The 2007 Les Pavots, a Bordeaux varietal blend of 70% Cabernet Sauvignon, 17% Cabernet Franc, 10% Merlot, and 3% Petit Verdot, is brilliant. Its opaque purple color is accompanied by gorgeously complex aromas of melted chocolate, espresso roast, blackberries, and cassis. Full-bodied with a superb texture, a subtle note of oak, and fabulous concentration, it is more reminiscent of a Right Bank Bordeaux than one expects with this much Cabernet Sauvignon in the blend. A thirty-year wine, its impeccable balance and the sweetness of its tannins make it accessible already.Robert Parker | 97 RPA little tight and firm. Chewy dark berry and bitter cherry flavors are framed by solid tannins and complemented by smoky mineral and sweet chewing tobacco elements. Tough to read but highly concentrated, showing a strong finishing licorice and smoky mineral character and a lingering cherry pit note. Give this at least a few more years of bottle aging.Vinous Media | 93 VMZeroes in on intense dark berry, graphite, mineral and cedary oak flavors, supported by firm, grippy and gritty tannins. The flavors are vibrant yet drying, suggesting that this should be drunk sooner rather than later. Both bottles of this noteworthy wine were good but not great. Slightly off the usual pace. The smaller production 2015 Au Paradis is a more Cabernet Sauvignon-dominated cuvée that checks in as 76% Cabernet Sauvignon and 24% Cabernet Franc. Aged in 18 months in 50% new oak, it has a more masculine, mineral-laced style offering red and black currants, crushed rocks, chocolate, and spice. Deep, rich, concentrated, and in need of 4-6 years of cellaring, this Château Latour-lookalike is an awesome, classic Napa Cabernet Sauvignon!Jeb Dunnuck | 99 JDA bright and vivid red with aromas of terracotta, fresh herbs, currants and blackberries. Some mint, floral notes and a touch of chocolate, too. Full body and ultra-fine tannins that are layered with ripe fruit. Love the length and beauty. Changes all the time in the glass. The 50% new oak adds a dollop of sweetness without overpowering the wine. Medium to full-bodied, the palate is energetic and yet tautly structured with firm, grainy tannins and a lively backbone framing the muscular fruit, finishing long and earthy. Pouring an opaque red, the 2020 Cabernet Sauvignon Au Paradis is lush and refined with aromas of cassis, espresso, violets, and sweet tobacco. Full-bodied, this refined profile continues on the palate, with a ripe, velvety texture, fine tannins, and notes of black cherry liqueur and mocha, as well as floral oils that last long on the palate without feeling heavy. Drink 2025-2045.Jeb Dunnuck | 97 JDBlended with 3% Merlot and 1% Cabernet Franc, the 2020 Cabernet Sauvignon Au Paradis comes from a vineyard in Oakville near Dalla Valle, around 500-600 feet in elevation. It has a deep ruby-purple color and opens slowly to warm black plums, graphite and grilled peppers with wafts of cedar, chocolate and soy. The full-bodied palate offers plenty of freshness to support its concentrated, ripe fruit. It boasts generous, powdery tannins, alluring floral tones and a long, layered finish. Ripe yet balanced, it’s approachable right now. 1,401 cases were made, and it will be released in July of 2023.Robert Parker Wine Advocate | 96 RPThis is a very refined and polished red, with redcurrant and spice, as well as black-pepper and flint undertones. It’s medium-bodied with refined tannins and a fresh, silky finish. All about finesse and polish. Drinkable now, but better after 2024.James Suckling | 95 JSThe 2020 Cabernet Sauvignon Au Paradis is a powerful wine, its mid-weight structure notwithstanding. There’s good depth to the ripe dark plum, blackberry and chocolate flavors. The aromatics aren’t quite as focused as they usually are, but all things considered, this is a very good wine in a highly challenging year. About 40% of the wines were discarded, including much of the Franc, which is quite low in this vintage.Vinous Media | 92 VMForward, with a wave of crushed blueberry, açaí and blackberry fruit flavors that dominate the character, while touches of loam, licorice root and tobacco fill in on the broad, slightly grainy finish. I tasted the 2023 Pinot Noir Le Caprice as a sample just before it was bottled. It has slowly unfolding aromas of cranberry, red cherry, tea leaves and mint, becoming more floral as it airs in the glass. The palate is layered and concentrated with woodsy, earthy flavors evocative of a forest. It’s structured by silky tannins and vibrant acidity and boasts a flourish of spicy accents on the long finish.
