It seems there is a long established conviction that the Bordeaux region of France simply defines the heart and soul of a great wine. Although we truly appreciate and enjoy wine from many regions across the world, we're not shy about saying that Bordeaux is one of our favorite wine regions. Over the next few months, we plan on sampling and sharing our thoughts with you on a wide array of Bordeaux wines, both old and young. Having the opportunity to smell, taste and enjoy old Bordeaux is one of life's greatest pleasures. For those of you who drink Bordeaux wines, you know what we're referring to and those who have not...well, get started.

We can't say enough about it - it encompasses so many things. It is living art in a bottle, it is rich with history, it is special, and it is like an old Rolex or classic car - it never goes out of style. Simply said, Bordeaux is an icon and timeless wine.

So, when we had the opportunity to taste a 1985 Cheval Blanc at a recent dinner, needless to say, we jumped on the chance. People talk of once-in-a-lifetime wines, and this is definitely one of them. Smelling of berries, dark fruit, lead pencil, graphite and a hint of mustiness, this wine was soft, round and full of flavor without being too overpowering. It had a beautiful light red color but at the same time seemed to coat the glass and even at 24 years old, this wine had a long finish. It came to life in the first sip, but tasted even better when paired with our dinner, which included a medium rare sirloin, mushroom risotto and honey-glazed carrots. Like all the greats, it picked up weight as the night went on. The '85 vintage has aged very well, and it's no wonder that Cheval Blanc is considered to stand alongside the best of the best in Bordeaux.

Our recommendation: For those of you lucky enough to have a 1985 Cheval Blanc stashed away in your cellar or storage collection, think about popping the cork in the next few weeks and share it with those who appreciate fine wine.
