Chardonnay isn’t just the most popular white wine in the world – it’s angelic. Anyone with a developed taste for fine wine would struggle to maintain composure after tasting some of the stronger vintages of this masterpiece. Aside from France and the United States, you can expect to encounter bottles from Australia, New Zealand, South Africa, Argentina, Italy, Chile, and quite a few others. Every region that produces quality Chardonnay tends to add their own spin to it by including a lot of delicious fruits and changing up their techniques. It’s the perfect drink for experimentation, so why not conduct some research yourself?

You can expect your bottle of Chardonnay to include tastes such as sugary banana, a lush and juicy peach that just explodes in your mouth, robust and tropical pineapple (great for fighting off summer heat), the tried-and-true apple that adds some zest to the combination, or citrus combinations to give your drink that extra edge. If you play your cards right, the taste will always be different, and the texture never stays exactly the same, either. As a result, Chardonnay rewards repeat samplings, and that’s exactly what will be on your mind after you get so much as a whiff of this wine. It may go under different names (usually taking the name of a region, like Burgundy), but the experience is authentic and unique, so even inexperienced wine-lovers will realize what it is within a sip or two.

2021 domaine william fevre chablis premier cru vaillons Burgundy White

The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. Exhibiting aromas of pear, white flowers, freshly baked bread, confit citrus and iodine, it’s medium to full-bodied, satiny and layered, with terrific depth and tension. Seguier notes that Pied d’Aloup has the highest marn content, Montée de Tonnerre adds weight and the old Chapelot vines (planted in 1936) add finesse. More closed on the nose. Weighty, concentrated, persistent. Saline notes. Will be a great gourmand wine. Some white flower notes, lots of zesty orange and grapefruit on the palate with a nice touch of white peach. The palate is well balanced with fine acidity, harmonious with commendable weight matched with a countervailing saline element. Droin’s vines have an average age of 50 years with 1.75ha on Kimmeridgian marl with some blue-clay (Marne-bleu). As expected from Montée de Tonnerre, this has more power on the palate but also displays a remarkable balance between weight and elegance - ’complet’ as Benoit Droin says. It would be a shame to drink this before 2-3 years and it will keep a very long time. Droin’s Montmains site is on a gentle slope with richer, deeper, kimmeridgian marl soils. A colder site, making the wine richer and with great density on the palate. Distinctly more weight than the Vaillons, giving the blend plenty of gravitas. 8-10 months ageing on fine lees adds a creamy character with acidity less pronounced than with the Vaillons. Classy.Decanter | 92 DECAn even more floral-suffused nose speaks of the pretty essence of pear and apple while offering better overall typicity. The palate impression of the middleweight flavors is also plump, round and fleshy with its reasonably persistent, dry and balanced finale that also could use better depth. A very classy premier cru, this will need several years to fully blossom.Decanter | 92 DECLike the Petit Chablis, moderate amounts of classic Chablis typicity are present on the lemon rind, white orchard fruit and petrol-scented nose. Droin’s Fourchaume is located in the Vaupulent sector, on deep, clay-rich soils. A warmer site, this is a;ready very appealing with nice touches of baked apples and stone-fruit on the palate, with softer acidity and concentration. Although accessible early, this has the concentration to age extremely well and will deliver more saline aspects with more bottle age.Decanter | 92 DECA whiff of mineral reduction is present on the nose of pear and apple compote where there is just enough Chablis typicity to be convincing. A very fine premier cru with pronounced notes of white flowers, crisp acidity, some generous zesty citrus and a hint of stone fruit. The palate is well balanced with a fine bead of acidity, quite steely, lemon peel and touches of orange pith with quite a persistent finish. Droin owns 0.33ha in the renowned premier cru of Vaulorent. Benoît notes the higher incidence of limestone in the soils, giving more a more aromatic profile, great length and purity. Although the Droin premiers crus are all lovely wines, this is a distinct step up – a premier cru Chablis which would grace any table along with the world’s finest wines. The 2020 Chablis 1er Cru Séchet is brilliant, mingling aromas of crisp green apple and lemon oil with notions of oyster shell, freshly baked bread, white flowers and wet stones. Pure, full and racy on the palate, the Séchet shows off exemplary depth at the core, excellent focus and cut and an impeccably balanced, but still quite closed personality on the long finish. This is going to be an outstanding bottle, but it will demand just a bit of patience to allow it to properly blossom. (Drink between 2026 - 2060)John Gilman | 93 JGMore elegant and airier aromas include those of citrus blossom, algae, iodine and a touch of green apple. The detailed and very intense medium-bodied flavors flash both good minerality and salinity on the balanced bitter lemon-inflected finale.
