After some time in the glass, the 2018 Chardonnay Cascadia opens to dried chamomile and apple slices with notes of hay, candle smoke, roasted almonds and beeswax. The palate is broad and creamy with expansive, honeyed layers, finishing with great length and powerful flavor. It comes in at 13.5 percent octane and seems to show that a bit of the malolactic fermentation was blocked, as it has that lovely essence of pear aromatic note that one finds in many of Louis Jadot’s white Burgundies as well. The nose jumps from the glass in a blend of pear, apple, a touch of pastry cream, raw almond, a touch of vanillin oak and a lovely base of soil tones. On the palate the wine is vibrant, full-bodied and nascently complex, with a good core and soil signature, zesty acids and a long, nicely balanced and stylish finish. Good juice. A ripe youthful yellow hue, the 2021 Chardonnay VGW is fantastic out of the gates, with ripe aromas of white smoke, lemon balm, salty earth, and white peach. From all volcanic soils, the 2021 Chardonnay VGW is ripe through the palate with generous notes of salted pineapple fruit and a rounded feel, although it’s clean as a whistle and has a fresh lift of acidity.
