orange, wet stone minerality, citrus peel, dried flowers and a nice shading of oyster shell. On the palate the wine is pure, full-bodied and racy in personality, with fine focus and grip, a lovely core and a long, minerally and beautifully balanced finish. A lovely example. (Drink between 2026 - 2055)John Gilman | 92+ JGThe 2020 Chablis Montmains 1er Cru comes from 3.8 hectares of vines over 12 parcels and offers pressed white flower scents and a touch of crushed rock. The 2020 Chablis Mont de Milieu 1er Cru has a more powerful bouquet than its peers with scents of orange blossom, Nashi pear and an underlying gunflint note trying to surface. The palate is well balanced with orange rind and a touch of peach skin on the entry. Very poised and harmonious with impressive volume, I admire its tension and persistence on the saline finish. The 2019 Chablis Vaillons 1er Cru has a less flamboyant bouquet than its peers. This feels more reserved and flinty, though very nicely defined and focused. The palate is well balanced, with the weight and density I look for in a Vaillon, and a little spicier than the Vosgros. A touch of lemongrass and a hint of green olive appear toward the finish. The 2020 Chablis Vaillons 1er Cru has a flinty, focused, energetic nose that feels more harmonious than the preceding Côte de Léchet. The palate is taut, fresh and saline in the mouth, showing great depth and concentration toward the finish. The sleek, intense and attractively textured medium-weight flavors possess a bracing salinity on the agreeably dry, chiseled and well-focused finale that is just a bit firmer. Ripe green fruit aromas are laced with hints of spice, wood and oyster shell. There is excellent volume and mid-palate density to the tension-filled big-bodied flavors that evident a taut muscularity on the balanced, long, compact and lemony finale. The one-hectare parcel that constitutes the 2021 Chablis Valmur Grand Cru yielded five barrels this year. This also has a heavy reduction and is quite yeasty at the moment. The palate is well balanced with a marine-influenced entry, flecks of white chocolate complementing the citrus fruit with a longer finish than the Blanchot. Fine sour lemon mixed with orange rind on the aftertaste. Excellent.Vinous Media | 92-94 VM

The 2020 Chablis 1er Cru Butteaux Vieilles Vignes will be bottled later than usual, as Michel was still waiting on the delivery of glass bottles when I visited—but extra time on the fine lees certainly won’t do it any harm. Exhibiting aromas of pear, white flowers, freshly baked bread, confit citrus and iodine, it’s medium to full-bodied, satiny and layered, with terrific depth and tension. It builds nicely in the glass. The palate is well-balanced with a fine thread of acidity, compact on the entry yet it fans out nicely whilst retaining admirable tension from start to finish. I would have just liked a little more residual spiciness, but this will do nicely. Tasted blind at the BIVB tasting in Chablis.Vinous Media | 93 VMDiscreet though certainly perceptible wood sets off the ripe aromas of citrus confit, spring flowers, iodine and shellfish. The mouthfeel of the medium weight plus flavors is nothing short of gorgeous as it’s at once caressing but punchy on the sappy and strikingly long finish. This too would benefit from having better depth, but the density of material is such that more will almost certainly develop if allowed a few years first.Burghound | 93 BH

Droin’s vines have an average age of 50 years with 1.75ha on Kimmeridgian marl with some blue-clay (Marne-bleu). As expected from Montée de Tonnerre, this has more power on the palate but also displays a remarkable balance between weight and elegance - ’complet’ as Benoit Droin says. It would be a shame to drink this before 2-3 years and it will keep a very long time. Finishes with a vibrant hit spicy zesty fruit.Decanter | 95 DECThe 2021 Chablis Montée de Tonnerre 1er Cru has perhaps the most austere bouquet amongst Droin’s Premier Crus, though it is very defined with subtle struck flint notes coming through. The palate is very well balanced with a fine bead of acidity, taut and fresh, superb acidity with real weight and concentration on the finish. Another superb wine from Droin this year.Vinous Media | 92-94 VMModerately generous wood stops short of fighting with the ripe white orchard fruit, wet stone and spice that also display just enough Chablis typicity to be interesting. A highly sophisticated mouthfeel suffuses the solidly dense middleweight flavors where an almost pungent minerality adds a sense of lift to the attractively dry and sneaky long finale.
