There are as many red wine varieties as there are flavor combinations you can imagine, and this makes it relatively easy to find a bottle or ten that fit your preference. Each blend has its own unique identity, and a conversation in the form of sampling will tell you its history, taste, texture, and complexity. The finest red wines inspire long hours of thought, as you try to deconstruct the elaborate and mesmerizing experience you had, seemingly a mere moment ago. A ripe red color, the 2019 Brunello Di Montalcino is expressive of its place, with warming notes of licorice, black cherries, anise, cedar, and dark soil lifting from the glass. As it opens, it becomes purer in its fruit profile, shining through beautifully. Full-bodied, with ripe tannins and a savory slanting profile, notes of espresso and mocha float across the palate, filling it with purity of fruit and lovely concentration through its long finish. It’s a fantastic Brunello with a warming richness that can stand up to hearty winter foods and will be best enjoyed over the next 15 years. That note blows off, however, and the wine returns to dried cherry with a medicinal or herbal twist. There’s a lot going on. The wine needs more time in bottle to address the fine, chalky tannins. Full and vigorous, the palate is foursquare rather than round. A compact core of dark cherry is surrounded by chewy, generously extracted tannins. A touch of dryness from wood pokes through. The nose is so pure and subtle with a sophistication and ethereal notion to it. It just makes you sit back and ponder the world. Like sitting in a pasture of mountains. Medium to full body with ultra-fine tannins that are endless and glorious in every sense. It’s like being connected to a unique piece of the earth when you taste this. Just-ripe berries with dried flowers, shell fish shell, and subtle mushroom and bark. Lasts so long on the palate. Endless. Bright and lively on the palate, such beautifully expressed raspberry and red cherry fruit flavours alongside high-shining acidity that is so clean and precise. A supremely joyful expression with hints of caramelised strawberries and fresh mint. So sharp but so well defined with a clarity to the palate that is gorgeous. Really delivers a sophisticated, charming, characterful wine that is balanced, easy to enjoy with plenty of life. A more structured and perhaps harder to understand wine than Testamatta this year, but both have their own lovely personalities. This is so complete and abundant, muscular but controlled and full of complexity and detail - there’s weight and density without heaviness. A sensational wine. Bibi has a preference for old vines, and you can taste the lovely depth and complexity that comes through in the Colore. Compared to his other wine Testamatta, this wine has seen fewer stylistic changes over the years, and the goal has always been elegance and finesse. Colore boasts a pretty luminous quality with dark fruit aromas and wild berry. There are hints of licorice and mint as well. It finishes lightly structured, concentrated and long yet perfumed, making the 2020 a pleasure today, but also capable of medium-term cellaring. 2020 Fattoria Le Pupille Saffredi, Italy Red

Impressive aromas of fresh herbs from the Tuscan coast, such as sage, mint, rosemary and thyme. Blackcurrants, too. Full-bodied with fine, chewy tannins that show beautiful length and consistency. Racy and beautiful, with lots of subtle and refined character. Slightly more cabernet sauvignon this year, which adds class to the wine. 80% cabernet sauvignon, 10% merlot and 10% petit verdot.
