Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. Produced from 2.5 ha of domaine vines around the village of Beaune, notably the young vines of the Clos des Mouches, along with some purchased must. The grapes are pressed gently as whole clusters, lightly settled and fermented in cask (20% new). The wine has a lovely, buttery nose, with a ripe apple fruit and rich, nutty aromas that develop with time. Drinkable now, this will definitely continue to improve. 2021 domaine william fevre chablis premier cru vaillons Burgundy White

The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. The 2021 Chablis Les Clos Grand Cru comes from 2.5-hectares from parcels located from the bottom to the top of the slope, 20% fermented in new oak and aged entirely in wood. It has quite a powerful bouquet; although, I think it would have been a little more sharp with some proportion raised in stainless steel. The palate is well balanced with good weight, a subtle nuttiness on the entry, notes of orange rind and citrus peel; the 2021 is quite linear on the finish and lingers nicely in the mouth. Produced from vines planted in 1920 in an east/southeast-facing premier cru, de Suremain’s finest white is the 2017 Rully 1er Cru Pillot L’intemporelle, a striking wine that offers up attractive aromas of confit citrus, crisp green orchard fruit and almond paste. (Chablis Montmains 1er Cru, Domaine William Fèvre, White) From all three sections of the vineyard as usual. Racy lemon colour. Pure crystalline nose, very little reduction, very classical left bank Chablis, very intense but neither heavy nor exotic. The kimmeridgian is speaking underneath a graceful layer of flesh. Fruit and stones both keep coming back at the finish.Jasper Morris | 92-95A wine from a selection of sites over 3.9ha in Butteaux, Forêts and Montmains. Butteaux is very cold and mineral, while Forêts is elegant and floral. Great precision and focus here, allied with crystalline citrus fruits on the palate. The 2021 Chardonnay Sta. Rita Hills is the first vintage of Chardonnay from Donnachadh. It was barrel fermented and matured for around 10 months. Its aromas combine bright herbal, green apple and pear tones with underlying savory hints. The light-bodied palate is bright and fresh, yet offers a touch of anchoring creaminess that draws out the finish. The 2020 Chablis Blanchot Grand Cru is aged 75% in stainless steel and 25% in oak for nine months, followed by five months all in stainless steel. It has a relatively light bouquet, quite airy in style, gaining intensity with aeration, touches of white peach, smoke and granite. The palate is well balanced with a fine line of acidity, citrus fruit, orange rind and a touch of stem ginger towards the finish that fans out nicely. This meliorates with aeration and is worth decanting if you decide to crack open a bottle in its youth. Offers a rich and supple texture, making this almost seamless from start to the finish, where a stony element emerges. The 2021 Chablis Les Clos Grand Cru was taken from tank rather than barrel. This was primal on the nose and difficult to read. The palate is more expressive: finely tuned with a fine bead of acidity, tensile and saline, it does not possess the complexity of Raveneau’s Les Clos tasted an hour or two before, but it has great penetration and a compelling flinty finish. More interesting are the sleek, intense and ultra-fresh middleweight plus flavors that possess excellent size, richness and power where the latter suffuses the sappy, muscular and saliva-inducing, moderately dry and compact finale. Droin’s Montmains site is on a gentle slope with richer, deeper, kimmeridgian marl soils. A colder site, making the wine richer and with great density on the palate. Distinctly more weight than the Vaillons, giving the blend plenty of gravitas. 8-10 months ageing on fine lees adds a creamy character with acidity less pronounced than with the Vaillons. The palate impression of the middleweight flavors is also plump, round and fleshy with its reasonably persistent, dry and balanced finale that also could use better depth. Jazz hands at the ready, the Kumeu River Chardonnay Coddington is always ready to welcome you in with its full, svelte figure and no hard edges, and the 2021 is no different. There’s a sense of feel, a sense of wanting to chew on the finish. The 2020 Chevalier-Montrachet Grand Cru, one barrel that is an exchange with another producer, had not been racked unlike the other cuvées. The palate is vibrant on the entry with a judicious touch of sour lemon combining nicely with the subtle white peach and ginger elements, the finish quite spicy and persistent. A holding of 0.22ha planted in 2004, next to Sauzet, Carillon and Latour-Giraud. This is a very early site, usually where the harvest starts chez Pernot-Belicard. Pale primrose, light toast, one third new wood, giving a crisp edge to the rich white fruit. Plenty of weight here, a little on the powerful side, but long and satisfying. 2020 roland lavantureux chablis grand cru vaudesir Burgundy White

With close to 6.5 acres in this grand cru, Arnaud Lavantureux treats most of this wine to barrel fermentation, then aging in used oak barrels; a small portion rests in new oak. The barrel time has amped up the wine’s power, its viscosity and smoky scents. But it never goes dark, sustaining a stark contrast of white on white.
