Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

Purchased grapes, picked on 28th August. Mid lemon yellow, clearly a riper bouquet, slightly pungent even, the reduction showing less strongly gunflint, a bit more vegetal maybe. Good flesh on the bones, and I like the way this follows through. Some pears. Not really in place but I suspect may have greater potential than today’s showing. The 2020 Meursault Blagny 1er Cru has a lively Alpine-fresh bouquet with lemon verbena, fern and touches of yellow plum. Very vivacious and nicely delineated. The palate is well-defined with good weight, not complex perhaps, though there is satisfying density towards the finish with veins of shaved almonds and stem ginger, the latter lingering on the aftertaste. 2019 Pernot Belicard Puligny Montrachet Premier Cru Champs Canet

A holding of 0.22ha planted in 2004, next to Sauzet, Carillon and Latour-Giraud. This is a very early site, usually where the harvest starts chez Pernot-Belicard. Pale primrose, light toast, one third new wood, giving a crisp edge to the rich white fruit. Plenty of weight here, a little on the powerful side, but long and satisfying. The domaine purchased 0.19ha in 2011 without knowing the vine age, though probably around 40 years old. Paler colour and quite light on the nose, lightly biscuity, then the palate delivers a greater weight of white fruit with a little cream. One third new wood, only a little warmth at the back. The oak shows much less here, and the fruit builds quite attractively towards the back of the palate. Some fresh but ripe citrus notes nicely integrated. Persistent. 2019 domaine rene et vincent dauvissat chablis premier cru sechet Burgundy White

The 2019 Chablis 1er Cru Séchet opens in the glass with scents of citrus oil, white flowers, beeswax, oyster shell, wet chalk and mandarin. Medium to full-bodied, satiny and strikingly intense, it’s taut and chiseled, with tangy acids and huge reserves of concentration, concluding with a pungently chalky finish. As I’ve written before, Séchet—where Dauvissat owns a 0.8-hectare parcel—is located in the Vaillons Valley, but its windier situation and soils richer in active limestone mean it’s typically more tensile and incisive than the other climats that make up Vaillons. Technically retired but very much a continuing presence at his eponymous domaine, Vincent Dauvissat—who forsook a career as a shepherd to become one of France’s most celebrated vignerons—couldn’t disguise his satisfaction as we tasted his recently bottled 2019 portfolio. After some discussion, we settled on the 1989 vintage ("but tighter and more incisive") as a possible analogy for 2019’s hyper-concentrated, ripe, but all the while classically Chablisien style. In any case, they’re some of the wines of the vintage and are well worth seeking out. Readers will remember that farming here is organic but without certification. The harvest is by hand, and the wines ferment in tank before racking to barrel with the lees (Raveneau’s Chablis, by contrast, are racked to barrel more or less without their lees), spending a second winter in wood before bottling. A first bottling, destined for the American market. | 94 RP The 2019 Chablis Séchets 1er Cru has an elegant and more floral bouquet compared to Vincent Dauvissat’s other 2019s, beautifully defined and offering baked apple, pear and white flower scents. The palate is well balanced with a spicy opening, plus hints of stem ginger and walnut. Quite tensile and full on the finish. Good potential here.Vinous Media | 91-93 VMA markedly citrusy and noticeably cooler nose combines notes of mineral reduction with those of pear and apple confit. There is again very good volume and mid-palate density on the seductively textured medium-bodied flavors that are also quite dry on the balanced finale. This is a powerful Séchet that is even more robust and one that will need to add depth with age, but it should do just that if given a chance.Burghound | 92 BH

The 2019 Saint-Aubin Les Murgers des Dents de Chien 1er Cru has more delineation and mineralité compared to the Les Perrières, more terroir expression in situ. The palate is very well balanced with a fine bead of acidity, tropical tones such as passion fruit and mango, counterbalanced by a spicy/ginger tinged finish. It does not quite kick on as I might have hoped, yet there is still a lot of potential here. The 2017 Chablis Mont de Milieu 1er Cru has more mineralité on the nose compared directly to the Sécher, attractive orange blossom and canned apricot scents emerging with time. The palate is well balanced with a tang of ginger on the entry, showing impressive weight and a taut, linear, quite persistent finish. This is excellent, fulfilling the potential it showed back in June.Vinous Media | 92 VMBeautiful aromas of wet stones and limes, as well as grapefruit. The palate has a very succulent and attractive feel with lithe and linear acidity as a feature. Drink or hold.James Suckling | 92 JSAs usual, the 2017 Chablis 1er Cru Mont de Milieu is the most blocky and broad-shouldered of the domaine’s premiers crus, revealing notes of smoky citrus oil, white flowers and oyster shell, followed by a medium to full-bodied, powerful palate that’s still youthfully firm, balanced by tangy acids and concluding with a distinctly saline finish.Robert Parker Wine Advocate | 91+ RP(Maison Joseph Drouhin Chablis "Mont de Milieu" 1er Cru White) A distinct whiff of the exotic can be found on the layered and riper nose that combines notes of apricot, white peach, lychee and hint of tidal pool. Once again there is plenty of citrus influence to the bigger and richer medium-bodied flavors that possess good muscle and punch, all wrapped in an impressively powerful, long and serious finale. This youthfully austere effort is clearly built-to-age and is going to need at least some forbearance. (Drink starting 2025)Burghound | 91 BH(Chablis “Mont de Milieu”- Domaine Drouhin Vaudon) Mont de Milieu is on the Right Bank in Chablis and this sector was far more severely hit by the late April frosts than was the case across the Yonne, so yields here are decidedly lower than was the case with the estate’s Sécher, Montmains or Vaillons. The wine is more forward out of the blocks in 2017 than the Sécher, offering up a precise and inviting bouquet of lemon, green apple, limestone soil tones, spring flowers and a topnote of beeswax. On the palate the wine is pure, full-bodied and very elegant in profile, with a bright, but easy-going structural chassis, fine mid-palate depth and a long, bouncy and complex finish. This is already very tasty, but seems to have the balance to age quite well, despite not being particularly steely in terms of acidity. (Drink between 2018-2040)John Gilman | 91 JGA lift of citrus on the nose of this wine immediately sets a bright, fresh accent. The palate comes in with ripe, fresh Mirabelle abundance that enjoys the definition and texture reminiscent of white citrus pith. This wine focuses on fruit but manages to stay toned and defined. A rich style, this white features lemon, peach and spice flavors, all backed by bright acidity. Balanced, leaving a chalky, even tannic impression on the long finish. Quite a tannic white Burgundy, but with richness that has a very positive impact on the wine. Plenty of citrus, plus some hazelnut and chalky character. Some real drive at the finish that promises a long life. The oak is a little more clamorous here and needs more time to integrate, but this is tauter and crunchier with a little less in terms of mid-palate weight. Drinking Window 2020 - 2024.Decanter | 92 DEC(Domaine du Pavillon (Pommard) - Domaines Albert Bichot Beaune "Clos des Mouches" 1er Cru White) An overtly floral nose offers up notes of pearl, apple and citrus where the latter can also be found on the round, delicious and once again generously proportioned medium-bodied flavors that deliver perfectly good if not truly distinguished depth though I do like the length. The Clos des Mouches made by Joseph Drouhin may be more famous, but Bichot’s parcel of 0.7ha, situated in the highest part of the Premier Cru, is pretty impressive in its own right. Bright, focused and chiselled, it’s the sort of white that wouldn’t look out of place in Puligny-Montrachet, combining citrus, wet stone and aniseed flavours.Drinking Window 2021 - 2028Decanter | 94 DECA creamy-textured white with sliced apples, pears, cream and some lemon and lime rind. Hints of morning yogurt and smoke. Medium-bodied, ready and delicious. Drink now or hold.James Suckling | 92 JSCream and roasted hazelnut notes create an inviting, rounded nose on this wine. The palate has that same hazelnut richness and creamy flow, buttressed by freshness that recalls lemon and yellow pear. A lovely balance and a juicy, fresh finish do justice to the warm 2018 vintage. Drink by 2035.Wine Enthusiast | 92 WE(Domaine du Pavillon (Pommard) - Domaines Albert Bichot Beaune "Clos des Mouches" 1er Cru White) An overtly floral nose combines notes of various white-fleshed fruit with those of lemon grass and spice wisps. The sleek, delicious and equally seductively textured medium-bodied flavors possess very good depth and sneaky length. This balanced effort should drink well young as well as with a few years of bottle aging. The 2019 Beaune Clos des Mouches 1er Cru Blanc has a vibrant, energetic bouquet, the citrus fruit, mango and white chocolate scents bursting from the glass. The palate is well balanced with a smooth, viscous opening. Good concentration here, and very long and sustained. This represents one of the best whites from Bichot this vintage. Vinous Media | 90-92 VMFrom a 0.75ha plot at the top of the slope, in the Clos des Mouches, where Bichot owns some vines that give a wine of winning concentration. There is pleasantly ripe apricot and pear fruit, with a broad feel on the palate. Regal in stature, perhaps lacking a bit of acidity, although many will enjoy its rich character. Drinking Window 2024 - 2039.Decanter | 92 DECBetter known for its red wines, this premier cru vineyard also has a plot of Chardonnay. Ripe with yellow fruits and toastiness, this wine has a full-bodied character, juggling crisp acidity with generous fruitiness and texture. Drink the wine from 2022.Wine Enthusiast | 92 WE

(Domaine Vincent Dauvissat Chablis "Montée de Tonnerre" 1er Cru White) A vague hint of the exotic is present on the wonderfully elegant lemony white orchard fruit scented nose that reflects additional notes of mineral reduction and oyster shell. The notably finer medium-bodied flavors possess excellent punch on the mineral-driven and chiseled finish that goes on and on. This is lovely and while it too will need better depth, the aging curve is sufficiently promising that I am optimistic that more complexity will develop over the next decade. In a word, terrific. (Drink starting 2027)Burghound | 94 BHThe 2019 Chablis 1er Cru Montée de Tonnerre is the sixth vintage that Dauvissat has produced of this climat, and he observes that it's one of the few parcels he exploits that isn't planted with the family's proprietary massale selections. Exhibiting notions of citrus oil, fresh bread, iodine and warm pastry, it's medium to full-bodied, ample and lively, with fine tension at the core and a long, mineral finish. It has a refined, very classic Chablis nose with wet pavement and light nutty aromas that remain discreetly in the background. The palate is slightly honeyed on the entry, spiced with touches of stem ginger, and delivers good depth, leading into an edgy, saline, powerful finish. 2021 domaine william fevre chablis premier cru vaillons Burgundy White

The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. Subtly smoky and thrilling in minerality, this pure-fruited, lemon-scented Chablis highlights white peach and lime flavors etched by limestone and chalk. Despite a hot vintage, it’s a classic, cooling expression of Mont de Milieu vinified entirely in stainless steel.
