The 2019 Chablis Vaillons 1er Cru has a less flamboyant bouquet than its peers. This feels more reserved and flinty, though very nicely defined and focused. The palate is well balanced, with the weight and density I look for in a Vaillon, and a little spicier than the Vosgros. A touch of lemongrass and a hint of green olive appear toward the finish. Here there is less citrus and more floral influence on the white pepper and mineral reduction-inflected nose. The sleek, intense and attractively textured medium-weight flavors possess a bracing salinity on the agreeably dry, chiseled and well-focused finale that is just a bit firmer. Droin’s Vaudésir comes from just over 1ha with vines planted on both north- and south-facing slopes. A little subdued on the nose and palate, this is a subtle grand cru with plenty of definition, and will blossom with two to three years additional bottle age. No oak.Decanter | 92 DECThe 2021 Chablis Vaudésir Grand Cru has a taut and fresh bouquet, wonderful mineralité with a hint of smoke and flint coming through. The palate is well balanced with a saline note, fine depth, lemon and a little more lime. Builds nicely in the mouth, a lovely Vaudésir.Vinous Media | 91-93 VMHere too moderate wood sets off the overtly spicy and ripe aromas of white and yellow peach, iodine and hints of seashore. The sleek, delicious and intense flavors are just a bit more refined, indeed they are almost delicate, while still delivering excellent length on the citrus-tinged finish where a bit of wood slowly emerges.Burghound | 91-94 BH

Pale colour. A light and elegant nose, some marine notes behind, gentle but showing well, with a little more volume behind, a wave of white fruit and an attractively nuanced finish. Drink from 2025-2028. Tasted Jul 2023.Jasper Morris | 91 JM

This also displays moderate wood influence on the ripe layered and pure nose that displays good layering and ample Chablis typicity. There is impressive mid-palate density to the opulent and lavishly rich medium-bodied flavors that possess a borderline lush, even creamy, mouthfeel, all wrapped in a citrusy and sneaky long finish. This unusually powerful effort should also be capable of mid-term development yet drink well after only 5 or so years.Burghound | 91-94 BH

The 2023 Chablis Au Dessus des Carrières was bottled a couple of weeks prior to my visit after 12 months on the lees and a fermentation that was strung out over 12 months! It has an exquisite, beautifully defined and focused bouquet surfeit with minerals. The palate is very precise, poised, saline and tangy, with a dab of iodine toward the finish. The 2023 is excellent.Vinous Media | 91-93 VMFuller yellow, the nose showing that the bottle has been open a few days. The 2023 is fleshier than the 2024 of course but still exceptionally marine at the back. Just bottled. Very long finish. Drink from 2026-2032. Tasted Jun 2025.Jasper Morris | 91 JMPretty and nicely fresh aromas include those of just sliced pear and apple while displaying enough Chablis typicity to be convincing. The rich, generous and vibrant medium weight flavors already possess fine complexity as well as excellent length on the clean, moderately dry and balanced finale. This is a very fine villages and one that should both drink well young as well as repay mid-term keeping.Burghound | 90 BH
