With around 1200 hectares of vineyards, Pauillac is a beautiful microcosm within Bordeaux. Possibly the most reputable commune in the region, the small town of Pauillac hosts some of the finest estates to have ever dabbled in the art of viticulture. With veritable titans such as Latour, Lafite Rothschild and Mouton Rothschild, it is an absolute must-visit for anyone that wishes to study wine and experience the culture first-hand.

The terroir speaks a lot about what kind of wines the commune produces. Pauillac is slightly more elevated than its surrounding area, and a forest to the west keeps the harshest winds away from the grapes, almost as if it understands the significance in these noble vineyards. The soil is typically described as “gravely.” As a result of all this, Pauillac wines are direct and hard-hitting, with distinct flavors of plum and blackcurrant, and some ground pencil shavings. They’re typically paired with rich roasted meat, perhaps some delicious lamb or game.

It’s impossible to be left disappointed with Pauillac wines, and everyone can find something that fits their tastes here. Still, a commune like this provides a plethora of bottles to choose from, and that’s where we come in. 1962 lafite rothschild Bordeaux Red

(Lafite-rothschild Lafite-rothschild Red) The 1962 Lafite-Rothschild is served from an impeccable magnum, one of the standouts of this comprehensive vertical tasting. Perhaps the larger format and provenance should be factored in, but neither of my two previous encounters with the 1962 has come close to this. Deeper in color than the 1966, the 1962 offers impressive blackberry and bilberry on the nose, vines of cedar and graphite evolving with time flanked by subtle black olive and brine. The palate is revivifying and fresh, demonstrating exquisite delineation. There is a compelling edginess to this Lafite, with a sustained pencil lead finish backed up by plenty of saline notes. What a truly great 1962 Bordeaux and perchance an under-appreciated Lafite-Rothschild. Tasted at the Lafite-Rothschild dinner at Amuse Bouche in Hong Kong. Drink now to 2005.--Lafite Rothschild vertical. —Wine Spectator | 93 WS(Château Lafite-Rothschild) The nose on the 1962 Lafite is polished, ethereal and fully mature, which offers up a lovely, transparent mélange of red berries, cigar box, a touch of menthol, delicate notes of sage, orange zest, plenty of cedar and a touch of summer truffle. On the palate the wine is medium-full, ethereal and beautifully complex, with excellent focus, and lovely shape and grip on the tangy finish. At age forty-five this is still a very pretty wine and sophisticated wine, and while it does not deliver the same scale as the greatest vintages of Lafite, there remains this lovely perfume, elegance, complexity and great intensity of flavor that makes this an entirely satisfying drink. 1979 lafite rothschild Bordeaux Red

Fruity, deep and firm, filled with plum and cherry, backed by youthful, stiff tannins. Needs time for complexity to develop. Try in 1995.--Lafite Rothschild vertical.Wine Spectator | 92 WS(Château Lafite-Rothschild) The ’79 Lafite has been fully mature for a number of years now, and though it shows plenty of life still ahead of it, the wine is losing a bit of its elegance as it continues to creep along its plateau of maturity. Ten years ago this was a classically elegant middleweight Lafite, but as it has continued to age it has taken on some of the sauvage aromatic characteristics of a vintage of Lafite such as ’75. It is still a fine drink, but I would opt for drinking it up in regular-sized format over the relative near-term, as it does not appear to me to be moving in the right stylistic direction. The bouquet offers up notes of cassis, soggy tobacco, orange zest, a bit of grilled meat, dusty soil tones and cedar. It has lost the lovely floral topnote it possessed five or six years ago. On the palate the wine is medium-full and elegant on the attack, with moderate depth, but good intensity of flavor, and now a bit of structural delicacy adding fragility today on the backend. Still a lovely and serious wine, but with time now in hand, the ’79 Lafite has slipped a couple of points on my scale over the last five years. (Drink between 2004-2010).John Gilman | 90 JG

1981 latour Bordeaux Red

Often the measure of a great terroir and producer are the so-called off vintages, which frequently surprise and delight to punch far above their weight. The 81 Latour is a classic case in point. From an unheralded year, this particular bottle had clearly been kept in fabulous condition. The youthful colour is not dissimilar to the 96 and the nose still provides plenty of primary Cabernet-based fruit (classic cassis, lead pencil and cedar) with some tertiary notes in the background. Then a lovely attack on the palate; dry with very correct blackcurrant fruit, balsam, a hint of savoury iron rust and a vein of autumnal forest floor. Gentle, melting tannins, medium weight and a clean acidic cut enable the wine to glide effortlessly across the tastebuds. The finish is harmonious, long and cries out for another bottle. In short, a textbook claret which is now at its drinking best, even more so with a cut of roast lamb.Drinking Window 2015 - 2020.Decanter | 93 DEC

1983 latour Bordeaux Red

(Château Latour (Pauillac) served from magnum) The 1983 Château Latour has never had a great reputation, and I probably had not tasted the wine since close to its release back in the mid-1980s. I was very surprised to see just how stunning the wine has turned out to be, given that Robert Parker only gave it 87 points back in the day. However, this particular magnum was absolutely stellar, offering up a deep, complex and classic nose of cassis, black cherries, dark gravelly soil tones, tobacco leaf, cedar and a topnote of cigar smoke. On the palate the wine is pure, full-bodied and rock solid at the core, with fine structure and grip, excellent gravelly undertow, still moderate tannins and a long, complex and perfectly balanced and classic Latour finish. This is a very, very underrated vintage of Latour. (Drink between 2018-2075).John Gilman | 95 JGA solid, firm wine with a tannin structure that is softening. Aromas of chocolate, ripe fruit and meat. Full-bodied, with loads of fruit and tannins and a long, long finish. Thick and chewy. Gorgeous.--Latour vertical. It is a vintage that I had not seen for a few years, and I had just two vague recollections of an ordinary First Growth; this was far superior and unquestionably the best bottle I have encountered. Modest bricking on the rim. The harmonious bouquet is fragrant and well defined, demonstrating a little leafiness with hints of leather. The palate is medium-bodied with fine tannin and a touch more fruit than I would have predicted, and laced with tobacco and pencil lead. Previously I lamented that the 1983 lacks vigor and vivacity. No written review provided | 96 WSThis is a forgotten vintage for Mouton. There are pretty aromas of sweet Thai basil along with Asian plums. It’s full, soft and fruity. You might say it’s almost jammy – but it’s also so round and gorgeous. Big, dense and concentrated, with ripe red cherry and plum flavors complemented by underbrush, sweet pipe tobacco and mint. Finishes long, sweet and saline, with a very classic, refined mouth feel. A very underrated vintage for Mouton, the 1983 has had to live under the shadow of the much more famous 1982. My latest sample was devoid of the green notes that some previous bottles of the ’83 have shown.Vinous Media | 92 VMThe classic Mouton lead-pencil, cedary nose has begun to emerge. This medium dark ruby, elegant, medium-bodied wine will never be a great or legendary Mouton. The flavors are ripe and moderately rich. With good depth and some firm tannins to resolve, this offering from Mouton is bigger and richer than the 1981, 1979, or 1978. 1985 pichon lalande Bordeaux Red

(Château Pichon-Lalande) While I have been a big fan of the 1985 vintage in Bordeaux for many years and have written quite a bit about these wines in recent times, I had not tasted a bottle of the 1985 Pichon-Lalande since I cannot remember when. I sold this wine right out of the blocks in my merchant days and always liked it well enough, but in my formative years, I found it a bit too “weedy” and did not end up cellaring it for my own collection. I think this was the only vintage of Pichon-Lalande I did not buy for my cellar in that era, as I started laying in the wines with the 1981 vintage and bought them every year (even the 1984 and 1987) up through the 1989, before my buying habits (and my more limited cellar budget in those days) turned towards Burgundy. But, I skipped the 1985 and that was too bad, as the wine has aged quite beautifully and is now drinking with great style and grace. The bouquet is a superb blend of cassis, dark berries, coffee, cigar wrapper, a dollop of fresh herbs, gravel, black tea and toasty oak. On the palate the wine is pure, fullish and beautifully complex, with a good core of fruit, lovely soil signature, melted tannins and fine length and grip on the very classy finish. This is not a powerful vintage of Pichon, but it is an utterly complete one! This wine is the finest Grand-Puy-Lacoste produced after 1982 and before 1995. The 1986 still possesses an impressive deep ruby/purple color, as well as a classic nose of cedar, blackcurrants, smoke, and vanillin. Full-bodied, powerful, authoritatively rich, and loaded with fruit, this wine’s solid lashing of tannin is not likely to melt away for 3-4 more years. 1986 lynch bages Bordeaux Red

The 1986 is finally emerging from the dormant stage that many of the wines from this vintage (especially the Medocs) have been going through. It is a full-bodied, still backward wine that will appeal to classicists and old line traditionalists given its firm structure and austere tannins. Nevertheless, the color is a healthy deep garnet and the wine exhibits wonderful freshness along with notes of underbrush, damp earth, black currants, cedar and new saddle leather. Well-balanced with good depth, medium to full body, and a tannic (although not excessively so) finish, this may not be the most finesse-styled, elegant Lynch Bages ever produced, but it is an interesting Pauillac that will benefit from another 3-4 years of cellaring. While it may never hit the peaks achieved by great Lynch Bages vintages, it will be one of those rare wines that will last 40+ years.Robert Parker | 94 RP5.3 g/l total acidity; 13.1% alcohol): Garnet-tinged dark ruby-red. Black fruits, candied red cherry, licorice, minerals, cedar and iron on the complex, still-reticent nose. Then more approachable on the palate, displaying a lovely restrained sweetness to the blackberry and blueberry fruit and excellent lift and clarity from lively acidity and solid underlying minerality. The finish features noble, fine-grained tannins and subtle persistence. An unusually accessible 1986 but very typical of the fleshy Lynch-Bages personality, this boasts lovely concentration and sneaky depth. 1987 mouton rothschild Bordeaux Red

(Château Mouton-Rothschild) This was the last vintage to be made by the Baron de Rothschild, and I have always had a sneaky suspicion that the 1987 may have been made a bit more memorable by the inclusion of some of the 1986 or 1988 bookends that may have been laying around, as the wine utterly transcends the vintage in terms of depth and power. Regardless of how the quality of the wine was ultimately arrived at, it is the finest 1987 Medoc that I have ever tasted, jumping from the glass in a blend of red berries, spices, coffee, eucalyptus, a touch of walnuts and the traditional Mouton nicely toasted new oak. On the palate the wine is medium-full, complex and à point, with excellent focus and fine length on the shapely finish. This is a lovely, commemorative bottling that still has plenty of life ahead of it. (Drink between 2003-2012)John Gilman | 91 JGOctober 2002 at a mad Swiss collector’s house at 10am. 1990 les forts de latour Bordeaux Red

Draws you into the glass with enticing plum, blackberry, vanilla and coconut aromas and flavors. Full-bodied yet balanced, with an abundance of soft tannins, but not aggressive. Best after 2000.Wine Spectator | 94 WS(Les Forts de Latour) The 1990 vintage of Forts de Latour is outstanding and is quite a bit more forward than the grand vin, albeit with the structure to continue to cruise along as well for many years to come. The superb bouquet wafts from the glass in a fine blend of black cherries, cassis, a touch of cigar wrapper, dark soil tones, smoke and a nice touch of fairly toasty new oak. On the palate the wine is deep, full-bodied and nicely plush on the attack, with a fine core, ripe, suave tannins and a long, focused and complex finish. This is already quite easy to drink, but will cruise along effortlessly for at least a few more decades. 1990 mouton rothschild Bordeaux Red

A time of serious changes at Mouton, with Baron Philippe de Rothschild passing away in 1988 after having overseen seven decades worth of harvests, and his longtime winemaker Raoul Blondin retiring in 1989. It was also three years before the introduction of Petit Mouton under Baroness Philippine (even Aile d’Argent the white wine didn’t arrive until 1991). Does all of this explain why the 1990 has suffered with its reputation from the beginning? Certainly it is far more mature at this 31-year-checkin than the others in the tasting, with strawberry and raspberry notes rather than the darker fruits that you more usually find in great Pauillac, with clear tertiary notes of tobacco, rust and woodsmoke. I had a better bottle of this in December 2020, and also in October 2018, so do expect bottle variation and you just might get lucky, but this was not the wine of the night. Label artist Francis Bacon, with one of his last works. Harvest 18 September to 3 October. Drinking Window 2021 - 2030.Decanter | 91 DECNotorious for not living up to the estate’s nor the vintage’s reputations, I have to say this 1990 Mouton Rothschild was not looking nearly as bad as I was expecting. This was a hot, dry vintage, which can be a challenge for vines on such free-draining soils as the deep gravel-mounds composing the backbone of Mouton’s vineyards. The effect of the struggling vines is apparent in the wine, yielding less density and chewier tannins. Nonetheless, the terroir’s pedigree clearly glimmers in the background.The wine displays a brick color with subtle, compellingly elegant redcurrant jelly, dried cranberries and powdered cinnamon notes plus wafts of potpourri, dried figs, unsmoked cigars and dusty soil. Medium-bodied, it is notably far more delicately fruited than one would expect of Mouton, structured with bold freshness and a light chew of tannins before finishing on a mineral note. Indeed, it is skinny compared to great vintages, but it is aging gracefully. For readers who love those soft-spoken, more delicately expressed styles, this one’s for you!Robert Parker Wine Advocate | 90 RPA less-than-extraordinary Mouton with licorice and sandalwood on the nose. 1994 lafite rothschild Bordeaux Red

A luscious Lafite that is silky and elegant with layers of wonderful violet, berry, cherry and chocolate flavors. It’s full-bodied, with racy, refined tannins and good length. Drinkable now, but best from 1999 and through another decade. 18,750 cases made.Wine Spectator | 93 WSBecause Lafite-Rothschild (1) tends to lack the weight of many wines of the northern Medoc, and (2) is never a flashy, ostentatious style of wine, it is often more difficult to evaluate when young than some of its neighbors. Made from nearly 100% Cabernet Sauvignon, this dark ruby/purple-colored wine is stubbornly backward, unappealing, and severe and astringent on the palate. There is plenty of weight, and the wine possesses admirable purity, with no suggestion of herbaceousness or underripe fruit, but the wine’s personality refuses to be coaxed from the glass. The 1994 Lafite may turn out to be austere and disappointing flavor-wise, but possesses a fabulous set of aromatics (does that sound reminiscent of the 1961, another Lafite that was primarily Cabernet Sauvignon?). I am not giving up on this wine, but purchasers should be willing to wait 15-20 years before pulling a cork. Anticipated maturity: 2010-2030.Robert Parker | 90 RPThe 1994 Lafite-Rothschild is a vintage that I have not tasted for some time. Poured blind, it has a healthy colour with modest signs of aging on the brick rim. Since this is 99.5% Cabernet Sauvignon (I always thought it was 100%!) it is dominated by classic aromas associated with that variety: undergrowth and tobacco, just a touch of graphite. Like the 1961, I actually miss the Merlot component because the wine does feel a little two-dimensional. The palate is well balanced with a fine bead of acidity. That tannins are coarser than recent vintages, and there is a little hardness on the finish that would have been mollified by the Merlot, but this stocky Lafite-Rothschild is still going strong. 1994 latour Bordeaux Red

Drunk from magnum, the 1994 Latour is showing brilliantly, bursting with aromas of dark fruits, English walnuts, cigar wrapper, loamy soil and woodsmoke. Medium to full-bodied, deep and fleshy, it’s layered and concentrated, with sweet tannins, succulent acids and a long, sapid finish. The wine of the vintage in Bordeaux, I just wish I owned a case.Robert Parker | 94 RPVery deep ruby-red. Pungent, inky, nutty aromas of blackcurrants and minerals; very sexy oak treatment gives the nose a wonderful sweetness. Big, minerally, and shapely, with lovely purity of dark berry flavor. This is surprisingly delicate and fine now with currant and spice character and hints nuts. It is full body with refined texture and a beautiful finish.James Suckling | 93 JSThe 1995 Pichon-Baron is a wine that tasted extremely well several years ago, but I wonder how well it is continuing to evolve. The bouquet feels a little smudged, scents of iodine and cassis merging with blackberry and pencil lead; it is a little meandering and missing a sense of focus. The palate is medium-bodied with supple tannin, crisp acidity and good density, but it doesn’t possess the clarity and detail of more recent vintages. Solid, but lacks flair. Tasted at the Pichon-Baron vertical at the château.Vinous Media | 91 VMA stylish, elegant, more restrained style of Pichon Baron, with less obvious new oak than usual, this deep ruby/purple-colored wine offers a pure black currant-scented nose with subtle aromas of coffee and smoky toasty oak. In the mouth, the wine displays less weight and muscle than the 1996, but it offers suave, elegant, rich fruit presented in a medium to full-bodied, surprisingly lush style. Best after 2010. 23,000 cases made.Wine Spectator | 94 WSThe 1995 Pontet-Canet has shed some of its astringency and now appears to be the qualitative equivalent to the terrific, classic 1994. The fruit is sweeter and jammier, and the new oak more prominent in the 1995. This opaque purple-colored wine is medium to full-bodied, concentrated, layered, and long in the finish. I would not be surprised to see the 1995 edge out the brilliant 1994 in 15-20 years. Anticipated maturity: 2004-2025. Last tasted 1/97Robert Parker | 93 RPDark ruby-red. Black- and redcurrants and smoke on the nose; less oak-spicy today than the '96. Silky and harmonious but currently rather withdrawn. Not quite as sweet as the '96. Fairly sweet and dense on the palate, with very good concentration and firm acidity for the year. This is aged in 100% new oak, but the wood is very much in the background. Readers should not ignore this wine because of the negative press surrounding the 1997 vintage. It boasts an opaque dense purple color in addition to a gorgeously sweet, expansive perfume of cedar wood, black currants, lead pencil, and minerals. What follows is a fat mid-palate, medium body, explosive fruit and richness, soft tannin, and a velvety texture. It is a beautiful, compelling Lafite-Rothschild that can be drunk young, yet promises to evolve for 15+ years. Although one of the most forward Lafites ever tasted, it is all the more captivating because of this characteristic. 1998 latour Bordeaux Red

(Château Latour, Cabernet Sauvignon, Pauillac, Bordeaux, France, Red) As with many of the wines from 1998 that I have tasted recently, the Latour was surprisingly open and approachable. Today the wine has a smoky, almost roasted nose with black plum and fig fruit, hints of smoke, leather, and an undercurrent of ground coffee. The texture is surprisingly open and soft but not falling apart. It is drinking well today and doubtless will hold for another 10 to 15 years but is probably not one for long-term ageing. The spring and the growing season were hot and dry, and although there was rain at harvest the grapes were able to resist rot and dilution due to their thick skins. It was an early vintage after budburst on 20 March and the picking began on 20 September until 5 October, the Grand Vin a blend of 72% Cabernet Sauvignon, 23% Merlot (compared to around 9% these days), 4% Cabernet Franc 1% Petit Verdot. It has an open-knit bouquet with notes of black fruit, iron, undergrowth and autumn leaves. You cannot help noticing its rusticity compared to present-day Latour. The palate is medium-bodied, well balanced, a tang of soy marking the entry, brambly red berry fruit and an almost Graves-like, tertiary, slightly short finish. It is a mid-weight Latour, one that I cannot envisage improving further but it will cruise at this level for the next decade. Moreover, the tannin is slightly aggressive, although that is hardly unusual in such a young Latour. Readers looking for a modern day version of Latour’s magnificent 1962 or 1971 should check out the sensational 1999 Latour. It is a big, concentrated offering, exhibiting a dense ruby/purple color, and a classic nose of minerals, black currants, leather, and vanilla. The wine is long, ripe, and medium-bodied, with high levels of sweet tannin. This surprisingly full, concentrated 1999 should be drinkable in 5-6 years; it will last for three decades.Robert Parker | 94 RPFocused and fresh, with milk chocolate and berry aromas. Subtle and refined on the nose. Full-bodied and very elegant, featuring a solid core of ultrafine tannins and a long, long finish. So much finesse here. It has a pH of 3.80 and a yield of 38hl/ha, representing 58% of the total crop. Interestingly, this includes 14% vin de presse compared to the 9 to 10% used nowadays. It has a classic Latour bouquet of blackberry, pencil box and undergrowth aromas, quite strict and conservative in style, and fairly intense but not firing on all cylinders; orange zest aromas evolve gradually. The palate is medium-bodied with fine tannin and nicely detailed, offering blackberry, black truffle, pencil shavings and a touch of spice toward the finish, which shows more grip and density than the 1989 Latour tasted alongside, probably because of that pressed wine. This is beginning to reach its drinking plateau, although judging by this showing it will give another two decades of drinking pleasure. Blackberry mixes with hints of star anise and light tobacco notes, conveying energy and fine delineation if not the profundity of the greatest vintages. There seems to be a lot of extraction and/or vin de presse here. The palate is medium-bodied with sweet tannin and a fine bead of acidity, and quite dense and grippy in the mouth. There is presence but not the same sophistication that Dhalluin imparts nowadays. A pleasurable Mouton-Rothschild that tries everything to appeal, whereas nowadays it is more effortless. This has fully entered a second phase, with loads of cedar and alder notes leading the way for dried currant and lightly mulled blackberry fruit flavors. As I remarked when I last tasted this in 2011, there is an opulence here that this estate rarely produced up until this period. The palate is medium-bodied with fine tannin; this bottle is more backward than others, with firm tannin providing sturdy backbone. It remains a "burly" Pauillac for the vintage, and it is certainly masculine in style. Then again, that is a leitmotif of the millennial vintage. As such, I can envisage this mellowing in four to six year’s time, whereupon it will have the substance to give drinking pleasure over many years. From magnum, a youthful colour, reflecting slow evolution. Aromas of cedar, lead pencil, roasted and primary fruit. Fine grained, noticeable tannin. Excellent balance of power and smooth texture. Noé Tesseron described it as ’older school Pauillac’, and I liked it a lot. Long finish. Aged 60% new oak. It was a wonderfully complex wine that was really starting to show its best. On the nose it displayed tar and currants with hints of dried fruits and berries. It was full-bodied yet so refined and delicious at the same time.James Suckling | 94 JSUpgraded in score over my original rating, which was several points lower, Alfred Tesseron has done a remarkable job since 1994 with Pontet-Canet, which has been hitting first-growth levels since 2003. The 2001 Grand Puy-Lacoste is a vintage that I have not tasted for a decade. It’s showing some signs of bricking on the rim. The bouquet does not quite have the intensity of the previous vintage, but it unfolds nicely to reveal a mélange of red and black fruit, tertiary aromas, gravel and cedar. The palate is medium-bodied with sappy black fruit, grippy and much more youthful than the 2000, though it does not quite have the same complexity and terroir expression on the elegant finish.Vinous Media | 93 VM
