The palate is beautifully balanced and poised, showing good concentration and wonderful cohesion and salinity toward the finish. The 2020 Chablis Vaillons 1er Cru has a flinty, focused, energetic nose that feels more harmonious than the preceding Côte de Léchet. The palate is taut, fresh and saline in the mouth, showing great depth and concentration toward the finish. (Chablis “Bougros”- Domaine Patrick Piuze) Bougros can sometimes be a bit more fruit-driven in personality out of the blocks than most other grand crus, but this is most emphatically not the case with Patrick Piuze’s version in 2020. The aromatic constellation is precise and minerally in personality, offering up scents of apple, pear, beeswax, a hint of crème patissière, citrus peel, oyster hell minerality, vanillin oak and a topnote of dried flowers. On the palate the wine is deep, full-bodied and defined by its underlying soil, with a lovely core of perfectly ripe fruit, a fine girdle of acidity, lovely focus and grip and a long, nascently complex and beautifully balanced finish. Patrick’s 2020 Butteaux is utterly classic in personality and superb in potential quality. The nose jumps from the glass in a refined blend of apple, pear, a complex base of chalky soil tones, paraffin, fruit blossoms and vanillin oak. On the palate the wine is deep, full-bodied and shows of gorgeous fruit at the core, with excellent soil undertow, bright, zesty acids, fine focus and grip and a long, perfectly balanced and complex finish. Great juice. 2025-2060.John Gilman, A View from the Cellar | 94 JGThe 2020 Chablis Les Butteaux 1er Cru had received a bit of SO2 a couple of days before my visit. For that reason, it is a little muted on the nose, opening gradually to reveal yellow flower scents. The well-balanced palate offers grapefruit and melon notes, a fine bead of acidity and good weight on the finish. It does need to cohere in the glass, but this has good potential.Vinous Media | 91-93 VM(Maison Patrick Piuze Chablis "Butteaux" 1er Cru White) A very Chablis-like nose features notes of mineral reduction, pear, apple, shellfish and a plethora of citrus elements. The 2020 Chablis “les Séchets” from Domaine Piuze is a superb wine in the making. The bouquet is pure, focused and detailed, offering up scents of tart orange, lemon, pear, chalky minerality, citrus peel, vanillin oak and a topnote of dried flowers. On the palate the wine is deep, full-bodied and rock solid at the core, with great cut and grip, impressive focus and a long, racy and complex finish up impressive structural integrity. One of the highlights of the range is the 2020 Chablis 1er Cru Vaulorent, a medium to full-bodied, taut and concentrated wine evocative of pear, citrus oil, smoke, oyster shell and freshly baked bread. On the palate the wine is pure, precise and nicely reserved in personality, with a full-bodied format, a lovely core of fruit, excellent soil signature and a long, nascently complex and vibrant finish. This wine has beautiful grip and purity and all it needs is some time in the cellar to properly blossom. There is better volume if not quite the same degree of refinement on the punchy, saline and sneaky long finale. This firm effort is lovely with a Zen-like sense of poise. (Drink starting 2028)Burghound | 90-93 BHThe 2020 Chablis Vaulorent 1er Cru was showing a bit of reduction on the nose when I tasted it directly from barrel. Moving straight on to the palate, there is crisp citrus fruit, lemon curd, touches of frangipane and plenty of spice toward the back end. A tang of stem ginger lingers on the aftertaste. This is a fine Vaulorent but it will need time in bottle.Vinous Media | 90-92 VMThis supple white is highlighted by apple, melon and green plum flavors, with accents of mineral and vanilla adding detail. With close to 6.5 acres in this grand cru, Arnaud Lavantureux treats most of this wine to barrel fermentation, then aging in used oak barrels; a small portion rests in new oak. The barrel time has amped up the wine’s power, its viscosity and smoky scents. But it never goes dark, sustaining a stark contrast of white on white. Complex, feather-light in the end, it keeps coming after you with detail, the way wildflower honey might, only this is completely dry.Wine & Spirits Magazine | 94 W&S

The 2021 Chablis Vaillon 1er Cru Cuvée Guy Moreau comprises just five used barrels this year. The fine bouquet is a little more mineral-driven than the regular cuvée with touches of wet pavement and citrus lemon. The palate is well-balanced, fresh and taut, with a fine bead of acidity, growing a little more compact towards the finish but with slightly more salinity to get the tastebuds going. Very fine.Vinous Media | 92 VMHere too there is a vaguely exotic note to the pretty and very floral aromas of spice, pear, apple and quinine that are trimmed in subtle wood. The old vines are very much in evidence on the concentrated, palate coating and rich bigger-bodied flavors that possess focused power on the saline and intensely bitter zest-suffused finish. The 2021 Chablis Les Clos Grand Cru was taken from tank rather than barrel. This was primal on the nose and difficult to read. The palate is more expressive: finely tuned with a fine bead of acidity, tensile and saline, it does not possess the complexity of Raveneau’s Les Clos tasted an hour or two before, but it has great penetration and a compelling flinty finish. Excellent.Vinous Media | 93-95 VMHere too the nose is presently dominated by reduction and wood toast. More interesting are the sleek, intense and ultra-fresh middleweight plus flavors that possess excellent size, richness and power where the latter suffuses the sappy, muscular and saliva-inducing, moderately dry and compact finale. This very promising effort is going to need at least a decade to realize its full potential. Impressive.Burghound | 92-95 BH

The one-hectare parcel that constitutes the 2021 Chablis Valmur Grand Cru yielded five barrels this year. This also has a heavy reduction and is quite yeasty at the moment. The palate is well balanced with a marine-influenced entry, flecks of white chocolate complementing the citrus fruit with a longer finish than the Blanchot. Fine sour lemon mixed with orange rind on the aftertaste. Excellent.Vinous Media | 92-94 VM

TOP QUALITY PRODUCER Quite a different, cool, fresh character on the nose. Louis Moreau always aim to pick early to preserve freshness. Lemon-lime citrus characters dominate the palate giving lots of vibrant acidity, balancing the concentrated fruit notes and providing a great backdrop for future ageing. Needs a two or three years to settle in bottle, and it’s a keeper.Decanter | 95 DECThis white’s creamy texture is offset by lively acidity that frames its lemon, yuzu, floral and vanilla flavors. The 2021 Chablis Les Clos Grand Cru comes from 2.5-hectares from parcels located from the bottom to the top of the slope, 20% fermented in new oak and aged entirely in wood. It has quite a powerful bouquet; although, I think it would have been a little more sharp with some proportion raised in stainless steel. The palate is well balanced with good weight, a subtle nuttiness on the entry, notes of orange rind and citrus peel; the 2021 is quite linear on the finish and lingers nicely in the mouth. I think this will gain complexity by the time it is bottled next year.Vinous Media | 91-93 VM

One of the Dauvissat specialities, the La Forest is a triumph in 2021. From seven small parcels, the total site is less than 1ha with average vine age more than 40 years. Intriguing, slightly smoky nose, highly distinctive and different to others in the range. Plenty of power, ripe stone fruit flavours, zesty citrus acidity with a herbaceous edge adding an extra dimension. Definitely of grand cru quality.Decanter | 95 DECThe 2021 Chablis 1er Cru La Forest is a young classic, mingling scents of sweet citrus oil and peach with notions of white flowers, struck match, bee pollen and youthful reduction in an incipiently complex bouquet. Medium to full-bodied, fleshy and textural, it’s concentrated, taut and incisive, with a long, mineral finish.Robert Parker Wine Advocate | 94 RPThere is a hint of phenolic character on the aromas of crushed leaf, mineral reduction, lemon-lime and seaweed. The denser, succulent and powerful larger-scaled flavors are supported by a firm acid spine on the stony, youthfully austere and bitter citrus rind finale. This is quite dry and I very much like the balance though I would note that at least some patience is strongly suggested as this is quite tightly wound today. In a word, terrific.Burghound | 94 BHI always think of Vincent Dauvissat’s la Forest as his baby les Clos, as with ten years or more of bottle age, the two often resemble each other a bit aromatically and flavor-wise. The 2021 version of la Forest chez Dauvissat is going to be stellar. The bouquet wafts from the glass in a complex mix of pear, fresh lime, flinty minerality, citrus blossoms, discreet vanillin oak and a topnote of beeswax. On the palate the wine is deep, pure and full, with a superb core of fruit, excellent complexity and cut, fine focus, bright acids and a long, complex and impeccably balanced finish. This is superb. (Drink between 2026 - 2060)John Gilman | 94 JGAlso a fine clear colour, though without a green tint. The Forest 2021 has a solid full fruit on the nose, perhaps less intense at the edges. Daivissat’s Chablis parcel comes from two parcels - the smaller near Beine (0.6ha) and the much larger plot adjacent to Premier Cru Foret (2.5ha). Profound, concentrated, prominent lime/lemon zest on the palate, a touch of honey, confited citrus zest to finish. So long. A profound Chablis.Decanter | 93 DECThe 2021 Chablis Village is a clear step up from the Petit Chablis, beautifully defined with light pressed flower scents that complement the granite scents. The palate is saline on the entry with a fine bead of acidity, fine depth with quite a persistent finish. Elegant and somehow, understated.Vinous Media | 89-91 VMA more floral and more citrus-infused nose speaks of cool and admirably pure aromas of iodine, ocean breeze and green apple along with a hint of the exotic. The rich and solidly concentrated medium-weight flavors also possess excellent length on the bright, clean and very dry finish. This chiseled and promising effort should amply repay 7 to 10 years of cellaring.Burghound | 90 BHThe Domaine Dauvissat 2021 Chablis AC is also an outstanding example of its respective level, delivering a vibrant and complex nose of fresh lime, apple, a lovely base of chalky minerality, just a touch of oyster shell and a topnote of straw. On the palate the wine is bright, full-bodied, focused and well-balanced, with a lovely core, zesty acids and a fine signature of minerality on the long and classy finish. The 2021 les Clos from Vincent Dauvissat is another brilliant wine in the making. The bouquet is deep, nascently complex and very precise, offering up a constellation of tart orange, apple, pear, flinty minerality, citrus zest, a gentle framing of vanillin oak and a topnote of anise. On the palate the wine is deep, full-bodied and complex, with a great core, outstanding mineral drive and grip, a lovely spine of acidity and a long, focused and perfectly balanced finish. Dauvissat’s Les Clos shows all the power and weight which one would expect of this famous climat. Stone fruit, minerality, a long saline/salty finish. Very deep, very classy, this just needs around five years in which to mature before it will truly show its best.Decanter | 95 DECA discreet application of wood suffuses the restrained and beautifully layered nose of mineral reduction, iodine, tidal pool, white orchard fruit and a vague hint of phenolic character. The super-sleek, dense and intense broad-shouldered flavors possess a palate etching mouthfeel while delivering simply remarkable length on the stony, austere and very dry finale that is akin to rolling small rocks around the mouth. The intensity really builds as it sits on the palate and overall, this beauty is superb.Burghound | 95 BHOne of the fuller yellow colours and a bouquet that is more ample if perhaps less fine than Preuses. UNDER THE RADAR A very elegant Bougros which matches the ripeness of this full sun site with great acidity and purity of flavour. There is lots of depth here with some zesty citrus characters and a stony, mineral thread in the background. Cleansing acidity on the finish. A grand cru which definitely shows its class, while managing to be both drinkable now yet have a long future ahead.Decanter | 95 DEC

Given all of the fireworks in this tasting from the Montée de Tonnerre upwards, I was wondering if the 2021 les Clos could somehow acquit itself impeccably, given how stunning the lineup had been up until this point. It does not disappoint! The aromatic constellation here is complex and precise, offering up scents of green apple, lime, grapefruit, flinty minerality, citrus peel, dried flowers and gentle smokiness in the upper register. On the palate the wine is beautifully complex, well balanced and poised, with a full-bodied format, great depth at the core, brisk acids and laser-like focus on the long and stunning finish. John Gilman | 96 JGThe 2021 Chablis Les Clos Grand Cru comes from 4.1 hectares mainly located on the upper sector of the Grand Cru, the vines planted in the postwar period by Maurice Fèvre, the father of William Fèvre. It has a powerful bouquet with hints of white flower permeating the citrus fruit and apple blossom aromas. The palate has wonderful salinity on the entry, a fine bead of acidity, citrus-fresh with clementine, hints of peach and a twist of bitter lemon that keeps the finish on its tippy-toes. The 2021 Chablis Les Preuses Grand Cru comes from 2.5-hectares split over two parcels. This has one of my favourite aromatics from Fèvre this year with superb delineation and mineralité. The palate is harmonious and poised, very focused and tensile, plenty of energy with a touch of lime and clementine towards the persistent finish. This is an outstanding Chablis that should age supremely well in bottle.Vinous Media | 94-96 VMOne of the domaine’s standout wines, this immediately strikes you with its precision and clarity. Fevre’s vines are from two different sites, with varying expositions - one lower down and facing south-east, the other high on the plateau. Great elegance with plenty of weight and concentration on the palate, full and fleshy. Grapefruit notes to the fore but plenty of mineral/saline notes on the long, persistent finish. A delicious, aristocratic grand cru. Fevre owns 2.5ha within Les Preuses. Drinking Window: 2026 - 2038Decanter | 95 DEC

The 2021 Chablis Vaillons 1er Cru, which comes from around 12 parcels, 3.5-hectares, two-thirds within the "Vaillons" climats in the heart of the appellation. This has a slightly yeasty nose at the moment, not a million miles away from the Montmains in style. The palate is slightly different with a little more frisson and tension, just a touch more length on the finish. This should develop nicely in bottle.Vinous Media | 91-93 VMDidier Seguier says that this is from a sunny terroir but in a cold vintage. It is certainly very attractive with the acidity balancing, and complimenting, the generosity of the fruit. White flowers and a touch of pear/white peach on the palate. Very precise and nice mineral undertow. A really fine example, mostly from the Vaillon sector within the wider Vaillon Premier Cru. Drinking Window: 2023 - 2028Decanter | 93 DEC

Droin owns 10ha of AP Chablis. Much more interest here with a deeper hue in the glass and much more interest on the nose. Some greengage on the palate, together with a hint of pear and white peach. Pretty much a benchmark example of what village Chablis should be. Concentration and a lengthy mineral character to finish.Decanter | 92 DECThis is aromatically similar to the Petit Chablis though with more citrus elements in evidence. There is again good richness to the succulent and rounded medium-weight flavors that also exude a refreshing salinity on the clean, moderately dry and sneaky long finish that is slightly firmer.Burghound | 88-91 BHThe 2021 Chablis Village has a fresh nose with Granny Smith apples and a touch of fresh pear.
