The 2021 Chablis Les Preuses Grand Cru comes from 2.5-hectares split over two parcels. This has one of my favourite aromatics from Fèvre this year with superb delineation and mineralité. The palate is harmonious and poised, very focused and tensile, plenty of energy with a touch of lime and clementine towards the persistent finish. This is an outstanding Chablis that should age supremely well in bottle.Vinous Media | 94-96 VMOne of the domaine’s standout wines, this immediately strikes you with its precision and clarity. Fevre’s vines are from two different sites, with varying expositions - one lower down and facing south-east, the other high on the plateau. Great elegance with plenty of weight and concentration on the palate, full and fleshy. Grapefruit notes to the fore but plenty of mineral/saline notes on the long, persistent finish. TOP QUALITY PRODUCER Brocard’s 7 Lieux Grand Cru Preuses is a magnificent wine in the making. Although there is plenty of ripeness on display this regal grand cru is cool, crisp and supremely elegant. An aristocratic feel here, with great focus and lingering minerality to finish. From Domaine Brocard vines, all the components are in place to allow this to develop glacially for 15-20 years.Decanter | 95 DECThe 2021 Chablis Les Preuses Grand Cru is curiously just a little innocuous on the nose at the moment. I wonder if this might be going through a dumb phase? The palate is harmonious on the entry with orange peel and light peachy nose, slightly honeyed in texture, and it captures the spiciness that I seek from Les Preuses. Maybe not quite the length that you would obtain from a top vintage, but a finely made Chablis.Vinous Media | 91-93 VMThis is also quite aromatically elegant with its array of green fruit, cool citrus, wet stone and spice. The medium-weight flavors are at once seductive yet powerful with solid volume while coating the palate on the clean, dry and lingering finish that is borderline simple. This has the stuffing to age and improve up to a decade so more depth should reasonably develop if given a few years.Burghound | 90-92 BH

In 2021, the domaine protected this site above all from frost but still lost half their crop, despite being surrounded by the also well-protected vines of Domaine Leflaive. Accessible almost even now, the aromas of green apple and passionfruit, coconut, butter, and baking spice are almost opening even now. There is a lovely freshness and silky texture, yet this is a powerful wine with impressive length and density at the end. This should open in five years and continue to improve for at least twenty-five more.Decanter | 96 DECA gorgeously fresh, airy and cool nose combines notes of green apple, a panoply of white flowers nuances, wet stone and a pretty array of exotic spice elements, especially jasmine. There is a notably more refined mouthfeel to the tautly muscular and overtly mineral-driven medium weight plus flavors that exhibit focused power on the impressively long, balanced, youthfully austere and very classy finale. This is exceptionally stylish and a wine that should easily reward a decade plus of keeping.Burghound | 94 BH

TOP QUALITY PRODUCER Weighty, profound and rich, this is a stunning Les Clos which has an extra level of depth and richness that would please many a Côte-d’Or fan. White flowers on the nose, spice and stone fruit on the palate with 40% oak and a lingering, freshening mineral undertow. A grand cru with gravitas that will drink for 15-20 years. Droin has 1.4ha with vine age averaging 40 years. Its plots are located in various sectors of the cru with some lower down in the western sector, and part on the blue clay soils on the mid-slope.Decanter | 96 DECLike the Grenouilles, there is enough wood to merit mentioning but not enough to overshadow the cool, airy and very fresh aromas of oyster shell, white flower and ocean breeze. The succulent yet powerful and delineated flavors brim with both minerality and dry extract, all wrapped in a driving bitter lemon-inflected and youthfully austere finale. This is a lovely combination of power and refinement that should amply repay a decade plus of cellaring.Burghound | 92-95 BHThe 2021 Chablis Les Clos Grand Cru has a clean and precise bouquet, flint and chalk filtering through the citrus fruit, gaining intensity as it opens in the glass, though I feel the Grenouilles has more sophistication. The palate is well balanced with a fine bead of acidity, very harmonious, nicely poised with a dab of stem ginger and white pepper towards the finish that is resolutely classic in style. TOP QUALITY PRODUCER Quite a different, cool, fresh character on the nose. Louis Moreau always aim to pick early to preserve freshness. Lemon-lime citrus characters dominate the palate giving lots of vibrant acidity, balancing the concentrated fruit notes and providing a great backdrop for future ageing. Needs a two or three years to settle in bottle, and it’s a keeper.Decanter | 95 DECThis white’s creamy texture is offset by lively acidity that frames its lemon, yuzu, floral and vanilla flavors. Tense and racy, picking up mineral and herbal accents on the long finish. Drink now through 2032. 712 cases made.Wine Spectator | 94 WS

The 2022 Chablis Grenouilles Grand Cru has a more low-key nose than the impressive 2021, well-defined with crushed limestone, Granny Smiths and peach skin aromas. The palate is well-balanced, with a fine bead of acidity counterbalancing the richness. Tensile, quite saline, building gradually towards a very cohesive finish. Beautiful mix of richness, grace and drive. As always with Fèvre’s Les Preuses, this is elegant, long-living and fine. Ultra-stylish and very mineral. From two sections of vines. One situated low down on Les Preuses next to Vincent Dauvissat’s plot, on the flatter part facing south, the other on deeper soils, with both adding richness and totalling 2.5ha.Decanter | 96 DECA toasty nose features notes of smoky grilled shellfish, pear and algae. The dense and equally serious larger-scaled flavors don’t have quite the same power yet they are clearly more refined on the markedly bitter citrus zest finish that displays outstanding length. This is exceptionally classy and while it too could use more depth, that is all but assured if given a chance.Burghound | 92-95 BHSuch a fresh lime infused colour. The bouquet shows the soft creamy riches that you can find here in Les Preuses. There is plenty of bulk but the hectare plot which drops down into Vaudésir gives the mineral tension. A little lime and lemon coats the tongue at the finish. Drink from 2030-2040. Tasted: June 2023.Jasper Morris | 93-95 JMThe 2022 Chablis Les Preuses Grand Cru is not unlike the Valmur on the nose: backward and a little sultry in style, with faint touches of crustacea coming through. The palate is more generous with orchard fruit, hints of apricot and wild peach, and fine acidity. It is very harmonious but without quite the same complexity as the Valmur on the finish. The May 2017 disgorgement of Fallon’s NV Brut Blanc de Blancs Grand Cru Ozanne is showing brilliantly, wafting from the glass with aromas of citrus oil, crisp yellow orchard fruit, freshly baked bread, toasted nuts, candied peel and honeycomb. Full-bodied, vinous and concentrated, it’s layered and textural, with a bright spine of acidity, a pearly enlivening mousse and a long, intensely sapid finish. Its combination of power and tension makes this the finest wine I’ve tasted from Fallon to date. Of course, finding any of the thousand or so bottles released every year is next to impossible, but readers able to track one or two down are in for a treat.Robert Parker Wine Advocate | 95 RPThe NV Blanc de Blancs Grand Cru Ozanne is laced with gorgeous scents of pastry, brioche, citrus, white flowers and yellow orchard fruit. Warm, oxidative tones add breadth and volume, but the wine remains weightless, impeccable and pure. The delineated, crystalline finish leaves a lasting impression. This is a super-impressive showing from a producer who appears to have a very bright future. Ozanne is the old, historical name by which Avize was known prior to 796.
