Dom Pérignon Champagne History

Dom Pérignon is made by Moët & Chandon, a venerable Champagne house that produces Dom as one of its prestige cuvée. The Dom champagne originates from the 17th century and got its name by the monk Dom Pierre Pérignon. 

Dom Pierre Pérignon came from a family of eight children in the Champagne region of France. Pérignon’s family owned a few vineyards, so he was familiarized with the process of winemaking. Pérignon lived in the Abbey of Hautvillers, and was also a cellar master. Thanks to his hard work, the abbey doubled its vineyard size. Pérignon’s religious beliefs and philosophy of life ignited his dreams of creating “the best wine in the world.” today known as the famous Dom Pérignon!

While this remarkable monk didn’t invent the famous Dom wines (as the myth suggests), Pérignon made essential improvements to the method of producing champagne wines. The Abbey of Hautvillers, the monastery where Pérignon lived and spent most of his life is today the prestigious Moet & Chandon champagne house.

Dom Pérignon Style

The process of creating Dom wines still remains a mystery, but we know that Dom Pérignon is made from grapes sourced from Grand Cru vineyards of Champagne (both from the Côte des Blancs and sub-regions of Montagne de Reims), and the First Growth sites of Hautvillers.

The Dom champagne is always a blend of Pinot Noir and Chardonnay. While the percentages in Dom bottles change from vintage to vintage, the wine is always based on these two key types of grapes, typically between 50/50 and 60/40 favoring either Pinot Noir or Chardonnay. Making white wine from red grapes and blending the grapes is what makes a Dom champagne so superior and unique.

Dom Pérignon is always a vintage champagne that must age for a minimum of 7 years in a bottle before release. This time-aging on lees gives the wine complexity and richness. The vintage Dom is a truly outstanding champagne, featuring intense flavors of fruit, oak, and leesy notes from its years of aging in a bottle. How the Best Dom Perignon Vintages Develop?

Once you’re finished with your drink, and the guests have left, it’s incredibly easy to slip into deep, intense contemplation. The question that hovers above a Dom wine is always the same – “How was this perfection achieved?”

The answer is almost always different, however, and it depends on a staggering amount of factors. In nearly all cases, you can spot very clear differences between different vintages of the same Dom Pérignon. The differences between Dom vintages can occur due to that year’s weather conditions, geological differences between one vineyard and another, the ever-changing and innovative methods used to nurture and collect grapes, and so much more.

2008 Dom Pérignon Vintage vs. 2006 Dom Pérignon Vintage

For example, in 2008, the weather wasn’t exactly what you’d call ideal for making a Dom champagne, with grey, overcast skies, and noticeably less heat. However, in a miraculous turn of events, the weather cleared up right before harvest took place, bringing healthy north-eastern winds and helping the winemakers deliver what is considered one of Dom Pérignon’s strongest recent performances.

The 2008 Dom champagne boasts a stunning, luminous aromatic bouquet, with a complex and compelling combination of stone fruit, zesty citrus, and delicate, lush white flowers. As the 2008 Dom unfolds in your glass, the aromatics turn towards a cozy, warm spectrum, featuring notes of spice and roasted wood. Even from those conditions, the 2006 Dom champagne came out like a blockbuster and continues to capture the hearts and minds of wine lovers around the world today.

The brilliant 1996 Dom Perignon, which has largely disappeared from the marketplace, may be the finest young example of DP I have ever tasted. Notes of crushed rocks, honeysuckle, lemon oil, orange marmalade, and white pear provide a stunning aromatic display as well as palate impression. Great acidity and huge flavor intensity backed up by vibrant acidity make this an exquisite Champagne. It should drink well for 20-25 years, possibly longer. Readers should remember that the 1971 Dom Perignon Rose is still drinking exquisitely. I recently had the 1969 and 1970 Dom Perignons (from magnum), and both were drinking brilliantly. It makes one realize just how long-lived these wines can be. Production is confidential, but there must be hundreds of thousands of cases of Dom Perignon since it available in most of the world’s luxury hotels and restaurants.Robert Parker | 98 RPA distinctly reticent but elegant nose with a purity of expression that is truly impressive to experience as it's relatively high-toned and while the yeast comes up with air, it's relatively muted at present, combining with intense, precise and superbly detailed and complex flavors that culminate in an explosive and wonderfully long finish. This may very well rival the sublime '90 in time even if it's not quite as concentrated. The bouquet offers up a complex blend of wizened apples, lemon peel, stony minerality, sourdough bread, just a hint of the sweet nuttiness to come and a gently smoky topnote. On the palate the wine is bright, full-bodied and rock solid at the core, with excellent focus and grip, lovely mousse, still quite brisk acids and a very long, nascently complex and beautifully balanced finish. Wonderfully complex, musky aromas of minerals, ginger, lemon, earth, mushroom, smoke and brioche; with aeration, this showed sweaty saline and chicken broth notes that reminded me of Le Montrachet, as well as a captivating topnote of fresh rose petal. This shows incredible depth of fruit with strawberry, cherry and phenolics. Full-bodied and layered with an incredible, three-dimensional element to the wine. This is so transparent and dynamic with dark fruit, yet it remains vivid and bright. Refined and precise, it goes on and on. Really savory, fresh and incredibly pinot-noir-like. What a wine. 13 years of maturation in the bottle. 2010 moet chandon dom perignon Champagne

A firm and vivid Champagne with a precise, focused palate. Full-bodied and dry. It’s very layered and bright with light pineapple, peach, praline, cooked-apple and stone aromas and flavors. It’s very subtle and focused at the end. Integrated with richness and high acidity. Good depth. Reminds me of the 1995. Very clean. Solid. Lovely to drink already, but will age nicely.James Suckling | 98 JSThe new release of this iconic Champagne shows its richness to perfection. The floral aromas lead to a wine that has weight and density as well as a balance that encompasses ripe fruits that have now matured to reveal nuttiness, toast and a tight salinity at the end. Drink through 2028.Wine Enthusiast | 96 WEA graceful Champagne, featuring fragrant notes of toasted brioche and grilled nut that are more subtle on the palate, with a rich underpinning layered with a pure chime of tangerine and accents of candied ginger, toasted saffron and lime blossom. Drink now through 2035.Wine Spectator | 96 WSThe 2010 Dom Pérignon is hard to get a read on today. I have tasted it four times over the last few months, and my feeling is that it is still not totally put together. Apricot, pastry, chamomile, mint and light tropical notes are all signatures of a hot vintage with a very fast final phase of ripening that trails only 2002 and 2003 in terms of sugars. Of course, the year had plenty of challenges. The first part of the year was marked by cold and very dry weather during the winter and spring. June saw heat and some stress in the vines. July and August were quite warm, with heavy rains on August 15 and 16 that caused a widespread outbreak of botrytis that accelerated rapidly in the days leading up to harvest. Chef de Caves Vincent Chaperon explained that Chardonnay was favored over Pinot because better aeration within the clusters helped fend off rot, while parcels that had been less stressed by the June heat also suffered less from the effects of botrytis. Perhaps because of the unevenness in the season, there is also something disjointed about the 2010. While sugars were high, so were acidities, just behind 2008 in the decade of the 2000s. It will be interesting to see where the 2010 goes over time. It is the first vintage made under the direction of Vincent Chaperon, who worked alongside outgoing Chef de Caves Richard Geoffroy for many years.Antonio Galloni | 93 AGSoft gold, with a gentle green luminescence and a paler rim. A fine bead and immediately reassuring nose…. classic DP this, citric fruit, slate, sourdough, soft spice and the softly whispered intimations of tropical decadence. Pedigree writ large. The palate continues the theme, albeit with great subtlety. Vincent describes sapidity, itself buttressing the fruit which now recalls nectarines and pineapple, maybe a hint of crystallised grapefruit. The finish unfurls neatly, a gentle phenolic kick of salinity underwriting structure and potential alike. Drinking Window 2020 - 2030.Decanter | 93 DECThe 2010 Dom Pérignon is already expressive, wafting from the glass with aromas of crisp green apple, peach, iodine, freshly baked bread, orange oil and smoke. Medium to full-bodied, pillowy and charming, it's soft and round, with ripe acids, a moderately concentrated core of fruit and a pearly mousse, concluding with a saline finish. Open-knit and pretty, this is a giving Dom Pérignon that readers might think of as reminiscent of a less reductive version of the 2000 vintage.Robert Parker Wine Advocate | 92 RP
