Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

The 2021 Chablis Les Clos Grand Cru comes from 2.5-hectares from parcels located from the bottom to the top of the slope, 20% fermented in new oak and aged entirely in wood. It has quite a powerful bouquet; although, I think it would have been a little more sharp with some proportion raised in stainless steel. The palate is well balanced with good weight, a subtle nuttiness on the entry, notes of orange rind and citrus peel; the 2021 is quite linear on the finish and lingers nicely in the mouth. With close to 6.5 acres in this grand cru, Arnaud Lavantureux treats most of this wine to barrel fermentation, then aging in used oak barrels; a small portion rests in new oak. The barrel time has amped up the wine’s power, its viscosity and smoky scents. But it never goes dark, sustaining a stark contrast of white on white. Complex, feather-light in the end, it keeps coming after you with detail, the way wildflower honey might, only this is completely dry.Wine & Spirits Magazine | 94 W&S

The 2019 Chablis 1er Cru Séchet opens in the glass with scents of citrus oil, white flowers, beeswax, oyster shell, wet chalk and mandarin. Medium to full-bodied, satiny and strikingly intense, it’s taut and chiseled, with tangy acids and huge reserves of concentration, concluding with a pungently chalky finish. As I’ve written before, Séchet—where Dauvissat owns a 0.8-hectare parcel—is located in the Vaillons Valley, but its windier situation and soils richer in active limestone mean it’s typically more tensile and incisive than the other climats that make up Vaillons. Technically retired but very much a continuing presence at his eponymous domaine, Vincent Dauvissat—who forsook a career as a shepherd to become one of France’s most celebrated vignerons—couldn’t disguise his satisfaction as we tasted his recently bottled 2019 portfolio. After some discussion, we settled on the 1989 vintage ("but tighter and more incisive") as a possible analogy for 2019’s hyper-concentrated, ripe, but all the while classically Chablisien style. In any case, they’re some of the wines of the vintage and are well worth seeking out. Readers will remember that farming here is organic but without certification. The harvest is by hand, and the wines ferment in tank before racking to barrel with the lees (Raveneau’s Chablis, by contrast, are racked to barrel more or less without their lees), spending a second winter in wood before bottling. A first bottling, destined for the American market. | 94 RP The 2019 Chablis Séchets 1er Cru has an elegant and more floral bouquet compared to Vincent Dauvissat’s other 2019s, beautifully defined and offering baked apple, pear and white flower scents. The palate is well balanced with a spicy opening, plus hints of stem ginger and walnut. Quite tensile and full on the finish. Good potential here.Vinous Media | 91-93 VMA markedly citrusy and noticeably cooler nose combines notes of mineral reduction with those of pear and apple confit. There is again very good volume and mid-palate density on the seductively textured medium-bodied flavors that are also quite dry on the balanced finale. This is a powerful Séchet that is even more robust and one that will need to add depth with age, but it should do just that if given a chance.Burghound | 92 BH

The 2019 Chablis 1er Cru Butteaux Vieilles Vignes is excellent, mingling aromas of pear, citrus oil and warm bread with hints of iodine. Bottled later than the younger-vine cuvée of Butteaux, it’s medium to full-bodied, layered and concentrated, with racy acids and chalky grip.Robert Parker Wine Advocate | 93+ RPLike the regular cuvée, this too flirts with volatile acidity though it is admittedly extremely subtle on the nose of essence of pear, quinine and lemon-lime scents. The 2017 Chablis Mont de Milieu 1er Cru has more mineralité on the nose compared directly to the Sécher, attractive orange blossom and canned apricot scents emerging with time. The palate is well balanced with a tang of ginger on the entry, showing impressive weight and a taut, linear, quite persistent finish. This is excellent, fulfilling the potential it showed back in June.Vinous Media | 92 VMBeautiful aromas of wet stones and limes, as well as grapefruit. The palate has a very succulent and attractive feel with lithe and linear acidity as a feature. Once again there is plenty of citrus influence to the bigger and richer medium-bodied flavors that possess good muscle and punch, all wrapped in an impressively powerful, long and serious finale. This youthfully austere effort is clearly built-to-age and is going to need at least some forbearance. (Drink starting 2025)Burghound | 91 BH(Chablis “Mont de Milieu”- Domaine Drouhin Vaudon) Mont de Milieu is on the Right Bank in Chablis and this sector was far more severely hit by the late April frosts than was the case across the Yonne, so yields here are decidedly lower than was the case with the estate’s Sécher, Montmains or Vaillons. The wine is more forward out of the blocks in 2017 than the Sécher, offering up a precise and inviting bouquet of lemon, green apple, limestone soil tones, spring flowers and a topnote of beeswax. On the palate the wine is pure, full-bodied and very elegant in profile, with a bright, but easy-going structural chassis, fine mid-palate depth and a long, bouncy and complex finish. This is already very tasty, but seems to have the balance to age quite well, despite not being particularly steely in terms of acidity. (Drink between 2018-2040)John Gilman | 91 JGA lift of citrus on the nose of this wine immediately sets a bright, fresh accent. The palate comes in with ripe, fresh Mirabelle abundance that enjoys the definition and texture reminiscent of white citrus pith. This wine focuses on fruit but manages to stay toned and defined. (Domaine Vincent Dauvissat Chablis "Montée de Tonnerre" 1er Cru White) A vague hint of the exotic is present on the wonderfully elegant lemony white orchard fruit scented nose that reflects additional notes of mineral reduction and oyster shell. The notably finer medium-bodied flavors possess excellent punch on the mineral-driven and chiseled finish that goes on and on. This is lovely and while it too will need better depth, the aging curve is sufficiently promising that I am optimistic that more complexity will develop over the next decade. In a word, terrific. (Drink starting 2027)Burghound | 94 BHThe 2019 Chablis 1er Cru Montée de Tonnerre is the sixth vintage that Dauvissat has produced of this climat, and he observes that it's one of the few parcels he exploits that isn't planted with the family's proprietary massale selections. Exhibiting notions of citrus oil, fresh bread, iodine and warm pastry, it's medium to full-bodied, ample and lively, with fine tension at the core and a long, mineral finish. It has a refined, very classic Chablis nose with wet pavement and light nutty aromas that remain discreetly in the background. 2021 domaine william fevre chablis grand cru les clos Burgundy White

Given all of the fireworks in this tasting from the Montée de Tonnerre upwards, I was wondering if the 2021 les Clos could somehow acquit itself impeccably, given how stunning the lineup had been up until this point. It does not disappoint! The aromatic constellation here is complex and precise, offering up scents of green apple, lime, grapefruit, flinty minerality, citrus peel, dried flowers and gentle smokiness in the upper register. On the palate the wine is beautifully complex, well balanced and poised, with a full-bodied format, great depth at the core, brisk acids and laser-like focus on the long and stunning finish. John Gilman | 96 JGThe 2021 Chablis Les Clos Grand Cru comes from 4.1 hectares mainly located on the upper sector of the Grand Cru, the vines planted in the postwar period by Maurice Fèvre, the father of William Fèvre. It has a powerful bouquet with hints of white flower permeating the citrus fruit and apple blossom aromas. The palate has wonderful salinity on the entry, a fine bead of acidity, citrus-fresh with clementine, hints of peach and a twist of bitter lemon that keeps the finish on its tippy-toes. 2021 domaine william fevre chablis premier cru vaillons Burgundy White

The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. Pure crystalline nose, very little reduction, very classical left bank Chablis, very intense but neither heavy nor exotic. The kimmeridgian is speaking underneath a graceful layer of flesh.
