Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

The 2019 Saint-Aubin Les Murgers des Dents de Chien 1er Cru has more delineation and mineralité compared to the Les Perrières, more terroir expression in situ. The palate is very well balanced with a fine bead of acidity, tropical tones such as passion fruit and mango, counterbalanced by a spicy/ginger tinged finish. It does not quite kick on as I might have hoped, yet there is still a lot of potential here. The 2019 Beaune Clos des Mouches 1er Cru Blanc has a vibrant, energetic bouquet, the citrus fruit, mango and white chocolate scents bursting from the glass. The palate is well balanced with a smooth, viscous opening. Good concentration here, and very long and sustained. This represents one of the best whites from Bichot this vintage. Vinous Media | 90-92 VMFrom a 0.75ha plot at the top of the slope, in the Clos des Mouches, where Bichot owns some vines that give a wine of winning concentration. There is pleasantly ripe apricot and pear fruit, with a broad feel on the palate. Regal in stature, perhaps lacking a bit of acidity, although many will enjoy its rich character. Drinking Window 2024 - 2039.Decanter | 92 DECBetter known for its red wines, this premier cru vineyard also has a plot of Chardonnay. (Domaine Vincent Dauvissat Chablis "Montée de Tonnerre" 1er Cru White) A vague hint of the exotic is present on the wonderfully elegant lemony white orchard fruit scented nose that reflects additional notes of mineral reduction and oyster shell. The notably finer medium-bodied flavors possess excellent punch on the mineral-driven and chiseled finish that goes on and on. This is lovely and while it too will need better depth, the aging curve is sufficiently promising that I am optimistic that more complexity will develop over the next decade. In a word, terrific. (Drink starting 2027)Burghound | 94 BHThe 2019 Chablis 1er Cru Montée de Tonnerre is the sixth vintage that Dauvissat has produced of this climat, and he observes that it's one of the few parcels he exploits that isn't planted with the family's proprietary massale selections. Exhibiting notions of citrus oil, fresh bread, iodine and warm pastry, it's medium to full-bodied, ample and lively, with fine tension at the core and a long, mineral finish. Produced from 2.5 ha of domaine vines around the village of Beaune, notably the young vines of the Clos des Mouches, along with some purchased must. The grapes are pressed gently as whole clusters, lightly settled and fermented in cask (20% new). The wine has a lovely, buttery nose, with a ripe apple fruit and rich, nutty aromas that develop with time. Drinkable now, this will definitely continue to improve. 2021 domaine william fevre chablis premier cru vaillons Burgundy White

The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. Subtly smoky and thrilling in minerality, this pure-fruited, lemon-scented Chablis highlights white peach and lime flavors etched by limestone and chalk. Despite a hot vintage, it’s a classic, cooling expression of Mont de Milieu vinified entirely in stainless steel. The 2021 Chablis Les Clos Grand Cru comes from 2.5-hectares from parcels located from the bottom to the top of the slope, 20% fermented in new oak and aged entirely in wood. It has quite a powerful bouquet; although, I think it would have been a little more sharp with some proportion raised in stainless steel. The palate is well balanced with good weight, a subtle nuttiness on the entry, notes of orange rind and citrus peel; the 2021 is quite linear on the finish and lingers nicely in the mouth. A holding of 0.22ha planted in 2004, next to Sauzet, Carillon and Latour-Giraud. This is a very early site, usually where the harvest starts chez Pernot-Belicard. Pale primrose, light toast, one third new wood, giving a crisp edge to the rich white fruit. Plenty of weight here, a little on the powerful side, but long and satisfying. A more floral-suffused nose features very bright and fresh aromas of Granny Smith apples, essence of pear and a variety of citrus influences. There is again excellent volume and richness along with even more apparent minerality on the complex and beautifully persistent finale that flashes focused power. The palate is well balanced and shows more gumption, fine acidity with a touch of ginger, well-defined with red apple, nectarine and orange pith on the finish. (Chablis Montmains 1er Cru, Domaine William Fèvre, White) From all three sections of the vineyard as usual. Racy lemon colour. Pure crystalline nose, very little reduction, very classical left bank Chablis, very intense but neither heavy nor exotic. The kimmeridgian is speaking underneath a graceful layer of flesh. Fruit and stones both keep coming back at the finish.Jasper Morris | 92-95A wine from a selection of sites over 3.9ha in Butteaux, Forêts and Montmains. Butteaux is very cold and mineral, while Forêts is elegant and floral. Great precision and focus here, allied with crystalline citrus fruits on the palate. Shows density, but is also very fresh, with lovely mineral characters on the finish. A highly successful Montmains.Decanter | 93 DECHere too the nose is elegant, pure and layered but with more floral and spice nuances adding breadth to the cooler and more restrained aromas. There is both excellent intensity and density to the mineral-driven flavors that terminate in a bone-dry, sneaky long and balanced finale. The 2021 Chardonnay Sta. Rita Hills is the first vintage of Chardonnay from Donnachadh. It was barrel fermented and matured for around 10 months. Its aromas combine bright herbal, green apple and pear tones with underlying savory hints. The light-bodied palate is bright and fresh, yet offers a touch of anchoring creaminess that draws out the finish. The one-hectare parcel that constitutes the 2021 Chablis Valmur Grand Cru yielded five barrels this year. This also has a heavy reduction and is quite yeasty at the moment. The palate is well balanced with a marine-influenced entry, flecks of white chocolate complementing the citrus fruit with a longer finish than the Blanchot. The 2020 Chablis 1er Cru Butteaux Vieilles Vignes will be bottled later than usual, as Michel was still waiting on the delivery of glass bottles when I visited—but extra time on the fine lees certainly won’t do it any harm. Exhibiting aromas of pear, white flowers, freshly baked bread, confit citrus and iodine, it’s medium to full-bodied, satiny and layered, with terrific depth and tension. A holding of 0.53ha planted in 1955, vinified and aged with one third new wood. Pale primrose with quite a stylish bouquet, more fruit than floral, definitely encouraging a second sniff. There is an attractive lime blossom note, without the higher alcohol feel of the vintage (though still around 13.8%), sitting back with quality reserve. Long and quite impressive.
