Daivissat’s Chablis parcel comes from two parcels - the smaller near Beine (0.6ha) and the much larger plot adjacent to Premier Cru Foret (2.5ha). Profound, concentrated, prominent lime/lemon zest on the palate, a touch of honey, confited citrus zest to finish. So long. A profound Chablis.Decanter | 93 DECThe 2021 Chablis Village is a clear step up from the Petit Chablis, beautifully defined with light pressed flower scents that complement the granite scents. The palate is saline on the entry with a fine bead of acidity, fine depth with quite a persistent finish. Elegant and somehow, understated.Vinous Media | 89-91 VMA more floral and more citrus-infused nose speaks of cool and admirably pure aromas of iodine, ocean breeze and green apple along with a hint of the exotic. The rich and solidly concentrated medium-weight flavors also possess excellent length on the bright, clean and very dry finish. This chiseled and promising effort should amply repay 7 to 10 years of cellaring.Burghound | 90 BHThe Domaine Dauvissat 2021 Chablis AC is also an outstanding example of its respective level, delivering a vibrant and complex nose of fresh lime, apple, a lovely base of chalky minerality, just a touch of oyster shell and a topnote of straw. On the palate the wine is bright, full-bodied, focused and well-balanced, with a lovely core, zesty acids and a fine signature of minerality on the long and classy finish. The very steep aspect of Côte Bouguerots is highlighted by a much greater emphasis on minerality than Fevre’s Bougros. This is a grand cru is every way - so much drive on the palate with plenty of extract, concentration, salinity and length. Certain to keep very well but this is also surprisingly approachable early on. DIdier Seguier says it’s likely to close down after 18-24 months but this is clearly a fine example with masses of potential.Decanter | 96 DECThe 2022 Chablis Bougros Côte Bouguerots Grand Cru has a clean and precise bouquet with hints of wild peach, apricot blossom, Mirabelle and crushed stone. The palate is well-balanced with a very harmonious entry, blackcurrant leaf and spice, crushed stone and what feels like plenty of extract on the finish. This has great potential, but afford it time in your cellar.Vinous Media | 93-95 VMThis is the coolest and most restrained of this group of 2022s with its elegant aromas of prominent mineral reduction, lemon-lime, spice and oyster shell. There is almost painful intensity to the intensely stony and strikingly well-detailed larger-bodied yet still beautifully refined flavors that display huge length on the impeccably well-balanced finale. Like the Preuses, this is very classy and built to repay extended keeping.Burghound | 93-95 BH

Small yield, very concentrated, with masses of density on the palate. Plenty of drive and energy but has finesse to balance out the power. White peach fruit characters, vibrant acidity and a pronounced mineral, salty finish. Very long future ahead. Fèvre owns 4.1ha of the 25ha total within Les Clos. Its plots situated on the top of the hill, with 50% of the vines planted by William Fèvre’s father in the 1940s and 1950s.Decanter | 95 DECThis is aromatically quite similar to the Côte Bouguerots but with more floral influence. The rich, big-bodied and tautly muscular flavors are also seemingly chiseled from Kimmeridgian, all wrapped in a wonderfully persistent, very dry, balanced and stony finale. This is also extremely impressive and equally built to repay extended cellaring.Burghound | 93-95 BHThe 2022 Chablis Les Clos Grand Cru has a surprisingly primal bouquet with gooseberry, melon, fruits de mer and citrus peel, with more oyster shell scents developing as it opens, though never quite achieving the flair of the Valmur. The palate is well-balanced, steely and strict, with fine intensity and a saline finish. But it doesn’t quite have the precision of Fevre’s best cuvées at the moment.Vinous Media | 91-93 VM

The 2022 Chablis Grand Cru Blanchots is very promising, bursting with aromas of orange zest, citrus blossom, buttery pastry and fresh hazelnuts. Full-bodied, satiny and layered, it’s elegantly textural, with attractive mid-palate depth and purity.Robert Parker Wine Advocate | 93 RPThe 2022 Chablis Blanchot Grand Cru is blessed with one of Piuze’s most enticing aromatics—gorgeous minty yellow plum mixed with jasmine and dried honey. The palate is well balanced with yellow plum (again), stem ginger, white peach and a hint of lemongrass. Very harmonious and persistent - this is an excellent Blanchot.Vinous Media | 93 VMSubtle if easily perceptible wood can be found on the airy and floral aromas of sea water, citrus and a hint of wet stone. The rich and solidly concentrated medium-bodied flavors exude an almost palpable minerality on the impressively long finale. This is notably more refined than the Bougros though it too could use better depth but with at least a decade of upside development potential, more will almost certainly develop.Burghound | 93 BHPale colour, a full and ripe nose, the white flowers are entwined with a little honeysuckle. Fresh enough on the palate with a fine white fruit thread, sinuous yet precise, and with great length. A fine and typical rendition of Blanchots. Drink from 2027-2037. The 2022 Chablis Fourchaume 1er Cru has a discrete nose that gradually reveals one of Droin’s more floral bouquets this year. The well-balanced palate has a slightly richer, nuttier opening and good depth, tensile with a subtle reduction on the persistent finish. Excellent.Vinous Media | 92-94 VMA very elegant example of Fourchaume. A fine, all round package with depth and weight of fruit. Enough acidity to balance. Would drink this earlier than some, as it has a very generous fruit character. Droin’s vines are planted in the Vaupulent climat.Decanter | 92 DECModerate wood surrounds the ripe and more floral-inflected nose of essence of pear, mineral reduction and a similar very vague hint of the exotic. The wood can also be found on the palate of the rich and opulent yet solidly punchy medium-bodied flavors that exhibit fine depth and persistence though. With that said, and as good as this certainly is, it isn’t a match for the Mont de Milieu.Burghound | 90-92 BH

The 2022 Chablis Montmains 1er Cru offers scents of grapefruit and orange rind on the nose, less flamboyant than the Vaillons, yet showing impressive delineation already. The palate is well-balanced, with a tangy opening and hints of marmalade infusing the citrus fruit with an almost steely finish. This will need time in bottle.Vinous Media | 91-93 VMAlthough these a rich, deep soils, Droin says they retain a lot of seashell character. Lively and fresh on the palate, you can feel the cool terroir combined with warm, ripe fruit. Very classy and will age beautifully. Benoit Droin explains that it is the argile-bleu (blue clay) found here which adds extra volume.Decanter | 93 DECProminent notes of mineral reduction and just picked white flowers suffuse the aromas of tidal pool, algae and zest. The rich but vibrant medium weight flavors possess even more obvious minerality that seems to become more obvious on the cool, firm and delineated finish that is clean, dry, citrusy and sneaky long. The 2022 Chablis Vosgros 1er Cru, which is already in bottle, has a harmonious bouquet with fleeting lime, wet stone and a touch of citrus peel. Nicely detailed. The palate is sapid on the entry, with plenty of oyster shell/marine notes and a classically styled, almost "mean" finish. Very fine.Vinous Media | 92 VMDroin explains that although Vosgros is technically a left bank premier cru, it faces the same way as the top right bank climats. Although with a direct southwesterly exposition, the vines are located in a very cold valley. More restraint here, good density, but a little less of a mineral thread.Decanter | 91 DEC

The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. Very precise and nice mineral undertow. A really fine example, mostly from the Vaillon sector within the wider Vaillon Premier Cru. Drinking Window: 2023 - 2028Decanter | 93 DEC

Subtly smoky and thrilling in minerality, this pure-fruited, lemon-scented Chablis highlights white peach and lime flavors etched by limestone and chalk. Despite a hot vintage, it’s a classic, cooling expression of Mont de Milieu vinified entirely in stainless steel. It’s at peak from 2023 to 2035 but the wine should hold longer still.Wine Enthusiast | 95 WEThe 2019 Chablis Mont de Milieu 1er Cru has a clean, Alpine-scented bouquet that displays fine mineralité and tension. In the mouth, it’s fresh, vibrant and quite spicy on the midpalate, leading into an engaging, intense finish. This is a superb Mont de Milieu that should age with style. A Chablis with pedigree.Vinous Media | 93 VMMore depth and resolve on the nose here, with a deeper hue in the glass and some intriguing spice and woody notes on the palate. Good concentration with some refreshing citric acidity to finish. This shows the combination of ripeness and stony minerality which makes Mont de Milieu one of the leading Premier Crus. The 2021 Chablis Les Clos Grand Cru comes from 2.5-hectares from parcels located from the bottom to the top of the slope, 20% fermented in new oak and aged entirely in wood. It has quite a powerful bouquet; although, I think it would have been a little more sharp with some proportion raised in stainless steel. The palate is well balanced with good weight, a subtle nuttiness on the entry, notes of orange rind and citrus peel; the 2021 is quite linear on the finish and lingers nicely in the mouth. I think this will gain complexity by the time it is bottled next year.Vinous Media | 91-93 VM

The 2020 Chablis Hommage a Louis Grand Cru has an already irresistible bouquet of beautifully defined yellow fruit, limestone, red apple and white peachy aromas. The palate is very harmonious, distinctly saline and quite powerful. The intense, spicy finish lingers in the mouth. This will surely vie with the Valmur for supremacy come bottling. Outstanding.Vinous Media | 94-96 VMAs a result of an ongoing dispute with the INAO—who contend that part of the Droin family’s historic parcel of Les Clos, named as such on the cadastre and always labeled accordingly, is in fact Valmur—the domaine’s Clos is appearing this year as the 2020 Chablis Grand Cru Hommage à Louis. Exhibiting aromas of fresh orchard fruit, peach, honeycomb, toasted nuts and bee pollen, it’s full-bodied, layered and concentrated, with a seamless, multidimensional profile and a long, expansive finish.Robert Parker Wine Advocate | 95 RPHere too the fresh, cool and restrained nose is largely dominated by notes of smoky mineral reduction, acacia blossom, citrus rind and soft wood. There is excellent intensity to the admirably pure middleweight plus flavors that exude an inviting salinity on the detailed and hugely long finish that also displays a hint of bitter lemon character. With close to 6.5 acres in this grand cru, Arnaud Lavantureux treats most of this wine to barrel fermentation, then aging in used oak barrels; a small portion rests in new oak. The barrel time has amped up the wine’s power, its viscosity and smoky scents. But it never goes dark, sustaining a stark contrast of white on white. Complex, feather-light in the end, it keeps coming after you with detail, the way wildflower honey might, only this is completely dry.Wine & Spirits Magazine | 94 W&S

A cool and airy nose is less exotic than it usually is though there is a trace of it on the ripe white and yellow fruit suffused aromas. Once again there is both good density and power to the medium weight flavors that also possess an abundance of sappy dry extract along with plenty of salinity on the moderately structured, complex and sneaky lengthy finish.Burghound | 92 BH

(Chablis Montmains 1er Cru, Domaine William Fèvre, White) From all three sections of the vineyard as usual. Racy lemon colour. Pure crystalline nose, very little reduction, very classical left bank Chablis, very intense but neither heavy nor exotic. The kimmeridgian is speaking underneath a graceful layer of flesh. Fruit and stones both keep coming back at the finish.Jasper Morris | 92-95A wine from a selection of sites over 3.9ha in Butteaux, Forêts and Montmains. Butteaux is very cold and mineral, while Forêts is elegant and floral. Great precision and focus here, allied with crystalline citrus fruits on the palate. Shows density, but is also very fresh, with lovely mineral characters on the finish. A highly successful Montmains.Decanter | 93 DECHere too the nose is elegant, pure and layered but with more floral and spice nuances adding breadth to the cooler and more restrained aromas. There is both excellent intensity and density to the mineral-driven flavors that terminate in a bone-dry, sneaky long and balanced finale. This too is really very good.Burghound | 91-93 BHConsisting of roughly equal parts Montmains, Butteaux and Forêts (the three sous-climats of Montmains), the 2020 Chablis 1er Cru Montmains offers up aromas of crisp green apple, white flowers, bee pollen and oyster shell. On the palate the wine is pure, full-bodied and racy in personality, with fine focus and grip, a lovely core and a long, minerally and beautifully balanced finish. A lovely example. The 2020 Chablis Mont de Milieu 1er Cru has a more powerful bouquet than its peers with scents of orange blossom, Nashi pear and an underlying gunflint note trying to surface. The palate is well balanced with orange rind and a touch of peach skin on the entry. Very poised and harmonious with impressive volume, I admire its tension and persistence on the saline finish. This will not require much bottle maturation, yet it has the substance to last 15-20 years. Excellent. Tasted blind at the BIVB tasting in Chablis.Vinous Media | 93 VM

The 2020 Chablis 1er Cru Butteaux Vieilles Vignes will be bottled later than usual, as Michel was still waiting on the delivery of glass bottles when I visited—but extra time on the fine lees certainly won’t do it any harm. Exhibiting aromas of pear, white flowers, freshly baked bread, confit citrus and iodine, it’s medium to full-bodied, satiny and layered, with terrific depth and tension. It’s a close race between this and Michel’s Vaulorent this year.Robert Parker Wine Advocate | 93+ RPBack in the fleshier style so for once I may have a preference for the regular. But then I love it on the palate with just a little bit of fresh red fruit mixing in. This has been racked a second time and sulphured which may explain the nose. The 2020 Chablis Blanchot Grand Cru is aged 75% in stainless steel and 25% in oak for nine months, followed by five months all in stainless steel. It has a relatively light bouquet, quite airy in style, gaining intensity with aeration, touches of white peach, smoke and granite. The palate is well balanced with a fine line of acidity, citrus fruit, orange rind and a touch of stem ginger towards the finish that fans out nicely. This meliorates with aeration and is worth decanting if you decide to crack open a bottle in its youth. Tasted blind at the BIVB tasting in Chablis.Vinous Media | 93 VMA deftly balanced white highlighted by apple, yellow plum, floral and stone aromas and flavors. Offers a rich and supple texture, making this almost seamless from start to the finish, where a stony element emerges. Drink now through 2028. 304 cases made, 150 cases imported.Wine Spectator | 92 WSModerate wood surrounds the overtly floral-suffused nose of softly exotic white peach, sea breeze and pretty spice whiffs. The succulent, round and plump flavors exude a refreshing salinity on the very dry and sneaky long finish. It builds nicely in the glass. The palate is well-balanced with a fine thread of acidity, compact on the entry yet it fans out nicely whilst retaining admirable tension from start to finish. I would have just liked a little more residual spiciness, but this will do nicely. The mouthfeel of the medium weight plus flavors is nothing short of gorgeous as it’s at once caressing but punchy on the sappy and strikingly long finish. This too would benefit from having better depth, but the density of material is such that more will almost certainly develop if allowed a few years first.Burghound | 93 BH

Fevre’s Montée de Tonnerre comes from all three sectors. Seguier notes that Pied d’Aloup has the highest marn content, Montée de Tonnerre adds weight and the old Chapelot vines (planted in 1936) add finesse. More closed on the nose. Weighty, concentrated, persistent. Saline notes. Will be a great gourmand wine. Some white flower notes, lots of zesty orange and grapefruit on the palate with a nice touch of white peach. For long ageing.Decanter | 94 DECA discreet dollop of wood sets off the equally cool and perhaps even slightly more elegant aromas of acacia, citrus, seashore and oyster shell. The sleek and highly sophisticated medium-bodied flavors possess a really lovely texture while delivering superb length on the bitter lemon and mineral-suffused finish. This beautifully balanced effort is crystalline in its purity and a wine that should repay a decade plus of keeping.Burghound | 92-94 BHThe 2021 Chablis Montée de Tonnerre 1er Cru comes from 2.2-hectares split over three climats with different orientations including the domaine’s oldest vines planted back in 1936. This has quite an aromatic bouquet with limestone, oyster shell and yellow plum aromas that blossom in the glass. The palate is well balanced with fine acidity, harmonious with commendable weight matched with a countervailing saline element. Droin owns 10ha of AP Chablis. Much more interest here with a deeper hue in the glass and much more interest on the nose. Some greengage on the palate, together with a hint of pear and white peach. Pretty much a benchmark example of what village Chablis should be. Concentration and a lengthy mineral character to finish.Decanter | 92 DECThis is aromatically similar to the Petit Chablis though with more citrus elements in evidence. There is again good richness to the succulent and rounded medium-weight flavors that also exude a refreshing salinity on the clean, moderately dry and sneaky long finish that is slightly firmer.Burghound | 88-91 BHThe 2021 Chablis Village has a fresh nose with Granny Smith apples and a touch of fresh pear. With good balance and acidity, the palate is quite saline in the mouth with veins of orchard fruit, hints of wild peach and citrus peel, delicate and refined on the finish.Vinous Media | 88-90 VM

The 2021 Chablis Valmur Grand Cru offers more intensity and precision than the Vaudésir, the wood giving weight but beautifully assimilated, shucked oyster shells emerging. The palate is well balanced with a slightly honeyed opening, notes of lemon curd and orange pith, building nicely in the mouth towards a suave and lightly spiced finish. Superb.Vinous Media | 92-94 VMOnce again moderate wood is present on the spicy aromas of green fruit and oyster shell-inflected nose. The rich, powerful and broad-shouldered flavors possess a borderline creamy mid-palate texture while exhibiting outstanding length on the sappy and saline finish. Very promising.Burghound | 92-94 BHFrom a site of just over 1ha, Valmur is a colder site giving, as Dron says, a more masculine. Cool, closed on the nose, this will need a lot of time to open up. Oak is a little more apparent here, with very precise acidity. Very linear at the minute, a grand cru with a nose of white flowers, and a palate of great purity. This will need three to four years to open and will be hitting its stride in seven to eight.Decanter | 93 DEC

Droin’s Montmains site is on a gentle slope with richer, deeper, kimmeridgian marl soils. A colder site, making the wine richer and with great density on the palate. Distinctly more weight than the Vaillons, giving the blend plenty of gravitas. 8-10 months ageing on fine lees adds a creamy character with acidity less pronounced than with the Vaillons. Classy.Decanter | 92 DECAn even more floral-suffused nose speaks of the pretty essence of pear and apple while offering better overall typicity. The palate impression of the middleweight flavors is also plump, round and fleshy with its reasonably persistent, dry and balanced finale that also could use better depth. This attractive effort should be approachable young yet also reward 4 to 7 years of keeping.Burghound | 89-92 BHThe 2021 Chablis Montmains 1er Cru has a classic Chablis-like bouquet with scents of shucked oyster shell and light fumé notes emerging from the glass. Droin’s Fourchaume is located in the Vaupulent sector, on deep, clay-rich soils. A warmer site, this is a;ready very appealing with nice touches of baked apples and stone-fruit on the palate, with softer acidity and concentration. Although accessible early, this has the concentration to age extremely well and will deliver more saline aspects with more bottle age.Decanter | 92 DECA whiff of mineral reduction is present on the nose of pear and apple compote where there is just enough Chablis typicity to be convincing. The succulent, round and palate coating flavors possess good underlying tension while delivering solid depth and length on the delicious finish where the only nit is a hint of warmth.Burghound | 90-92 BHThe 2021 Chablis Fourchaume 1er Cru shows a little more reduction on the nose compared to other cuvées but a pleasant flintiness develops with time. The palate is well balanced with a cohesive entry, fine weight although it doesn’t quite deliver the same precision as the Mont de Milieu at the moment. Fine.Vinous Media | 89-91 VM

Droin have a sizeable 4.8ha of Vaillons, with five plots in Epinottes, Roncieres, Sechet, Chatains and Beugnons. This is always a super reliable blend as Benoit is able to draw on plots which work well in hot and cold vintages. A very fine premier cru with pronounced notes of white flowers, crisp acidity, some generous zesty citrus and a hint of stone fruit. Long and classy.Decanter | 93 DECThe 2021 Chablis Vaillons 1er Cru has a backward nose that needs more coaxing in the glass. The palate is well balanced with a fine bead of acidity, quite steely, lemon peel and touches of orange pith with quite a persistent finish. Fine.Vinous Media | 90-92 VMA lightly peppery, airy and cool nose freely offers up floral, white fruit and citrus nuances that exhibit just enough Chablis typicity to confirm where this is from. The plump, round and fleshy flavors possess a hint of natural sweetness that contrasts markedly with clean and bone-dry finish that offers good length but not quite the same complexity.Burghound | 89-92 BH

The 2020 Chablis Blanchot Grand Cru is quite backward on the nose, unfolding to display touches of cold wet limestone and shucked oysters, yet always discreet; this a Grand Cru that does not want to brag. The palate is well balanced with a tangy, quite concentrated entry, fine weight, and good density toward the finish, even if I am not convinced that it will become Droin’s most complex 2020 in the end. We’ll see.Vinous Media | 92-94 VMAn overtly floral nose is comprised by vaguely exotic aromas of lychee, citrus blossom, iodine and ocean breeze. There is outstanding intensity to the beautifully well-detailed larger-scaled flavors that brim with both minerality and dry extract that buffers the moderately firm acid spine shaping the slightly more complex and impressively persistent finish. Very sold quality here.Burghound | 92-94 BHA little more of a lemon tint to the colour. Concentrated white flowers on the nose but too sunny to be edelweiss, and the fruit rapidly takes over. A faint suggestion of banana, we feel the heat behind, but it all retains its balance. Not quite coherent yet, but with time to establish its balance.Jasper Morris | 91-94 JS
