But the aromatics are very elegant. Ditto the palate, which delivers fine acidity, impressive concentration, white peach and dried mango flavors and plenty of spice toward the finish. It delivers an aromatic constellation of green apple, lemon, a beautiful base of chalky soil and oyster shell, spring flowers and a lovely topnote of beeswax. Pure, full and racy on the palate, the Séchet shows off exemplary depth at the core, excellent focus and cut and an impeccably balanced, but still quite closed personality on the long finish. This is going to be an outstanding bottle, but it will demand just a bit of patience to allow it to properly blossom. As is almost invariably the case, Dauvissat’s 2020 Chablis 1er Cru Vaillons is sensual and perfumed, wafting from the glass with aromas of orange oil, peach, jasmine and nutmeg. White flowers, dandelion and touches of orange zest develop in the glass, precise and finessed. The palate is structured with good grip and a slightly waxy texture, building beautifully toward a very persistent finish. But, the potential here is enormous, as the wine offers up a fine bouquet of apple, pear, chalky minerality, white lilies, citrus peel and just a touch of vanillin oak. On the palate the wine is deep, precise and full, with a rock solid core, beautiful acidity and mineral drive, impeccable balance and a long, focused and nascently complex finish. Given all of the fireworks in this tasting from the Montée de Tonnerre upwards, I was wondering if the 2021 les Clos could somehow acquit itself impeccably, given how stunning the lineup had been up until this point. It does not disappoint! The aromatic constellation here is complex and precise, offering up scents of green apple, lime, grapefruit, flinty minerality, citrus peel, dried flowers and gentle smokiness in the upper register. On the palate the wine is beautifully complex, well balanced and poised, with a full-bodied format, great depth at the core, brisk acids and laser-like focus on the long and stunning finish. John Gilman | 96 JGThe 2021 Chablis Les Clos Grand Cru comes from 4.1 hectares mainly located on the upper sector of the Grand Cru, the vines planted in the postwar period by Maurice Fèvre, the father of William Fèvre. It has a powerful bouquet with hints of white flower permeating the citrus fruit and apple blossom aromas. The palate has wonderful salinity on the entry, a fine bead of acidity, citrus-fresh with clementine, hints of peach and a twist of bitter lemon that keeps the finish on its tippy-toes. The 2021 Chablis Bougros Grand Cru comes from southwest facing parcels (Fèvre almost half the holdings in this Grand Cru) has a very marine-influenced bouquet with touches of granite and a light smoky note. The palate is well balanced with a fine bead of acidity, nicely focused with a touch of quince complementing the citrus fruit, though I am just seeking a little more mineralité to come through on the final third.Vinous Media | 91-93 VMFevre’s Bougros covers around 50% of the whole Bougros climat. With it’s westerly location in the grand cru, Bougros is often a warmer site and once can taste the sweetness to the fruit here, beautifully balanced by 2021’s acidity. Although not the weightiest, showiest or most concentrated grand cru, there is lots to like, with notes of grapefruit, a touch of citrus zest and excellent acidity. The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. Very precise and nice mineral undertow. A really fine example, mostly from the Vaillon sector within the wider Vaillon Premier Cru. Drinking Window: 2023 - 2028Decanter | 93 DEC

Subtly smoky and thrilling in minerality, this pure-fruited, lemon-scented Chablis highlights white peach and lime flavors etched by limestone and chalk. Despite a hot vintage, it’s a classic, cooling expression of Mont de Milieu vinified entirely in stainless steel. It’s at peak from 2023 to 2035 but the wine should hold longer still.Wine Enthusiast | 95 WEThe 2019 Chablis Mont de Milieu 1er Cru has a clean, Alpine-scented bouquet that displays fine mineralité and tension. In the mouth, it’s fresh, vibrant and quite spicy on the midpalate, leading into an engaging, intense finish. This is a superb Mont de Milieu that should age with style. Good concentration with some refreshing citric acidity to finish. This shows the combination of ripeness and stony minerality which makes Mont de Milieu one of the leading Premier Crus. The 2021 Chablis Les Clos Grand Cru comes from 2.5-hectares from parcels located from the bottom to the top of the slope, 20% fermented in new oak and aged entirely in wood. It has quite a powerful bouquet; although, I think it would have been a little more sharp with some proportion raised in stainless steel. The palate is well balanced with good weight, a subtle nuttiness on the entry, notes of orange rind and citrus peel; the 2021 is quite linear on the finish and lingers nicely in the mouth. I think this will gain complexity by the time it is bottled next year.Vinous Media | 91-93 VM

The 2020 Chablis Hommage a Louis Grand Cru has an already irresistible bouquet of beautifully defined yellow fruit, limestone, red apple and white peachy aromas. The palate is very harmonious, distinctly saline and quite powerful. The intense, spicy finish lingers in the mouth. This will surely vie with the Valmur for supremacy come bottling. Exhibiting aromas of fresh orchard fruit, peach, honeycomb, toasted nuts and bee pollen, it’s full-bodied, layered and concentrated, with a seamless, multidimensional profile and a long, expansive finish.Robert Parker Wine Advocate | 95 RPHere too the fresh, cool and restrained nose is largely dominated by notes of smoky mineral reduction, acacia blossom, citrus rind and soft wood. There is excellent intensity to the admirably pure middleweight plus flavors that exude an inviting salinity on the detailed and hugely long finish that also displays a hint of bitter lemon character. With close to 6.5 acres in this grand cru, Arnaud Lavantureux treats most of this wine to barrel fermentation, then aging in used oak barrels; a small portion rests in new oak. The barrel time has amped up the wine’s power, its viscosity and smoky scents. But it never goes dark, sustaining a stark contrast of white on white. Complex, feather-light in the end, it keeps coming after you with detail, the way wildflower honey might, only this is completely dry.Wine & Spirits Magazine | 94 W&S

A cool and airy nose is less exotic than it usually is though there is a trace of it on the ripe white and yellow fruit suffused aromas. Once again there is both good density and power to the medium weight flavors that also possess an abundance of sappy dry extract along with plenty of salinity on the moderately structured, complex and sneaky lengthy finish.Burghound | 92 BH

Fevre’s Vaulorent is just a little more precise on the nose. Seguier says it is always elegant, always fresh. Fevre’s take on this renowned premier cru has an understated nose yet you can feel the power within. Lovely ripeness of fruit, but all in a very compact package at the moment. Although this is disarmingly approachable now, this will be a wine to cellar carefully, allowing all the perfectly formed components to blossom.Decanter | 95 DECA much less expressive nose, indeed it is all but mute, requires aggressive swirling to eventually coax aromas of white orchard fruit, citrus blossom and seawater. The richer and slightly more powerful flavors also possess a sophisticated mouthfeel along with excellent depth and persistence on the balanced finale where a touch of youthful austerity slowly emerges. In a word, terrific.Burghound | 92-94 BHThe 2021 Chablis Vaulorent 1er Cru comes from 3.60-hectares, of course, the only Premier Cru on the same incline as the Grand Crus. The soils here are very marn. It has an energetic petrichor, slightly fumé bouquet that is very well focused. The palate is well balanced, taut and fresh with fine acidity, lemon verbena and citrus peel emerging towards the finish. The 2020 Chablis Mont de Milieu 1er Cru has a more powerful bouquet than its peers with scents of orange blossom, Nashi pear and an underlying gunflint note trying to surface. The palate is well balanced with orange rind and a touch of peach skin on the entry. Very poised and harmonious with impressive volume, I admire its tension and persistence on the saline finish. The 2019 Chablis Vaillons 1er Cru has a less flamboyant bouquet than its peers. This feels more reserved and flinty, though very nicely defined and focused. The palate is well balanced, with the weight and density I look for in a Vaillon, and a little spicier than the Vosgros. A touch of lemongrass and a hint of green olive appear toward the finish. The 2021 Chablis Bougros Grand Cru, 80% aged in oak, has a delightful bouquet with orchard fruit, lemon verbena and orange pith scents that burst from the glass. The palate is well balanced with a fine bead of acidity, quite precise with a welcome touch of bitter lemon that keeps the finish on edge. Not a long-term Bougros perhaps, but finely crafted.
